전기투석기를 이용한 액젓의 탈염중 화학적 변화 (Chemical Changes During Desalting of Fish Sauces Using Electrodialyzer)

  • 영양적으로 우수하고 저염이면서 기능성 높은 고품위의 김치 전용 액젓을 개발할 목적으로 액젓을 실험용 전기투석기를 이용하여 탈염하였다. 염농도를 20%, 15%, 10%, 5%, 2%로 조정하였으며 pH Total nitrogen, Amino nitrogen, $NH_3$ 함량을 측정하여 탈염과정 중 발생하는 이화학적 숙성 지표의 변화를 측정하였다. 탈염이 진행됨에 따라 pH는 증가하였고 TN, AN의 함량도 증가하였다. 반면에 $NH_3$의 함량은 감소하였는데 이는 고유의 전하를 띠고 있는 암모니아의 특성상 염과 함께 제거된 것으로 사료되었다. 유리아미노산 함량은 대체적으로 증가하는 경향을 나타내었다. 따라서 전기투석기를 이용하여 액젓을 탈염하게 되면 염농도 2% 이하까지 탈염할 수 있었으며 동시에 염과 수분이 감소되므로 농축효과까지 얻을 수 있었다.

Assessment of water quality variations under non-rainy and rainy conditions by principal component analysis techniques in Lake Doam watershed, Korea

  • This study was based on water quality data of the Lake Doam watershed, monitored from 2010 to 2013 at eight different sites with multiple physiochemical parameters. The dataset was divided into two sub-datasets, namely, non-rainy and rainy. Principal component analysis (PCA) and factor analysis (FA) techniques were applied to evaluate seasonal correlations of water quality parameters and extract the most significant parameters influencing stream water quality. The first five principal components identified by PCA techniques explained greater than 80% of the total variance for both datasets. PCA and FA results indicated that total nitrogen, nitrate nitrogen, total phosphorus, and dissolved inorganic phosphorus were the most significant parameters under the non-rainy condition. This indicates that organic and inorganic pollutants loads in the streams can be related to discharges from point sources (domestic discharges) and non-point sources (agriculture, forest) of pollution. During the rainy period, turbidity, suspended solids, nitrate nitrogen, and dissolved inorganic phosphorus were identified as the most significant parameters. Physical parameters, suspended solids, and turbidity, are related to soil erosion and runoff from the basin. Organic and inorganic pollutants during the rainy period can be linked to decayed matters, manure, and inorganic fertilizers used in farming. Thus, the results of this study suggest that principal component analysis techniques are useful for analysis and interpretation of data and identification of pollution factors, which are valuable for understanding seasonal variations in water quality for effective management.

생육중반기 피복제거가 작토층의 수분 및 무기성분 변화와 연초양분흡수에 미치는 영향 (Effect of Removing P.E film-Mulch at Budding Stage of Tobacco on the Change of Moisture and Mineral Content in Plow Layer Soil and Nutrient Uptake.)

  • This experiment was carried out to Investigate the environmental changes of rhizosphere, behavior of nutrient components in soul, and nutrients uptake and growth response of the tobacco plant in the condition that mulch as polyethylene film, had been removed on the ridge at the 50th day after transplanting in comparison with continuous mulching condition. The results obtained were as follows; 1. After rainfall, soil moisture content In the plow layer was greatly increased without mulch in comparison with that of the plot with mulch. As a result, leaf water potential of tobacco plant without mulch was higher than that with mulch. 2. Available nutrients such as $NH_4-N, \;NO_3-N$, and total salts in the plow layer of the plot without mulch tended to be Increased, and especially accumulated on the surface layer owing to the redistribution of soil water by rainfall during the latter growth stage after removing mulch. 3. Nutrients uptake by tobacco was much more enhanced in the plot without mulch and resulted in higher contents of total nitrogen, $NO_3-N, \;P_2O_5, \;and K_5O$ in the tobacco leaf Especially higher content of nitrogen caused the delay of maturity resulting In the increased of dry weight of top part of tobacco in the plot without mulch toned to be Increased in comparison with that in mulching condition. Content of total nitrogen, $NO_3-N$, and nicotine in flue-lured leaves was much higher in the plot without. mulch than in mulching condition, but lower content of reducing sugar in the plot without mulch resulted in lower quality of tobacco.

  • To evaluate fertilizer value of animal cadavers for agricultural recycling, fertilizer components of animal cadavers by pig and poultry were investigated using rendering and alkali (KOH) treatment methods. Total nitrogen concentrations in meat waste by pig and poultry using rendering treatment method were 7.80% and 9.30%, respectively. Total nitrogen concentration in meat waste of pig by KOH treatment method was lower than that by rendering treatment method. Organic matter concentrations in meat waste of pig and poultry ranged 87.8~97.4%. Total phosphorus concentrations in bone waste of pig using rendering and KOH treatment methods ranged 5.59~11.18%. Animal cadavers contains nitrogen, phosphorus, potassium and other nutrients essential to plant growth. The results of this study suggest that animal cadavers can supply some of the nutrient requirements of crops and is a valuable fertilizer as well.

양식 참전복(Haliotis discus hannai) 열성패 추출물의 제조 및 품질특성 (Processing and Quality Characteristics of a Cultured Recessive Small-sized Abalone Haliotis discus hannai Extract)

  • To determine whether there are differences in the food component characteristics of the cultured recessive small-sized abalone Haliotis discus hannai (SA; 30-40 each/kg) and middle-sized abalone (MA; 10-15 each/kg), the proximate compositions, fatty acid and total amino acid compositions of these two species were evaluated. Additionally, extraction methods were performed on the SA to asses the quality characteristics of the resulting. In terms of proximate composition, MA had lower moisture and carbohydrate levels and higher crude protein contents than SA. The total amino acid contents of MA and SA were 15,734.4 and 11,379.1 mg/100 g, respectively, the major amino acids were glutamic acid, aspartic acid, serine, glycine, alanine, leucine, arginine and lysine, and the major fatty acids were 16:0, 18:0, 18:1n-9, 18:1n-7, 20:4n-6, 20:5n-3, and 22:5n-3. The pH levels and total nitrogen and amino nitrogen contents of the hot-water extract (WE) and scrap enzyme hydrolysate (SE) samples from the SA were 6.32 and 6.05, 1.36% and 1.52%, and 342.1 and 403.1 mg/100 g, respectively. The extraction yields and free amino acid contents from SA were 1,317 and 440 mL/kg, and 8,721.1 and 9,070.7 mg/100 g, respectively, and the concentrations of major components were as follows: arginine, glycine, glutamic acid, alanine and lysine. Additionally, the complex extract (WE+SE) was superior to the traditional extract (WE) in terms of extraction yield, amino-nitrogen content, and organoleptic qualities but not odor.

질소비료 시용량에 따른 옥로차의 수량 및 품질 (Effect of Nitrogen Level on Yield and Quality of Gyokuro Tea)

  • 차광재배 후 채취한 차잎으로 제다(製茶)한 옥로차의 시비량에 대한 연구결과는 다음과 같다. 시험토양은 일반토양보다 유기물($59.8g\;kg^{-1}$)과 유효인산($1,285mg\;kg^{-1}$)함량은 많았으나 pH(4.79)가 낮은 약산성토양이었다. 질소시비량이 증가함에 따라 수량은 증가하였으나, 과도한 질소비료 시용시 수량은 증가되지 않았다. 질소시비량이 증가할수록 총질소, 총아미노산, 카페인, 엽록소함량은 증가하였으나, 탄닌과 비타민 C 함량은 별 차이가 없었다. 시비량이 증가할수록 데아닌, 아르기닌 함량은 증가하였고, 반면에 아스파틱산 세린, 글루탐산은 감소하였다. 총지방산 함량은 $2.850{\sim}3.012mg\;100g^{-1}$이었고 특히 질소 $80kg\;10a^{-1}$에서 불포화 지방산인 oleic acid, linoleic acid, linolenic acid 함량이 다른 처리구에 비해 많았다. 질소 $80kg\;10a^{-1}$ 처리구기 다른 처리에 비해 관능평가에서 0.2~4.6점 더 높은 점수를 받았다. 질소 $80kg\;10a^{-1}$처리가 다른 처리에 비해 수량도 양호하고 차 품질도 우수하여 차나무의 적정시비량이라 생각된다.

고려인삼류와 유사생약중 ginsenoside 및 질소화합물의 함량 비교 (Quantitative Comparison of Ginsenosides and Nitrogen Compounds in Korean Ginsengs and Related Origin)

  • To differentiate the quality of Korean ginseng from those of other habitats, the quantitative analysis of free amino acids(FAA) and total amino acids(TAA) in addition to ginsenoside Rb1 and Rg1 was carried out using amino acid analyzer and HPLC, respectively. FAA pattern in Korean ginseng was much different from that of Panax notoginseng. The difference in total content of FAA was also found that Korean ginseng contained 26.3-39.8mg/g while Panax notoginseng contained 6.5mg/g. This FAA content had a tendency to increase with the age of radix. The contents of FAA and TAA in Korean ginseng(6 years old) from Kumsan were shown to be the highest than other ginseng origins tested. The content in the 6 years Panax ginseng from China was about same with that of 4 years Korean ginseng of Kumsan. However, regarding to gisenoside Rbl and Rg1, which have been accepted as the characteristic components of Panax ginseng-Panax notoginseng showed considerably higher content than those of any other ginseng origin.

인간간섭하의 수도권 그린벨트 내 식물군집의 동태 - 삼림군집의 구조와 이차천이 - (Dyamics of Plant Communities under Human Impact in the Green-Belt nearby Seoul -Structure of Forest Communities and Secondary Succession-)

  • In order to elucidate the relationship among the several forest types in the green-sbelt nearby Seoul, the vascular plant species data collected preferentially from 52 stands were subjected to DCA (detrended correspondence analysis). Eight types of forests were arranged on the I/II plane fo DCA stand ordination, Quercus mongolica, Alnus hirsuta, Populus alba $\times$ glandulosa, Robinia pseudo-acacia, Pinus densiflora, Pinus koraiensis, Larix leptolepis and pinus rigida forest. Correlation analysis between the stand scores of DCA and environmental factors revealed that the axis I of DCA stand ordination implied the gradient of altitude, organic matter, total nitrogen and depth of A horizon. The axis II implied the gradient of total nitrogen and soluble phosphorus. The results of PCA (principal components analysis) by environmental data were in good agreement with that of DCA by floristic data. The recruitments of Quercus spp. Occurred in all kinds of forest types in the green-belt and their recruitments were closely related with altitutde: Quercus dentata in the foot. Quercus serrata in the midslope and Quercus mongolica in the uperslope of the mountain.

건우기에 산림토양의 화학성분의 변화 (THE CHANGES OF CHEMICAL PROPERTIES OF FOREST SOILS IN DRY AND WET SEASONS)

  • Cha, Jong Whan (Dept. of Biology, Graduate School, Dong Kuk Univ.) The changes of chemical properties of forest soils in dry and wet seasons. Kor. Jour. Bot. VII(2): 1-8, 1964. Soil selected for the present investigation was collected from a mountain of the Forestry Experiment Station of the vicinity of Seoul. The forest communities studied were three forest and a unplanted soils. The soil samples were obtained from each forest type during dry and wet seasons. And these samples were collected from four horizons of all communities respectively. It was showed that exchangeable hydrogen was increased by rainfall, and total exchangeable base decreased in the same way. The content of nitrogen is washed away by rainfall, especially ammonium nitrogen was highly significant between dry and wet season. On the contrary, organic matter and available phosphorus were of no significant difference between dry and wet seasons. The values of pH appeared a different response in dry and wet seasons according to the plant communities. The needle-leaved forest soils showed more acidity than the broad-leaved forest soils, and the least acidity in open places. All nutrients in soil studied gradually decreased down the profiles. According to statistical analyses of the soil components among all soil horizons, total exchangeable bases in wet season indicated only significant at 1%. Exchangeable hydrogen and organic matter of the soil in dry season was particularly very low with increased depth in the profile. The fertility level of most forested soils selected for the present investigation is low according to chemical tests for available nutrient elements.

병원의 냉장저장급식제도를 위해 조리된 완자전의 냉장저장 중 이화학적 성분변화 (Physicochemical Changes of Wanja-jeon during Cold Storage for Hospital Cook/Chill Foodservice System)

  • To measure nutritional components and physical quality of Wanja-jeon(Korean pan fried meat balls)was investigated during storage in a simulated hospital cook/chill foodservice system. The Wanja-jeon was cooked and stored for 4 weeks in chill conditions of 2 and 7$^{\circ}C$ and then reheated in the microwave oven. Moisture, protein, and fat contents were decreased little during 4 weeks storage at 2 and 7$^{\circ}C$. Total unsaturated fatty acids(TUFA) and polyunsaturated fatty acids(PUFA) increased slightly at 7$^{\circ}C$ storage. Total free amino acid contents were reduced after 4 weeks of storage, while total amino acids were affected little during chilled storage. However, volatile basic nitrogen(VBN) increased during the 4 weeks storage from 11.2mg%, immediately after cooking, to 14.1~14.2mg%. After reheating, thiobarbituric acid(TBA) value increased more significantly to 0.19 and 0.20.
