The purpose of this study was to investigate any differences in the efficiency of various antioxidants for the three types of substrates such as corn oil in water (O/W) emulsion, water in com oil (W/O) emulsion, and bulky corn oil. ${\alpha}$-Tocopherol (${\alpha}$-Toc) at 0.01 or 0.02%, ascorbic acid (AsA), ascorbyl palmitate (AP), and BHT at 0.02% were added separately to the prepared O/W emulsion, W/O emulsion, and bulk oil, and their antioxidative effects were compared. The mixture of ${\alpha}$-Toc ind AsA or AP at the level of 0.02% also was tested to observe any synergistic effect. Oxidation was made by storing at 42${\pm}$1$^{\circ}C$ for 25 days and the oxidative stability was determined by peroxide value and conjugated dienoic acid with time fluctuation of storage. The results were as follows: 1. In case of O/W emulsion, the order of antioxidative effect was AP> ${\alpha}$-Toc+AP>${\alpha}$-Toc+AsA>AsA>BHT. 2. In case of W/O emulsion, the order of antioxidative effect was AsA>AP>${\alpha}$-Toc+AsA>BHT. ${\alpha}$-Toc+AP mixture showed the prooxidant effect rather than synergistic effect. 3. In case of bulk oil, the order of antioxidative effect was AsA>AP>${\alpha}$-Toc+AsA>${\alpha}$-Toc+AP\ulcornerBHT. Therefore, AsA, a hydrophilic antioxidant, was more effective in W/O emulsion system than in O/W emulsion system, while the opposite trend was found in AP, a lipophilic antioxidant. AsA, a hydrophilic antioxidant, was more efficient in bulk oil of anhydrous substrate. ${\alpha}$-Toc showed prooxidant effects in all substrates.
본 총설에서는 나노미터 크기의 고체 입자가 오일-물 계면에 흡착됨으로써 안정화된 에멀젼의 제조와 성질에 대하여 기술하였다. 이렇게 제조된 에멀젼을 Pickering 에멀젼이라 하며 이 에멀젼을 계면활성제로 안정화된 일반적인 에멀젼과 비교하였다. Pickering 에멀젼의 독특한 성질은 입자의 계면 흡착 에너지가 큰 점에 기인하며 일반 에멀젼과 주요한 차이점은 고체 입자가 비가역적으로 계면에 흡착한다는 사실이다. Pickering 에멀젼의 전상은 w/o (water-in-oil) 타입에서 o/w (oil-in-water)로 수상의 분율이 증가함에 따라 발생한다. 친수성의 입자는 o/w 에멀젼을 형성하는 경향을 보이고 친유성 입자는 w/o 에멀젼을 형성하는 경향을 보이며 이는 고체 입자의 오일-물 계면에서의 접촉각에 따른다. In this study, the emulsion dispersion stability of optimizing storage temperature was investigated. The system was based on oil/water (O/W) emulsions. In order to evaluate the stability, mean diameter of droplet was measured as a function of temperature with various mixed hydrophilic lipophilic balance (HLB). In addition, the correlations between phase inversion temperature (PIT) and the optimum storage temperature were probed. In this system, majority of the smallest droplet was shown at temperature of $20^{\circ}C$ below PIT. Whether the temperature was increased or decreased from the optimum, size of the droplet increased. According to the mixed HLB, the particle size and optimum storage temperature were also affected. As the concentrations of surfactant were increased, the size of particle decreased with lower optimum temperature for storage. If the surfactant (4 wt%) were mixed with HLB, the optimum storage temperature was $21^{\circ}C$ for maintaining the size of smallest droplet at 108.3 nm in diameter. At above optimum condition, increased size of particle was observed approximately 4 % increases from 108.2 nm to 112.3 nm after 600 hours. The size of particle in emulsion was maintained stably without any considerable effect of Ostwald ripening phenomena at the optimum storage temperature with low polydispersity index.
The emulsion stability of cosmetic creams based on the water-in-oil (W/O) high internal phase emulsions (HIPEs) containing water, squalane oil and cetyl dimethicone copolyol was investigated with various compositional changes, such as electrolyte concentration, oil polarity and water phase volume fraction. The rheological consistency was mainly destroyed by the coalescence of the deformed water droplets. The slope change of complex modulus versus water phase volume fraction monitored in the linear viscoelastic region could be explained with the resistance to coalescence of the deformed interfacial film of water droplets in concentrated W/O emulsions: the greater the increase of complex modulus was, the more the coalescence occurred and the less consistent the emulsions were. Emulsion stability was dependent on the addition of electrolyte to the water phase. Increasing the electrolyte concentration increased the refractive index of the water phase, and thus decreased the refractive index difference between oil and water phases. This decreased the attractive force between water droplets, which resulted in reducing the coalescence of droplets and increasing the stability of emulsions. Increasing the oil polarity tended to increase emulsion consistency, but did not show clear difference in cream hardness among the emulsions.
센텔라 아시아티카 정량추출물(TECA)은 병풀에서 얻은 난용성 추출물로 상처치유 및 항주름 물질로 알려져 있다. 본 연구에서는 TECA를 함유한 water in oil in water ($W_1/O/W_2$) 에멀젼 제조에 필요한 최적의 실험 조건을 찾기 위해 연구를 진행하였다. TECA의 용해도는 UV 흡광도계를 이용하였으며, 디프로필렌글라이콜(40.0 g), 에탄올(20.0 g) 및 정제수(10.0 g)의 조성에서 2.55 g의 TECA가 용해되는 것을 확인하였다. 에멀젼($W_1/O$, $W_1/O/W_2$)의 안정도에 영향을 미치는 요인에 대하여 조사하였다. $W_1/O$ 에멀젼의 제조하기 위한 최적의 수상 조건은 디프로필렌글라이콜 : 에탄올 : 정제수 : TECA가 40.0 : 20.0 : 10.0 : 2.5%(w/w), 유상 조건은 스쿠알란 : 세틸피이지/피피지-10/1디메치콘 : 세테아릴알코올이 22.5 : 4.0 : 1.0%(w/w)임을 확인하였다. $W_1/O/W_2$ 멀티에멀젼을 제조하기 위한 최적의 조건은 정제수 : $W_1/O$ 에멀젼 : 폴리소르베이트 80 : 카보머 : 트리에탄올아민의 비율이 55.8 : 40.0 : 4.0 : 0.1 : 0.1% (w/w)임을 확인하였다.
본 연구에서는 coconut oil과 Tween-Span계 비이온성 혼합계면활성제를 사용하여 제조한 O/W (oil in water) 유화액의 안정성에 영향을 끼치는 인자를 평가하였다. 이를 위해 비이온성 혼합계면활성제의 HLB value와 첨가량, 균질화 속도를 변수로 설정하여 제조한 O/W 유화액의 평균액적크기, 제타포텐셜, 유화안정도지수(ESI), 열적 불안정도지수(TII) 등으로부터 유화액의 안정성을 평가하였다. 제조한 O/W 유화액의 평균액적크기는 100~200 nm의 나노에멀젼으로서 비이온성 혼합계면활성제의 첨가량 및 균질화 속도가 증가함에 따라 평균액적크기는 감소하였으며, 제타포텐셜은 증가하였다. 비이온성 혼합계면활성제의 HLB value가 6.0, 10.0, 8.0 순으로 우수하게 나타났으며, HLB value가 8.0에서 제조한 유화액의 평균액적크기는 120 nm으로 가장 작고, 제타포텐셜은 40~60 mV로 가장 크게 나타났다. ESI 및 TII를 통한 안정성 평가는 HLB value가 6.0, 10.0, 8.0 순으로 안정성이 증가하였으며, HLB value가 8.0에서의 ESI 및 TII는 각각 80% 이상과 20% 이하로 가장 우수하게 나타났다.
신소재로 각광 받고 있는 chitosan의 낮은 수용성을 극복하기 위하여 chitosan 유도체인 eugenolchicosan(EuCs)을 제조하여 식품유화제로서의 적용을 위한 최적조건을 탐색하였다. 증류수와 옥배유의 혼합비율이 2:3(v/v)일 때 W/O형 유화계를 형성하였으며 유화안정성이 가장 높았다. 유화제로 사용한 EuCs는 단독으로 투입하였을 경우 첨가 농도가 0.18%(w/v)일 때 유화계가 가장 효율적으로 안정하였으며, 2종류 유화제(EuCs/polyoxyethylene sorbitan monolaurate)에 의한 유화안정성 상승효과를 확인할 수 있었지만 EuCs 단독사용 실험구와 유사한 ESI 값을 갖는 것으로 확인되었다. 저장온도에 따른 유화안정성 변화를 살펴본 결과, $25{\sim}65^{\circ}C$에서는 유화계가 매우 안정하였지만 $75^{\circ}C$ 이상의 저장온도에서 160분이 경과하면서 유화안정성이 급격하게 감소하는 경향을 나타내었다. 한편, 균질화 정도는 균질화 속도 11,000 rpm에서 10초 이상인 경우에 유화안정성이 최고에 도달하는 것으로 판명되었다. 또한, 본 논문에서 제조하여 유화핵 제조시 사용한 EuCs의 돌연변이원성은 음성으로 나타났으며, 유해성 금속은 검출되지 않았다. 따라서, EuCs는 W/O형 유화계 형성에 적합하면서도 안전성이 확보된 식품유화제로서의 적용가능성이 높은 것으로 판단되었다.
본 연구는 내수성을 지니고 사용 시 백탁 현상이 없는 투명한 외관을 가지는 자외선 차단 화장료 제재를 개발 하는 방법이다. 외관이 투명한 자외선 차단제는 유화물의 수상부와 유상부의 굴절률 차이에 따른 투명도를 통하여 외관이 투명한 유중수 타입의 자외선 차단제를 연구하였다. 지속성 및 내수성이 우수한 유중수 타입의 에멀젼을 연구하고 제형의 수상부 및 유상부의 비율을 조정하여 유중수형 유화의 안정성을 극대화시키는 방향으로 제형을 설계하는 연구를 수행 하였다. 연구 결과, 수상부와 유상부의 굴절률 차가 0.004이하일 때 투명한 유중수형 에멀전을 형성 할 수 있었으며, 내상부인 수상의 함량이 70% (w/w) 이상에서 안정한 유중수형 에멀젼을 형성하였다. 임상 시험을 통하여 투명한자외선차단제의 자외선 A 차단지수와 자외선 B차단 지수를 측정하였다. 그 결과, 자외선 A 차단지수는 $3.01{\pm}0.30$ 으로 나타났으며, 자외선 B 차단지수는 $30.99{\pm}1.65$로 측정되었다.

The stability is dependent on: (i) the choice of the oil is important, the requirements coincide with the requirements for the formation of the rigid liquid crystalline phases; and (ii) addition of salts the aqueous phase opposes the instability due to coalescence. Increasing the salt concentration increases the refractive index of the aqueous phase. It lowers the difference in the refractive index between the oil and aqueous phases. This decreases the attraction between the water domains, thus increasing the stability.
