동결건조 시스템에서 동결속도가 향미물질 보존에 미치는 영향 (Influence of Freezing Rate on the Aroma Retention in a Freeze Drying System)

  • The objective of this study was to investigate the effects of freezing rate on aroma retention and to examine the mechanism of aroma retention during freeze drying process. Our experiments were carried out with self-manufactured freeze-dryer. Gelatin gels (2% w / w, 80${\times}$20mm) containing diacetyl(2mg/ml) were frozen unidirectionally (Neumann's model) from the bottom at -45, -30, -20, and -15$^{\circ}C$ and followed with freeze-drying. Under the upper conditions we measured freezing rate and the change of temperature and pressure during freeze drying. Freeze-dried gelatins were cut horizontally into 5 mm thickness from the bottom measured and diacetly contents. Besides, we observed the effect of the relative humidity of the diacetyl contents freeze-dried gelatin during storage. The retained diacetyl content was increased at high freezing temperature and in order of 0∼5, 5∼10, 10∼15, 15∼20 mm section from the bottom of the sample. It was observed that the retained diacetyl content was high in 15∼20 mm section. The retained diacetyl content and freeze-dried gelatin stored in the condition of high relative humidity was decreased significantly but in the low relative humidity case, was it decreased in small amount. The results of our experiment resents that the low temperature freezing and low humidity storing condition is effective for preserving aroma compound in food.

  • The volatile aroma components were isolated from Korean flue-cured tobacco (N.C. 2326) by using a vacuum steam distillation method. Individual aroma components were identified by GCIMS and comparison of gas chromatowaphic retention time with those of the authentic samples. Sensory analysis showed that a vacuum steam-distilled product of Flue-cured tobacco had a typical haylike, floral and fruity aroma. Among 62 compounds identified, major compounds included neophytadiene, benzyl alcohol, ethyl acetate, phenyl ethyl alcohol, ethyl alcohol, ethyl formate, acetic acid, solanone, 2-acetyl pyrrole, $\beta$-ionone epoxide, 2, 4-heptadienal (2 isomers), megastigmatrienone (4 isomers), furfural and total amounts of 13 compounds were about 80%.

천궁(Cnidium officinale)의 향기성분 (Studies on the volatile compounds of Cnidium officinale)

  • The volatile components were extracted from root of Cnidium officinale M. by SDE(Simultaneous steam distillation and extraction) apparatus and analyzed by GC/M.5 and GC retention index matching. The experimental results revealed the presence of over 22 volatile components. Major components were cnidilide (35.1%), neocnidilids (13.4%), ligustilide (23.2%). The essential oils were separated by silica gel column chromatography(Merck 70-230mesh), and 4 fractions among 12 fractions separated had a, good aroma character.

  • Essential oil components from tobacco powder were investigated as flavouring agent. The essential oil was isolated from tobacco powder by a simple distillation /extraction method The extracted essential oil was fractionated into basic, acidic and neutral groups. And the neutral group of essential oil was separated by column chromatography into 10 fractions. Above groups and fractions were tested for tobacco aroma and smoke aroma. The neutral group except most nonpolar fraction displays good flavouring properties which make them highly suitable for improving the flavour and aroma of tobacco and tobacco smoke. The most nonpolar fraction from neutral group was carefully investigated using preparative column, thin layer and gas chromatography ailed by GC/MS coupling. The major subfraction was identified as hydrocarbons on the basis of the IR spectrum. The 58 hydrocarbon components were identified by their mass spectra and was chromatographic retention times.

Aroma Components of Traditional Korean Soy Sauce and Soybean Paste Fermented with the Same Meju

  • We identified volatile components of traditional Korean soy sauce and soybean paste which had been manufactured with the same traditional Meju with a view to improving the quality of traditional Korean soy sauce and soybean paste. All of the volatile components were extracted by simultaneous steam distillation-extraction (SDE) apparatus. To obtain more detailed information, whole volatile components were separated into fractions. The volatile components of the whole and of each fraction were identified by GC-mass and Kovat's retention index. Sixty two and eighty six components were identified in traditional Korean soy sauce and soybean paste, respectively. Many aroma components of traditional Korean soy sauce differ from those of traditional Korean soybean paste. It was confirmed that many aroma components of traditional Korean soy sauce and soybean paste are completely different from those of Japanese fermented soy sauce (Shoyu) and soybean paste (Miso).

Character Impact Compounds in Flavors of Korean Soy Sauce Manufactured with the Traditional and the Improved Meju

  • We characterized the character impact compounds of flavors of the fermented Korean soy sauce manufactured with both the traditional and the improved Meju made with different strains. The whole flavor samples were obtained by extracting each volatile flavor phase from both the traditional and the improved soy sauce. To get more detailed information, each whole volatile flavor was further fractionated into the basic, acidic, phenolic and neutral fractions. Each separated peak from the whole and fractionated flavor samples on gas chromatogram was identified by GC/MS and Kovat s retention index, and likewise the aroma of each peak was investigated by a sniffing test with the exercised panel. We were able to identify 15 groups of ingredients with the characteristic soy sauce aroma from the soy sauce made with the traditional Meju and 6 groups from the soy sauce manufactured with the improved Meju made with Aspergillus oryzae. The character impact compounds the two soy sauces were different from each other.

여름 느타리 버섯 (Pleurotus sajor-caju) 저장중의 향기성분 변화 (Changes of Volatile Components of Pleurotus sajor-caju During Storage)

  • Simultaneous distillation-extration method에 의해 국내에서 인공재배되고 있는 여름 느타리 버섯(Pleurotus sajor-caju)을 실온과 냉장하에서 저장하면서 휘발성 향기성분을 분리한 다음 GC-MS 및 GC에 의한 표준품과의 머무름시간 비교에 의해 향기성분의 변화를 검토하여 보았다. 총 aroma contentrates의 함량은 냉장 저장시는 큰차이를 보이지 않았으나 실온 저장시는 큰 감소의 경향을 보였다. 확인된 38종의 휘발성 화합물중 실온 저장시 ${\delta}-decalactone$만 약간증가하였으나 기타의 성분들은 현저히 감소한 반면 냉장 저장시는 2-methyl butanal, 1-octen-3-ol, cis,cis-1,5-octadien-3-ol, pentadecanoic acid등은 감소추세를 보였지만 3-octanone, 1-octen-3-one, 3-octanol, 5-undecanol등은 오히려 증가되는 경향을 보였다. 또한 중량 감소와 관능적 특성은 실온 저장시 냉장 저장보다 심한 변화를 보였다.

  • Dyshidrotic eczema is a eczema making vesicles at the hand and foot with pruritus, tend to chronically recurred. It is caused to retention of Damp-heat in interior(濕熱蘊積), interior heat due to Yin deficiency(陰虛內熱) in Oriental medicine. We treated a patient who suffered from recurred dyshidrotic eczema differentiated with retention of Damp-heat in interior(濕熱蘊積) with Chunggisangagam(淸肌散加減). After about 30 days of treatment with Chunggisangagam(淸肌散加減), acupunture and aroma therapy, we observed an improvement. Based on this experience, it is considered that the Oriental medicine can be applied to the treatment of dyshidrotic eczema.

한국산 느타리 버섯류 (Pleurotus sp.)의 휘발성 향기성분 (Volatile Components of Oyster Mushrooms (Pleurotus sp.) Cultivated in Korea)

  • Simultaneous distillation-extration method에 의해 4종의 국내에서 인공재배되고 있는 느타리 버섯류 (Pleurotus sp)로부터 휘발성 향기성분을 분리한 다음 GC-MS 및 GC에 의한 표준품과의 머무름 시간 비교에 의해 성분을 확인 하였다. 확인된 54종의 휘발성 화합물중 저온성 느타리 (Pleurotus ostreatus ASI 201)에서는 1-octen-3-ol, 3-octanone, 3-octanol등이, 원형 느타리 (Pleurotus florida--ostreatus-ostreatus)에서는 1-octen-3-ol, n-hexanol, 3-octanone, 3-octanol, phenol등이, 애느타리 (Pleurotus ostreatus)에서는 1-octen-3-ol, n-pentanal, n-hexanol, n-pentanol, 3-octanone, 3-octanol, 1,5-octadien-3-one등이었다. 특히 확인된 성분중에는 탄소수가 8개인 alcohol 및 carbonyl화합물이 많았으며 전체 향기성분에 대한 $C_8$화합물의 비율은 각각 56.60%, 72.46%, 54.84%, 35.85%이었다.

Developing a Descriptive Analysis Procedure for Korean Pumpkin Gruel (Hobakjuk)

  • The objective of this study was to develop a reliable and reproducible descriptive analysis procedure for Korean style sweet pumpkin gruel (Hobakjuk). The sensory attributes of the sweet pumpkin gruel were developed and defined, the sample preparation method was standardized, and the sensory evaluation procedure for a sample was established. Seven types of sweet pumpkin gruel (five ready-to-eat type vs. two ready-to-heat type) were selected to be analyzed. Panel training and descriptive analysis were carried out with these 7 samples. A total of 12 sensory attributes (2 aroma/odor, 5 taste/flavor, 4 texture/mouthfeel, and 1 aftertaste attributes) were developed to describe the sensory characteristics of the sweet pumpkin gruel. The definition and reference standards for each sensory attribute were determined to clearly understand each attribute. In the main experiment, trained panelists evaluated the sensory characteristics of the 7 gruel samples based on a fifteen-point intensity scale using the developed attributes. The results were statistically analyzed by analysis of variance, principal component analysis, and cluster analysis. The results showed that the 7 sweet pumpkin gruel samples significantly differed in their intensities of all attributes except for sweet pumpkin aroma and viscosity. The ready-to-eat style samples were distinctly characterized by their sweet pumpkin aroma and flavor, whereas the ready-to-heat style samples were markedly characterized by their low intensity of gelatinized starch and pumpkin flavor retention.
