Rheological Properties of Heat-Induced Gels of Surimi from Acid and Alkali Process (산 및 알칼리 공정으로 조제한 수리미 가열 겔의 물성 특성)

  • Rhtological properties of surimi gel from white fishes by acid (acid surimi) and alkali (alkali surmi) process and effect of chemicals on gelation were investigated by punch and dynamic tests. The breaking force and deformation values of heat-induced gel of acid surimi were less than their values of alkali and conventional surimi gel, and whiteness was greatly decreased, Gel point of acid surimi was decreased but it of alkali surimi was increased with increasing moisture content in the range of 80 to $85\%$. Storage modulus of acid surimi was the highest vaule in pH 6.8, but that of alkali surimi showed high value at neutral and slightly alkali pH. Propylene glycol increased storage modulus in $20\~50^{\circ}C$, hut urea and 2-mercaptoethanol suppressed it. Potassium bromide improved storage modulus in $20~80^{\circ}C$, The results suggest that alkai process is used for making surimi instead of conventional method.

Analysis for Division of State, Market and Family in Income Sources of the Elderly (한국 노인소득보장의 국가-시장-가족분담구조 분석)

  • This paper studies the composition of income sources of the elderly and the difference of sources of income by the elderly characteristics. First, the results of analysis on the structure of sources of income show the average income of the elderly appears 7.7million won the consists of 3.0million won from market, 2.5million won from nation, 2.2million won from family. Income sources of the elderly are dependent on business income, property income, earned income in the market. Second, the results of differences analysis in demographic characteristics, men get a lot of income through the market and nation, while women get through families. Market income is high younger and family income is the more older. Depending on where you live, family income and national income is higher relatively urbanized. Third, the results of analysis by depending on the income, level of national income and market income is higher, while family income is high-income the case less income. Fourth, differences in health status by analysis of the sources of income have higher levels of health status and market high and lower income families rely heavily on the private sector, such as can be seen. Therefore, market and family income is higher than another countries. and the complement of public income support system is required for vulnerable people.

Quality Characteristics of White Bread made with Flour of Wheat Cultured with Pleurotus ostreatus (Pleurotus ostreatus을 배양한 밀 분말 첨가가 식빵의 품질 특성에 미치는 영향)

  • This study was carried out to investigate the quality characteristics of white bread made with flour of wheat cultured with Pleurotus ostreatus(POW). The property of the wheat used for the solid-state cultivation of the Pleurotus ostreatus was examined. The hydration time of wheat with cold water was 10 hours, with a final moisture content of 39%, which was much less than the optimum moisture content for mycelial growth. However, hot water soaking reduced the required hydration time of the wheat, and elevated the moisture content to 65% within 90~120 min. The POW was composed of 7.2% moisture, 15.4% protein, 1.1% fat, 1.7% ash and 2.9% fiber. The POW was substituted for wheat flour in white bread recipes at weight percentages of 0%, 2.5%, 5%, 7.5% and 10%. The weight, volume and fermentation of the dough tended to decrease with increasing POW content. The color of the bread crust and crumb darkened with increasing POW content. A sensory evaluation showed a high preference for the white bread made with 5% POW, indicating that the addition of 5% POW to flour for bread dough could improve the quality characteristics of white bread. These study results also provide useful information for using the flour of wheat cultured with Pleurotus ostreatus as an ingredient source for food processing.

A Study on the Phrsical and Mechanical Properties of Concrete with Ferro Copper Slag (동슬래그를 잔골재로 사용한 콘크리트의 물리.역학적 특성에 관한 연구)

  • As the supply of aggregate needed in the construction site becomes difficult due to preservation of environment and exhaust of aggregate resource, a research for replacement aggregate in shortage is being actively progressed and a copper slag is also a kind of replacing aggregate. To use copper slag as fine aggregate of concrete, many studies are already conducted in each of the advanced countries and in the state of applying these at the site. In the year of 2000 a Korea industrial standard of Copper slag aggregate for concrete was established in our country so that this can be applied in the construction site. This study is to find out whether copper slag is equipped with the physical and chemical requirements for the use in concrete aggregate, and to analyze the dynamic properties of copper slag concrete that replaces 25, 50, 75, 100% of fine aggregate. Copper slag study not only satisfies the using condition of fine aggregate, but also reveals high level of physical property compared to ordinary concrete up to 50% of sand replacement rate. In the future after confirming the durability of concrete using copper slag, it is judged to be advantageous for the preservation of environment to use this as a replacement material for natural aggregate.

Effect of Fly Ash on Rheology and Strength of Recycled Aggregate Concrete (순환골재와 플라이애쉬가 콘크리트 유동성 및 강도에 미치는 영향)

  • As the amount of construction wastes increase, reuse of demolished concrete is being considered in research areas. Reflecting these interests, this experiment was performed to clarify concrete's mechanical property and workability using recycled aggregate as a coarse aggregate. Eleven cases of concrete specimens were produced by changing the rates of replacement of coarse recycled aggregate, replacement of fly ash, design strength, and moisture state of coarse aggregate. Compressive and tensile split strength tests were taken to study the mechanical properties of hardened concrete. To verify flowability of fresh concrete, a slump test and a flow curve test using ICAR Rheometer were performed. It was found that using recycled aggregate and fly ash leads good workability by testing slump and flow curve. The yield stress of fresh concrete decreased with increase of recycled aggregate substitution rate. Through the test, it was confirmed that there is inversely proportional relationship between the slump and yield stress roughly. Recycled aggregate concrete containing fly ash has considerably lower plasticity viscosity than not containing fly ash. Strength test results showed that recycled aggregate tended to decrease compressive and tensile strength of concrete, when recycled aggregate was used as a coarse aggregate. Using over 30% recycled aggregate caused significant decreases in compressive and tensile strength. Replacing 30% cement with fly ash was helpful to improve the long-term strength of concrete.

The Frost Heaving Susceptibility Evaluation of Subgrade Soils Using Laboratory Freezing System (실내 동상시스템을 이용한 노상토의 동상민감성 평가)

  • The Korean Peninsula is considered as a seasonal frozen area that is thawed in the spring and frozen in the winter. The influence of fines of the frost susceptibility of subgrade soils were established by laboratory freezing tests simulating closely the thermal conditions in the field. During the winter season, the climate is heavily influenced by the cold and dry continental high pressure. Because of siberian air mass, the temperature of January is $-6{\sim}-7^{\circ}C$ on average. This chilly weather generate the frost heaving by freezing the moisture of soil and damage potential of the geotechnical structure. In the freezing soil, the ice lenses increase the freeze portion of soil by absorbing the ground water with capillary action. However, the capillary characteristics differ from the sort of soil on the state of freezing condition. In this study, ten soil samples are prepared. The basic physical property tests were performed by following the Korean Industrial Standard and the soil specimens were classified by the Unified Soil Classification System (USCS). These classified soils are used to perform the laboratory opened systems freezing test in order to determine the frost heaving characteristics of soils such as unfrozen water content, heaving amount, and freezing depth.

A Study on the Comparison of Methods for the Measurement of Hydrocarbon Dew Point of Natural Gas (천연가스의 탄화수소 이슬점 측정방법 비교 연구)

  • Hydrocarbon dew point(HCDP), a property which is the most generally used for describing natural gas condensation, is a very important parameter of natural gas quality specifications. HCDP is strongly influenced by the concentration of the heavier hydrocarbon components, especially $C_6+$, so, along with compliance with gas quality specifications, build up of procedures for obtaining accurate HCDP is essential for gas transmission company, because hydrocarbon condensation present may cause serious operational and safety problems. This study has been carried out in an attempt to measure HCDP accurately by the automatic hydrocarbon dew point meter under the actual field conditions. Measured HCDP also has been compared with calculated HCDP using the composition determined by gas chromatograph and industry accepted equation of state at multiple pressures, along with the cricondentherm. The test results are 1) the automatic hydrocarbon dew point meter was able to measure stable HCDP continuously 2) the automatic hydrocarbon dew point meter has been performed reference measurement by pure propane with a known dew point from literature, and 3) A meaningful differences was observed when comparing the automatic hydrocarbon dew point meter and gas chromatograph results for synthetic standard gas mixtures and real gas mixtures.

Regulation of Taurine Transporter Activity by Glucocorticoid Hormone

  • Human taurine transporter has 12 transmembrane domains and its molecular weight is 69.6 kDa. The long cytoplasmic carboxy and amino termini might function as regulatory attachment sites for other proteins. Six potential protein kinase C phosphorylation sites have been reported in human taurine transporter. In this report, we studied the effects of phorbol 12-myristate 13-acetate (PMA) and glucocorticoid hormone on taurine transportation in the RAW 264.7, mouse macrophage cell line. When the cells were incubated with $[^{3}H]taurine$ in the presence or absence of $Na^+$ ion for 40 min at $37^{\circ}C$, the [$[^{3}H]taurine$ uptake rate was 780-times higher in the $Na^{+}-containing$ buffer than in the $Na^{+}-deficient$ buffer, indicating that this cell line expresses taurine transporter protein on the cell surface. THP1, a human promonocyte cell line, also showed a similar property. The $[^{3}H]taurine$ uptake rate was not influenced by the inflammatory inducing cytokines such as interleukin-1, gamma-interferon or interleukin-1+gamma-interferon, but was decreased by the PMA in the RAW 264.7 cell line. This suggests that activation of protein kinase C inhibits taurine transporter activity directly or indirectly. The inhibition of $[^{3}H]taurine$ uptake by PMA was time-dependent. Maximal inhibition occurred in one hr stimulation with PMA Increasing the treatment time beyond one h reduced the $[^{3}H]taurine$ uptake inhibition due to the depletion or inactivation of protein kinase C. The cell line also showed concentration-dependent $[^{3}H]taurine$ uptake under PMA stimulation. The phorbol-ester caused 23% inhibition at the concentration of 1 ${\mu}m$ PMA. The inhibition was significant even at a concentration as low as 10 nM PMA The reduced $[^{3}H]taurine$ uptake could be recovered by treatment with glucocorticosteroid hormone. Dexamethasone led to recover of the reduced taurine uptake induced by phorbol-ester, recovering maximally after one hr. This may suggest that macrophage cells require higher taurine concentration in a stressed state, for the secretion of glucocorticoid hormone is increased by hypothalamo-pituitary-adrenocortical (HPA) axis activation in the blood stream.

  • Characteristics of high molecular weight styrene-butadiene rubber(HM-SBR)/low molecular weight styrene-butadiene rubber(LM-SBR) mixtures were studied to investigate how to modify the processability and the mechanical properties of styrene-butadiene rubber (SBR). Mooney viscosity of the HM-SBR/LM-SBR mixtures and torque increase due to the vulcanization decreased by increasing the LM-SBR content of the mixtures. Shore A hardness and rebound properties were decreased by increasing the LM-SBR content of the mixtures. It was found that the value of tan ${\delta}$ of the mixtures in rubbery state was increased, while glass transition temperatures of the vulcanized blends were constant by increasing the LM-SBR content of the mixtures. It was postulated that the decrease of Mooney viscosity by increasing the LM-SBR content of the blends was due to plasticizing effects of the LM-SBR and the increased polydispersity of the mixtures. Change of mechanical properties of the vulcanized HM-SBR/LM-SBR mixtures was attributed to the decreased crosslink densities of the mixtures by increasing the LM-SBR content of the mixtures.

A Study on the Perceptions of Consumers, Producers, and Government Employees toward Geographical Indications (지리적 표시제에 대한 소비자 생산자, 지방자치단체 공무원의 인식에 관한 연구)

  • This study investigates the perceptual differences on geographical indications among consumers, producers, and government employees. First, in terms of the recognition of the geographical indication certification mark, approximately 56% of consumers showed no experience to recognize the mark, indicating their low level of recognition. Besides, some respondents among producers and government employees indicated no experience or no recollection on the certification mark. In terms of the vitalization of geographical indications, consumers and government employees showed positive responses while producers were negative on it. Consumers and government employees attributed the reasons for the low level of vatalization of geographical indications to the low level of consumer recognition. On the other band, producers indicated that the complicated registration procedure and incidental expenses were the main reasons for this issue. Lastly, this study examined if there were significant differences on the perceived consumer preferences on the domestic and imported agricultural and processed products among the three groups. The results found that producers and government employees perceived that consumers preferred the imported products to the domestic products than customers actually did, indicating the lack of understanding of these two groups on consumer preferences on agricultural and processed products.
