This study was carried out to examine the antioxidant activity of Gynostemma pentaphyllum Makino. Using the DPPH method, we found that free radical scavenging activity was strong in all the fractions except the water fraction of the water extract (GPW) and ethanol extract (GPE) of G pentaphyllum Makino. Pseudo-SOD activity was highest in the diethyl ether fraction of the ethanol extract, while the other fractions of the ethanol and water extracts were lower. For xanthine oxidase inlribition activity, the diethyl ether fraction and butanol fraction of GPW, and the diethyl ether fraction and butanol fraction of GPE, showed activities over 80%. Nitrite scavenging ability was strong (over 60%) in all the GPW and GPE fractions. The diethyl ether fraction and butanol fraction of GPW had more effective nitrite scavenging abilities than the other extract fractions. These results suggest that the extracts of G pentaphyllum Makino can be used as a functional material in a tea or drink.
Volatile flavor compounds of onions were analyzed and compared during storage at $0.5^{\circ}C$, which harvested in 6 regions, such as Muan, Buan, Andong and 3 regions of Changnyeong (Yueo, Jangma and Seongsan). A total of 45 compounds were detected in samples by solid phase microextraction (SPME)/GC/MSD, consisting mainly of sulfur-containing compounds (21), aldehydes (13), ketones (2) and miscellaneous compounds (9). The sulfur-containing compounds were major compounds with ranges of $66.9{\sim}86.9%$ of total volatiles in 0 day of storage as regardless of harvested regions. Three regions (Yueo, Seongsan and Muan) had high amounts of over 4,043 ng/g in 0 day of storage, whereas 2 regions (Muan and Yueo) only had amounts of over 2,400 ng/g after 60 days of storage. Five sulfur-containing compounds known as having antioxidant activity (2,4-, 2,5-dimetylthiophene, 2-vinyl-1,3-dithiane, 5-methoxy thiazole and 3,5-diethyl-1,2,4-trithiolane and isomer) were the high levels in 3 regions (Yueo, Seongsan and Muan) during 60 day of storage. These 3 regions had also the highest amounts in 5 sulfur-containing compounds known as having anticarcinogenic activity ((Z)-, (E)-methyl propenyl disulfide, (Z)-, (E)-propenyl propyl disulfide, and di-2-propenyl disulfide) and kept same trend after 60 days of storage.
This study was to investigate the potential effects of fermented Angelica gigas Nakai (FAG) at 5% (w/w) levels in Sprague-Dawley strain rats, which were intoxicated with 1% (w/w) orotic acid (OA) for 10 days. The activities of several hepatic enzymes, including aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH), and cholinesterase were increased when OA was treated, but these parameters were significantly decreased by FAG administration. OA treatment induced a significant increase in the thiobarbituric acid reactive substances (TBARS) levels, which was attenuated by FAG administration. Liver nonheme ion was decreased in the OA treatment group and was significantly increased in FAG administration, which suggests that lipid peroxidation contents are inversely correlated with liver nonheme ion content. The glutathione concentration was significantly decreased in the OA treatment group compared with the normal group, but this concentration was significantly increased in the FAG group, and it showed the antioxidant ability of glutathione. Based on these results, fermented Angelica gigas Nakai is a material with significant potential for development into a health food that can improve fatty liver conditions.

Red yeast rice has been extensively used as a food and traditional medicine for thousands of years in Korea. Monascus produces many secondary metabolites during its growth, including pigments, monacolins, and γ-aminobutyric acid. Some metabolites, specifically monacolin K, γ-aminobutyric acid, and dimerumic acid, have been reported to lower cholesterol and blood pressure because of certain antioxidant effects. This study investigated the total phenolic content of ethanol extract from red yeast rice fermented with Monascus sp. BHN-MK and its anti-inflammatory effect on LPS-stimulated RAW 264.7 macrophage cells. To assess its anti-inflammatory effect, the inhibitory activity of the ethanol extract on LPS-induced NO production and expression levels of iNOS and COX-2 proteins in macrophage cells were measured. Its total polyphenol content was higher than that of ordinary non-fermented rice. Its NO production inhibition activity was comparable to that of the negative control group treated with LPS at a concentration of 400 ㎍/ml. Western blot revealed a significant decrease in the inhibition of iNOS and COX-2 protein expression at concentrations of 400 and 800 ㎍/ml, respectively. Red yeast rice ethanol extracts exerted the strongest anti-inflammatory effects. The results indicate that red yeast rice could be used as a functional cosmetic and anti-inflammatory material.
The antioxidant, whitening, and anti-wrinkle activity of Spirodela polyrhiza extracts and fractions were evaluated to determine its efficacy as a functional cosmetic material. 1,1-diphenyl-2-picrylhydrazyl and 2,2'-azinobis-3-ethylbenzothiazoline-6-sulfonic acid radical scavenging activities were 44.2 and 74.3%, respectively, at 100 ㎍/mL of SE-E (the ethyl acetate fraction of 70% ethanol extract). To measure anti-wrinkle effects, procollagen biosynthesis and matrix metalloproteinase-1 (MMP-1) inhibition activity were determined. At 25 ㎍/mL of SE (70% ethanol extract), the biosynthesis activity was 48.5%, and SE-E showed the best activity (57.8%) at the same concentration. MMP-1 inhibition activity of SE and SE-E was 13.4 and 28.5%, respectively, at 25 ig/mL. Finally, the inhibition of cellular melanin synthesis and cellular tyrosinase were measured to determine the whitening effect; at 25 ㎍/mL, the inhibition activities of SE were 9.6 and 13.8%, respectively, and those for SE-E were 15.4 and 22.0%, respectively. Our results confirmed the possibility of SE and SE-E as effective functional materials. Further research investigating the antimicrobial, anti-inflammatory, and anticancer activities of S. polyrhiza is necessary to confirm its potential use in the food, cosmetics, and drug industries.
Coffee is one of the most widely consumed beverages in the world, and sword bean (Canavalia gladiata, SB) reportedly possesses various biological activities. Therefore, in this study, to reduce caffeine intake and improve coffee function, SB was selected as a supplementary material for blending coffee. The antioxidant and anti-inflammatory activities of coffee with the SB extract at concentrations of 0.1-0.5% (v/v) were evaluated using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and RAW 264.7 cells, respectively. The DPPH radical-scavenging activity of SB-treated coffee depended on the concentration of the SB extract. In the cell culture experiment, cytotoxicity was not observed at any SB concentration. In addition, the inducible nitric oxide synthesis protein expression as well as the increases in nitric oxide and interleukin-6 expression were effectively inhibited by SB addition to the coffee. These results indicate that SB might be useful as a supplementary ingredient to enhance the caffeinated drink functions.
Hair graying is processed by loss of melanin production caused by the decrease of activity and number of melanocyte and the accumulation of hydrogen peroxide ($H_2O_2$) in the hair follicle with increase of age. The purpose of this study was to investigate the effect the Black oryzasativa ethanolic extract (BLEE) on the melanin production. In this study BLEE at $8{\mu}g/ml$ or more showed a significant 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging activity and reduction power. BLEE at $16{\mu}g/ml$ or more showed promoted tyrosinase activity and melanin production. In addition BLEE scavenged intracellular $H_2O_2$ in 2',7'-dichlorodihydrofluorescein (DCF) fluorescence assay in B16F1 cells. However, Western blot analyses displayed that BLEE decreased the expression level of catalase, but no effect on the expression level of tyrosinase, tyrosinase associated protein-1 (TRP-1), tyrosinase associated protein-2 (TRP-2) and microphthalmia-associated transcription factor (MITF) transcription factor involved in melanogenesis. Thus, the promotive effect of BLEE on melanin production is attributed to the increase of tyrosinase activity and the reduction of intracellular $H_2O_2$ level. In conclusion, BLEE played a key role in in promoting melanin production, which suggests that the BLEE could be applied as a potential functional material in the development of hair care cosmetics related to the promotion of melanin production for the growth of black hair.

Studies for the commercial production of sesame oil using th supercriticl carbon dioxide were made. Characteristics of sesame oil containing one of natural antioxidant 'sesamol', which only exist at sesame seed were also studied during the supercritical fluid extraction. Among the various factors influencing the sesamol contents in the sesame oil, the roasting time and temperature were checked, because sesamol can be converted from sesamol in through pyrolysis. We found that the sesamol content was increased rapidly under the condition of roasting temperature over $200^{\circ}C$ with longer roasting time. The sesamol content was increased as the temperature and pressure increased, which was caused by increase of solubility of sesamol against sesamol oil. And the sesamol content was increased also with lower speed of supercritical fluid, which increased the contact time with the raw material. The sesamol content was also increased using water increase up to $1\%$ as the entrainer. When the extraction performance with the supercritical fluid was compared to the conventional compressed extraction, the sesamol content was increased up to 11.5 times with the entrainer.

If human skin is exposed to high concentrations of particulate matter (PM2.5 and PM10) for a long time in the outdoor environment such as subway tunnel, it will be adversely affected. In particular, fine particles can damage the skin, causing inflammation and allergic reactions. This study investigated the ability of evening primrose root (EEPR) extract to suppress the skin damages caused by the fine particles. PM was collected from a subway tunnel, where high concentrations have been reported per day over the course of a study. The EEPR had higher antioxidant activity than that of control group (62.6%). The mixture of EEPR and PM inhibited the production of nitric oxide (NO), thereby alleviating skin inflammation caused by fine particle dust. EEPR had weaker cytotoxic activity than the positive control. When cells were exposed to particulate-type dust (PM10), the levels of free radicals were decreased with the increased concentrations of the extract (5, 10, 20 ㎍/mL). While at the same time more effective than positive controls. Therefore, this study proved that the Moonlight flower root extract can be used as a cosmetic material for skin by providing an effect to alleviate skin damage caused by fine particle-type dust.
This study was conducted to investigate of hepatoprotective effect of dandelion water extract (DWE) according to repeated administration of thioacetamide (TAA) induced hepatotoxicity in Spraque-Dawley rats. Thirty rats were randomly assigned to 5 groups; normal control, DWE-control, TAA-control (TAA injection during the feeding of normal diet), TAA&DWE600 (TAA repeated injection during the feeding of DWE 600 mg/kg BW), TAA&DWE1200 (TAA repeated injection during the feeding of DWE 1,200 mg/kg BW). Rats in DWE-control and TAA&DWE groups were treated with DWE (600 or 1,200 mg/kg BW daily) by gavage for 20 days (twice a day). All the rats in the TAA-control and TAA&DWE groups were repeated injection of TAA (100 mg/kg BW) into the abdominal cavity 3 days interval and 12 hrs later, all rats were sacrificed. At the same time, normal control and DWE-control groups were injected normal saline. In TAA&DWE groups, serum alanine and aspartate aminotransferase (ALT, AST) were significantly decreased and triglyceride (TG) synthesis was significantly increased compared to TAA group. As well as total billilubin and GGT were slightly decreased by the treatment of DWE. Lipid peroxidation (MDA) concentration was significantly decreased and hepatic GSH content was slightly or significantly increased in the TAA&DWE groups compared to TAA group. Hepatic anti-oxidative enzyme activities, such as GSH, GST, SOD and catalase were slightly or significantly elevated by the treatment of DWE. According to these results, When dandelion extract was long term supplied, it could be used as a potential protective material for a longer time liver damage by repeated adminstration of the TAA.
