Nutritive Components of Rice Powder and Development of Rice Bread Recipes using Rice Flour (쌀가루의 영양성분과 쌀가루를 활용한 다양한 쌀빵 레시피 개발)

  • The purpose of this study is to analyze the proximate components (water, crude ash, crude protein, crude fat, and carbohydrates) and nutritive components (vitamin A, C, E, minerals, amino acids, and fatty acids) of rice flour and develop several rice bread recipes using rice flour. The water, crude ash, crude protein, crude lipid, carbohydrate contents of rice flour were measured to be 8.53%, 0.10 g, 6.80 g, 0.14 g and 84.43 g, respectively. No vitamin A was detected in the rice flour, and vitamin C and E contents were found to be 8.30 and 0.3467 mg/100 g, respectively. Calcium, potassium, magnesium, iron, and sodium contents were measured as 6.23, 65.05, 9.78, 0.17 and 2.84 mg/100 g; the large amount of potassium helps to discharge the sodium. Rice flour has nine kinds of essential amino acids in it; essential amino acids form 45.15% of rice flour's content. which is higher than 32.3%. Fatty acids were barely detected in the rice powder; saturated fatty acids were measured as 31.25 mg/100 g, and unsaturated fatty acids as 25.54 mg/100 g. Regarding essential fatty acids, linoleic acids were measured as 41.01 mg/100 g, and linolenic acids as 2.20 mg/100 g. The researcher used rice loaf bread as the base and developed rice bread recipes using rice flour to make a total of 11 items: 8 items with 75% rice flour (rice bagel, rice sweet red-bean bread, rice butter roll bread, rice mocha bread, rice buttertop bread, rice custard cream bread, and rice streusel), 2 items with 80% rice flour (stollen and rice hobbang), and 1 item with 85% rice flour (rice donut).

  • This study was carried out to investigate the physicochemical and functional properties of Yacon (Polymnia Sonchifolia) powder. The proximate composition of Yacon powder as a dry matter basis was 3.53% moisture content, 1.13% crude protein, 0.40% crude fat, 0.79% crude ash, 1.63% dietary fiber and 92.52% carbohydrate. The major free sugars were identified as fructose and glucose. Analysing total amino acids, 18 kinds of components were isolated from Yacon powder. The essential amino acid contained in Yacon powder accounted for 28.40% of total amino acid, while the non-essential amino acid accounted for 73.61%. Analysing total fatty acids, only 2 kinds - palmitic acid and lauric acid - were detected. Oxalic acid was the major organic acid. Antioxidant Activity and Component Analysis of Populus Tomentiglandulosa Extract (현사시나무 추출물의 항산화활성과 성분분석)

  • Populus Tomentiglandulosa (PT) is known for pharmacological effects against ischemia-injury and immune activity. This study aimed to investigate the nutritional components, total phenol and flavonoid contents, antioxidant activities of PT extract. Among the mineral contents, the K content (907.5 mg/100 g) was the highest in the PT extract. Vitamins C (6.1 mg/100 g) and nicotinic acid (3.1 mg/100 g) were also found in high amounts. Fructose (2.2%) and glucose (1.6%) were found as free sugars in the PT extract. The total phenolic and flavonoid contents of PT extract were 115.4±0.85 mg GAE/g and 20.9±1.14 mg QE/g, respectively. Results of HPLC analysis of PT extract identified catechin (9.1±0.27 mg/g), caffeic acid (4.1±0.57 mg/g), p-coumaric acid (2.1±0.49 mg/g), chlorogenic acid (1.6±1.86 mg/g), and gallic acid (1.4±0.35 mg/g), respectively. These results suggest that the PT extract possesses high nutritional component and antioxidant properties, which can be used as functional bioresources.

Some Factors Affecting Bone Mineral Density of Korean Rural Women (농촌 성인 여성들의 골밀도에 영향을 미치는 요인 분석 연구)

  • The factors affecting bone mineral density (BMD) of 103 rural women aged 30 to 76 years were investigated. Data for food and nutrient intake was obtained by 24-hour recall method. BMD of lumbar spine(L1-L4), femoral neck, ward's triangle and trochanter was measured by XR-series x-ray bone densitometer. Serum was collected and analyzed for total Ca, P and ionized Ca (Ca++)content. Relationship between the factors and BMDs was analyzed by Pearson's correlation coefficient(r) and multiple regression analysis. The results are summarized as follows. 50% of the subjects under 50 years of age($\leq$49 yr group) and 86.4% of the subjects from 50 up($\geq$50yr group) were classified as osteopenia or osteoporosis. Mean body weight, height and BMI were 153.1cm, 59.1kg and 25.0kg/$m^2$ in $\leq$49 yr group and 151.9cm, 55.9kg, and 24.2kg/$m^2$ in $\geq$50 yr group. BMDs of lumbar spines and femurs ranged from 0.84 to 1.05g/$m^2$ and from 0.67 to 1.16g/$m^2$ in $\leq$49 yr group, and ranged from 0.67 to 0.85kg/$m^2$ and from 0.68 to 0.44g/$m^2$ in $\geq$50 yr group, respectively. On the whole, the BMDs were reduced to 83.8 to 94.2% of peck bone mass in $\leq$49 yr group and 55.2 to 78.9% of those in $\geq$50 yr group. Mean daily intake of Ca was much less than the Korean RDA, \67.2% in $\leq$49 yr group and 62.3% in $\geq$50 yr group. The average concentration of total Ca, P and Ca++ in serum were within normal range in both age group. Both age and height were significantly related with BMD in both age group but the relationship tended to be stronger in $\geq$50 yr group than in $\leq$49 yr group. Body weight was also a potent determinant of BMD only in 50 yr group. In $\leq$49 yr group, total food intake was positively related with BMDs of ward's triangle, L1 and L2 and intake of cereals and grain products, sugars and sweets, milk and dairy products was positively related with BMDs measured in this study. On the contrary, intake of eggs, oil and fats were positively related with a few BMDs in 50 yr group. The BMDs were positively affected by intake of energy, protein, carbohydrate, Ca, P and Fe in $\leq$49 yr group and those of protein, fat Ca, P, vitamin B1, vitamin B2 and vitamin C in $\geq$50 yr group. It was noteworthy that serum Ca++ concentration was positively related with BMDs of lumbar spine in boty age groups. According to multiple regression analysis, the four factors, age, body weight, height and BMI additionally accounted for 21% of the variance in BMD of trochanter in $\leq$49 yr group and only two factors, age and C a intake accounted for 38% of that of femoral neck in $\geq$50 yr group. Further investigation is necessary to make sure of the relations between BMD and serum Ca++ level.

Changes in Physicochemical Properties of Spergularia marina Griseb by Blanching (Blanching에 따른 세발나물의 이화학적 특성 변화)

  • This study was conducted to investigate the changes in physicochemical properties of Spergularia marina Griseb by blanching. The proximate composition, free sugar, free amiao acid, organic acid, vitamin and mineral composition of raw and blanching Spergularia marina Griseb were compared. After blanching treatment, the moisture and carbohydrate contents of Spergularia marina Griseb increased, but the crude protein, crude fat and crude ash contents decreased. Total free sugar content decreased by 62.50% compared with raw Spergularia marina Griseb after blanching, and the reduction of galactose was the largest in free sugars. The raw and blanched Spergularia marina Griseb contained all the essential amino acids, except tryptophan. The total amino acid and essential amino acid contents were reduced by blanching, but the essential amino acid ratios of the raw and blanched Spergularia marina Griseb were similar. The amounts of all the detected organic acids were reduced by blanching, except acetic acid. Spergularia marina Griseb was found to contain high levels of vitamin C, vitamin E, and minerals, but these were reduced by blanching. These results showed that most of the nutrients contained by Spergularia marina Griseb are decrease by blanching. Therefore, the blanching conditions that can reduce nutrient loss of Spergularia marina Griseb must be established.

EFFECT OF GIBBERELLIN ON THE GROWTH AND INTERNAL COMPONENTS OF ASTRAGALUS SINICUS L. (자운영의 생육 및 성분에 미치는 지베레린의 영향)

V(4) : 1-5, 1962. The effect of GA on the growth as well as on the internal components of the leaves of Astragalus sinicus L. under the soil culture was investigated. The result has indicated that small variation in the relative concentration of GA treated on the leaves shows a marked influence on the internal components of the plants. The increase of growth was associated with increasing intensity of GA. Chlorophyll and carotene contents in the leaves were depressed with increasing concentration of GA. It was noticed that the growth was pomoted with the decrease of the contents of chlorophyll and carotene. In contrast the aacorbic acid in the leaves treated with GA decreased in proportion to the degree of the concentration of GA. Carotens content varied with chlorophyll, although the ratio of chlorophyll to carotene was not so high as the results obtained by Beck and Redman. Chlorophyll and ascorbic acid values with respect to growth differed greatly during the two experimental periods. The chlorophyll content was found highly significant in this experimental periods. The chlorophyll content was found highly significant in this experiment. As the concentration of GA was increased, it was noticed that there was a reduction of anthocyanin, sucrose, and reducing sugar contents. The anthocyanin content was not so high in this study as in the results obtained from the corn by Jacob Straus.

Chemical Components and Antioxidant Activity of Persimmon (Diospyros Kaki Thunb) Leaves (감잎의 품종별 화학성분과 항산화활성)

  • As a foundational study for notifing excellence of persimmon leaves tea, the chemical component and antioxidant activity were investigated in persimmon leaves from Dungsi, Gabjubaekmok, Weulhasi and Cheongdobansi and green tea leaves. Total sugar contents in all persimmon leaves more higher than that of green tea leaves, and the highest free sugar contained in persimmon and green tea leaves was sucrose. Free sugars present in persimmon and green tea leaves were composed of sucrose, glucose, fructose, maltose and xylose. Sucrose and fructose took more than 70% of total sugar contents. 31∼32 kinds of amino acid were detected in persimmon leaves and 35 kinds in green tea leaves. And total amino acids contained in persimmon leaves were Dungsi, Gabjubaekmok, Weulhasi and Cheongdobansi, respectively 60.40 nmol/${\mu}$L, 53.21 nmol/${\mu}$L, 52.29 nmol/${\mu}$L and 47.58 nmol/${\mu}$L. Total amino acid contents in green tea leaves was the most abundant of all as 114.72 nmol/${\mu}$L. The contents of vitamin C in persimmon and green tea leaves were in the range of 0.015∼0.089% and 0.01%, respectively. Vitamin C was significant higher content in the persimmon leaves than in green tea leaves. Caffeine was not detected in all persimmon leaves, but the caffeine content of green tea leaves was 6.63 mg/l00 g. The content of catechin was showed in the orders of Cheongdobansi, Gabjubaekmok, Weulhasi, Dungsi and green tea leaves; 0.35%, 0.34%, 0.24%, 0.18% and 0.07%, respectively. The contents of gallic acid in Dungsi and Gabjubaekmok were 0.32% and 0.20%. That of green tea was 1.41%, it was the highest content in all samples. The content of calcium in Chengdobansi was most abundant in all samples as 3516.14 ppm, it was 4∼5 times as that of green tea leaves. Flavor component pattern among persimmon leaves was similar, but that of green tea leaves was different. The IC50(${\mu}$g) value of Dungsi, Weulhasi, Gabjubaekmok, Cheongdobansi and green tea were 64.5, 42.0, 47.0, 64.0 and 19.0 respectively.

Effect of Glue Plant(Codium Fragile) on Physicochemical Characteristics of Dongchimi During Fermentation (청각채가 동치미의 발효 중 이화학적 특성에 미치는 영향)

  • The effect of glue plant(Codium fragile) on the Dongchimi fermentation was investigated by measuring physicochemical properties during fermentation at $10^{\circ}C$. Dongchimi was prepared with various levels(0, 0.5, 1.0 and 1.5%) of glue plant(Codium fragile). The pH of Dongchimi decreased slowly in all samples during fermentation. Total acidity of Dongchimi increased gradually during fermentation and total acidity of Dongchimi with glue plant(Codium fragile) was higher than that of control. Redox potentials decreased until 30 days of fermentation but increased thereafter. Reducing sugar content increased in the initial stage of the fermentation periods, and then decreased gradually. The reducing sugar content of Dongchimi with glue plant(Codium fragile) was higher than that of control. The content of total vitamin C was much higher in dongchimi with glue plant(Codium fragile). In color measurement, lightness value decreased gradually. However, redness and yellowness values increased gradually during fermentation but decreased thereafter. The content of hot water soluble pectin(HWSP) decreased as the fermentation proceeded, but the content of hydrochloric acid soluble pectin(HClSP) and sodium hexametaphosphate soluble pectin(NaSP) increased.

Changes of Components of Citrus Sudachi Juice Heated at Various Temperatures (가열온도에 따른 영귤 과즙의 성분 변화)

  • The study was performed to investigate the changes of components and volatiles in citrus sudachi juice heated at 40, 50, 60, 70, 80 and $90^{\circ}C$. Total acidity, $^{\circ}Brix$, pH, organic acids, free amino acids, vitamin C, naringin, hesperidine, neohesperidin and volatiles were analyzed in fresh and heated citrus sudachi juices. The major organic acids were citric, malic and oxalic acids and their total contents were 5.27-5.48%. Citric acid content exceeded 92%, malic and oxalic acids were 3.6 and 3.2% in total orgainc acids. The organic acids decreased as heating temperature increased, but the their decreasing contents were 0.3% of total oraganic acids. Sixteen kinds of free amino acids presented in citrus sudachi juice. Major free amino acids were alanine, threonine, proline, aspargine, aspartic acid, serine, tyrosine, and trytophane and minor free amino acids were arginine, valine, glycine, lisoluecine, leucine and histidine. Free amino acids contents decreased as heating temperature increased. Vitamin C contents also decreased from 21.3 mg% to 17.3 mg% as heating temperature increased. Naringin, hesperidine and neohesperidin also slightly decreased from 304 mg% to 297.0 mg% as heating temperature increased. In the fresh and heated juices, a total of 50 volatiles were separated, of which 31 were identified. Limonene dominated in volatiles, followed by ${\gamma}-terpinene,\;{\alpha}-phellandrene$, myrcene and ${\alpha}-pinene$. ${\alpha}-Thujene$ presented in the fresh jucie but did not present in the heated juice above $50^{\circ}C$. However, ${\alpha}-Terpinolene$, terpinene-1-ol, ${\beta}-terpineol$, $cis-{\beta}-terpineol$, ${\alpha}-muurolene$, bicyclo(3.2.0)hept-6-ene, and mentha-1.4.8-triene did not presented in the fresh jucie but newly formed in the juice heated at $90^{\circ}C$.

Manufacture of Processed Foods and its Quality Characteristics from Kumquats, a Citrus Variety Produced in Cheju (금감 가공식품(加工食品)의 제조(製造)와 품질특성(品質特性))

  • In order to utilize Kumquats as a processed products, a Citrus varieties produced in Cheju island, physicochemical properties of Kumquats, sensory evaluation of frozen Kumquats, sensory evaluation and texture parameter of Kumquats processed foods were investigated. Fruit size, weight, peel ratio, peel thickness, and Brix/acid ratio of Youngpa Kumquats cultivated in green house were 29.5 mm, 16.10g, 4.63 mm and 20.0 respectively, and it was suitable for as raw-eating and processing materials. Kumquats juice consisted of 58.27% citric acid, 32.49% malic acid, 9.14% tartaric acid and 0.08% maleic acid of total organic acids. Organic acid contents of Kumquats juice was very different from Citrus unshiu juice in malic acid content. Sensory evaluation on frozen Kumquats stored at $-18^{\circ}C$ for 6 month was good for appearance, taste and texture as summer commodity. Vitamin C content of frozen Kumquats was 74.94 mg/100g, and its content was decreased slightly during fronzen storage. Hardness on Kumquats jam was lowered from 1,294 to 355 g-force as the ratio of Kumquats juice content was increased, but the changes of other texture parameter were not so large. Kumquats jam contained $40{\sim}60%$ orange juice was evaluated as superior to orange jam for panelists.
