우리나라 꿩고기 조리법(調理法)의 역사적(歷史的) 고찰(考察) (The Historical Study of Pheasant Cooking in Korea)

  • The purpose of this paper is to examine the various kinds of recipes of pheasant through classical cookbooks written from 1670 to 1943 which are the basic materials to the meat cooking. The recipes of pheasant are found 39 times in the literature, which can be classified into eleven groups. Chronologically, the recipe of mandu (ravioli) was first appeared, and guk, tang (soup), kui (roasted), jang (salted meat), chim (steamed), po (dried meat), whe (raw meat), gijim (boiled in soy sauce), cho (sparkly heated in soy sauce and sugar), jolim (hard boiled in soy sauce), and jungol (meat with vegetable cooked in pan) followed in the records. Kui was the most popular one with the frequency of 43.6%, which proves that kui is the most suitable one for pheasant among all of recipes. Mandu and guk, tang were 10.2%, chim and po were found with the same rate of 7.7% and the next ones were jang, gijim, cho, and jungol with the rate of 2.6%. The recipes of pheasant were recorded much less than those of beef, chicken, pork, lamb, and dog meat. Particularly, in comparison with chicken belonging to fowls, the frequency of pheasant cooking did not reach even to one third of that. The Korean recipes of pheasant have been independently developed with originality, having nothing to do with the Chinese ones. The recipes of pheasant before the late 1800s have based on the strict recipe principles along with the spirit of art and sincerity, but they were deteriorated to simple and easy ones discarding principles. The main ingredient was the flesh of pheasant and the sub-ingredients such as flour, pinenut, buckwheat powder, and mushroom were included in common. In additon, oil, soy sauce, black pepper, and stone leek were frequently used as main seasonings.

  • 소맥분(小麥粉), 보리가루, 고구마가루, 감자가루, 탈지대두분(脫脂大豆粉)을 적의혼합(適宜混合)한 여러 가지 복합분(複合粉)에 그 제면적성(製麵適性)을 개선(改善)함과 동시(同時)에 영양향상(營養向上)을 목적(目的)으로 미역가루의 추출액(抽出液)을 첨가(添加)하여 상법(常法)에 따라 제면(製麵)한 풍건면(風乾麵)과, 이때 만들어진 생면(生麵)을 다시 기름튀김한 튀김면(麵)들의 조리(調理) 시험(試驗)과 texturometer에 의한 조직(組織) 특성(特性) 및 관능검사(官能檢査)(수응력(受應力) 조사(調査))를 실시한 결과(結果)는 다음과 같다. (1) 소맥분(小麥粉)과 보리가루를 5 : 5로 혼합(混合)한 복합분(複合粉)에 1% 또는 2%의 미역가루를 추출액(抽出液)을 첨가(添加)하여 제면(製麵)한바, 그 조리(調理) 시험(試驗)과 조직(組織) 특성(特性)및 수응력(受應力)이 표준면(標準麵)과 비슷하여 좋은 효과(效果)를 보였다. (2) 소맥분(小麥粉)과 보리가루에 탈지대두분(脫脂大豆粉)을 혼합(混合)하여 만든 면(麵)은 미역가루에 의한 결착성(結着性) 개선(改善) 효과(效果)가 낮고, 여기에 고구마가루나 감자가루를 혼합(混合)하여 만든 면(面)에서는 미역가루의 효과(效果)가 인정된다. (3) 소맥분(小麥粉)에 보리가루, 고구마가루, 감자가루를 $30%{\sim}70%$ 수준(水準)으로 혼합(混合)한 복합분(複合粉)으로 1%의 hyroxypropyl methyl cellulose(Methocel)을 첨가(添加)하여 만든 생면(生麵)으로 기름튀김면(麵)을 제조(製造)하면 고구마, 감자 튀김면(麵)에 있어서 흡유량(吸油量)이 다소(多少) 증가한다. (4) 상기(上記) 튀김면(麵)들은 조리(調理) 특성(特性)이나 조직(組織) 특성(特性)에 있어서 약간(若干)의 차이(差異)가 있다해도, 관능검사(官能檢査) 결과(結果)는 모두 표준면(標準麵)과 유의차(有意差)가 없다.

지방산 유래 유해물질 관리 동향 (Trends for the management of hazardous substances derived from fatty acids)

  • More than 500 different compounds have been identified in the cooking process of frying oil as a result of chemical reactions such as oxidation, polymerization, hydrolysis and pyrolysis, 3-MCPDe(3-Monochloropropane -1,2-diol ester) and GE(glycidyl ester) are also included in these compounds. When MCPDe and GE derivatives are absorbed into the body, they are converted into free forms by lipase enzymes, which turn into 3-MCPD and glycidol(2,3-epoxy-1-propanol), respectively. These exhibit genotoxic and carcinogenic effects. As the toxicity of 3-MCPDe and GE is known worldwide, the health risk is being researched. However, regulations have not been established in countries other than the European Union(EU). Several studies for the analysis of 3-MCPDe and GE are being conducted, and direct methods and indirect methods are applied. As a result of analyzing 3-MCPDe and GE contained in commercially available foods by various analysis methods, the content of 3-MCPDe in baby food/infant formula was ND~600 ㎍/mL and GE was ND~750 ㎍/mL. and purified vegetable oils and fats showed <250-8,430 ㎍/mL and 1,880-9,530 ㎍/mL. Thus, 3-MCPDe and GE were detected in various food types, several studies for the reduction of 3-MCPDe and GE are being conducted around the world.

세계 두부 조리의 문화 (The Comparative Study of Curinary of Tofu of the World)

  • Korea supposed the place of origin of soybean. Although it is speculated that it was edible in the era of the Three Kingdoms(A.D. 5-9C), there is no documentary evidence. The first record about the edibility of tofu was written down in the Goryeo dynasty, and there was several documents that tofu was exported to China and Japan in the Chosun dynasty due to excellent manufacture skills for tofu. Tofu has been a good source of protein as a food for the common people, though there were not many traditional kinds. Especially, tofu has been an important vegetarian foodstuff in a Buddist temple, and has been used for vegetable soup and skewered greens necessary for the sacrificial rites of the humbler class as well as of the royal court. We frequently made sliced raw tofu and fried tofu, and it was used for broil, stew, and casserole as well as stuffing. In addition, tofu and its bean-curd dregs were applied of making soy. In China it is assumed that tofu has been eatable since the time of the Han(AD. 1C). Chinese tofu and its products are various and generally 20 different varieties are used. There are many dishes applied of tofu. salted and plain tofu were used as Chinese appetizer dishes. Plain, salted, skinned or deep-fried tofu was stir-fried in an hot oiled pan with vegetables, meats and fishes. Additionally, there are a variety of tofu dishes utilized stewing, frying, steaming, and soup cookeries. Tofu first appeared in the era of the Nara(8C) of Japan and was come into wide use in the era of the Aedo(Tokyo). In Japan tofu and its products are various and introduced in Shojin cookeries prevalent in the Buddist temples. It is especially noticeable that frozen or skinned tofu was used for these. Japanese tofu cooking is more delicate than Korean and Chinese ones, and Japanese people do not use oil. Instead, they in general utilize steaming and broiling cookeries. In the western countries the history of tofu edibility is short. However, their practical application of tofu in the dietary life is very positive.

Characterization of Acid- and Pepsin-soluble Collagens from Rockfish Sebastes schlegeli Skin

  • Biochemical and functional properties of acid-soluble collagen (ASC) and pepsin-soluble collagen (PSC) from rockfish skin were characterized. Yield of PSC (90.0%) was higher than that of ASC (63.2%). Both ASC and the PSC consisted of ${\alpha}1$ and ${\alpha}2$ chains, and $\alpha$-cross-linked components. According to the results of hydroxylation of proline and lysine, and FT-IR, no difference between the helical structure of ASC and PSC was identified. Thermal denaturation temperature (TDT) of ASC from rockfish skin was $22.8^{\circ}C$, the same as exhibited in PSC. Both ASC and PSC were higher in water absorption capacity (WAC) and oil absorption capacity (OAC) than other vegetable proteins. According to the results of emulsifying activity (EA) and cooking stability (CS), both ASC and PSC from rockfish skin were inferior compared to the commercial emulsifier (Tween-80). The results of FT-IR suggested that the structure of PSC was slightly different when compared to that of ASC. No differences in solubility were established between ASC and PSC from rockfish skin at various pH and NaCl concentrations.

남녀 대학생의 지방에 대한 영양지식과 실천도 (College Students' Nutrition Knowledge and Practices toward Dietary Fat)

  • This study was made for male and female university students regarding the nutrition knowledge about fat, fat contents in food, and practice toward fat. The result is as follows;1.Out of 13 questions inquiring the knowledge about fat a significant difference was observed between female and male students in 10 questions. Male students' nutrition knowledge about fat was $6.33{\pm}0.16$, and that of female students' was $6.33{\pm}0.16$ and there was no significant difference. The ratio of correct answer was 49% and 59% respectively. Female students marked high ratio of correct answer such items as ${\omega}-3$ fatty acid, the relation between high fat diet and atherosclerosis(coronary disease), the relation between obesity and fat, the relation between ${\omega}-3$ fatty acid and heart disease, cholesterol, fatty acid in butter, degree of unsaturation in liquid oil, margarine, chicken fat, rancity of fat. 2.Male students' total score of knowledge about fat quantity in food was $4.91{\pm}0.10$ and that of female students was $5.58{\pm}0.10$. There was significant difference(p<0.001) and the ratio of correct answer was 55% and 62% respectively. Out of 9 food items, significant difference was observed in 7 items according to student's majoring subject. The ratio of correct answer for the questions about the quantity of fat in food female showed high figures in such items as white meat(p<0.01), whole milk(p<0.0001), skim milk(p<0.01), potato chips(p<0.001), biscuit(p<0.001). However, male students showed high figures on the question about the quantity of fat in vegetable margarine. 3. Out of 12 items observing the degree of diet practice on fat, significant difference was observed between male and female students in 6 items. Female students practice the question items positively with high ratio: intake of fish instead of meat(p<0.01), removing visible fat in meat(p<0.0001), removing chicken skin(p<0.0001), removing oil during cooking (p<0.05), selection of low fat milk or skim milk(p<0.05), selection of meat part(p<0.001). There was significant difference between male and female students in practicing diet on fat (p<0.001) and the total score was $31.52{\pm}0.52$ and $34.65{\pm}0.41$ respectively.

요소 이용 포화도 저감을 통한 동.식물성 바이오디젤의 저온유동성 개선 (Improvement of Low-temperature Fluidity of Biodiesel from Vegetable Oils and Animal Fats Using Urea for Reduction of Total Saturated FAME)

  • 바이오디젤의 저온유동성과 산화안정성은 주로 녹는점이 높은 포화 및 불포화 지방산 메틸에스테르의 함량에 의해 좌우된다. 본 연구는 동물성 유지인 우지 유래 바이오디젤에 요소를 첨가하여 포화지방산 메틸에스테르 함량을 저감시켜 동물성 바이오디젤의 저온유동성 개선과 포화지방산 메틸에스테르 함량이 저감된 동물성 바이오디젤을 식물성 바이오디젤에 혼합함으로써 식물성 바이오디젤(유채유, 폐식용유, 대두유 및 동백유)의 저온유동성을 개선하기 위해 수행 되었다. 연구결과, 동물성 바이오디젤의 포화도 저감을 통해 저온필터막힘점을 최대 $-15^{\circ}C$까지 낮추었고, 포화도가 저감된 동물성 바이오디젤을 식물성 바이오디젤과 혼합함으로서 식물성 바이오디젤의 저온필터막힘점을 $-10{\sim}-18^{\circ}C$까지 낮출 수 있었다. 본 연구를 통해 동 식물성 유지 유래 바이오디젤의 저온특성을 개선함으로써 국내 겨울철 환경조건에서 연료유로 적용 가능성을 증대할 것으로 기대한다.
