Cooking and Milling Characteristics of Several Barley Starch Isogenic Lines (보리의 전분 Isogenic line들의 취반 및 제분 특성)

  • The relationships among the endosperm structure, physicochemical characteristics and cooking and milling properties were examined in this study by using the isogenic lines which have the same genetic background except starch characteristics. The isogenic lines were bread by combining three pairs of genes, of waxy or non-waxy, fractured or round starch granule, and shrunken or plump endosperm. Although grains weight and chemical compositions of the endosperms did not differ widely, but cooking qualities, amylose contents, $\beta$-glucan viscosities were significant differences between isogenic types. Water absorptions and expansibilities were highest in waxy lines, and lowest in fratured starch granular lines; the smaller the seed sizes were, the higher the water absorptions were. Mixogram pattern of cooked barley varied with the starch properties and milling properties were excellent in fractured granular lines, whereas those properties of the waxy and shrunken endosperm lines were not good.

  • For the use of starch gel like Mook(a Korean traditional gel food), the physicochemical properties and gelatinization patterns of defatted high amylose corn starch were investigated. The crude and total lipid contents of starch decreased by defatting from 0.07%, 0.92% to 0.03%, 0.19%, respectively. But iodine affinity increased from 51.6% to 71.3%. Water binding capacity of starches increased from 104.6% to 117.3% after defatting. Soluble carbohydrate and leached amylose of untreated and defatted starches were increased rapidly above $110^{\circ}C$. The apparent viscosity of starch dispersion using alkali solution increased above 0.3N NaOH solution but the transmittance increased above 0.4 N NaOH. The DSC thermograms of both starches showed broad and double endotherm with relatively low enthalpy, but the second peak of endotherm was larger in defatted starch than in untreated starch.

Quality Characteristics of Puffed Snacks Made from High-amylose Rice Varieties Containing Resistance Starch (저항전분 함유 고아밀로스 품종의 현미로 제조한 팽화 과자의 품질특성)

  • We investigated physicochemical properties of puffed snacks with intermediate and high amylose rice varieties. The intermediate amylose rice varieties 'Sindongjin' and high amylose rice varieties newly developed for food processing, 'Dodamssal' and 'Goami4' were tested for this study. The crude fat and crude protein contents of the rice cultivars ranged 1.47-3.08% and 6.30-7.63%, respectively. The resistant starch and amylose contents of Dodamssal and Goami4 were higher than those of Sindongjin. The hardness of rice was the highest in Sindongjin and Dodamssal. Also, Hardness of puffed snacks decreased by 72.07% for Sindongjin, 88.21% for Dodamssal and 66.67% for Goami4 compared to raw rice samples. The sensory evaluation showed that the highest scores in taste, texture and overall acceptability of puffed snacks were obtained in Dodamssal. The results of this study indicate that Dodamssal was suitable varieties for puffed snacks. Also, the physicochemical properties of Dodamssal were improved by the extrusion process. Therefore Dodamssal can be used for the industrial production of puffed snacks.

  • As studies on the starch properties of barley and naked barley, the granule size frequency distribution, amylose content and blue value of starches seperated from the 11 varieties of barley and 13 varieties of naked barley, which were grown paddies of Office of Rural Development, Iri, Korea in 1972, were determined. The results were as follows: 1. The type of the barley and naked barley starch granules was short oval and the ratio of minor axis to major axis was 1 to 1.2. Diameter of the starch granules was in the range of $4.0{\sim}6.0\;{\mu}$ to $32.0{\sim}37.0\;{\mu}$ is and medium granule of the naked barley was $10{\sim}22\;{\mu}$ on the contrary to $16{\sim}20\;{\mu}$ of the barley starch. Average size of the naked barley starch was larger than that of the barley and some differences were observed between varieties. 2, Amylose contents of the barley and the naked barley starches were in the range $27.5{\sim}30.5%$ and average of the barley was 29.4% a little higher than 28.2% of the naked barley and observed of some differences between varieties. 3. Blue values of the barley and the naked barley starches were in the range $0.47{\sim}0.54$, and average was 0.51.

QTL Mapping of Genes Related with Grain Chemical Properties Based on Molecular Map of Rice

  • This study was conducted to investigate the chromosomal locations and effects of quantitative trait loci (QTL) associated with chemical properties of rice (Oryza sativa L.). One hundred sixty four recombinant inbred lines (MGRILs) of $F_{11}$ were derived from the cross between Milyang 23, Tongil type, and Gihobyeo, japonica type. They were evaluated for 7 traits of chemical property in rice. Transgressive segregation was observed for all traits examined. Eight significant QTLs were detected (LOD$\geq$2.0) for five traits, including two QTLs for amylose content, two QTLs for potassium content, one QTL for ratio of magnesium to potassium, one QTL for fat content and two QTLs for ash content. Phenotypic variation explained by each QTL ranged from 7.2% to 14.4%. However, no significant QTL was detected for magnesium and protein contents. In amylose content and ash content M alleles originated from Milyang 23 were responsible for increasing these traits and J alleles originated from Gihobyeo also responsible for increasing these traits. Pleiotropic effects of single QTLs on different traits are observed.

Sugars in Korean and Japanese Pumpkin (한국산 호박 및 일본산 호박의 당 성분에 관한 연구)

  • Sugars in Korean and Japanese pumpkin were studied. The sugars in pumpkin were crushed and extracted by boiling for 30 min. Korean pumpkin was found to contain 0.41% of sucrose, 0.54% of fructose, 0.61% of glucose and 0.68% of starch. Japanese pumpkin was found to contain 2.60% of sucrose, 2.76% of fructose, 1.91% of glucose and 1.22% of starch. No other mono- and oligosaccharides were detected in the test of TLC and HPLC. Starch in Japanese pumpkin showed only signal of $\alpha$-1,4-glucosidic linkage by proton NMR analysis, and showed 86% of absorbance by iodine reaction compared with amylose(DP 117). These results indicated that starch in Japanese pumpkin is composed by only amylose. Pectin contents of Korean and Japanese pumpkin sowed 6.29% and 2.67%, respectively, as galacturonic acid by carbazole analysis.

Studies for Physicochemical and In Vitro Digestibility Characteristics of Flour and Starch from Chickpea (Cicer arietinum L.)

  • Flour and isolated starch from chickpea (desi type, 328S-8) were evaluated for their in vitro digestibility and physicochemical properties. The protein content, total starch content and apparent amylose content of chickpea flour and isolated starch were 22.2% and 0.6%, 45.8% and 91.5%, and 11.7% and 35.4%, respectively. Chickpea starch granules had an oval to round shape with a smooth surface. The X-ray diffraction pattern of chickpea starch was of the C-type and relative crystallinity was 24.6%. Chickpea starch had only a single endothermic transition (13.3 J/g) in the DSC thermogram, whereas chickpea flour showed two separate endothermic transitions corresponding to starch gelatinization (5.1 J/g) and disruption of the amylose-lipid complex (0.7 J/g). The chickpea flour had a significantly lower pasting viscosity without breakdown due to low starch content and interference of other components. The chickpea starch exhibited significant high setback in the viscogram. The average branch chain length, proportion of short branch chain (DP 6~12), and long branch chains (DP${\geq}$37) of isolated chickpea starch were 20.1, 20.9% and 9.2%, respectively. The rapidly digestible starch (RDS), slowly digestible starch (SDS) and resistant starch (RS) contents of chickpea flour and starch were 9.9% and 21.5%, 28.7% and 57.7%, and 7.1% and 9.3%, respectively. The expected glycemic index (eGI) of chickpea flour (39.5), based on the hydrolysis index, was substantially lower than that of isolated chickpea starch (69.2).

Physicochemical Properties of Japonica Non-Waxy and Waxy Rice during Kernel Development

  • In this study we examined the changes in weight and dimension, protein and amylose contents, and pasting properties of brown rice flour, as well as the gelatinization properties of starch, from two non-waxy japonica cultivars and one waxy japonica cultivar planted in an experimental field in 2002 under the same fertilizer conditions. The weight of both rough and brown rice increased consistently up to 42 days after flowering (DAF) for the non-waxy rice and to 35 DAF for the waxy rice. The changes in dimension of the brown rice kernel indicated that the length was maximized first, followed by breadth and then thickness. The protein content of the non-waxy rice remained fairly constant, but that of the waxy rice decreased by about 1% after 14 DAF. The amylose content of the non-waxy brown rice flour increased, but that of the waxy brown rice flour decreased during kernel development. As the kernel developed, the peak viscosity of the non-waxy rice flour increased up to 35 DAF, after which it decreased, whereas that of the waxy brown rice flour increased consistently. The gelatinization temperature of starch also increased in the waxy rice during kernel development up to 21 DAF. The gelatinization enthalpy of starch, however, increased in all rice cultivars throughout the kernel development.

An adaptable to climatic change and early maturing rice variety 「Gawaji 1」 for double cropping system in Gyeonggi-Do, northern area of South Korea

  • 'Gawaji 1', an early maturing and low amylose content rice variety adaptable to double cropping system with barley as later winter crop., was developed by the crop breeding team of Crop Research Division, GARES, Hwaseong, Korea in 2016. 'Gawaji 1' was derived from a cross between 'Baegjinju' and 'Sangmibyeo' in 2004. This variety had heading date of August 4 in Gyeonggi Province. It had a semi-elect plant type and resistance to lodging with strong culm. Its culm length was 67 cm. This variety had 15 tillers per hill and 104 spikelets per panicle. It was medium grain variety showing 1,000 grain weight of brown rice of 19.3g. Its protein contents of milled rice was 8.2% which was lower than 'Baegjinju'. Its milling ratio was 75.5% which was higher than 'Baegjinju'. The yield of milled rice was 5.0 MT/ha under the ordinary culture of the local adaptability test in 3 areas of Gyeonggi Province for three years. 'Gawaji1' is highly adaptable to Gyeonggi Province, especially to northern region of Han River.

Effects of carbonized rice hull and wood vinegar on the improvement of cultivation condition and grain quality of rice

  • The effects of environment-friendly materials carbonized rice hull and wood vinegar on the improvement of rice quality and soil fertility were investigated. Combined application of carbonized rice hull and chemical fertilizer resulted in lower protein in rice, similar amylose content and generally higher palatability values. Combined application of wood vinegar and chemical fertilizer obtained high protein and amylose contents, and palatability values. However, both carbonized rice hull and wood vinegar did not exhibit weed control. In the carbonized rice hull treatments, soil K was high during heading stage while soil pH during harvest stage was low. In the case of wood vinegar treatments, clear distinction between total K and Ca was observed. K was high during tillering stage while Ca was high until harvest stage.
