This study was performed to apply a protein film containing a natural antimicrobial compound to meat packaging and determine quality change of meat during storage. Proteins obtained from the by-products of food processing have been utilized as biodegradable film sources. Porcine meat and bone meal (MBM) is obtained during meat processing, and proteins from the MBM can be extracted and used as a film base material. Previously, an antimicrobial MBM film containing coriander oil (CO) was prepared and its physical properties and antimicrobial activity were characterized. In this study, the antimicrobial MBM-CO film was applied to beef patties packaging, and the microbial population and the degree of lipid oxidation were determined during storage at 4℃ for 15 d. The population of inoculated E. coli O157:H7 in the samples wrapped with the MBM-CO film was 6.78 log colony forming unit (CFU)/g after 15 d of storage, whereas the control had 8.05 Log CFU/g, thus reducing the microbial population by 1.29 Log CFU/g. In addition, retardation of lipid oxidation in the patties was observed during storage for the samples packaged by the MBM-CO film, compared with the control samples. These results suggest that the MBM-CO film can be useful for enhancing the quality of beef patties during storage.
To develop a wrapping film, which suppresses the microbial decay through the storage and distribute of greenhouse fresh produce, the antimicrobial packaging films were made and applied to the preservation of grapes(Campbell early). For the purpose the films were made by adding 1% grapefruit seed extract(GFSE) to LDPE film(Control). Graps were separately wrapped with packaging films in the state of closely-adhered packaging as well as modified atmosphere packaging(MAP). The wrapped grapes were stored at 5$^{\circ}C$ for 65 days and then the colony count of contaminated microorganims, decay ration of grapes, the gas component within the packages and chemical qualities were investigated. The antimicrobial film packaging showed the efficient results to suppress microbial growth as compared with control. The total number of containated microorganisms were decreased gradually through all the storage period. In the closely-adhered packaging and MAP the decay ratios of grapes was 31% and 19%, indivisually. After the storage period of 65 days, the interior gas components of MAP were 4.5% of O2 and 17.6% of CO2, which were efficient for the storage of grapes. In addition, no negative effects in sweetness and acidities occurred.
Polylactic acid (PLA) is a biodegradable and renewable polymer, which represents a valuable alternative to plastic packaging films, often associated with environmental problems. In this study, we tested the suitability of PLA as a biodegradable packaging film and assessed the antimicrobial activity of lemongrass oil (LO), incorporated into the PLA film in different concentrations. To obtain the optimal physical properties for PLA films, tensile strength, elongation at break, and water vapor permeability were measured under different preparation conditions. In addition, the antimicrobial activity of the LO contained in the PLA film against Listeria monocytogenes was investigated by disc diffusion and viable cell count. Among all concentrations tested, 2% LO was the most suitable in terms of antimicrobial activity and physical properties of the PLA film. Based on these results, we used the PLA film containing 2% LO to pack pork sausages; after 12 d of storage at 4℃, the population of inoculated L. monocytogenes in the sausage samples wrapped with the PLA film containing 2% LO was reduced by 1.47 Log CFU/g compared with the control samples. Our data indicate that PLA films containing 2% LO represent a valuable means for antimicrobial sausage packaging.
The term 'antimicrobial' packaging encompasses any packaging technique(s) used to control microbial growth in the food product. These include packaging materials and edible films and coatings that contain antimicrobial agents, and also techniques that modify the atmosphere within the package. In recent years, antimicrobial packaging has attracted much attention from the food industry because of the increase in consumer demand for minimally processed, preservative-free products. Reflecting this demand, the preservative agents must be applied to packaging in such a way that only low levels of preservatives come into contact with the food. The film or coating technique is considered to be more effective, although more complicated to apply. New antimicrobial packaging materials are being developed continually. Many of them exploit natural agents, to control common food-borne microorganisms. Current trends suggest that in due course, packaging will generally incorporate antimicrobial agents and the sealing systems will continue to improve. The focus of packaging in the past has been on the appearance, size and integrity of the package. A greater emphasis on safety features associated with the addition of antimicrobial agents is perhaps the next area for development in packaging technology.

This study investigated the antimicrobial activity of soy protein isolate (SPI) film containing green tea extract (GTE, 1-4%, w/w) on dental caries-inducing bacterium (Streptococcus mutans), food pathogenic (Staphylococcus aureus, Escherichia coli 0157, Salmonella typhimurium), and spoilage (Pseudomonas aeruginosa) bacteria. The physical and mechanical properties of the SPI film containing GTE were also studied. The SPI film containing GTE (4%, w/w) exhibited good antimicrobial activity against S. mutans and S. aureus. The antimicrobial activity of the SPI film containing GTE increased against S. mutans as the concentration of GTE increased up to 4%(w/w). SPI films containing GTE showed lower tensile strength and elongation, and higher total soluble matter than those of control SPI film. Therefore, GTE can be used as one of antimicrobial agents for anti-dental caries and food packaging films.
The antimicrobial extracts of rheum palmatum and coptis chinensis root as well as grapefruit seed extract(GFSE) were applied to dipping treatment for keeping qualities of cucumbers, respectively, which were then packed in low density polyethylene(LDPE) films incorporated with 1 % antimicrobial extracts and stored $10^{\circ}C$. Dipping and packaging in the antimicrobial agents suppressed the growth of putrefactive microorgani는 and the decay ratio of cucumbers. In addition, the loss ratio of ascortic acid content and their weight was decreased during the sotrage of cucumbers. Consequently, the combined method of dippinf and packaging in antimicrobial agents turned out to be superior to dipping treatment or film-packaging in the view point of decay ratio and the keeping qualities of cucumbers.

This study were investigated to analyzed an optimum preparation condition of coating film and its antimicrobial activity on pathogenic and deteriorative bacteria to obtain fundamental data for development of active packaging film using antimicrobial peptide, polysine. In the preparation conditions of coating film, antimicrobial activity was depending on the concentration of polylysine and polyamide respectively, and relatively high activity was obtained in the film prepared with more than $1.0\%$ (w/v) of polylysine, $40\%$ (w/v) polyamide, and more than $50\;{\mu}m$ of film thickness. Concentration of polylysine migrated from coated film to distilled water was reached at the maximum concentration, about 20 ppm after 3 days and in equilibrium after 7 days of soaking in sterilized water. An antimicrobial activity of coated film showed bactericidal effect of about $10^5\;CFU/mL$ comparing with the control against Bacillus cereus having $4.8{\times}10^5\;CFU/mL$ of initial viable cell numbers, and of about $10^2\;CFU/mL$ comparing with the control against Klebsiella pneumoniae having $6.8{\times}10^5\;CFU/mL$ of initial viable cell numbers. Consequently, it was revealed that polylysine coating film has a potential of applicable possibility as antimicrobial packaging film.
In this study, ethylene vinyl acetate (EVA) and low density polyethylene (LDPE) composite films (EVA/LDPE-OSP) containing calcined oyster shell powder (OSP) were prepared using twin-screw extruder as an antimicrobial packaging material. The OSP composite was initially prepared and then incorporated into an EVA/LDPE blend at different ratios (0, 1, 3 and 5%) to develop the EVA/LDPE-OSP composite films. The as-prepared EVA/LDPE-OSP composites films were evaluated using FT-IR, DSC, TGA, OTR, WVTR, SEM and UTM as well as antimicrobial activity was examined using JIS Z 2801:2000 standard. OPS endowed the antimicrobial potency to the composite films against Gram-positive (Staphylococcus aureus) and Gram-negative (Escherichia coli) bacteria. In addition, the incorporation of OSP remarkably enhanced the thermal stability. OSP as a natural biocidal agent can be used as a multifunctional additive in packaging industry such as improving the thermomechanical properties and preventing the microbial contamination of packaged products.
The adsorption of the antimicrobial compounds(AMCs) and their heat-resistance were investigated for the packaging film manufacture, wherein, the antimicrobial compounds were adsorbed on a silica component. The naturally source antimicrobial compounds were produced by methylotropic actinomycetes strains MO-16 and MO-17, extracted with ethylacetate. Antimicrobial compounds adsorbed on water-soluble silica had retained activity against Gram(+) and the Gram(-) bacteria after heat treatment at 150$\^{C}$ for 5min. The benzoic acid showed strong antimicrobial activity to fungi and was stable to heat treatment. The combination of antimicrobial compound plus benzoic acid was synergistic against test strains. Therefore, we estimated that the water-soluble silica is suitable for the packaging film manufacture as a adsorbent of the antimicrobial compounds.
This article described the development of transparent antimicrobial oxo-biodegradable (AOB) film with the function of enhanced freshness of food by employing oxo-biodegradable masterbatch (MB) and antimicrobial MB together with organic metal salt, organic acid, or unsaturated fatty acid. Antibacterial test of the AOB film with the different contents of the antimicrobial MB resulted in the significant freshness extension of plum. Tensile strength and elongation rate of the AOB films before UV treatment were similar to those of polyethylene films used as control. The reduced mechanical properties of AOB film after UV treatment (340 nm) suggested that the AOB film could be degraded by oxo biodegradation. The developed AOB films can effectively prevent decomposition of food by providing antibacterial function and preserving freshness.
