In order to investigate if the employment of housewives may affect the nutritional status of their family members, an analysis was made for the data of 2001 Korea National Health and Nutrition survey. Housewives aged 20 or over were divided into two groups of the working (W, 44.3%) and the non-working (NW, 55.7%), and household income levels were divided into 4 groups of low, middle, high, and high above according to the minimum cost of living in the year of 2001. Nutrient intakes were assessed by using dietary recommended intakes for Koreans of 2005. Working housewives showed similar levels to those of non-working housewives in most nutrients intakes except energy and vitamin C. However their families excluding housewives of W, than those of NW, took less protein, calcium, iron, potassium, vitamin A, thiamin, riboflavin, niacin, and vitamin C when assessed as % of recommended intakes and took more sodium. Such differences were very strong in children and adolescents, and in the middle income households. More % of the families of W than those of NW consumed nutrients below the estimated average requirements. Percents of hypertension classified by both systolic and diastolic blood pressure were higher in adult family members of W than in those of NW. This tendency seemed to be more significant in the family members aged 30 to 49. Both obesity and under-weight rates of school children ($7{\sim}12\;yrs$) in W were higher than those in NW. The above resuIts suggested that employment of housewives could have negative influences on the nutritional status of their family members, especially of their children and in the middle income class.
Ninety-three weaning children, 8-36 Mo. old wererandomly selected from rural areas of South Korea. Food and nutrient intake level were measured by the weighing-interview method for two consecutive days in December 1976. Their weaning pattern, dietary pattern, food and nutrient intake level were analyzed. A brief summary of 4he finding follows; 1) 80% of the rural children completed the weaning by the age of 24 months. 2) 44% of 8-12 month olds were living only on breast mil while the rest of the age group received regularly a supplementary food. 3) Over half of the 8-36 Mo old children investigated were receiving the same dietary pattern, arbitrarily called 'Diet K'. Diet K consists of rice-Kimchi-seasoning-oil which is the basic components of an average Korean adult diet. This very composition of the diet K and no other variety of food included inevitably result in low intake of vitamin A, iron, calcium and riboflavin for the children. 4) The weaning children were found to be taking all nutrients except niacin in amount far from sufficient to recommended level. Particularly low were the intakes of good quality protein, iron, vitamin A, riboflavin and vitamin C which met only 15%-37% of the recommended level for 12-36 Mo. olds. 5) It was concluded that majority of the rural children of weaning age in Korea are given the simple diet K and feeding the weaning children only with the basic dietary pattern of adults can not meet the nutritional requirements. This is a part of the study supported by the ROKG/USAID Health Planning Project.
This study was aimed to investigate the nutritional status and the role of diabetes mellitus in hemodialysis (HD) patients. Anthropometric, biochemical, and dietary assessments for HD 110 patients (46 males and 64 females) were conducted. Mean body mass index (BMI) was $22.1\;kg/m^2$ and prevalence of underweight (BMI<$18.5\;kg/m^2$) was 12%. The hypoalbuminemia (<3.5 g/dl) was found in 15.5% of the subject, and hypocholesterolemia (<150 mg/dl) in 46.4%. About half (50.9%) patients had anemia (hemoglobin: <11.0 g/dL). High prevalence of hyperphosphatemia (66.4%) and hyperkalemia (43.5%) was also observed. More than 60 percent of subjects were below the recommended intake levels of energy (30-35 kcal/kg IBW) and protein (1.2 g/kg IBW). The proportions of subjects taking less than estimated average requirements for calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, and folate were more than 50%, whereas, about 20% of the subjects were above the recommended intake of phosphorus and potassium. Diabetes mellitus was the main cause of ESRD (45.5%). The diabetic ESRD patients showed higher HMI and less HD adequacy than nondiabetic patients. Diabetic patients also showed lower HDL-cholesterol levels. Diabetic ESRD patients had less energy from fat and a greater percentage of calories from carbohydrates. In conclusion, active nutrition monitoring is needed to improve the nutritional status of HD patients. A follow-up study is needed to document a causal relation between diabetes and its impact on morbidity and mortality in ESRD patients.
Crop-livestock mixed farming systems depend on the efficiency with which nutrients are conserved and recycled. Home-grown forage is used as animal feed and animal excretions are applied to cultivated crop lands as manure. The objective of this study was to develop a mixed farming system model for dairy cattle in Japan. The model consisted of four sub-models: the nutrient requirement model, based on the Japanese Feeding Standards to determine requirements for energy, crude protein, dry matter intake, calcium, phosphorus and vitamin A; the optimum diet formulation model for determining the optimum diets that satisfy nutrient requirements at lowest cost, using linear programming; the herd dynamic model to calculate the numbers of cows in each reproductive cycle; and the whole farm optimization model to evaluate whole farm management from economic and environmental viewpoints and to optimize strategies for the target farm or system. To examine the model' validity, its predictions were compared against best practices for dairy farm management. Sensitivity analyses indicated that higher yielding cows lead to better economic results but higher emvironmental load in dairy cattle systems integrated with forage crop production.
Nitrogen and phosphorus are major nutrients in animal feeds which partially remain in the environment as pollution. In addition, nitrogen and phosphorus along with energy are the main nutrients which determine the feed cost. Any decreases in the levels of these three nutrients can contribute to reducing the pollution problem as well as the cost of feed. The nutrient requirements for chickens in the work here reported should allow for the addition of mixed enzymes (phytases, proteases, glucanases, xylanases and others). Such minimal levels of crude protein in the research results which are here reported are 16% for 0-6 weeks of age, 13.5% for 7-12 weeks of age, 11.5% for 13-18 weeks of age for layer type chicks, 13% for layer, 18% for 0-3 weeks of age broiler and 16.5% for 4-7 weeks of age broiler. These research projects have been done without adding enzyme supplements to their experimental diets. The minimal values of phosphorus, shown as available phosphorus, are 0.25% for pullets, 0.09% for layers and 0.25% for broilers with the addition of phytase. The minimum energy requirement (metabolizable energy) for reducing the feed cost could be summarized as 2,750 kcal per kg feed for pullets, 2,800 kcal for layers and 2,700 kcal for broilers.
Consumers are increasingly quality orientated and an understanding of the factors that influence product quality is a prerequisite to the development of programs to produce quality pork to meet market requirements. Pork quality is comprised of many components and is multi-factorial in nature. This review focuses on genetic and environmental influences on muscle color, water holding capacity, and palatability attributes. The impact of genetic factors such as breed variation and the influence of major genes (the Halothane and Rendement Napole genes), as well as relationships between carcass leanness and quality, are considered. In addition, the effect of nutrition, including vitamins and minerals, feeding level, and dietary energy:protein ratio, on pork quality is reviewed. Finally, the impact of diet on fat composition and quality is summarized.
Dairy products, including milk, cheese, cream, yogurt, and butter, constitute excellent sources of essential nutrients such as calcium, proteins, and vitamin D; therefore, nutritionists recommend a constant daily dietary intake of dairy products. Packaging is an important feature that ensures high-quality products are delivered to consumers; different packaging materials and forms are required depending on the products. Packaging forms include pouches for butter, cheese, and milk powder; cartons for liquid, frozen, and coagulated milk; packets for pasteurized liquid milk; bottles for milkshakes and other liquid products; and cups for frozen and coagulated products. The increase in mobile lifestyles among consumers will lead to smaller households and greater preference for convenience, which will promote individual and smaller packaging for dairy products. This article reviews the development of packaging materials and forms, packaging requirements, and future considerations for the packaging of dairy products.
This study evaluated the microbial population (total aerobic count, fungi) and organoleptic quality of freeze-dried bibimbap sterilized by gamma irradiation to develop the space food. An irradiation dose above 30 kGy was needed to sterilize the freeze-dried bibimbap, while organoleptic quality of the sample was significantly decreased by irradiation (p<0.05). However, it was observed that scores on overall acceptance of rehydrated bibimbap after irradiation were the highest, when vitamin C and paprika extract were added at 0.1%, respectively. Therefore, it was considered that the freeze-dried bibimbap could be developed as a space food, which meet microbial requirements and organoleptic quality through addition of vitamin C 0.1% and paprika extract 0.1% before gamma irradiation at 30 kGy.
This study was conducted on the nutritional status of 1,805 patients with allergic diseases (atopic dermatitis, allergic rhinitis, and asthma) aged 19 to 64 years according to their state of depression, based on the data from the Korea National Health and Nutrition Examination Survey (KNHANES). The Patient Health Questionnaire-9 (PHQ-9) was used to diagnose depression. Subjects with a score of 10 or more were categorized into the depression group (n=152) and the rest into the non-depression group (n=1,653). The results of this study were as follows: The proportion of women (75.7%) was higher than that of men (24.3%) in the depressed group (P<0.01). In terms of energy intake per 1,000 kcal, both men and women in the depressed group showed a lower energy intake than the non-depressed group and this intake was less than the estimated energy requirement (EER). The nutrient intakes of protein, calcium, phosphorus, iron, vitamin A, thiamine, riboflavin, niacin, folic acid, and vitamin C were below the estimated average requirement (EAR). Also, the intakes of fiber and potassium were less than the adequate intake (AI) (P<0.001). In the lifestyle parameters, the ratio of eating alone at lunch was 54.1%:33.1%, indicating that more than half of the depression group ate alone. In conclusion, it was observed that the nutritional status of allergic disease patients was imbalanced. The nutritional imbalance was due to insufficient energy intake and inadequate intake of nutrients, which was below the average requirements of vitamins and minerals and this was more evident in the depression group than in the non-depression group.
This study assessed the nutrient consumption of children from lunch at day care centers and kindergartens. A total of 184 lunch plates were selected in two child day care centers and two kindergartens in Seoul. Weights of the menus in planned meals were measured and amount of served and consumed lunches were calculated using a digital photography technique. Nutrients of the planned, served, and consumed lunches were assessed using CAN-Pro 4.0 and the Index of Nutritional Quality (INQ) was calculated for each meal. Compared with the estimated energy requirement for lunch for 3-5 year old children, the planned meals of the child day care centers and kindergartens contributed 42.8% and 98.8% of the daily energy requirements, respectively. At a child day care center, a served meal provided more nutrients than a planned meal since some children requested more servings after eating the served meals. This showed that the planned meal did not meet children's needs as well as the nutrient requirements. At the other child care center, children were served less than the planned meal by 6.8%, which resulted in serving less energy, calcium, potassium, and vitamin C than the required nutrients for lunch. Kindergarten A served meals with the energy requirement for lunch of 101.8%, but Kindergarten B served a meal with the energy requirement of 83.5%. Since the served portions were too small to meet nutrient requirements of the children, they consumed almost all the food served, and their nutrient consumption was similar to the nutrients served. Even though they consumed all the food served, their nutrient consumption did not meet their nutritional requirements. When assessed by INQ, the quality of the meal was good; children could consume enough nutrients when served proper quantity. Teachers who are responsible for serving meals need to be educated on proper portion sizes and how to encourage children to practice healthy eating. To promote healthy eating among children, parents need to provide children with messages consistent with what they have learned at institutions and to be a good role model in daily dietary life.
