Effects of Deoxynivalenol Reduced Barley Flours on Breadmaking Properties (Deoxynivalenol을 감소시킨 보릿가루의 첨가가 제빵 특성에 미치는 영향)

  • Deoxynivalenol (DON)-contaminated barley was treated with 0.1 M $Na_2CO_3$ solution to reduce DON content. DON content of barley was reduced from 2.08 to 0.67 ppm. Bread was made with 10, 20, and 30% DON-reduced barley flour added to white wheat flour. Farinogram showed water absorption and arrival time increased, while stability and mechanical tolerance index decreased when DON-reduced barley flour was added to white wheat flour. Gelatinization temperature, temperature at maximum viscosity, and maximum viscosity increased in amylogram with increasing addition of DON-reduced barley flour. Loaf volume of bread decreased with increasing amount of DON-reduced barley flour, while loaf weight increased. Barley flour pH increased by treatment with$Na_2CO_3$, and pH reduction decreased fermentation rate of yeast. Volume and size of gluten matrix decreased and crumb hardened in bread made with DON-reduced barley flour. Acceptabilities for color and texture were low in bread made with DON-reduced barley flour. Addition of DON-reduced barley flour at 30% reduced overall acceptability, whereas no significant difference in overall acceptability was observed when DON-reduced barley flour was added at 10 and 20%.

The Effect of the Varieties and Particle Size on the Properties of Rice Flour (품종 및 입자크기가 쌀가루의 특성에 미치는 영향)

  • Seven rice varieties(Suweonjo, Suweon232, BG276-5, IR44, IR41999-139, Suweon230 and Yongjubyeo) were used to study the effect of particle size on the physicochemical properties(proximate analysis, color values, amylogram, water absorption index and water solubility index) of rice flours. Suweonjo had the highest amylose content (27.07%) and Yongjubyeo had the lowest one (17.17%). Suweonjo had the highest protein content (11.36%) and IR44 had the lowest one (6.75%). Protein content of rice flours prepared in a pin mill was decreased as particle size of rice flours decreased. L value of rice flour was increased as particle size of rice flours decreased while b value and ${\Delta}E$ value decreased. Maximum viscosity, cold paste viscosity, breakdown, total setback in amylogram properties were increased as particle size of rice flours decreased while initial paste temperature decreased. Water absorption index (WAI) and water solubility index (WSI) were increased as particle size of rice flour decreased.

  • This experiment was conducted to investigate the endosperm characteristics of an opaque rice which was derived from an Indica cultivar Pokhareli Mashino. Grain apperance of opaque rice looked similar to the waxy grain, while the blue-color response to the iodine solution was similar to non-waxy endosperm. The shape of starch granules was alike each other, but their size were different each other with the smallest of the opaque rice. Their cristaline structure of starch granules were A type. The content of total protein and most of the amino-acids of opaque rice was about 1.5 times of other varieties. Alkali digestibility of the opaque rice was very low. Total water uptake and hydration rate of opaque rice was similar to non-waxy variety Tongil. Amylogram characteristics such as viscosity, setback and consistency of opaque rice revealed medium value between. waxy and non-waxy rice.

Effect of Chestnut Flour on the Rheology of Dough and Processing Adaptability of White Pan Bread (밤가루 첨가가 밀가루 반죽의 물성과 제빵 적성에 미치는 영향)

  • The effects of replacement of wheat flour with 10, 20, and 30% chestnut flour on the bread-making properties and quality characteristics of bread were evaluated. Among the physical characteristics of the dough, the development time in the farinogram decreased with increasing amounts of chestnut flour, and the dough stability and durability were reduced. In the amylogram, there was a slight increase in the gelatinization starting temperature when compared to the control flour, but the maximum viscosity gradually decreased in response to increasing amounts of chestnut flour. The expansion ratio did not increase in the dough containing 20 or 30% chestnut flour. Moreover, the loaf volume and specific volume of bread containing 20 and 30% chestnut flour were smaller than those of the control and the 10% treatment. The hardness of bread containing 10% chestnut flour($700g/cm^2$) was lower than that of the other treatments($1413-1,627g/cm^2$). Furthermore, bread containing 10% chestnut flour had denser porous structures than the other treatments. The sensory evaluation tests revealed that the 10% treatment had higher sensory scores for the internal and external qualities of bread than the other treatments.

Changes in Quality Characteristics of Brown Rice During Storage (저장중 현미의 품질 특성 변화)

  • The quality changes of brown rice during storage were determined by the method of quantitative analysis of n-hexanal, amylogram, texture and volume expansion. The qualities of stored brown rice were also analyzed with sensory evaluation of cooked milled rice obtained from brown rice, n-Hexanal content, peak viscosity and total setback of brown rice flour pastes increased substantially with the increased of storage period at 35$^{\circ}C$. Up to 10 months of storage at 35$^{\circ}C$, stale flavor obtained by a sensory method markedly increased, but stickiness decreased. The scores of overall preference were in good agreement with those of stale flavor (r=-0.98) and sticky texture (r=0.98). The correlation coefficient between stale flavor obtained by a sensory method and instrumetal analysis for stored brown rice was r=0.97.

  • The texture and descriptive sensory characteristics of a Korean rice cake(Karedduk) with added emulsifier were investigated after 2 and 24 hrs of storage at $5^{\circ}C$. The emulsifier, SP, was added at 0, 0.1, 0.5 and 1% levels to the dry rice flour. In the amylogram, the peak viscosity(P), hot paste viscosity(H) and cold paste viscosity(C) of the rice flour with added emulsifier were higher than those of the control. The texture property analysis by a Texture Analyzer revealed that the springiness, cohesiveness and adhesiveness of the Korean rice cake(Karedduk) with added emulsifier were similar to those of the control, while chewiness, gumminess and hardness were lower compared to the control. Also, the hardness by sensory characteristics was significantly different as compared to the control. Lastly, adding emulsifier to the Korean rice cake(Karedduk) was effective at retarding retrogradation.

Physical and Chemical Characteristics of Punux Ginseng Starch (인삼전분의 이화학적 특성)

  • Starch was isolated from 4-year-old and 6-year-old ginseng roots and its physical and chemical characteristics were studied. The results obtained were summarized as follows. 1. The shape of ginseng starch granules was polygonal and rounded with its granule size ranging from 2.0 to 7.5$\mu$. The swelling power of 4-year-old ginseng starch was much greater than that of 6-year old ginseng starch. Gelatinization pattern showed that 6-year-old ginseng starch gelatinized rapidly at $65^{\circ}C$, whereas 4-year-old starch continued to gelatinize, without having a definite gelatinization temperature as temperature increased 3. Amylogram of ginseng starch showed that gelatinization initiated at 61$^{\circ}C$ and was completed at 88$^{\circ}C$ with its viscosity reaching at 810 B.U. 4. The amylose contents were 32% and 9% for 4-year-old and 6-year-old ginseng starch, respectively. 5. X-ray diffraction analyses indicated that there were some structural differences between 4-year-old and 6-year-old ginseng starch.

Physicochemical Properties and Baking Studies of Yam(Dioscorca aimadoimo) in Korea (한국산 단마(Dioscorea aimadoimo)의 물리화학적 특성 및 제빵 시험)

  • In an attempt of develop composite flours, D. aimadoimo of yams in Korea was investigated with respect to its physicochemical properties and sensory analysis with baking bread. The results are summarized as follows ; 1. Yam had 73.21% of water, 21.65% of carbohydrate, 3.3% of crude protein, 0.25% of fat, 1.60% ash and 20.3%of starch. 2. Sucrose was 78% of the total free sugars in yam flour. It was contained which 67% of total free amino acids were serine, arginine & alanine and 23.6% of total amino acids was glutamic acid. 3. As the yam flour level in amylogram patterns (8% dry basis) was increased, the initial pasting temperature was increased and the viscosity decreased. 4. Replacement of yam flour with 10% wheat flour was the bests in sensory evaluation of the products.

Effects of Adding Sugars and Lipids on Characteristics of Cooked Rice (당류 및 유지류 첨가가 밥의 특성에 미치는 영향)

  • To investigate the effect of adding sugars and lipids on characteristics of cooked rice, the solubility, swelling power, blue value, amylogram and sensory evaluation characteristics of cooked rices with 0.5, 1.0, 1.5, 2.0% level of sugars and lipids additives were measured. The solubility, swelling power and blue value of cooked rice with sugars were increased as the more sugars were added. Those parameters of the cooked rice with isomalto oligosaccharide were higher than sucrose. The solubility decreased as the more lipids were added. The swelling power decreased as the more lipids were added. As the result of amylograph analysis, addition of isomalto oligosaccharide accelerates the gelatinization and retards the retrogradation. In sensory evaluation, the cooked rice with 0.5% level of sucrose and isomalto oligosaccharide were showed better acceptability than the others. In conclusion, the additions of sugars and lipids affect characteristics of cooked rice. Especially, the cooked rice with 0.5% isomalto oligosaccharide was showed the best physiochemical and sensory properties.

Characteristics of Grain Quality at Different Transplanting Times among Rice Cultivars (벼의 품종별 이앙시기가 미질 특성에 미치는 영향 III. 미립의 호화정도와 식미평가)

  • A study was carried our to investigate the characteristics of physico-chemical components palatability of cooked rice accoring to different transplanting time. The treatments were consisted of five transplanting time, from May 5 to July 5 at 15 -day intervals, and six cultivars ; two early-maturing, two mid-maturing and two late-maturing cultivars which are clearly identified by evaluation of cumulative temperature and growth duration from seeding to heading of rice plants. In gelatinization characteristics of rice grain, alkali digestion value was low in the earlier transplanting regardlessof maturing types. Initial pasting temeprature maximum viscosity and breakdown as amylogram charcteristics were high at the transplanting of June 5. The palatability of cookedrice was evaluated that early-maturing cultivars were much better in early transplanting than in late transplanting . The optimum transplanting time for palatibility was the periods from May 5 to 20 in early maturing varieties, May 20 to June 5 in mid-maturing and June 5 to June 20 in late-maturing ones at Honam district in Korea.
