불고기의 역사적 계보 연구 - 맥적, 설야멱, 너비아니에 대한 문헌고찰을 중심으로 - (Study on the Historical Genealogy of Bulgogi - Focus on a literature review of Maekjeok, Seoryamyeok, and Neobiani -)

  • This study reviewed the literature on the changes in Maekjeok, Seoryamyeok and Neobiani. Choi Nam-sun first mentioned the Maekjeok in 「Maeilsinbo」 as a "Buyeo·Goguryeo" style meat roast in 1937. Maekjeok was assumed to be made of various kinds of meat, including wild boars, and it was seasoned and baked as a whole. Seoryamyeok is a royal food found in Uigwe of the Joseon Dynasty and meat that was also eaten in the private sector. In 1609, the ingredients for the dish were pork, but beef was later used. The recipe has been simplified since the 19th century. Neobiani is known as royal cuisine, but it does not appear in official records. The first known record thus far is 'Neobiani' in 「Siuijeonseo」. On the other hand, 'Neobuhalmi' which was presumed to be the same food as 'Neobiani', was found in a 「Dictionnaire Coreen-Francais」(1880). In addition, 'Neobiani' was found in 「A Korean-English dictionary」(1897). From Maekjeok, followed by Seoryamyeok and Neobiani, Korean roasting meat culture has a common feature of roasting pre-sauced meat, and this trait has continued to bulgogi.

Historical Overview of Taenia asiatica in Taiwan

  • An overview of the epidemiological, biological, and clinical studies of Taenia and taeniasis in Taiwan for the past century is presented. The phenomenal observations that led to the discovery of Taenia asiatica as a new species, which differ from Taenia solium and Taenia saginata, are described. Parasitological surveys of the aborigines in Taiwan revealed a high prevalence of taeniasis, which might be due to the culture of eating raw liver of hunted wild boars. Chemotherapeutic deworming trials involving many patients with taeniasis were discussed. Praziquantel was found to be very effective, but sometimes complete worms could not be recovered from the feces after treatment, probably due to the dissolution of the proglottids. Atabrine, despite some side effects, can still be used, in properly controlled dosages, as the drug of choice for human T. asiatica infection if we need to recover the expelled worms for morphological examinations. Research results on the infection of T. asiatica eggs from Taiwan aborigines in experimental animals were also noted. Since the pig serve as the natural intermediate host of T. asiatica and the predilection site is the liver, a differential comparison of other parasitic pathogens that might cause apparently similar lesions is also presented.

  • Fractal geometry has become one of prospective research approaches as the complex structure of natural entities is not easily characterized by traditional Euclidean geometry. With the fractal geometry, we can better decipher the complex structure and identify natural and anthropogenic agents of landscape patterns occurring at different spatial scales. The usefulness of fractal, however, has not been fully appreciated among Korean academic societies, especially in ecological and limnological fields. We attempt to address three points in this study. First, we introduce the concept and dimension of fractal and review relevant research approaches, especially with respect to ecological and limnological phenomena. Second, we explore possible applications of fractal to some aspects of geography and land use characteristics in South Korea. For the analyses of fractal dimensions, we used data published in other studies previously and collected for this study. Data were analyzed by a perimeter/area method of fractal dimension for the spatial distribution of global solar radiation and leaf area index, and the movement of wild boars in forested landscapes of mid-eastern Korea. The same approach was also applied to the water channel of a hypothetical river and the shape of reservoirs in Yongin, Kyunggi Province. Finally, we discuss the results and key issues to consider when a fractal approach is employed in ecology and limnology.

Genetic diversity analysis of Thai indigenous pig population using microsatellite markers

  • Objective: European pigs have been imported to improve the economically important traits of Thai pigs by crossbreeding and was finally completely replaced. Currently Thai indigenous pigs are particularly kept in a small population. Therefore, indigenous pigs risk losing their genetic diversity and identity. Thus, this study was conducted to perform large-scale genetic diversity and phylogenetic analyses on the many pig breeds available in Thailand. Methods: Genetic diversity and phylogenetics analyses of 222 pigs belonging to Thai native pigs (TNP), Thai wild boars (TWB), European commercial pigs, commercial crossbred pigs, and Chinese indigenous pigs were investigated by genotyping using 26 microsatellite markers. Results: The results showed that Thai pig populations had a high genetic diversity with mean total and effective ($N_e$) number of alleles of 14.59 and 3.71, respectively, and expected heterozygosity ($H_e$) across loci (0.710). The polymorphic information content per locus ranged between 0.651 and 0.914 leading to an average value above all loci of 0.789, and private alleles were found in six populations. The higher $H_e$ compared to observed heterozygosity ($H_o$) in TNP, TWB, and the commercial pigs indicated some inbreeding within a population. The Nei's genetic distance, mean $F_{ST}$ estimates, neighbour-joining tree of populations and individual, as well as multidimensional analysis indicated close genetic relationship between Thai indigenous pigs and some Chinese pigs, and they are distinctly different from European pigs. Conclusion: Our study reveals a close genetic relationship between TNP and Chinese pigs. The genetic introgression from European breeds is found in some TNP populations, and signs of genetic erosion are shown. Private alleles found in this study should be taken into consideration for the breeding program. The genetic information from this study will be a benefit for both conservation and utilization of Thai pig genetic resources.

In silico approaches to discover the functional impact of non-synonymous single nucleotide polymorphisms in selective sweep regions of the Landrace genome

  • Objective: The aim of this study was to discover the functional impact of non-synonymous single nucleotide polymorphisms (nsSNPs) that were found in selective sweep regions of the Landrace genome Methods: Whole-genome re-sequencing data were obtained from 40 pigs, including 14 Landrace, 16 Yorkshire, and 10 wild boars, which were generated with the Illumina HiSeq 2000 platform. The nsSNPs in the selective sweep regions of the Landrace genome were identified, and the impacts of these variations on protein function were predicted to reveal their potential association with traits of the Landrace breed, such as reproductive capacity. Results: Total of 53,998 nsSNPs in the mapped regions of pigs were identified, and among them, 345 nsSNPs were found in the selective sweep regions of the Landrace genome which were reported previously. The genes featuring these nsSNPs fell into various functional categories, such as reproductive capacity or growth and development during the perinatal period. The impacts of amino acid sequence changes by nsSNPs on protein function were predicted using two in silico SNP prediction algorithms, i.e., sorting intolerant from tolerant and polymorphism phenotyping v2, to reveal their potential roles in biological processes that might be associated with the reproductive capacity of the Landrace breed. Conclusion: The findings elucidated the domestication history of the Landrace breed and illustrated how Landrace domestication led to patterns of genetic variation related to superior reproductive capacity. Our novel findings will help understand the process of Landrace domestication at the genome level and provide SNPs that are informative for breeding.

진주 가산리 우물지에서 출토된 동물뼈 유물의 해부학적 분류 (Anatomical classification of animal bone relics excavated from the well area of Gasan-ri in Jinju)

  • The classification of the bone pieces excavated from Gasan-ri archaeological site 1 in Jinju, presumed to be relics was investigated macroscopically. The remains of the animal bone were 3 classes (Mammalia, Aves, Amphibia), 5 orders (Carnivora, Artiodactyla, Galliformer, Rodentia, Salientia), and 6 species (Sus scrofa, Cervidae sp., Nyctereutes procyonides, Phasianidae, Rattus norvegicus caraco, Rana nigromaculata). The total weight of the animal bone remains was 1,002.80 g, with the identified bones comprising 975.30 g and an identification rate of 97.26%. A total of 447 animal bone fragments were identified, including 204 bone pieces of S. scrofa (468.00 g, 47.99%), 102 bone pieces of Cervidae sp. (453.79 g, 46.53%), 68 bone pieces of R. nigromaculata (4.69 g, 0.48%), 59 bone pieces of N. procyonides (47.14 g, 4.83%), 9 bone pieces of Phasianidae (0.98 g, 0.10%), and 5 bone pieces of Rattus norvegicus caraco (0.70 g, 0.07%). The bone pieces of the animal relics consisted of 81 skull (18.12%), 161 axial skeleton (36.02%), 64 forelimb (14.32%), and 141 hindlimb (31.54%) fragments. The archaeological significance of the animal bones excavated in this investigation was that wild boars and deer were presumed to have been mainly used animals in the Gasan-ri area of Jinju during the Three Kingdoms period.

Evaluation of the cost-effectiveness of ASF detection with or without the use of on-field tests in different scenarios, in Sardinia

  • African swine fever (ASF) is a highly contagious disease of domestic pigs and wild boars (WBs). Without a vaccine, early antibody and antigen detection and rapid diagnosis are crucial for the effective prevention of the disease and the employment of control measures. In Sardinia, where 3 different suid populations coexisted closely for a long time, the disease persists since 1978. The recent ASF eradication plan involves more stringent measures to combat free-ranging pigs and any kind of illegality in the pig industry. However, critical issues such as the low level of hunter cooperation with veterinary services and the time required for ASF detection in the WBs killed during the hunting season still remain. Considering the need to deliver true ASF negative carcasses as early as possible, this study focuses on the evaluation and validation of a duplex pen-side test that simultaneously detects antibodies and antigens specific to ASF virus, to improve molecular diagnosis under field conditions. The main goal was to establish the specificity of the two pen-side tests performed simultaneously and to determine their ability to detect the true ASF negative carcasses among the hunted WBs. Blood and organ samples of the WBs hunted during the 2018/2019 hunting seasons were obtained. A total of 160 animals were tested using the pen-side kit test; samples were collected for virological and serological analyses. A specificity of 98% was observed considering the official laboratory tests as gold standards. The new diagnostic techniques could facilitate faster and cost-effective control of the disease.

Enhancing Arthropod Pitfall Trapping Efficacy with Quinone Sulfate: A Faunistic Study in Gwangneung Forest

  • Pitfall traps that use ethylene glycol as a preservative solution are commonly used in arthropod research. However, a recent surge in cases involving damage to these traps by roe deer or wild boars owing to the sweet taste of ethylene glycol has prompted the addition of quinone sulfate, a substance with a pungent taste, to deter such wildlife interference. This study aimed to assess the effects of quinone sulfate on arthropods collected from pitfall traps containing ethylene glycol. We strategically positioned 50 traps using ethylene glycol alone and 50 traps containing a small amount of quinone sulfate mixed with ethylene glycol in a grid pattern for systematic sampling at the Gwangneung Forest long-term ecological research (LTER) site. Traps were collected 10 days later. The results revealed a notable effect on ants when quinone sulfate was introduced. Specifically, it decreased the number of ants. In a species-specific analysis of ants, only Nylanderia flavipes showed a significant decline in response to quinone sulfate, whereas other ant species remained unaffected. Additionally, among the arthropod samples obtained in this survey, we identified species or morpho-species of spiders, beetles, and ants and assessed species diversity. Consequently, the utilization of quinone sulfate should be undertaken judiciously, taking into account the specific species composition and environmental characteristics of the monitoring site. Our study also highlighted the significant response of various arthropod groups to variations in leaf litter depth, underscoring the crucial role of the leaf litter layer in providing sustenance and shelter for ground-foraging arthropods. Furthermore, we have compiled comprehensive species lists of both spiders and ants in Gwangneung forest by amalgamating data from this investigation with findings from previous studies.

양돈장(養豚場)에 있어서 Salmonella감염증(感染症)의 역학적(疫學的) 연구(硏究) : I. 발생(發生) 및 오염상황(汚染狀況), 혈청형(血淸型)과 Salmonella typhimurium의 생물형(生物型) (Epizootiological Study of Salmonella Infection on Piggery: I. Study on Distribution, Occurrence, Serovars and Biovars)

  • This paper deals with the distribution, reservoir and mode of spread of salmonella infection on 7 pig farms in Taegu, Gyeongbuk, Gyeongnam and Chungnam and a slaughter house in Teagu during the period from May 1984 to May 1985. Isolated salmonella were examined for serotypes and biotyping of S. typhimurium. The results obtained were summarised as follows; 1. Of total 7,995 samples from 7 pig farms and a slaughter house, 319 salmonella were isolated from 234 samples (2.9%) and their serovar strains were S. derby 77, S. infantis 41, S. enteritidis 20, S. typhimurium 18, S. bredeney 16, S. london 14, S. paratyphi B 9, S. anatum 8, S. montevideo 8, S. senftenberg 7, S. thompson 6, S. pullorum 4, S. paratyphi A 1 and untypable 70. 2. The incidence rate of diarrhea of piglets, weaned pigs and fattening pigs was 9.8%, 2.3% and 0.5%, respectively whereas the rate by salmonella infection was 4.2%, 1.2% and 11.3%, respectively. 3. The isolation rate of salmonella was higher in summer and autumn. 4. The isolation rate of salmonella varied from 1.1% to 4.5% in 7 pig farms, it was higher in sewages(4.4%), weaned pigs(3.7%), boars(3.7%) and other(3.7%) included soils, manure and wild rats according to samples. Three out of 7 pig farms were contaminated heavily with various serovars of salmonella. 5. The isolation rate of salmonella from pigs slaughtered was 8.1%, it was 13.6% in rectal contents and 1.6% in mensenteric lymph nodes. 6. Eighteen strains of S. typhimurium were classified into 3 different biovars(1, 10 and 10a) by the method of Brandis and were subdivided into 6 different full biovars(1a, 1d, 1dh, 3d, 26i and 26ei) by the method described by Duguid et al. Appearance of different biovars indicated the occurrence of different exotic infection sources on the farms.

Pig Spermatozoa Defect in Acrosome Formation Caused Poor Motion Parameters and Fertilization Failure through Artificial Insemination and In vitro Fertilization

  • The selection of morphologically normal spermatozoa is critical to obtain high breeding performances in boar breeding farms and artificial insemination (AI) centers. Parameters for the selection of semen mainly include total sperm motility, concentration, and morphology. However, these primary parameters are often not reliable for discriminating between normal and abnormal, non-fertilizable spermatozoa. The present study was designed to compare the motion characteristics, fertilization ability using in vitro fertilization (IVF), and acrosome formation of the semen from boars having low (boar number 2012) and normal (boar number 2004 and 2023) breeding performances. The ultimate goal was to identify additional simple and easy criteria for the selection of normal sperm. There was no significant difference between boar 2004 and boar 2023 sperm total motility in computer assisted sperm analysis. However, boar number 2012 semen presented a significantly reduced population of rapid moving spermatozoa and an increased population of slow moving spermatozoa compared to boar numbers 2004 and 2023. Analysis of detailed motion characteristics revealed that sperm from boar number 2012 had significantly reduced motility in progressiveness, average path velocity, straight-line velocity (VSL), curvilinear velocity (VCL), straightness, and linearity. The assessment of the fertilizing ability by IVF also showed that sperm from boar number 2012 showed a fertility rate of 3.4%, whereas sperm from boar number 2023 had a fertility rate of 75.45%. Interestingly, most of the sperm nuclei were found on the peripheral area of the oocytes, suggesting that the sperm from boar number 2012 lacked penetration ability into the oocyte zonapellucida. The acrosome formation analysis using Pisum sativum agglutinin staining demonstrated that the sperm from boar number 2012 had a defect in acrosome formation. Consequently, primary parameters for selecting semen before AI such as motility are not sufficient to select normal and fertilizable spermatozoa. In conclusion, the present study suggests that the acrosome staining and detailed motion characteristics such as progressiveness, VCL, and VSL should be included in determining semen quality together with primary parameters for successful AI and high breeding performance in the swine industry.
