  • 식중독(식품 매개 질병)은 전 세계적으로 심각한 공중보건 문제와 경제적 손실을 초래한다. 최근 몇 년 간 새로이 발생한 식중독은 주로 동식물에서 유래하는 새로운 박테리아, 바이러스, 원생 동물, 곰팡이독, 그리고 프리온에서 발생했다. 유해 박테리아, 바이러스, 기생충 또는 화학 물질이나 자연 발생 독소 등으로 오염된 불안전한 음식의 섭취는 질병의 발병률과 사망률을 높인다. 그러나 특정 병원성 또는 화학적 위험요인, 불충분한 보고 사례, 감염 전염 방식 및 시기 진단 등에 대한 식품 소재 귀인(歸因)의 어려움 때문에 식중독의 발병률과 부담을 추정하는 것은 전 세계적으로 큰 도전이며 식중독을 통제하는 것은 매우 어렵다. 그러므로 종합적인 식품 안전 전략 및 정책의 시행, 관리 감독 강화, 탄력적인 건강 시스템 보장, 안전한 식품 보장 및 식품 매개 질병 예방을 위한 교육 및 훈련 강화에 대해 모두가 책임져야 한다.

Extracts of Opuntia humifusa Fruits Inhibit the Growth of AGS Human Gastric Adenocarcinoma Cells

  • Opuntia humifusa (OHF) has been used as a nutraceutical source for the prevention of chronic diseases. In the present study, the inhibitory effects of ethyl acetate extracts of OHF on the proliferation of AGS human gastric cancer cells and the mode of action were investigated. To elucidate the antiproliferative mechanisms of OHF in cancer cells, the expression of genes related to apoptosis and cell cycle arrest were determined with real-time PCR and western blot. The cytotoxic effect of OHF on AGS cells was observed in a dose-dependent manner. Exposure to OHF ($100{\mu}g/mL$) significantly induced (P<0.05) the G1 phase cell cycle arrest. Additionally, the apoptotic cell population was greater (P<0.05) in OHF ($200{\mu}g/mL$) treated AGS cells when compared to the control. The expression of genes associated with cell cycle progression (Cdk4, Cdk2, and cyclin E) was significantly downregulated (P<0.05) by the OHF treatment. Moreover, the expression of Bax and caspase-3 in OHF treated cells was higher (P<0.05) than in the control. These findings suggest that OHF induces the G1 phase cell cycle arrest and activation of mitochondria-mediated apoptosis pathway in AGS human gastric cancer cells.

Nutritional Value of Mealworm, Tenebrio molitor as Food Source

  • Nutrition value of mealworm, Tenebrio molitor was analyzed due to increasing demand of usage as a protein source for domestic animals and even further for human consumption. The purpose of the present work was to determine the chemical compostion of the Tenebrio molitor larvae, adult that were maintained under standard condition for further usage of mass-rearing system and its exuvium, and excreta. Tenebrio molitor, larvae, adult, exuvium and excreta contained 46.44, 63.34, 32.87, and 18.51% protein respectively, suggested that even excreta could be used as an additional supplement in food recycling process. This protein was also rich in amino acids such as Isoleucine, leucine and Lysine which all met the nutritional value recommended by the Food and Agriculture Organization. Fatty acid composition was detected with high component of oleic acid (C18:1), along with linoleic acid (C18:2) and palmitic acid (C16) in all adult, larvae, exuvium and excreta. These oleic acid (C18:1), linoleic acid (C18:2) and palmitic acid (C16) components were the same or even highly contained in excreta of mealworm 22.29, 47.19 and 19.17% respectively. Longer chains of unsaturated fatty acids consisted of two to three double bonds are known as healthy product was recognized in large amount. These results show new ways to consume mealworms and its waste for animal and human consumption.

Substitution of soybean meal with detoxified Jatropha curcas kernel meal: Effects on performance, nutrient utilization, and meat edibility of growing pigs

  • Objective: The study was conducted to investigate the effects of replacing soybean meal (SBM) with different levels of detoxified Jatropha curcas kernel meal (DJM) in growing pig diets on growth performance, nutrients digestibility and meat edibility. Methods: A total of 144 pigs with initial body weight of $20.47{\pm}1.44kg$, were randomly allocated to 6 dietary treatments with 6 replications per treatment and 4 pigs per replication for a period of 79 days. Six diets (DJM0, DJM15, DJM30, DJM45, DJM60, and DJM75) were formulated using DJM to replace 0%, 15%, 30%, 45%, 60%, and 75% of SBM. From d 37 to 42, feces and urine were total collected from six barrows in each treatment. At day 79, thirty-six pigs were slaughtered for sampling. The feed intake and weight gain were recorded, while the intestinal morphology, digestive enzyme activities, nutrient digestibility and the content of residual phorbol esters in muscles were determined. Results: The results showed that increasing the replacement of SBM with DJM decreased the parameters including body weight, average daily gain, average daily feed intake, gain-to-feed ratio, weight and villus heights of duodenum, villus height and villus height/crypt depth of jejunum, digestive enzymes (protease, amylase, lipase, and trypsin) activities, and nutrients digestibility (nitrogen deposition, digestibility of nitrogen, energy digestibility, and total nitrogen utilization) (linear, p<0.05; quadratic, p<0.05) and there was no significant difference among DJM0, DJM15, and DJM30 in all measured indices. The highest diarrhea morbidity was observed in DJM75 (p<0.05). Phorbol esters were not detected in pig muscle tissues. Conclusion: The DJM was a good protein source for pigs, and could be used to replace SBM up to 30% (diet phorbol esters concentration at 5.5 mg/kg) in growing pig diets with no detrimental impacts on growth performance, nutrient utilization, and meat edibility.

  • Carotenoids are widely distributed natural pigments which are in an increasing demand by the market, due to their applicatins in the human food, animal feed, cosmetics, and pharmaceutical industries. Although more than 600 carotenoids have been identified in nature, only a few are industrially important (${\beta}$-carotene, astaxanthin, lutein or lycopene). To date chemical processes manufacture most of the carotenoid production, but the interest for carotenoids of biological origin is growing since theire is an increased public concern over the safety of artificial food colorants. Although much interest and effort has been devoted to the use of biological sources for industrially important carotenoids, only the production of biological ${\beta}$-carotene and astaxanthin has been reported. Among fungi, several Mucorales strains, particularly Blakeslea trispora, have been used to develop fermentation processes for the production of ${\beta}$-carotene on almost competitive cost-price levels. Similarly, the basidiomycetous yeast Xanthophyllomyces dendrorhous (the perfect state of Phaffia rhodozyma), has been proposed as a promising source of astaxanthin. This paper focuses on recent findings on the fungal pathways for carotenoid production, especially the structure and function of the genes involved in the biosynthesis of carotenoids in the Mucorales. An outlook of the possibilities of an increased industrial production of carotenoids, based on metabolic engineering of fungi for carotenoid content and composition, is also discussed.

Cultivation Method of Cordyceps militaris Mycelium Using Tenebrio molitor Larvae to Produce High Content Cordycepin

  • The Food and Agriculture Organization (FAO) has been estimating the potential of insects as human food and animal feed for convincing food security since 2010. On account of this reason, Tenebrio molitor larvae have been gaining considerable attention as an alternative protein source for various foods. However, consumers do not prefer them because of their disgusting appearance. Therefore, it is necessary to develop a method that improve their appearance as to lead to T. molitor larvae consumption. In this study, T. molitor larvae which is prepared for optimally sampling conditions (shade drying, 30 min boiling after hot air drying, 30 min steaming after hot air drying), were cultured with Cordyceps militaris mycelia, and measured growth and density of mycelial. Also analyzed the cordycepin and adenosine content compared with commercial C. militaris. As a result, T. molitor larvae cultivated with C. militaris mycelia showed the highest cordycepin content (13.75 mg/g) was observed in optimal sampling conditions (shade drying). Therefore, we report that the methods which T. molitor larvae cultivated with C. militaris mycelia not only improve their appearance but also increase cordycepin content, which can be contributed to lead T. molitor larvae consumption.

Nutritional Quality and Variation of Meat and Bone Meal

  • Meat and bone meal is a valuable protein and mineral source in diets of production animals and contributes to the protein, energy and mineral component of diets. The aim of the present study was to more accurately characterise the apparent ileal amino acid digestibility of meat and bone meals produced in New Zealand and evaluate routine in vitro assays used in practise to measure meat and bone meal quality. A total of 94 commercial meat and bone meals from 25 New Zealand rendering plants over a two and a half year period were analysed for proximates, gross energy, gross amino acid content (incl. hydroxyproline, hydroxylysine and lanthionine), apparent ileal amino acid digestibility, pepsin nitrogen digestibility, protein solubility and bone content. The mean crude protein content of the 94 meat and bone meal samples was 56.8% with a range of >35% units and a coefficient of variation of 9.8%. The mean crude fat and ash content were 10.0 and 28.4% respectively. These latter components showed a large range (16 and 43%, respectively) with coefficients of variation above 22%. Amino acid digestibility between samples was highly variable with lysine and sulphur amino acids digestibility ranging between 45.8-89.0 and 38.2-85.5%, respectively. Pearson correlation coefficients are presented between crude protein content and individual gross amino acids, crude protein content and individual digestible amino acid content, and pepsin N digestibility and individual digestible amino acid content. There was a significant relationship between the digestible amino acid nitrogen content and the crude protein content while pepsin nitrogen digestibility was not correlated to ileal amino acid nitrogen digestibility (r=-0.06). Meat meals with a high protein content had relatively low hydroxyproline and hydroxylysine levels something that was attributed to the levels of collagen from bone. The data indicated that lanthionine (formed upon heat treatment of cysteine with a hydroprotein) is not a good indicator of the heat treatment employed to meat and bone meals. Step-wise multiple regression equations to predict the apparent digestible content of amino acids from rapid in vitro assays are presented. The most selected variables included ash and crude fat content. In general the equations derived for the essential amino acids had a higher degrees of fit (R2) compared to the non-essential amino acids. The R2 for the essential amino acids ranged from 0.43 for histidine and 0.68 for leucine. These equations provide a means of more rapidly estimating the apparent ileal digestible amino acid content (protein quality) of meat and bone meal using standard analyses.

부산지역 학령전 아동의 아연 섭취 및 소변 중 배설실태에 관한 연구 (A Study on the Zinc Intake and Urinary Excretion of Preschool Children in Busan)

  • To assess zinc status by dietary intake and urinary excretion of preschool children in Busan and to evaluate the relationship of intakes of food and nutrient with urinary zinc excretion, zinc food frequencies of 40 common foods affecting intakes of zinc by food fequency method, nutrient intake by 24hr recall and 24hr urinary zinc excretion were measured with 97 preschool children. The mean zinc intake was 4.29 mg and 43.0% of RDA. The mean zinc intake per 1,000 kcal was 3.09 mg.97.9% of subjects had zinc intake less than 75% of RDA. Grains food group was the primary source of zinc intake and supplied 38.9% of the total daily zinc intake. Altogether, plant food products supplied 49.7% of zinc intake. The mean urinary zinc excretion and zinc excretion per gram of creatinine were 0.19 mg and 1.00 mg respectively. The urinary zinc excretion showed positive significant correlations with height and weight (p < 0.05, p < 0.05) , urine volume and urinary creatinine excretion (p < 0.05, p < 0.001) , urinary zinc excretion per creatinine (p < 0.001) , urinary zinc excretion per weight (p < 0.001) , intakes of energy and carbohydrate (p < 0.05, p < 0.01) and usual intake of zinc from eggs food group (p < 0.05) . In conclusion, these results show that the zinc intake of preschool children is low and that sources of dietary zinc are mainly plant foods, suggesting low bioavailability. So nutritional education is needed in order to inc-rease usual intake of animal food group. Interpretation of urinary zinc excretion data is complicated by current uncertainty about "normal" zinc level at this age group. Further studies are needed to obtain extensive data on urinary zinc excretion for this age group.age group.

Nutrient ileal digestibility evaluation of dried mealworm (Tenebrio molitor) larvae compared to three animal protein by-products in growing pigs

  • Objective: This study was to investigate the nutrient ileal digestibility of dried mealworm (Tenebrio molitor) larvae and compare with those of three animal protein by-products in growing pigs. Methods: A total of 12 crossbred ($[Landrace{\times}Yorkshire]{\times}Duroc$) growing pigs with average body weights of $24.12{\pm}0.68kg$ were surgically equipped with simple T-cannulas after being deprived of feed for 24 h according to published surgical procedures. These pigs had a recovery period of two weeks. A total of 12 pigs were assigned to individual metabolic crates and allotted to one of four treatments with 3 replicates in a fully randomized design. Dietary treatments included the following: i) Fish meal, corn-vegetable by-product basal diet+9.95% fish meal; ii) Meat meal, corn-vegetable by-product basal diet+9.95% meat meal; iii) Poultry meal, cornvegetable by-product basal diet+9.95% poultry meal; iv) Tenebrio molitor, corn-vegetable by-product basal diet+9.95% dried Tenebrio molitor larvae. Results: Results showed that the apparent ileal digestibility (AID) of Lys was higher (p<0.05) in pigs fed Tenebrio molitor diet than that in pigs fed fish meal diet. Pigs fed Tenebrio molitor diet showed increased (p<0.05) AID of His and Arg compared to pigs fed Fish meal or Meat meal diet. The AID of Cys was increased (p<0.05) in pigs fed poultry meal and Tenebrio molitor diets compared to that in pigs fish meal diet. Pigs fed meat meal, poultry meal, and Tenebrio molitor diets showed higher (p<0.05) standardized ileal digestibility (SID) of total energy compared to pigs fed fish meal diet. The SID of Arg was higher (p<0.05) in pigs fed Tenebrio molitor diet than that in pigs fed fish meal or meat meal diet. Furthermore, pigs fed poultry meal or Tenebrio molitor diets showed increased (p<0.05) SID of Cys compared to pigs fed fish meal diet. Conclusion: In conclusion, providing pigs with diets that contained Tenebrio molitor larvae meal improved AID and SID of nutrients as well as essential and non-essential amino acids. The digestibility of dried mealworm larvae protein and its utilization in vivo are also good. Therefore, dried mealworm larvae protein can be used as protein source at 10% level in growing pigs.

식이내 단백질의 수준과 종류가 흰쥐의 Cadmium중독에 미치는 영향 (Effect of Dietary Protein Level and Source on Cadmium Intoxicification in Rats)

  • This study was performed to invstigate the effect of dietary protein level and source on cadmium intoxicification in rats. Forty-eight male rats of Sprague-Dawley strain weighing 171$\pm$3g were blocked into 8 groups of 6 animals according to body weigth, and were raised for 30days. Eight experimental diets different with cadmium(0ppm, 400ppm)and protein(15%, 40%) levels and protein source[casien, I.S.P.(isolated soy protein)] were given to animals for 30days. Food intake, weight gain, food efficiency ratio, liver weight, kidney weight and femur weight were lower in cadmium added group, and higher in high protein groups(40% protein) than medium protein groups(15% protein). But, dietary protein source had no influence on them. Cadmium concerntration of liver was higher in rats fed casein than I.S.P. groups, and cadmium concentration in intestine was higher in high protein groups. In femur both high protein and I.S.P.diets increased cadmium concentrations. MT concdentrations in liver, kidney and intestine were higher in cadmium added group, and kidney intestine MT concentration were higher in high protein group. Absorption and retention rates of cadmium were lower in rat fed I.S.P. than animal fed casein among medium protein groups and cadmium concentration in blood and liver of I.S.P groups were lower than casein groups. But absorption and retention rates of cadmium were similar in high casein and I.S.P. groups. Renal damage by cadmium administration was not seen in all groups. Absorption rates of zinc and copper competing with cadmium in absorption process were lower in high protein groups than medium protein groups and lower in rats fed I.S.P. than casein. In conclusion, weight gain, F.E.R, and MT concentraion of high protein groups were higher than those of medium protein groups and absorption and retention rates of cadmium were lower in high protein groups. From these results, it was shown that cadmium toxicity was alleviated by high dietary protein. Meanwhile, the effect of dietary source on the cadmium toxicity was different with protein level. In medium protein groups absorption and retention rates of cadmium were much lower in rats fed I.S.P. than casein. In high protein groups, cadmium toxicity was not influenced by protein source and absorption and retention rates of cadmium were not different between casein and I.S.P. groups.
