Variation in Chemical Components of Korean Green Tea (Camellia sinensis L.) Resulted from Developing Stages and Processing Recipe (한국산 녹차의 채엽시기 및 제조법에 따른 화학성분 변이)

  • In this study physicochemical characteristics such as crude lipid, crude protein and total sugar contents have been analyzed with samples taken at different developing stages and growing sites, Bongsan-ri(steam-roasted green tea) and Buchun-ri(roasted green tea) area. Leaf area of new leaf was larger in Buchun-ri(7.23cm$^2$) than in Bongsan-ri(6.93cm$^2$). Variation of leaf area by the developing stages was the largest at between stage II (May 5) and stage III(May 18). Dry matters ratio of tea leaf were 26.3% in Bongsan-ri and 26.6% in Buchun-ri. Water content, ash, water-soluble matters, total sugar content of green tea sampled in Bongsan-ri and Buchun-ri were 5.6, 6.1, 33.1, 4.6 and 6.2, 5.8, 35.2, 2.8%, respectivley. Crude lipid, total nitrogen and water-soluble protein, inorganic matters content of green tea sampled in Bongsan-ri and Buchun-ri were 2.8, 5.1, 1.1, 2.56 and 2.2, 5.7, 1.0, 2.34%, respectively. At the later developing stages crude lipid, total sugar contents were increased, whereas total nitrogen had low content. Vitamin C, Vitamin E and Vitamin A content of green tea produced in Bongsan-ri and Buchun-ri area were 413mg%, 71.8mg%, 32.15IU and 311mg%, 52.3mg%, 25.68IU, respectively. Vitamin C and Vitamin E content were increased toward the later sampling stages. Water-soluble matters and water-soluble protein content of green tea prepared by the steam-roasted method and the roasted method were increased by 0.11, 0.13 and 0.09, 0.08%, respectively, compared to unroasted check. Crude lipid content of green tea prepared by the steam-roasted method and the roasted method were decreased by 0.13 and 0.24%, respectively. Total nitrogen content of green tea prepared by the steam-roasted method and the roasted method was changed 0.019 and 0.036%, respectively and total nitrogen content showed minute different between two methods.

Relationship of Nitrate Reductase Activity to Leaf Yield, Protein, Sugar and Physiological Attributes in Mulberry (Morus alba L.)

  • Ten improved mulberry varieties (Vl, C1730, C2016, C2017, Anantha, RFS-175, Thallaghatapura, Vishala, S1 and S1635) were evaluated through enzyme assay and estimation of soluble protein content followed by regression analysis, grown under irrigated conditions in the alluvial soils of Gangetic plains of West Bengal in India for five successive crops in a year, The nitrate reductase (EC No. 1.6.6.1) activity (NRA, $\mu$mol N $O_2$- $h^{-1}$ $g^{-1}$ fr, wt.), total soluble protein (mg $g^{-1}$ fr, wt.) was estimated which showed to vary significantly in the tested varieties. In addition to these, the other parameters like unit leaf fresh and dry weight (g), moisture %, unit leaf area ($\textrm{cm}^2$), specific leaf weight (g c $m^{-2}$ ), total soluble sugar (mg $g^{-1}$ fr, wt.), leaf yield/plant (kg), shoot yield/plant (kg) and net photosynthetic rate (NPR, $\mu$$m^{2}$ $s^{-1}$ ) were also studied which showed to vary significantly in tested varieties. Among them, S1635, haying higher NRA (13.25 $\mu$㏖ N $O_2$- $h^{-l}$ $g^{-1}$ fr, wt.), total soluble protein (39.63mg $g^{-1}$ fr, wt.), NPR(16.66 $\mu$$m^{-2}$ $s^{-1}$ ), total soluble sugar (48.44 mg $g^{-1}$ fr. wt.), leaf yield/plant (0.689 kg) and shoot yield/plant (1.135 kg) showed its superiority over other tested varieties. Regression and correlation coefficients were analysed, and a strong positive correlation was found between NRA & total soluble protein, NRA & NPR, NRA & total soluble sugar, NRA af unit leaf weight, NRA & specific leaf weight, NRA & leaf yield/plant, NRA & shoot yield/plant, NPR & leaf yield and NPR & specific leaf weight.t.

A Study on the Deposition Amount of Water-soluble Ionic Components in Dustfall in Kwangju City (광주시 강하분진중 수용성 이온성분의 강하량에 관한 연구)

  • In order to investigate the deposition chara.cteristics of water-soluble ionic components in dustfall in Kwangju city, dustfall samples were collected by deposit jar for one year from December 1992 to November 1993. The depositjon amount of dustfall and water-soluble ionic components ($SO_4^{2-}, NO_3^-, Cl^-, NH_4^+, Na^+, Ca^{2+}, Mg^{2+}, K^+$) were measured. The total deposition amount of dustfall was 10.0 ton/$km^2$/month and showed seasonal trend of Summer and Spring > Fall and Winter. The total deposition amounts of water-soluble components showed 2.41 ton/$km^2$/month and seasonal trend of Summer > Fall > Spring > Winter. Deposition amount of $SO_4^{2-}$ was 0.99 ton/$km^2$/month which makes up 41% of water-soluble components. The deposition amounts of dustfall and watersoluble components according to the sampling points were approximately similar to each other. From this result, it can be estimated that the deposition amounts of dustfall and water-soluble components in dustfall were more influenced by the seasonal variation than the regional emission characteristics of pollution source. The content of each ionic component to the deposition amount of water-soluble components showed in order of $SO_4^{2-} > Cl^- > NH_4^+ > Na^+ > Ca^{2+} = K^+ > NO_3^- > Mg^{2+}$ respectively.

Processing, Quality Stability and Utilization of Approved Sardine Surimi for Surimi-based Products (정어리 개량고기풀의 제조와 품질 안정성 및 이용성)

  • This study was conducted to investigate chemical properties, quality stability and utilization of approved sardine surimi(ASS) which is developed our laboratory. The product yield of the ASS was about 3 times higher than that of usual sardine surimi(SS). The proper addition concentration of sodium bicarbonate was 0.1% for the neutralization of the ASS. The content of salt soluble protein nitrogen in the ASS was about the half of that in the SS, while the content of water soluble protein nitrogen was 2.4 times higher in ASS. The total amount of free amino acids in the ASS was about 11 times higher than that of the SS. Predominant free amino acids in the ASS were histidine, taurine, glutamic acid and alanine, and those four amino acids occupied 94% of total amount of free amino acids. During cold storage at 21oC for 6 months, the quality of ASS was more stable than that of SS in judging from changes of water soluble and salt soluble protein nitrogen, AV and POV. Quality of fish burger, fish sausage and fried fish paste processed in accordance with commercial processing preparation using the ASS or SS exclusively and mixtures which other white meat fish surimi(alaska pollack, hair tail and sole) were proportionallly added to each of two types of sardine meat were evaluated. In case of fish burger, the product processed from the ASS only were superior.

Properties of Water-Soluble Propolis Made with Honey

  • Propolis is made by bees collecting protective material or essence of plants and mixing with saliva and enzymes produced by the salivary glands. It is used to repair the inside of the honeycomb, keep it sterile, and adjust the temperature and humidity. Propolis is a natural antibiotic substance that it is used to make a clean room by coating the cell before the queen bee lay eggs, and preventing the bacteria from invading by using with wax when sealing the nursery room. Propolis extract is a health functional food with antioxidant and oral antimicrobial effects. In order to use propolis in food, its active ingredients are extracted with ethanol. Water-soluble propolis was prepared by mixing and stirring honey and ethanol extracted propolis (EEP) solution. When 1kg of honey and 100ml of ethanol extracted propolis solution were mixed and stirred, the total flavonoid content of water-soluble propolis was $6.6{\pm}1.1mg/10g$, and the free radical scavenging effects of water-soluble propolis were 54 to 74%.

Changes of Total Polyphenol Content and Antioxidant Activity of Ligularia fischeri Extracts with Different Microwave-Assisted Extraction Conditions (마이크로웨이브 추출조건에 따른 곰취 추출물의 총 폴리페놀 함량 및 항산화작용의 변화)

  • This study was undertaken in order to compare reflux extraction(RE) and microwave-assisted extraction(MAE) in extraction efficiency and establish optimum microwave extraction conditions in obtaining Ligularia fischeri extracts. A considerable reduction in extraction time was accomplished by MAE. When 70% methanol 50% methanol 70% ethanol, or 50% ethanol was used, MAE extract contained equal levels of soluble solid and total polyphenol as obtained by RE. The optimum microwave-assisted extraction conditions for Ligularia fischeri were achieved by 120∼150 watts of microwave energy and 4∼8 minutes of extraction time. No significant changes were found in antioxidant activity with DPPH scavenging method over the variation of microwave energy or extraction time. The use of diluted methanol or ethanol improved soluble solid content(30%), total polyphenol content(2.7%) and antioxidant activity(68%).

  • This study was conducted in order to compare reflux extraction(RE) and microwave-assisted extraction(MAE) in extraction efficiency and establish optimum microwave extraction conditions in obtaining Aster scaber Thunb extracts. Extraction time was reduced considerably in MAE. When 70% methanol, 50% methanol, 70% ethanol, or 50% ethanol was used, no difference was found in the amount of soluble solid and total phenol between MAE and RE. The optimum microwave-assisted extraction conditions for Aster scaber Thunb were achieved by 120-150 watts of microwave energy and 4∼8 minutes of extraction time. No significant changes were found in antioxidant activity using DPPH scavenging method over the variation of microwave power or extraction time. The use of diluted methanol or ethanol improved soluble solid content(30.8%), total polyphenol content(2.9%) and antioxidant activity(69% ).

Physicochemical Properties of β-Glucan from Acid Hydrolyzed Barley

  • This study was performed to investigate changes in the content and purity, as well as physical characteristics of ${\beta}$-glucan extracted from acid hydrolyzed whole grain barleys. Waxy and non-waxy barleys (Hordeum vulgare) were hydrolyzed with different concentrations of HCl (0.1~0.5 N) for 1 h. As the HCl concentration increased, the contents of total and soluble ${\beta}$-glucan from acid hydrolyzed barley decreased. However the ratio of soluble/total ${\beta}$-glucan content and purities of ${\beta}$-glucan significantly increased. The ratio of ${\beta}-(1{\rightarrow}4)/{\beta}-(1{\rightarrow}3)$ linkages, molecular weight, and viscosity of soluble ${\beta}$-glucan of raw barleys were 2.28~2.52, $6.0{\sim}7.0{\times}10^5g/mol$, and 12.8~32.8 centipoise (cP). Those of isolated soluble ${\beta}$-glucan were significantly decreased to 2.05~2.15, $6.6{\sim}7.8{\times}10^3g/mol$, and 3.6~4.2 cP, respectively, with increasing acid concentration. The re-solubility of raw barley ${\beta}$-glucan was about 50%, but increased to 97% with increasing acid concentration. Acid hydrolysis was shown to be an effective method to produce ${\beta}$-glucan with high ratio of soluble ${\beta}$-glucan content, purity, water solubility, and low viscosity.

Optimization of Extrusion Process Conditions to Increase the Corn Fiber Gum and Soluble Arabinoxylan Yield from Corn Fiber (옥수수 섬유질로부터 검과 수용성 아라비노자일란의 수율향상을 위한 압출성형 조건의 최적화)

  • The effects of feed moisture content (25, 35, and 45%), screw speed (230, 250, and 270 rpm), and barrel temperature (130, 140, and $150^{\circ}C$) on the product yield and soluble arabinoxylan (SAX) content from destarched corn fiber (DCF), and its optimization were investigated. The yield and SAX content of corn fiber gum (CFG) from the extruded destarched corn fiber (EDCF) were higher than those of DCF. Statistical analyses revealed that the feed moisture content and barrel temperature had a significant effect on the CFG yield and total SAX content. The optimum extrusion pretreatment conditions were as follows: feed moisture content, 30%; screw speed, 260 rpm; barrel temperature, $133^{\circ}C$. This study showed that the response surface methodology was suitable for the optimization of the extrusion conditions used to maximize the CFG yield and total SAX content from EDCF.

Alterations in the Content and True Retention of Water-soluble Vitamins and Bioactive Compounds in Vegetables, according to Different Cooking Methods (조리방법에 따른 채소류의 수용성 비타민 및 기능성 성분의 함량과 잔존율 변화)

  • This study examines the effects of different cooking methods (stir-frying, steaming, superheated-steaming) on the contents and the true retention of moisture, water-soluble vitamins, and bioactive compounds of ten selected vegetables: broccoli, brussels sprout, cabbage, eggplant, green bean, onion, red cabbage, red onion, squash, and tomato. The total color difference (𝚫E) values were decreased after stir-frying the samples, except for eggplant, green bean, and tomato. The true retention of water-soluble vitamins (B1, B2, B3, and C) was increased in most vegetables after superheated-steaming, as compared to steaming and stir-frying. Moreover, compared to the uncooked vegetables, a higher true retention of total polyphenol and flavonoid was obtained for most vegetables subsequent to superheated-steaming. Total anthocyanin content was detected only in eggplant, red cabbage, and red onion, and a smaller loss of anthocyanin was determined after subjecting red cabbage to superheated-steaming. Also, the free radical scavenging activities were higher in superheated-steaming vegetables, except in eggplant and squash. These results indicate that superheated-steaming induces a positive effect for retaining water-soluble vitamins and functional components of vegetables.
