Brewing and Quality Characteristics of Schisandra chinensis Yakju (오미자약주 제조 및 품질특성)

  • The objective of this study was to determine the effects of Schisandra chinensis on the alcohol fermentation of Korean traditional rice wine 'Yakju', using various methods including alcohol contents, Hunter's color value, organic acid contents, pH value, and sugar contents. The observed results differed according to dosage and fermentation. The S. chinensis Yakju contained various organic acids such as citric, formic, lactic, malic, oxalic acid, shikimic, and succinic acids. In particular, the citric acid contents of S. chinensis Yakju were 9.22, 161.38, 339.28, 458.97, and 634.96 mg/100 mL at doses of 0, 5, 10, 15, and 20% (v/v) of S. chinensis, respectively. The pH of S. chinensis Yakju ranges from 4.11 to 3.57 according to the ratio of S. chinensis. As a result, the citric acid content and pH of S. chinensis Yakju were dependent on the concentration of S. chinensis. On the basis of the Redness value, the S. chinensis Yakju after fermentation (5.16) was approximately 1.8 times more effective than that before fermentation (2.86) at the concentration of 20% (v/v) of S. chinensis. However, S. chinensis has little or no influence on the sugar and alcohol contents of Yakju. These results indicated that S. chinensis was more efficient for improvement of quality characteristics of Yakju.

Effects of Temperature and Alcohol Contents on Quality of Takju during Storage Period (알코올 농도와 저장온도가 탁주 품질에 미치는 영향)

  • This study was performed to investigate the quality characteristics of Takju under different storage temperatures ($4^{\circ}C$ and $20^{\circ}C$) and alcohol contents (6%, 8%, 10%, and 12%) during 90 days of storage. The counts of yeast were lower in Takju samples stored at $4^{\circ}C$ than in those stored at $20^{\circ}C$ after 90 days of storage. No significant differences were observed for total acidity and free amino acid contents in Takju stored at $4^{\circ}C$ during 90 days of storage. Lactic acid contents in Takju stored at $4^{\circ}C$ changed little after 90 days of storage from 1,883.5 mg/L to 1,914.6 mg/L, whereas those in Takju stored at $20^{\circ}C$ increased to 4,736.1 mg/L after storage. Free amino acid contents in Takju stored at $20^{\circ}C$ increased after 90 days of storage regardless of alcohol content. Thus, we concluded that the shelf-life of Takju could be extended more than 30 days, currently the most common shelf-life of Takju, when stored at $4^{\circ}C$.

STUDIES ON THE PROCESSING AND UTILIZATION OF SARDINE PROTEIN CONCENTRATE (정어리 분말단백질 가공 및 이용에 관한 연구)

  • Since 1976 the catches of sardine increased rapidly in Korea. However due to the poor facilities of preservation, most sardine landed was used only for fish meal as feeds. The aims of this study are to investigate the processing of sardine as a protein. concentrate and to solve related problems under our particular circumstances. Using the ethyl alcohol and isopropyl alcohol, the storage effect for further processing, the optimum processing conditions of sardine protein concentrate and amino acid composition of the product were determined. The utilization of sardine protein ,concentrate as a supplement of bread and noodles was also studied. Chopped sardine meat could be stored in isopropyl and ethyl alcohol without significant deterioration as a raw material for tile further processing. High qualify sardine Protein concentrate could be produced by the method, that is five times five minutes extraction with isopropyl or ethyl alcohol at $80^{\circ}C$ under adequate mixing. In the first step of the extraction, the solvent was added as much as 10 times tile sample amount and the equal volume of additional solvent was also used for the second to fifth step extraction. In the products extracted using isopropyl alcohol and ethyl alcohol, the yields of sardine protein concentrate were $21.2\%$ and $20.3\%$ respectively, and the dry basis contents of protein in the two products were $80.5\%$ and $75.8\%$, the lipid being $0.22\%$ and $0.27\%$ respectively. Isoproyl alcohol was superior to superior alcohol for the extraction of fresh sardine. In amino acid composition of sardine protein concentrate, no difference was found between the products of isopropyl and ethyl alcohol extraction except a little difference in the amount of amino acid between them. In the supplementation of bread and noodles, taste panel showed that supplemented bread and noodles were well accepted when $3\%$ of wheat flour was replaced by sardine protein concentrate.

  • The chemical components in sap and heart wood of Q. variabilis and Q.serrate grown in Mt. Jiri were analyzed Q. variabilis ash contents were 0.57%, in sap wood portion and 1.00% in heart wood. Of the extractives cold water extractives were 5.74% in sap wood and 4.77% in heart wood. Hot water extractives were 6.33% in sap, 6.30% in heart wood portion. 1% caustic soda extractives were 15.52% in sap wood and 15.63% in heart wood. Alcohol-benzol extractives were 4.89% in sap wood and 2.96% in heart wood Holocellulose contents were 73.19% in sap wood, 78.83% in heart wood. Lignin contents were 21.76% in sap wood and 18.14% in heart wood portion. In pentosan contents there were 15.92% in sap wood and 26.50% in heart wood. In Q serrata ash contents were 0.26% in sap wood and 0.27% in heart wood. Cold water extractives were 2.81% in sap wood and 2.04% in heart wood. Hot water extractives were 5.32% in sap wood and 7.08% in heart wood portion. 1%-C austic soda extractives were 15.73% in sap wood and 16.55% in heart wood. Alcohol-benzol extractives were 3.93% in sap wood and 3.51% in heart wood. Holo celluloe contents were 74.21% and 74.84% in sap and heart wood portion respectively. Lignin contents were 14.11% in sap wood and 19.19% in heart wood. Of the pentosan contents there were 20.75% and 21.44% in sap and heart wood respectively. In conclution ash, holocellulose, lignin and pentosan contents showed always consistent differences between sap and heart wood in Q.variabilis, but in Q.serrata only lignin content showed slight difference between sap and heart wood.

  • Takju, a Korean traditional wine, was prepared by using nuruk and Koji which were inoculated with Aspergillus kawachii and Aspergillus shirousamii. Those chemical composition such as alcohols and organic acids were determined with gas chromatography to investigate the variation of its content by the fermentation. Alcohol such as methyl, ethyl, n-propyl, i-butyl, i-amyl alcohol were detected in the most takju mash samples. Alcohol contents in the groups fermented with KNR and SNR were slightly higher than KKR, SKR groups. Lactic acid were concentrated and organic acids such as pyruvic, oxalic, malonic, succinic, maleic, malic, ${\alpha}-keto$ glutaric acid were also detected in the most samples. The pH was lowest in the KKR group. The total acid content was slightly decreased at the later fermentation and was highest in KKR. The content of minerals were highest in the WNR and BNR groups. Throughout fermentation the content of potassium and magnesium varied greatly with the tested groups.

  • Muscat Bailey A (MBA) wine was fermented using the indigenous Korean Saccahromyces cerevisiae strains S13 and D8, and the fermentation characteristics were compared with those of S. cerevisiae W-3, an industrial wine yeast. The strains S13 and D8 showed delayed alcohol fermentation compared with the W-3 strain, but the final alcohol contents of the S13 and D8 wines after fermentation were similar to those of the W-3 wine. The S13 wine showed significantly lower malic-acid content than the W-3 wine, but the D8 wine showed a similar level. Both the wines fermented using the S13 and D8 strains showed significantly lower acetaldehyde, methanol, and fusel oil contents, including n-propanol, iso-butyl alcohol, and iso-amyl alcohol, compared to the W-3 wine. Especially, the methanol content was 98.6 mg/L in the S13 wine and 112.0 mg/L in the D8 wine, which were much lower than 192.8 mg/L in the W-3 wine. The S13 wine obtained the highest score in terms of color among the three wines in the sensory evaluation, with lower Hunter's L, a, and b values compared to the W-3 wine.

Quality and antioxidant characteristics of cooked rice the mixture of glutinous rice and cooking methods

  • This study was carried out to compare the cooking and antioxidant characteristics of cooked rice added at various rate of glutinous rice addition and treated with two cooking methods. Cooked rice added with glutinous rice was cooked by general and high pressure cooking method with and without fermented alcohol. Pasting characteristics of cooked rice were decreased as increasing the amounts of glutinous rice. Water binding capacity and swelling power were significant decreased with the amounts of glutinous rice increasing, however water solubility indices were significant increased. Palatability characteristics of cooked rice added with glutinous rice showed similar results to cooked rice without glutinous rice. Total polyphenol contents of cooked rice added with glutinous rice and fermented alcohol were significantly distinct, but there was no significant difference. Total flavonoid contents were increased as increasing the amounts of glutinous rice. Total flavonoid contents by general cooking method of cooked rice added with 20% glutinous rice and fermented alcohol were $23.20{\pm}0.61{\mu}g\;CE/g$. DPPH radical scavenging activities added with and without glutinous rice were 2.97~5.19 and 3.19~5.45 mg TE/100 g, respectively. ABTS radical scavenging activities by high pressure cooking method of cooked rice added with 20% glutinous rice and fermented alcohol were $19.48{\pm}0.63mg\;TE/100g$. In this study, cooking and antioxidant characteristics of cooked rice added with glutinous rice were expected to be used as basic data on manufacturing processed products.

  • In this study, sulfonated poly(ether ether ketone) (SPEEK) as cation exchange membrane and blended and crosslinked poly(vinyl amine) (PVAm) with poly(vinyl alcohol) (PVA) membrane as anion exchange membrane were used and then the performance experiments of the membrane capacitive deionization (MCDI) installed with both membranes were carried out. The newly prepared anion exchange membrane were characterized through water content, ion exchange capacity and FT-IR. The crosslinking time of 3 h to 5 h indicated that the salt removal was reduced from 81.3, 65.7% to 53.8%. The effect of PVAm contents from 40, 60, to 80% on the salt removal was shown 81.3, 75.2 and 37.7%, respectively. As a result, it was concluded that the crosslinking time and the content of PVAm had an influence on the salt removal efficiency.

  • Gyoungok-go (GOG; Qiongyu-gao in Chinese) has been used in traditional oriental medicine for the improvement of various physiological vitality functions. The aim of present work is to investigate a processing possibility of vinegar using GOG. GOG vinegar was prepared by two stage fermentations of alcohol and vinegar. The method of GOG fermentation with polished rice as a fermentation substrate is not yet established. The result of alcohol fermentation rate of GOG with some strains, strain No. 1 produced the highest alcohol contents among 7 strains. The strain No. 1 identified Saccharomyces paradoxus by 18S rDNA classification. S. paradoxus was produced over 20% alcohol in the 1$\sim$11% GOG with polished rice. A. aceti was produced 8.52% acetic acid from 6.5% alcohol containing 11% GOG, after incubation for 11 days.

  • Total acidities were incereased gradually during fermentation. Total acidities of vinegars which fermented from sweet and astringent persimmon were 5.95 and 5.81% at 8th day of acetic acid fermentation, respectively. Hunter's color values were not significant difference during alcohol fermentation and acetic acid fermentation. Browning incereased continuously during alcohol fermentation whereas browning and turbidity decreased continuously during acetic acid fermentation. The browning and turbidity of vinegar which fermented from sweet persimmon was higher than those of vinegar which fermented from astringent persimmon. The contents of total tannin were 2.40 and 6.44mg/ml at the initial fermentation of sweet and astringent persimmon respectively. But in contents decreased continuously during fermentation. Reducing and total sugar contents decreased continuously during fermentation. At 5th day of acetic acid fermentation, contents of reducing and total sugar were 5.0 and 8.5mg/ml in sweet persimmon and 2.8 and 2.9mg/ml in astringent persimmon respectively.
