The Effects of Thickening Agents on the Sensory Quality of Brown Sauce (농후제의 종류에 따른 브라운소스의 품질특성)

  • This study was performed to find out the optimum condition of a thickening agent for brown sauce. Four thickening agents of non-glutinous rice, glutinous rice and potato starch, and roux as control thickeners were tested with various concentrations of each thickener to investigate the quality characteristics of brown sauce samples. The moisture contents of the brown sauce samples thickened with non-glutinous rice, glutinous rice and potato starch showed higher than that of the brown sauce samples thickened with roux. The brown sauce samples thickened with non-glutinous rice and potato starch had higher viscosity than the samples with glutinous rice and roux. The brown sauce with roux showed the highest on Hunter's color L and b value and the brown sauce with non-glutinous rice showed the highest a value. The brown sauce samples with 11% of roux, 11% of non-glutinous rice powder, 12% of glutinous rice powder and 6% of potato starch showed significantly higher scores in the acceptance test. The brown sauce with 6% potato starch resulted in the highest score in brown color, gloss, and transparency, and the brown sauce with 11% of roux showed the highest roast smell. The brown sauces with 6% potato starch and 11% of roux showed higher viscosity than the samples with 11% of non-glutinous rice and 12% of glutinous rice.

Puncture and Cutting Resistance Characteristics of Shear Thickening Fluid Impregnated Kevlar Fabrics (전단농화유체가 함침된 Kevlar 직물의 방검 및 방침 특성)

  • Stab threats using sharp edged or pointed Instruments could be easily encountered by police officers or soldiers. In this study, the shear thickening fluids (STF) was impregnated into Kevlar fabrics to improve the stab protection and the resistance of STF impregnated Kevlar fabrics was experimentally investigated. The puncture and cut resistance were tested using a drop test machine withspike and knife indenters fabricated based on the National Institute of Justice (NIJ) standard. The STF was filled with spherical $SiO_2$ particles having an average diameter of 100nm, 300nm, and 500nm. The effect of particle size on puncture and cut resistance of STF impregnated Kevlar fabrics was also investigated. The measured impact load histories showed that STF impregnation into fabric leads to withstand higher peak loads than that of neat fabrics under spike test. The test results showed that Kevlar impregnated with STF exhibit remarkable improvements in puncture resistance while it is slightly influential on the cut resistance. Specifically, particle size is the one of the dominant factors controlling fabric resistance to puncture under spike impact test.

A Study on the Low Speed Impact Response and Frictional Characteristics of Shear Thickening Fluid Impregnated Kevlar Fabrics (전단농화유체를 함침한 케블라 직물의 저속충격 거동 및 마찰특성 연구)

  • In this study, shear thickening fluid (STF) filled with rigid nano silica particles was impregnated in plain woven Kevlar fabrics to improve the impact resistance performance. The nano silica particles with an average diameter of 100nm, 300nm, and 500nm were used to make shear thickening fluid to estimate the effect of particle size on the impact behavior of STF impregnated Kevlar fabrics. The yam pull-out and frictional tests were conducted to estimate the effect of impregnated STF on the frictional characteristics. The test results showed that the friction forces were dramatically increased at the STF onset shear strain rates that were measured in preliminary rheology tests. The low speed impact tests were performed using the drop test machine. The results showed that the impregnated STF improved the impact resistance performance of the Kevlar fabrics in terms of the impact energy absorption and the deformation. It has been shown through tests that the impregnated STF affects the interfacial friction which contributes to improve the energy absorption in the Kevlar fabrics. Especially, the impregnation of the STF with the smaller particle size into the Kevlar fabrics showed the better performance in impact energy absorption.

  • Background: Tuberculous pleural effusion responds well to the anti-tuberculosis agents in general, so no further aggressive therapeutic managements to drain the tuberculous effusion is necessary except in case of diagnostic thoracentesis. But in clinical practice, we often see some patients who later decortication need due to dyspnea caused by pleural thickening despite the completion of anti-tuberculosis therapy in the patients with tuberculous effusion. Especially, the patients with loculated tuberculous effusion might have increased chance of pleural thickening after treatment. The purpose of this study was that intrapleural urokinase instillation could reduce the pleural thickening in the treatment of loculated tuberculous pleural effusion. Methods: Thirty-seven patients initially diagnosed as having loculated tuberculous pleural effusion were randomly assigned to receive either the combined treatment of urokinase instillation and anti-tuberculosis agents(UK group) and anti-tuberculosis agents(Non-UK group) alone. The 16 patients in UK group received a single radiographically guided pig-tail catheter ranging in size from 10 to 12 French. 100,000 units of urokinase was dissolved in 150 ml of normal saline and instilled into the pleural cavity via pig-tail catheter every day, also this group was treated with anti-tuberculosis agents. While the 21 patients in Non-UK group were treated with anti-tuberculosis agents only except diagnostic thoracentesis. Then we evaluated the residual pleural thickening after treatment for their loculated tuberculous pleural effusion between the two groups. Also the duration of symptoms and the pleural fluid biochemistry like WBC counts, pH, lactic dehydrogenase(LDH), glucose, proteins, and adenosine deaminase(ADA) were compared. Results: 1) The residual pleural thickening(RPT)($5.08{\pm}6.77$ mm) of UK group was significantly lower than that($20.3222{\pm}26.37$ mm) of Non-UK group(P<0.05). 2) The duration of symptoms before anti-tuberculosis drug therapy of patients with RPT$\geq$10 mm($5.23{\pm}3.89$ wks) was significantly longer than the patients with RPT<10 mm($2.63{\pm}1.99$ wks)(P<0.05). 3) There were no significant differences in the pleural fluid findings like WBC count, glucose, LDH, proteins, pH, ADA between the patients with RPT$\geq$10 mm and the patients with RPT<10 mm. Conclusion : The treatment of loculated tuberculous pleural effusion with the urokinase instillation via percutaneous transthoraic catheter was effective to reduce the pleural thickening.

A Case of Hypereosinophilic Syndrome with Bladder Involvement in a 7-Year-Old Boy

  • Hypereosinophilic syndrome (HES) is characterized by the presense of hypereosinophilia with evidence of target organ damage. We report a patient diagnosed with eosinophilic cystitis and HES. A 7 year old boy had hematuria, dysuria, and increased urinary frequency for 1 day. Laboratory examinations revealed hypereosinophilia (eosinophils, $2,058/{\mu}L$), hematuria, and proteinuria. Abdominal sonography revealed diffuse and severe wall thickening of the bladder. The patient was treated initially with antibiotics. However, his symptoms did not improve after 7 days. A computed tomography scan demonstrated severe wall thickening of the bladder and the hypereosinophilia persisted (eosinophils, $2,985/{\mu}L$). The patient complained of chest discomfort, dyspnea, epigastric pain, and vomiting on hospital day 10. Parasitic, allergic, malignancy, rheumatologic, and immune workups revealed no abnormal findings. Chest X-rays, electrocardiography, and a pulmonary function test were normal; however, the hypereosinophilia was aggravated (eosinophils, $3,934/{\mu}L$). Oral deflazacort was administered. A cystoscopic biopsy showed chronic inflammation with eosinophilic infiltration. The patient's respiratory, gastrointestinal, and urinary symptoms improved after 6 days of steroids, and he was discharged. The eosinophil count decreased dramatically ($182/{\mu}L$). The hypereosinophilia waxed and waned for 7 months, and the oral steroids were tapered and stopped. This case describes a patient diagnosed with eosinophilic cystitis and HES.

A Case of Pachydermoperiostosis (경피골막증: 증례보고)

  • Purpose: Pachydermoperiostosis is a rare hereditary disease characterized by finger clubbing, periosteal reaction, and pachydermia. The underlying pathogenic mechanism of this disease remains unclear. This disease is known to be associated with a variety of diseases such as cranial suture defect, bone marrow failure, hypertrophic gastropathy, Crohn's disease, and female escuchen. Methods: A 50-year-old male had digital clubbing of both hands, coarse hypertrophic skin changes of face, progressive thickening and furrowing on the scalp(cutis verticis gyrata), persistent pain in the limbs and joints. Other cutaneous features include moderate blepharoptosis, pole-like lower legs and feet. Results: We performed surgical excision for hypertrophic skin change of scalp because of frequent eczematous skin change, severe itching sensation and cosmetic problem. Diagnosis is confirmed by bony proliferative periosteal reaction, pathologic findings, and characteristic clinical findings. Conclusion: Pachydermoperiostosis is manifested by finger clubbing, and hypertrophic skin changes causing coarse facial features with thickening and periosteal bone formation. We experienced a case of pachydermoperiostosis. Brief review of related literature is given.

Rheological behavior and wall slip of dilute and semidilute CPyCl/NaSal surfactant solutions

  • In this research, experimental studies were performed to examine the rheological behavior of equimolar solutions of cetylpyridinium chloride (CPyCl) and sodium salicylate (NaSal) solutions with concentration. The surfactant solutions were prepared by dissolving 2 mM/2 mM - 80 mM/80 mM of surfactant/counterion in double-distilled water. It has been observed that the zero shear viscosity shows abrupt changes at two critical values of C^*$ and C^{**}$. These changes are caused by the switching of relaxation mechanism with concentration of CPyCl/NaSal solutions at those concentrations. The wall slip velocities of dilute and semidilute CPyCl/NaSal solutions show a dramatic increase with shear rate where the shear viscosity exhibits shear thickening behavior for dilute solutions and shear thinning behavior for semi-dilute solutions, respectively. Considering that the dramatic increase in wall slip velocity should be related to the formation of shear-induced structure (SIS) in the surfactant solution, the shear thickening behavior of semi-dilute solutions is caused by elastic instability unlike the case of dilute solutions.

  • In this study, both sedimentation and thickening experiments were conducted for residuals produced from an advanced water treatment plant for more accurate and practical design of residual treatment train. In order to design a backwashed residual sedimentation basin (SRSB) in the filter backwash water recycle system, two kinds of backwash waters, one from sand filter (SFBW) and the other from GAC adsorption bed (GACBW), were separately collected and their surface loading rate measured. In addition, in order to design a gravity thickener, batch thickening tests were conducted for concentrated residuals taken from sedimentation basin and their limiting solid flux ($SF_{L}$) measured. From the experimental results and consideration of the seasonal characteristics of the residual, surface loading rate of $70m^{3}/m^{2}{\cdot}d$ was proposed as a design parameter for SRSB and solid loading rate of 20 kg $TS/m^{2}{\cdot}d$ was proposed as a design parameter for gravity thickeners. Finally, the material mass-balance was made for the design of each unit process in the residual treatment train.
