A Survey on the Commercial Poggi Kimchi and Consumer Acceptance Test Prepared in the Various Region (지역별 시판 포기배추김치의 이용실태 및 기호도 조사)

  • Survey on the usage of commercial poggi Kimchi was run and consumer's acceptance test of the Kimchi in the various regions of Korea including Seoul(SE), Kyonggi Province(KG), Kangwon Province(KW), Kyungsang Province(KS), and Jeonla Province(JL) were investigated. Survey result of 34% of consumer showed that they eat Kimchi very much, and 19% answered they ate Wimchi whenever they had chance to eat. The most desired points of improvement in commercial poggi Kimchi were as following; Taste and degree of fermentation should be standardized. Order of preferences of minor ingredients of Kimchi were radish, hot pepper, welsh onion, and leek, respectively. Consumer acceptance test of KS sample group showed higher preference in whole color, salted condition, spicy hot flavor and crispness than the others. In whole color and pickled seafood properties, KG sample group showed significantly higher values than the others. In salty flavor, SE sample group showed lower preference than the others.

A Study on the Recognition, Satisfaction, and Revisit Intentions of Japanese Tourists based on Traditional Korean Foods (방한 일본관광객의 한국음식에 대한 인식, 만족도 및 재방문의도에 관한 연구)

  • This study investigated the impacts from the recognition and satisfaction of Korean foods on the revisit intentions of japanese tourists to Korea. The subjects of this study consisted of 365 Japanese tourists visiting Korea. The findings are summarized as follows: (1) the recognition of Korean food included 'the quality of food material is fresh and good'(3.99 pints), 'Korean food is nutritious and healthful food'(3.89 points), and 'Koran food consisted of grains and vegetables, and the cooking methods were developed specially'(3.88 points) in the order. (2) They were highly satisfied with the 'nutrition of the food,' 'taste of the food,' and 'quantity of the food,' in terms of the Korean food quality however, they were not satisfied with 'Japanese marks on ingredients,' 'sanitary,' 'smell,' and 'freshness.' (3) The most influential recognition variables to affect revisit intentions to Korea was 'health knowledge' followed by 'unique,' 'preference,' 'experience,' and 'interest.' (4) The most influential satisfaction variable to affect revisit intentions to Korea was 'food and menu' followed by 'translation and understanding,' and 'flavor and appearance.'

  • Vinegar and/or sake are often added for preservation hurdle in Korean seasoned beef product, affecting sensory quality. Sous vide packaging formerly developed requires optimization of formulation recipe in these ingredients. Therefore this study looked into the effect of vinegar and sake on the sensory quality attributes by response surface methodology. The addition of vinegar lowered the product pH significantly but sake addition did increase it slightly. Water activity did not change with the addition of these. Ten day storage at $8^{\circ}C$ did not make any significant changes in salt content and water activity. The added vinegar and/or sake in the formulation degraded the hedonic sensory scores of the product. The storage of the product made the degradation effect less pronounced. For the stored product the effect of sake on taste, texture and flavor was greater than that of vinegar. The respective addition of vinegar and sake less 4.0 and 4.5% could maintain the required sensory quality and thus was suggested in this study as their affordable use level for preservation hurdle.

A Medicinal Herbal Tea Increases Success Rate and Reduces Withdraw Symptoms of Smoking Cessation in Men

  • The efficacy of a medicinal herb tea (MHT) for assisting smoking cessation and for reducing withdrawal symptoms was evaluated by a placebo controlled subjective test in 100 male smokers. The MHT group experienced less craving for the taste of tobacco, and was more successful at quitting smoking. Among the subjects continuing to the final stage, 23 subjects (38.3 %) who took the MHT and 2 subjects (10.0 %) who took the placebo tea succeeded in quitting smoking. In the group taking MHT, urinary cotinine concentration increased during the first 2 weeks and then greatly decreased from weeks 2 to 4. The urinary cotinine concentration in the MHT group at week 0 was 38.6 mol/L but decreased to 24.5 mol/L by the end of week 4. MHT also reduced withdrawal symptoms, a frequent reason for failure in reducing or quitting smoking. The effects of the herbal tea on smoking cessation and withdrawal symptoms may be attributed to increased metabolism of nicotine and other effects of unidentified components of the herbal ingredients.

  • As dietary intakes levels of Calcium decrease below those recommended by health authorities the incidence of Osteoporosis is set to continue to rise. To address this issue it is becoming necessary to fortify regularly consumed foods such as cereals, biscuits etc. with ingredients such as AquaCal. AquaCal is a natural, organic source of calcium that is produced from calcified seaweed, Phymatolithon and Lithothamnion and can be utilised for Calcium and magnesium supplementation in a broad range of foods and beverages. AquaCal presents a great potential over other calcium sources because of its porous structure and it composition associating key minerals as calcium, magnesium and boron in addition to being neutral in taste in applications. Once consumed the efficacy of AquaCal must then be verified therefore a bioavailability a comparative feeding study to assess effects of AquaCal on bone density was carried out. There was no significant difference in bioavailability based on calcium absorption between AquaCal and Limestone however the weights of the femurs of the animals fed AquaCal did significantly increase over the group fed Limestone. As a natural and organic mineral AquaCal has many different fields of application.

Use of Monosodium L-Glutamate and Ribonucleotide Seasoning in Korean Processed Foods (국내 가공식품 중 L-글루탐산나트륨과 핵산조미료의 사용 현황)

  • This study aimed to analyze the use of monosodium L-glutamate (MSG) and disodium 5'-ribonucleotide in processed foods manufactured in Korea. Information about MSG and disodium 5'-ribonucleotide was collected from the ingredients claimed on the food packaging. A total of 412 food items were investigated, and 76 items were found to use MSG, disodium 5'-r ibonucleotide, and/or disodium 5'-inosinate. MSG was the most frequently found in 45 items (10.9%), followed by disodium 5'-ribonucleotide in 27 items (6.6%) and disodium 5'-inosinate in three items (0.7%). Of 29 food categories classified by the Korea Food Code, MSG was used most frequently in others, meat products, seasoned food, fish products, and noodles. In comparison, disodium 5'-ribonucleotide was mostly used in noodles. These results indicate that MSG and disodium 5'-ribonucleotide have been used in various Korean processed foods as a flavor enhancers with an umami taste that intensifies the flavor of food.

Study on Intakes and Preferences related to Korean Traditional Tea of Adults in Korea (전통차류에 대한 한국 성인의 이용현황 및 기호도 연구)

  • This study was conducted to investigate the intakes and preferences related to Korean traditional teas in each of the age groups. The survey was conducted from March $9^{th}$ to $23^{rd}$, 2015. The subjects in this study were 642 adults aged more than 20 years that resided in the Seoul and Gyeonggi areas. The health status score was 3.57, and the health concern score was 3.54. The reason for preferring traditional tea was 'health' (40.5%) and 'good taste, color, and aroma' (29.7%). The most important factor in drinking a traditional tea was health (37.1%). Acceptance of each type of traditional tea was ranked in order of 'grain tea', 'fruit tea', 'floral leaf tea', 'assorted tea', 'medical root tea', and 'tonic tea'. A total of 92.8% of respondents said traditional teas should be popularized. Regarding problems for popularization of traditional teas, the most common response was 'not popularized yet' (39.7%). Regarding the method for popularization of traditional teas, the most common response was 'convenience of purchase for ingredients'. As a result, preferences for traditional tea and popularization method were different according to age. It is thus necessary to develop traditional tea products considering the age range.

  • In the present study,effect of natural mulbelly leaf tea on DMEM MDCK cell line. Mulbelly leaf teas inhibited the proliferation in primery MDCK cells in a dose dependent manner. These results show that mulbelly teas potent inhibits the reactive oxygen species (ROS) and not destruction a component. Therefore, mulbelly teas might improve overall quality of the color and taste. And might be applied newly to development of componant mulbelly teas quality and biochemical change by ROS in living things.

  • The egg's interior quality is one of the most important criteria for commercial producers and consumers. Internal quality is complex, including aesthetic factors such as taste, freshness, nutritional and processing values, and the genetic influences upon these upon these factors ranges from none to considerable. The rate of cholesterol synthesis in the hen is very high compared to other animals and humans. Genetic selection, diet drugs and other chemicals can alter cholesterol concentration in the plasma of laying hen, but attempts to manipulate the cholesterol concentration in the egg yolk are generally unsuccessful since the cholesterol can only be changed to a small extent. Factors which may affect the degree of pigmentation of the yolk include the type of xanthophyll and its concentration in the feed, the feed composition, and the health of the hen. Several feed ingredients interact with carotenoid pigment to improve or reduce their deposition rates in yolks. Egg weight is determined by genetics, body size prior to first egg housing density, environmental temperature, lighting program, total feed consumption, calcium, phosphorus, niacin, water, methionine, total sulfur amino acids, energy, linoleic acid, fat and protein levels. Eggs need to be promote levels. Eggs need to be promoted a versatile commodity and new processed egg items need to be developed. Organic eggs are laid by hens which were raised in chemical and drug frdd environments. There are still difficulties in producing these eggs due to the availability of organic poultry feeds and cost of organic grains.

  • The elderly often experience difficulty while eating; this can include physical problems, such as chewing and swallowing. Furthermore, their salt intake can be high due to a diminished sense of taste and smell. This can result in a reduction in calorie intake and subsequent malnourishment. Currently, the number of food products available in the market that are targeted specifically at the older population is very low. Development of nutritional supplement-based foods for the elderly is expected to reduce these dietary problems and therefore prevent nutritional deficiencies within this population. Milk and other dairy products are excellent sources of nutrition in terms of both nutrient content and absorption rates. Dairy products have been consumed around the world for centuries, and therefore represent an excellent food source for the elderly. In addition, use of milk-derived ingredients, such as casein and calcium, will enable the development of a variety of food products and supplements targeted at this specific age group. In the future, it is expected that milk and other dairy products will be used to develop a variety of nutritious food items for the elderly in the domestic food market.
