Dietary Behaviors and Vegetable Intakes of Elementary School Students at Daegu and Gyeong-Sang Buk Do (대구 경북지역 초등학생들의 식습관과 채소류 섭취에 대한 연구)

  • With the enlargement of school meals, the lunch program has played an important role in educating young students about good eating habits and food Preferences. The objective of this study was to investigate the awareness and preference of vegetables and to provide preliminary data required for framing a menu of school meals to help students maintain good food preference and eating habits with a balanced food diet. A survey was conducted from 25th October to 27th November, 2004 with 873 elementary school students (M: 474, F:399) in the 4th, 5th, or 6th grade of 6 schools in Daegu and Gyeong sang but do (Yongchon, Gumi, Pohang). Satisfaction for the school meal was rated by $52\%$ of the students and 'rice and soup' was the favorite meal type. Eating habits of students were not influenced by the employment status of their mothers. Only $11.2\%$ of students selected vegetable as their favorite food. Marsh mallow, taro stem, green bean sprouts, crown daisy and broccoli showed very low awareness and were selected as the least favorite vegetables. The most important criteria of preference were the taste and eating experience of the vegetables. The most preferred cooking method of the vegetables was tchigae which is a simple stew. Recognition of frequency for daily eating vegetables significantly affected the real intake of vegetables for everyday meals and the preference of vegetables also significantly affected the vegetable intake from the school meals. Compared to the school dietitian, mothers showed a greater frequency in being selecting as an educator of nutritional information. The above results indicated the need to improve the level of students' understanding of the importance of vegetables in the daily diet with parental education and publicity.

  • Based on the nutritional component analysis data of the Rural Development Administration, the change in the main nutrients of vegetables for 40 years from 1981 to 2021 was investigated. Nutrients that showed a decreasing tendency during the investigation period in fruit vegetables were calcium, iron, thiamine, riboflavin, and ascorbic acid, etc. In root vegetables, it tended to decrease in calcium, thiamine, riboflavin, niacin, and ascorbic acid, etc. In leaf vegetables, it tended to decrease in iron, niacin, and ascorbic acid, etc. In leaf and stem vegetables, it tended to decrease in energy, phosphorus, iron, thiamine, riboflavin, niacin, and ascorbic acid, etc. In particular, it has been confirmed that vitamin reductions such as thiamine, riboflavin, niacin, and ascorbic acid, which have important meanings in vegetable intake, have occurred in vegetables over the past 40 years.

The Relationship between the Introduction of Vegetables and Fruits into Korea and the Silk Road (한국의 식재료 중 채소, 과일류의 유입과 실크로드)

  • The author examined the origins, the course and the period of introduction of 94 types of vegetables and fruits mainly used in Korea. Then, based on it, the author looks into the relationship between food culture in Korea and those in the Silk Road. Among the vegetables and fruits, 57 types are not originated from Korea 17 types of stem and leaf vegetables, 9 types of root and fruit vegetables. 7 types of fruits, 6 types of seed, 6 types of pomes, 2 types of berries and grapes, and 1 type of nut. Their origins are spread in Europe, Southwest and South Asia but interestingly, they are located near or along the Silk Road. Therefore, it can be presumed that the vegetables and fruits were introduced into Korea from its neighboring countries by way of the Silk Road even before the Three Koreas Period and they were eaten widely in the Joseon Dynasty. Thus, the Silk Road helped some of the vegetables and fruits used in Korea to be introduced into Korea and eventually, contributed to diversifying Korean food culture. The cultural exchange is not one-way but two-way communication and the cultural exchange through the Silk Road is no exception. It is certain that by way of the Silk Road, foods and recipes were introduced into Korea from other countries but at the same time, Korean foods and recipes were propagated to other countries. In the future, more researches and studies should be conducted to find out how the foods and recipes are exchanged among the countries by the way of the Silk Road.

  • In order to develop a better food preparation method in terms of vitamin retention in food service establishments, the retention rate of riboflavin in two kinds of Korean dish (stir-fried sausage with vegetables, stir-fried garlic young stems) were examined during various cooking stages, holding temperature and duration time. Riboflavin content of the sample was analyzed using by using a HPLC with a fluorescent detector at various holding durations and temperatures. Also the changes in the pH and water contents of the samples were measured during holding at various temperatures to find any relation among the pH, water contents and riboflavin content. In the results, there were significant differences in riboflavin contents at various cooking processes such as washing, slicing, blanching, soaking, etc. Also, the retention rates of riboflavin at various holding methods and temperature were significantly different from one another. Especially 50% reduction of riboflavin content occurred during blanching of young garlic stem and only 38% of riboflavin was left after slicing carrots for stir-frying of sausage.

Acceptance and Preference of Vegetables in Menus for Middle School Students (중학생의 채소류에 대한 기호도 및 메뉴 선호도 조사)

  • The purpose of the study was to investigate the basic data that could make out a menu reflected by students' preference to increase the intake of vegetable food through the cooking method of favorite vegetables. For the investigation, 585 middle school students in Seoul and Ansan area were surveyed. In the preference of food items, the meat food was more preferred to the vegetable food. Also, the reasons that students do not eat vegetable provided were 'bad taste' and 'unfavorite vegetable'. The preference analysis for vegetable showed that stem and leaf vegetables, root vegetables and fruits & vegetables were in the order of perilla leaver, celery and cabbage, sweet potato, potato, and dried radish cube and tomato, sweet pumpkin and cucumber, respectively. The preference was three kinds of vegetables that were more delicious than frequently eaten in home. The preference analysis for cooking method of vegetables showed that stem and leaf vegetables, root vegetables and fruits & vegetables were in the order of boiled rice, soup/stew, and salads, boiled rice, fried food and salads, salad, soups/stew and raw seasoned vegetables, respectively. Therefore, this study was conducted in order to increase the vegetable intake. According to the results of this study, it should be needed to develop menus integrating vegetables and its cooking methods that students preferred and disliked are needed.

Comparison of Bioavailability and Biological Transfer Factor of Arsenic in Agricultural Soils with Different Crops

  • Heavy metal pollution in agricultural field near at the abandoned metal mines has been a critical issue in Korea. In particular, bioaccumulation in plants can have detrimental effect on human health. Main objective of this research was to examine arsenic (As) concentration in soil with varied extraction methods and to determine bioaccumulation and biological transfer factor in different crops. Results showed that bioaccumulation ratio of As for total contents in soil was ordered leafy and stem vegetables (1.19%) > fruit bearing vegetables (0.79%) > pulses (0.40%) > root vegetables (0.36%) with different crop species. Among 6 different extraction methods, all of extraction methods showed high correlation ($R^2=0.87-0.97$) except DTPA ($R^2=0.25$) when comparing As concentration in soil extracted with different extractants and As concentration in each crops. Calculated biological transfer factor was ranged 0.002-0.018 depending on crop species. Overall, concentration of As in crops can be varied and best management practice for minimizing bioaccumulation of As should be considered depending on crop species.

Quantative Analysis and Physico-chemical Properties of Dietary Fiber in Vegetables (채소류의 식이성 섬유소의 함량과 이화학적 특성)

  • Dietary fiber(DF) content and their properties were analyzed in some common vegetables such as Squash(leaf), Water cress, Garland chrysanthemum, Leek and sweet potato(stem). DF was analyzed by the method of detergent fractionation. Values for neutral detergent fiber(NDF), acid detergent fiber(ADF), lignin, hemicellulose were obtained. NDF for most samples was $13.83%{\sim}24.31%$, ADF was $11.99%{\sim}21.03%$, lignin was around $0.56%{\sim}3.00%$, hemicellulose was about $1.33%{\sim}3.88%$, cellulose was $9.08%{\sim}14.87%$ except sweet potato(leaf) (20.47%). This paper describes two properties of the fiber-of commonly eaten vegetables ; water-holding capacity(WHC) and metal binding. The capacity of the acetone dried powder (ADP) to hold water was estimated. The WHC measurements differed from 7.49 per 9 of ADP for Water cress to 11.09 per 9 of ADP for Leek. The binding of Fe, Zn in NDF. ADF obtained from five fiber sources was examined under two pH conditions ; 1) pH2.1, 2) pH6.1. Fe, Zn binding increased with higher pH and differed from DF sources.

Rheological Properties of Bundled Leaf Vegetables Held and Picked-up by Machine (줄기 엽채소의 기계적 파지시 리올로지 특성)

  • This study was carried out as basic researches to develop the leaf vegetable harvester. This study was conducted to investigate physical and rheological properties of bundled leaf vegetables with stem (Chinese leek, Crown daisy and Chamnamul) as test materials held and picked-up by a machine. Stress-strain behavior, stress relaxation, and strain recovery for the bundled materials were analyzed using simple Maxwell model. Physical and rheological properties of the materials were investigated by measuring rupture load, deformation and stress experimentally. Also, strain recovery time when unloading was measured using super high speed camera. Recorded recovery time for stress-strain behavior was0.026 s for Chinese leek with liner strain recovery, 0.046 s for Crown daisy and 0.05 s for Chamnamul with non-linear strain recovery. Furthermore, the strain recovery time for permanent deformation was 0.026 s, 0.046 s, and 0.05 s for Chinese Leek, Crown daisy and Chamnamul, respectively. Finally, strain recovery time and strain recovery ratio for the test materials were 0.17 s, 60.4% in Chinese leek, 0.12 s, 55.3% in Crown daisy, 0.15 s, 58.7% in Chamnamul. Here strain recovery time means that how fast the test materials are recovered from initial deformation and strain recovery ratio means how much the test materials are recovered from initial deformation. The above results show that the test materials can be held enough and moved by the belts.

Content and Distribution of Flavanols, Flavonols and Flavanones on The Common Vegetables in Korea (국내산 채소류에 함유된 플라바놀, 플라보놀 및 플라바논에 대한 함량 및 분포 조사)

  • BACKGROUND: This study focused on the contents of flavonoid compounds in vegetables. Generally vegetables have contributed to a healthy diet, arisen from contains a large amount of fiber and functional ingredients. And flavonoid compounds are one of major functional components in the vegetables. currently research of flavonoid contents does not enough, specially in the part of homegrown vegetable. METHODS AND RESULTS: Vegetable samples were purchased in domestic market. Sample extraction by methanol, distilled water, and formic acid based solvent. Also same solvent used for mobile phase in UPLC. Eleven types of flavonoid compounds were analyzed with same kind of external standard and one kind of internal standard (galangin) for quantification. Standard calibration curve presented linearity with the correlation coefficient $R^2$ > 0.98, analysed from 1 to 50 ppm concentration. The quantitative value and multivariate analysis results were derived from the Excel and SIMCA-P11. Overall, onion has largest amount(916.5 mg/100 g) of flavonoid and also other vegetables have has significant amount[Mugwort: 138.8, Galic stem:123.6 mg/100 g etc.] of flavonoid compounds. Edible portion of vegetables per share for simulating by SIMCA-P11, root vegetables has had difference with other vegetables according to distributions and amounts of flavonoid compounds. CONCLUSION: Optionally, the results from this experiment can use to select the material for flavonoid researches. And based on these results, if this experiment will be continuously complemented, and performed, could used in various fields.

Effects of Spray Times and Ventilation Method on the Seedling Growth of Fruit Vegetables (관수회수 및 송풍처리가 과채류의 묘 생장에 미치는 영향)

  • A multipurpose operating system was developed to adjust both spray times and ventilation method without a configuration of the moving path and the type of the greenhouse. The multipurpose working system proved to be a reliable system for testing the growth quality of the fruit vegetables in the greenhouse. The results are as follows. The first leaf, diameter of a stem, leaf area, and average stem diameter in the Cucumber seedling growth were repressed by high-speed ventilation, but was not repressed by spray times. The first leaf in the Tomato seedling growth was repressed as ventilation velocity was high, but the average stem diameter was not repressed. While the Tomato was given water three times a day, the diameter of a stem and the leaf area were increased as ventilation speed became higher. However, those were different other factors. The Tomato leaf area was larger when given water twice a day than that in hand spray, but showed no difference with ventilation speed. The first leaf, the diameter of a stem and the leaf area of a Red pepper were lower in automatic spraying with ventilation than those in hand spray.
