Yogurt fermentation is known to be beneficial because it provides a low pH and harsh environment for foodborne pathogens and improves organoleptic properties. Additionally, organic acids produced through fermentation have a good effect on the viscosity and gelling properties of yogurt. Several potential health benefits of probiotic and generally recognized as safe strains have been suggested. Yogurt is the preferred vehicle for delivering probiotics to health-conscious consumers. Therefore, manufacturers of probiotic beverages must comply with the relevant regulations. The development of probiotic yogurt begins with the selection of strains with safety and functional properties of probiotics. The selected probiotic strain should be technically suitable for viability and improve organoleptic quality while maintaining the number of bacteria above the standard value during processing and storage conditions. In addition, the efficacy of probiotic strains contained in yogurt should be investigated, confirmed, and approved according to well-designed clinical trials. Although various methods are used to detect probiotic strains, the recently widely used next generation sequencing method can be actively utilized. In the future, more research should be conducted with the latest methods to identify probiotic functions and accurately detect probiotic strains.

In this study, the separation of water/bitumen emulsion was investigated by chemical demulsification method. Motor oils (GS Caltex Deluxe Gold V 7.5W/30, Hyundai gear oil 85W/140) and asphalt (AP-5, KS M 2201, Dongnam Petrochemical MFG. Co.) were used as model oils in the preliminary experiments to effectively remove water from water/bitumen emulsion. The bitumen extracted from Canadian oilsands was used in this study. The water/oil emulsion was not separated without demulsifiers, and Hyundai motor oil showed higher efficiency of water separation at a low concentration of demulsifier compared with that for GS Caltex motor oil. However, as the concentration increased, the efficiency did not rapidly increase compared with that of GS Caltex motor oil. It was highly speculated that the water phase of Hyundai motor oil was not dispersed well compared with that of GS Caltex motor oil because the viscosity of Hyundai motor oil was much higher than that of GS Caltex motor oil. The demulsifier of higher HLB (hydrophilic - lipophilic balance) value had high separation efficiencies in water/oil emulsion. The TWEEN 20 (polyoxyethylene sorbitan monolaurate solution) showed better separation efficiency than other demulsifiers.

Considering the severe regulation associated with sludge treatment such as direct landfill and ocean dumping, there is no doubt in that an advanced study for the proper treatment of sludge is urgently needed in near feature. As one of viable method for sludge treatment, fry-drying of sludge by waste oil has been investigated in this study. The fundamental mechanism of this drying method lies in the phenomenon of rapid moisture escape in the sludge pore toward oil media. This is caused by the severe pressure gradient formed by the rapid oil heating between sludge and oil. As part of research effort of fry-drying using waste oil, a series of basic study has been made experimentally to obtain typical drying curves as function of important parameters such as drying temperature, drying time, oil type and geometrical shape of sludge formed. Based on this study, a number of useful conclusion can be drawn as following. The fry-drying method by oil immersion was found quite effective in the removal efficiency of sludge moisture, in general, the moisture content decreases significantly after 10 minutes and the whole moisture content was less than 5% after 14 minutes regardless of the drying temperature. The increase of oil temperature up to 140$^{\circ}C$ favors significantly for the removal of moisture but there was no visible difference above 140$^{\circ}C$. As expected, the decrease of diameter in sludge was efficient in drying due to the increased surface area per unit volume. Further, the effect of oil property by the change of oil type was noted. To be specific, for the case of engine oil the efficiency was found to be remarkably delayed in moisture evaporation compared with that of vegetable oil due to the increased viscosity of engine oil. It produced a result of increasing the evaporation of moisture largely relatively high in the drying temperature over 140$^{\circ}C$ compared with the drying temperature 120$^{\circ}C$ drying temperature as the drying time passed. Accordingly, the drying temperature is considered desirable as keeping over 140$^{\circ}C$ regardless of a sort of used oil.
In this study, we present the evaluation chart for assessing the applicability of $CO_2$ flooding method to oil reservoirs. The evaluation chart consists of four categories as source availability, miscibility, applicability and injecting method of miscible flooding. The applicability of reservoir and oil in the chart has basic items of the properties such as oil gravity, viscosity, oil saturation, reservoir temperature and permeability, and these are quantitatively graded. Meanwhile, for additional items of $CO_2$ purity, reservoir thickness and formation dip, they are graded as "highmediumlow". In the case of evaluating the injection method of either continuous injection or WAG ($CO_2$), the qualitative decision will be made according to formation dip, vertical permeability, reservoir thickness, etc. The recommended score in the chart was assigned by utilizing 51 oil producing fields which $CO_2$ flooding is successfully being applied. The evaluation chart developed in this work has been applied to the Captain oil producing field located in Scotland as well as to the Onado oil field of Venezuela, which Korean oil companies have participated in. For the Captain field, the reservoir quality in terms of permeability and porosity is considered to be very excellent to flow the oil. The oil in captain field contains heavier component of $C_{21+}$ as 54%. Therefore, this heavy oil could be immiscibly displaced, hence the evaluating result with the basis of immiscible criteria shows that $CO_2$ immiscible flooding in this field could be properly applied. In the case of Onado oil producing field, since the estimated minimum miscibility pressure is lower than the reservoir pressure, it was assessed that the Onado field would be efficiently conducted for $CO_2$ miscible flooding.

This study was conducted to evaluate the applicability of castor oil (CSO) as a natural wood preservative. CSO was treated into wood blocks prepared with domestic and imported wood species using a vacuum-pressure method, and then treatability, leachability and decay resistance of the CSO-treated wood blocks were examined. Although CSO was penetrated effectively into wood blocks of all wood species, the CSO-treatability was the highest in Western hemlock, followed by Japanese larch (LA), soft maple and Mongolian oak due to the difference of its anatomical structure. Except for LA, the more retained, the more leached during a saline water-immersing process for 48h. The use of ethanol added to reduce the viscosity of CSO affected negatively the treatability and leachability of wood blocks. Decay resistance, which was evaluated by the weight loss of wood blocks exposed against Fomitopsis palustris (FOP) and Trametes versicolor, of the CSO-treated/leached wood blocks was superior to that of control. Especially, most of wood blocks treated with preserving solution composed of only CSO (CSO-2) did not decayed and showed a very low weight loss against FOP. The decay resistance results from CSO retained in wood blocks after leaching. The retention of CSO could identify using the observation of X-ray microscope. Length of wood strips, which were treated with CSO-2 and then immersed in saline water for 2 weeks, hardly changed in all cutting directions. In addition, weight gain and length-swelling rate of the wood strips were extremely low compared to those of control. These results indicate that moisture resistance of the wood strips was improved by the CSO treatment. It is concluded that the treatment of CSO using a vacuum-pressure method provides the decay resistance and dimensional stability of wood, and thus CSO can be used as a natural wood preservative on various indoor and outdoor circumstances.
Granule swelling is essential phenomenon of starch gelatinization in excess water, and characteristic of heated starch dispersion depends largely on size and distribution of swelled starch granule. Although swelling characteristic of starch granules depends on type of starch, heating rate, and moisture content, influence of heating rate on swelling phenomenon of starch granule has not been fully discussed, because constant heating rate of starch dispersion cannot be obtained by conventional heating method. Ohmic heating, electric-resistant heat generation method, applies alternative current to food materials, through which heating rate can be easily controlled precisely and conveniently at wide range of constant heating rates. Starch dispersion heated at low heating rates below $7.5^{\circ}C/min$ showed Newtonian fluid behavior, whereas showed pseudoplastic behavior at heating rates above $16.4^{\circ}C/min$. Apparent viscosity of starch dispersion increased linearly with increasing heating rate, and yield stress was dramatically increased at heating rates above $16.4^{\circ}C/min$. Average diameter of corn starch granules during ohmic heating was dramatically increased from $30.97\;to\;37.88\;{\mu}m$ by increasing heating rate from $0.6\;to\;16.4^{\circ}C/min$ (raw corn starch: $13.7\;{\mu}m$). Hardness of starch gel prepared with 15% corn starch dispersion after heating to $90^{\circ}C$ at different heating rates decreased gradually with increasing heating rate, then showed nearly constant value from $9.4\;to\;23.2^{\circ}C/min$. Hardness increased with increase of heating rate higher than $23.2^{\circ}C/min$.

In this study, we report the results of a study on the clinical evaluation of wrinkle improvement by developing a method for liposome of high-purity Centella asiatica extract used in pharmaceuticals and cosmetics, and a cream using the same. In order to make Centellasome-10EX stabilizing centella asiatica extract in liposome lamella vesicle, it could be completed using 5% hydrogenated lecithin and 2% sucrose distearate. The appearance of Centellasome-10EX was a creamy form of low viscosity, the color was pale yellow, and the odor had the inherent odor of the raw material. The pH was about 6.12, the specific gravity was 1.09, and the acid value was about 0.35. The content of the main constituents of centella asiatica extract contained in the liposome vesicle contains 10,800 ppm of asiatic acid, 10,900 ppm of asiaticoside, 6,000 ppm of madecasic acid, and 1,600 ppm of madecassoside, and long-term storage. There was no discoloration even at the time, and it was found that the main component remained stable thermodynamically. To mechanistically analyze the structure of the liposome vesicle of Centellasome-10EX, as a result of observation with a transmission electron microscope (Cryo-TEM), the multilayer vesicles are formed and filled with moisture, and there are 10 to 60 multilayers around it. It was confirmed that the liposome lamella vesicle was formed. As a clinical trial (in-vivo) test, the moisturizing effect of centellasome cream after application for 5 weeks was 28.3%, which was significantly increased compared to placebo. The skin elasticity effect was 13.6%, which significantly increased the moisturizing power than the placebo. The effect of improving fine wrinkles around the eyes was improved by 23.52% compared to placebo cream. Through the results of this study, it was possible to study the formulation and manufacturing method for encapsulation and stabilization of the developed Centellasome-10EX in the liposome vesicle. It is expected that the results obtained through clinical research on the wrinkle improvement effect of the cream using this can be widely used to study skin science in the cosmetic industry and to develop high-quality cosmetics with high efficacy.

This study was carried out to examine the antimicrobial effects of grapefruit seed extract (GSE) and processed sulfur solution (PSS) against human skin pathogens: Malassezia furfur, M. restricta, Propionibacterium arnes, Trichophyton mentagrophytes and T. rubrum. The antimicrobial effects of GSE and PSS were tested by agar diffusion method and micro broth dilution method. As the results, the MIC values of GSE against M. furfur, M. restricta, P. acnes, T. mentagrophytes and T. rubrum were 3.91, 3.91, 0.004, 0.024, and $0.012{\mu}l/ml$, respectively. The MIC values of PSS were 0.03, 0.03, 0.156, 0.003, and $0.012{\mu}l/ml$, respectively. Antimicrobial activity of skin care emulsion products containing 0.5% GSE and 0.5% PSS against human skin pathogens were 5.2, 4.3, 8.0, 9.5 and 12.8 mm, respectively. Refractive index, pH, viscosity and color value of skin care emulsions containing GSE and PSS were measured. According to these results, it was concluded that the GSE and PSS were the promising sources of antibacterial agent which could be useful for skin and hair care products as well as for the alternative medicine development in treatment of certain types of skin ailments.
Enzyme-treated glutinous rice flour, which was developed to shorten or skip a steeping process during the preparation of Yukwa, was analyzed for its physicochemical characteristics and compared with glutinous rice flour made by 28-day-steeping method. Total sugar content of the 28-day-steeped flour was the highest among all groups, on the other hand, the reducing sugar content was higher in enzyme-treated glutinous rice flour. The viscosity of enzyme-treated flours was significantly lower than that of the 28-day-steeped and particularly showed the lowest value at 65$^{\circ}C$. The contents of Ca$\^$2+/ and Mg$\^$2+/ in enzyme-treated glutinous rice flours were higher than those of the 28-day-steeped group, however, the content of P$\^$+/ was lower. Free sugar detected in glutinous rice flour prepared from 28-day-steeping method was glucose only, but enzyme-treated flours contained maltose and glucose, and the content of total free sugar was much higher than that of the 28-day-steeped group. In microscopic structure, both 28-day-steeped and enzyme-treated flours showed the particle size decreased and porous surface on some part of the flour granule.

This study was carried out to analyze the antioxidant components and activities of cooked mixed grain rice-added foxtail millet with different addition rates (5, 10, 15, and 20%) and cooking methods. The two foxtail millet varieties used in this study were non-waxy foxtail millet, 'Samdame', and waxy foxtail millet, 'Samdachal'. Cooked mixed grain rice-added foxtail millet was cooked by general and high pressure cooking methods with and without fermented alcohol. Except for breakdown viscosity, pasting characteristics of foxtail millet were reduced with increasing amounts of foxtail millet. Water-binding capacity and swelling power significantly decreased with increasing amounts of foxtail millet, whereas water solubility index significantly increased. Total polyphenol and flavonoid contents increased with increasing amounts of foxtail millet. DPPH and ABTS radical scavenging activities also increased with increasing amounts of foxtail millet. Moreover, foxtail millet cooked by general cooking method with fermented alcohol showed higher antioxidant effect compared to other cooking methods. In this study, antioxidant components and activities of cooked mixed grain rice-added foxtail millet with different addition rates and cooking methods can be used as basic data for manufacturing processed products.
