Quality Characteristics of Yangha (Zingiber mioga Rosc) Pickle with Soy Sauce during Storage (간장을 첨가한 양하 피클의 저장 중 품질 특성)

  • The quality characteristics of Yangha pickles soaked in different concentrations of soy sauce (0~40%) for 90 days were investigated. As a result, the pH and sweetness levels of pickles significantly increased with an increasing concentration of soy sauce in soaking solution (p<0.05). Saltiness was maintained at levels of approximately J1 0.10~0.30%, J2 0.47~0.90%, J3 0.90~1.60%, J4 1.43~2.30%, and J5 1.77~3.07% during the storage periods. These results show that the saltiness of Yangha pickles was substantially lower than that of commercial pickles. Total cell number decreased until 45 days, after which it gradually increased. We observed no visible changes in reducing sugars during storage. The hardness increased with an increasing amount of soy sauce. J2 pickle (add 10% soy sauce) showed the highest scores for taste, flavor, texture, and overall acceptability.

Biological Activity and Manufacturing of Yanggeng with Yangha Flower Buds (양하 꽃대의 생리활성 및 양갱 제조)

  • This study was performed to investigate the biological activity of yangha flower buds as well as to manufacture of yanggeng prepared with various levels (0 g, 3 g, 6 g, 9 g, and 12 g) of yangha flower buds. DPPH and ABTS scavenging activities of yangha flower buds were 96% and 57% compared to levels of vitamin C, respectively. In the oxygen radical antioxidant capacity assay, antioxidant activity increased dose dependently up to $500{\mu}g/mL$ of yangha flower buds. There was no toxicity up to $1,000{\mu}g/mL$ in vascular smooth muscle cells, and yanggeng significantly reduced migration and proliferation by platelet-derived growth factor-BB-stimulated rat aortic smooth muscle cell migration and proliferation. In the sensory evaluation, the optimal sample was YY9, which was prepared with 9 g of yangha flower buds. It can be concluded that yangha flower buds show antioxidant and vascular protective activities. The optimal sample (YY9) is expected to contribute as a new functional food.

A Study on the Synecological Values of the Torreya nucifera Forest (Natural Monument No. 374) at Pyeongdae-ri in Jeju Island (천연기념물 제374호 제주 평대리 비자나무림의 식물생태학적 가치 제고)

  • The natural monument forests (no.374) located at Pyeongdae-ri in Jeju island are described and classified by using phytosociological methods and numerical analysis. The purpose of this paper is to identify the ecological character of Torreya nucifera forests between natural habitat and artificial habitat, as well as their spatial and phytogeographical distribution in the Korea. The comparison of forests between Pyeongdae-ri and other regions was analyzed by using a non-metric multidimensional scaling analysis (NMDS) and hierarchical clustering. On the basis of the 12 phytosociological $relev{\acute{e}}s$, the vegetation of T. nucifera dominant forest in Jeju island was arranged in one syntaxon (Alangium platanifolium-Torreya nucifera community included typicum and one subcommunity) within Camellietea. The community of T. nucifera dominant forests were characterized floristically and ecologically. We discussed diagnostic species with references, and proposed a few important diagnostic species (Ilex crenata for. microphylla, Acer palmatum, Zingiber mioga, Mercurialis leiocarpa, Osmorhiza aristata, Mecodium wrightii etc.) to explain condition of the habitat and synecological character. The communities were described by concerning their edaphical and syndynamical niche; we discussed their total distribution in Korea. In most forests they are widespread in Korean peninsular and their distribution is primarily determined by artificial plantation and periodical management. The forests consisted of T. nucifera have developed from natural environment element and artificial management. As a result they have very unique characters with the floristic, structural characterization and distribution. Furthermore, we identified that they need to apposite management for sustainability.

Herbal Extracts as a NF-kappaB Inhibitor (NF-kappaB 프로모터 활성을 억제하는 식물추출물)

  • Nuclear factor-kappaB (NF-kappaB) is a critical transcription factor for maximal expression of many of the cytokines that are involved in the pathogenesis of inflammatory diseases. In this study, we found that 12 plant extracts among 200 plants, namely, Forsythia koreana, Capsicum annuum L, Mentha arvenis, Duchesnea chrysantha, Morus alba, Saururus Chinenis (Lour) Baill, Pine needle, Zingiber mioga (Thunb.), Roscoe, Houttuynia, Prunus yedoenis, Sasa quelpaertenis, significantly inhibited LPS- induced NF-kappaB activation in a concentration-dependent manner. Additionally, 12 plant extracts were found to have antioxidant activities in DPPH assay Therefore, we have attempted to determine whether 12 herbal extracts could inhibit the expression of cytokines possessing NF-kappaB promoter in their promoter regions. Consistently 12 herbal extracts inhibited LPS-induced production of TNF alpha and interleukin-8 (IL-8). These results show that 12 herbal extracts suppresses the production of pro-inflammatory mediators through the inhibition of the NF-kappaB signaling pathway, we suggest that 12 herbal extracts can be used as a anti-inflammatory and soothing agent.
