Establishment of the Preparation Method on Quality Changes of Seasoned Perilla Leaves during Storage (깻잎절임의 조리조건 확립 및 품질변화)

  • Process development and standardization are necessary in maintaining high hygienicquality of side dishes. Seasoned perilla leaves are a typical side dish needing process development. In this study the optimum condition for preparing seasoned perilla leaves was investigated experimentally. The best sensory quality was established by response surface methodology. The rinsing and washing method of preparing fresh perilla leaves was optimized to decontaminate the raw material and preserve the product in chilled storage. Washing and rising with 3% salt water reduced the aerobic bacterial count of perilla leaves to 0.55 (log CFU/g), while rinsing reduced the load from 8.08 to 4.27 (log CFU/g). The effect of rinsing method was maintained during subsequent storage of the prepared seasoned leaves at $10^{\circ}C$. There was no significant quality change in the product during chilled storage at $10^{\circ}C$. Soaking in 3% salt water for 1 min, followed by rinsing with tap water, contributed positively to the microbial quality, and is proposed as the optimal preparation method.

A Study on Personal hygiene of Primary School Students (초등학교 아동의 개인위생에 대한 조사)

  • The study was designed to gain necessary basic data, in order to grasp the actual condition on personal hygiene of primary school students and to help school health education and child health education data development of parents of students, the survery was carried out through this reporter's interview for mothers who have primary school pupil in KyungBug area during the period of a month from 14 the April to 30 the April 1994. The results of this study can be summarized as follows. 1. As for general characteristics, the percent of answer mothers with 30~34 years 44.9%, and the percent of answer mothers with 35~39 years was 37.6%, 14.6% of answer mother was 40 years and over. The most house types was apartment house, that is 64.8% and independence house was 18.9%, 13.7% of answer mothers was multivalent house residents. As for level of school career, the percent of high school was 64.2% and the percent of university was 20.5%, 10.1% of answer mothers was finishment of middle school. As for religion a lack of religion was 38.4% and a Buddhist was 36.8%, a christian was 13.4%, 10.4% of answer mothers was a catholic. As for jobs, the percent of office was 33.9%, specialist and expert skiller was 17.3%, self-management was 16.0%, fishing and agrarian villiages was 11.6%, public service personnel and shool personnel was 9.1%. As for the number of sons and daughters, the percent of two was 70.5%, the percent of one was 16.0%, and the percent of male students was 54.1%. As for level of economic life middle level was 59.9%. 2. The percentage of washing hand after school hours was 66.8% and not washing hand after school hours was 33.2%. In washing hand after school hours family of independence house, mothers that have schoolcareer of university, female students, three and over of sons and daughters was high individually (p<0.05). 3. As for paring one's nails, once a ten days was 52.9% once a five days was 22.5% once a fifteen days was 19.0%, once a twenty and over was 5.6%. 4. 54.7% of primary school students of answer mother's take a bath once a few days and 31.6% take a bath once a week, 10.1% take a bath once a tendays. 5. The percentage of changing of underwear once a day was 60.9%, once a few days was 37.1%, once a week was 2.0%, as for changing of underwear, sons and daughters that has mothers with 29 years and downward, one number of sons and daughters, females students was high individually (p<0.01). 6. The percentage of haircut once a 20~30 days was 59.9%, once a 31~40 days was 17.9%, once a 40 days and over was 16.6%. As for the percentage of haircut once a 20~30 days apartment house residents, male students was high (p<0.01). 7. The percentage of experience in taking nutrition was 79.8% and the percentage of experience in taking restorative was 72.3%. As for taking nutrition, apartment house residents, one number of sons and daughters, male students was high individually (p<0.01). As for taking restorative apartment house residents, on number of sons and daughters, male students was high individually (p<0.05). 8. The percentage of habit of unbalanced diet was 44.0%, sons and daughters that have mother with 40 years and over apartment house residents, male students, one number of sons and daughters was high indivdually (p<0.05). 9. As for hygiene condition of sons and daughters, the percentage of good state of health was 65.2%, middle state of health was 3.5% bad state of health was 11.4%. In good state of health sons and daughters that have mothers with 29 years and downward, multivalent house residents, three numbers of sons and daughters, female students, high birth was high individually. 10. As for fattness of sons and daughters, existence was 18.2%. No existence was 81.8%. in existence sons and daughters who have mothers with 40 years and downward, independence house resident, special job and expert skill job, three and over number of sons and daughters, female students, low birth was high individually. 11. As for use aspect of medical facilities of sons and daughters, hospital doctors was 53.1%, drugstore was 42.3%, chinese medicine hospitals or health organization was 4.6%. In usage of drugstore, sons and daughters of mothers with 29 years, 40 years and over was 55.6%, 61.4% individully, inusage of hospital doctors 30~34 years, 34~39 tears was 64.5%, 49.1% individully (p<0.01), apartment house residents, one or two numbers of sons and daughters, male students was high individually. In the percentage of using drugstore, school career of middle school and downward, in occupation, three and over numbers of sons and daughters, low birth was high individually (p<0.05). According to the results mentioned above. An actual condition and a related matters on personal hygiene of primary school students must be used as the basis data of a health education program and a health data of a health education program and a health data related, a teaching materials development and must be helped to the health life education of parents of students and childs.

Concentrating Effect of Heavy Metals from Heavy Metal Contaminated Soil by Magnetic Separation (중금속오염 토양의 자기분리에 의한 오염농축효과)

  • A magnetic separation study was conducted for a soil sampled from a landfill site where steel slag had been dumped for a long time. Heavy metal concentrating effect was evaluated by analyzing heavy metal content of magnetically separated soil and passed through soil. The effect was compared between soil after soil-washing process and original landfill soil and the effect was also tested between wet condition-magnetic separation and dry condition-magnetic separation. Separated ratio was relatively higher in non-soil washed sample. The water content has no significant effect on the separation rate. The concentrating effect of Fe, Pb, Cu, and Cd were 3.2, 2.1, 12.1, 2.5, 1.5 and 17.4, 7.0, 15.7, 9.6, 7.0 respectively for non-soil washed sample and soil washed sample. We can expect a bigger volume reduction effect from soil-washed samples. The volume reduction effect was obtained from the separation in dry condition. However, when the separation ratio is too high the volume reduction effect decreases. The magnetic separation leads to a volume reduction and concentration of heavy metals into a portion of soil in case of paramagnetic particles contained soil.

  • In succession to the previous paper, the present study was directed to investigate the optimal processing conditions of meat paste products with mackerel. To improve the gel forming ability of meat paste, washing conditions with water and alkaline solution, setting time and temperature, and heating temperature were controlled, and the influences of the freshness of raw mackerel and mixing ratios of ordinary and dark muscle on the qualities of meat paste products were discussed. The most effective condition for the keeping freshness of raw mackerel meat among different storage conditions was the forozen storage at $-20^{\circ}C$, followed by the storage at $-3^{\circ}C$ and ice storages, and this relation was coincided with the effect for maintaining of gel forming ability among above conditions, but there was no effect on keeping freshness of raw mackerel in the storage at $25^{\circ}C$. Gel strength of meat washed with tap water decreased with washing time, particularly, the meat washed three times showed higher gel strength than the meat washed more than 5 times. And the removal ratios of water soluble protein were $60\%$ in the meat washed three times and $90\%$ in the meat washed nine times. Washing effect of raw mackerel meat with alkaline solution was great at pH $6.5{\sim}7.0$ of meat paste yielding the highest gel strength in the meat washed with $0.5\%$ sodium bicarbonate solution. Gel strength of meat paste product decreased with the increase of mixing ratios of ordinary and dark muscle in the raw meat. In the setting conditions of meat paste examined, 15 hours at $5^{\circ}C$ and 2 hours at $30^{\circ}C$. The most suitable temperature for gel forming in heating conditions was $90^{\circ}C$, fellowed by $100^{\circ}C\;and\;80^{\circ}C$.

  • The purpose of this study was to investigate dyeing properties of cotton fabrics by American fleabane extract. Effect of dyeing condition on dye uptake and effect of mordanting on dye uptake, color change and colorfastness were explored. Its affinity to cotton fiber was considerably lower than wool, and its hydrogen bonding was involved in the absorption of American fleabane colorants to cotton fiber. K/S value of pre­mordanting was higher than sim-mordanting or post-mordanting. Except that Sn mordanted showed high K/S value, it did not significantly increase. American fleabane produced mainly yellowish color on mordants and mordanting method. Cotton fabrics showed generally high colorfastness except colorfastness to washing.

Research on improvement of water purification efficiency by porous concrete using bio-film (생물막을 이용한 다공성 콘크리트의 수질정화 효율 개선에 대한 연구)

  • This study aims to estimate the biological decomposition capacity of MPC(Microorganism Porous-Concrete). MPC has specific surface area formed by inside pores, and bio compound was added to those pores to reduce pollutants loading. To evaluate the water purification capacity of MPC, we carried out the comparative studies using different media types [GPC(General Porous-concrete), CPC(Compound porous-concrete), LPC(Lightweight aggregate porous-concrete)] under the condition of CFSTR, and different retention times (30, 60 and 120 min). We also estimated the purification capacity of MPC under different concentrations of pollutant loadings. The MPC showed higher efficiency in water purification function than other conventional porous concretes with efficient decrease rates of SS, BOD, COD, and nutrient concentrations. In the comparison experiment for different retention times, MPC showed the highest removal efficiency for all tested pollutants in the longest retention time(120 min). In the long period test, the removal efficiencies of MPC concrete were high until 100 days after the set up of the operation, but began to decrease. Outflow flux was invariable compared with inflow flux so that extra detention time for media fouling such as back washing is not needed. But the results suggested that appropriate management is necessary for long-term operation of MPC. As the final outcome, MPC using bio organisms is considered to be efficient for stream water purification when they used as substrates for artificial river structure.

Initial Condition of Methanotrophic Consortium Biofilm Reactor(MCBR) for Trichloroethylene Degradation (Trichloroethylene 분해를 위한 혼합 메탄자화균 생물막 반응기의 초기 조건)

  • Mixed methanotrophs (MM) secreting soluble methane monooxygenase(sMMO) were immobilized on celite R-635 to degrade trichloroethylene(TCE) in methanotrophic consortium biofilm reactor(MCBR) system. Further neutralization of celite R-635 was not needed for immobilization because effluent pH was stabilized at neutral after 4 hour washing. It took 130 days to develop biofilm on celite R-635 and the color of the celite changed gradually from white to red. After biofilm developed, influent methane and oxygen were decreased from 2.5~4 and 8~10 ppm to 0.5~1 and 1~2 ppm, respectively, With influent 2 ppm of TCE and 10 hours of retention time, 79.9% of TCE was degraded in the MCBR system.

Studies on Infection Rate and Causative Agents of Bovine Mastitis in Kangweon Area (강원지역의 젖소 유방염 감염율 및 원인균에 관한 연구)

  • A total of 2,024 quarters of 515 dairy cattle in Kangweon area were examined for incidence of subclinical mastitis. Milk samples from cattle infected with subclinical mastitis were studied bacteriologically and the bacterial strains isolated were further examined for sensitivity to 12 antibacterial agents. And the status of carrying out the mastitis control program in 28 dairy farms was examined. The results obtained were summerized as follows ; 1. A total of 308(59.8%) of 515 cattle and 656(32.4%) of 2,024 quarters were found to be infected with subclinical mastitis. 2. The 277 strains of etiological agents were isolated from 358 subclinical quarters. These were identified as Staphylococcus aureus(14.4%), other staphylococci(36.5%), Streptoccus agalatiae(8.7%), other streptococci(30.7%), Bacillus spp.(1.8%), Corynebacterium spp.(1.4%) and coliform(0.7%). 3. The 109 strains of streptococci and 141 strains of staphylococci were examined for sensitivity to 12 antibacterial agents. All the strains of streptococci were sensitive to penicillin, ampicillin and cephalothin, and they were also sensitive to erythromycin(88.1%), clindamycin(83.5%), enrofloxacin(75.2%), trimethoprim+sulfamethoxazole(67.9%), The strains of staphylococci were sensitive to cephalothin(97.2%), gentamicin(83.0%). enroflozacin(80.9%), trimethoprim+sulfamethoxazole(78.0%), erythromycin(71.6%) and clindamycin(71.6%). But all the strains resisted to colistin. 4. In the 28 dairy farms examined, condition of udder before washing was dirty in most of the farms (89.7%). Hygiene of milking equipment was only good in the 5 farms(17.9%). Teat preparation before milking was good in the 6 farms(21.4%). The farms in which teat dipping after milking was conducted were 46.4%. Dry cow treatment for the complete herd was carried out in most of the farms(89.3%) but mastitis checking was only carried out in the 8 farms(28.6%) irregularly.

A Survey on the Actual Conditions of Summer Working Uniforms for Contracted Foodservice Workers (위탁급식업체 종사자의 하절기 작업복 착용 실태에 관한 연구)

  • This survey investigates the conditions of summer working uniforms for contracted foodservice workers. The data were obtained from 67 workers through in-depth interviews (July 2005~October 2005). The results of study are as follows: The working environment changed to menu and cooking method (air temperature $28\sim37^{\circ}C$, humidity 72~86 %RH, radiant temperature $27\sim37^{\circ}C$, air velocity 0.14~0.37m/sec). They answered that the working environment has high temperatures, humidity, excessive noise, and liability to slide. The typical accidents were burns, cuts, slide, and ligament injuries in the workplace. Work duties consisted of cooking, serving food, washing, and cleaning up leftover food. All the employees carried out multi tasks. The primary working postures and motions were standing, crouching, and lifting. The female workers usually wore underwear (panty and brassiere), upper and lower work wear, aprons, waterproof-aprons, cotton-gloves, rubber-gloves, socks, and rubber-boots. The satisfaction of the uniform was relatively low for trousers and waterproof-aprons. The answer about the fit was generally "comfortable." They answered "back," "chest," and "head" were wet with perspiration during work. The uncomfortable parts were the crotch and neck. Questions concerning their satisfaction with the material of uniforms indicated a high rate of dissatisfaction, particularly for ventilation and absorbency. In case of the colors of the working uniform, workers preferred white color for the upper part, and black color for the lower part.

A Study on the Properties of Silk and Nylon 6 Fabrics by Tannic Acid Treatment

  • Weighting of silk fabrics have long been practiced in silk fabric trading based on the primary consideration of price-weight, and secondary one of quality improvement in handle, luster, and drape properties. Recent trend of practicing weighting of silk fabrics is, however, focused on the improvement of the handle, luster, drape, and other properties. During the finishing processes of synthetic fiber, nylon, comprising amide structure, include the use of tannic acid, especially in the dyeing. A multitude of studies are being implemented in terms of improving fastness to washing, fastness to light of dyed nylon product, or the light fastness of nylon 6 itself. In this study, the effects of various tannic acid treatments on the physical properties related to the handle of nylon 6 and silk fabrics are examined and reviewed. The effects of treatment condition of the tannic acid, e.g., the concentration of the aqueous tannic acid solution, treatment time, and temperature were investigated. As the concentration of the aqueous solution of tannic acid increased, the bending rigidity values of the silk and nylon 6 fabrics increased. The treated fabrics felt stiff to the touch. Within the mild conditions of bending employed in the bending measurement of KES, nylon 6 treated fabric specimen exhibited a trend of improvement of bending resiliency within the range of small bending deformation. The weight of treated fabrics have all increased. The air-permeability values decreased as the treatment concentration increased. However, the decrease tendency of air permeability values may be alleviated by adjusting the fabric count during the tentering or expanding processes, either by tension adjustment or heat treatment. Optimum conditions of the treatment for nylon 6 are 1.25% tannic acid concentration, bath temperature of $85^{\circ}C$, pH 3.1, and those for silk fabric treatment are 1.25% tannic acid concentration, bath temperature of $85^{\circ}C$, pH 3.1. The treatment conditions will lead to the improvement in the properties of fabrics for summer.
