During transportation and preservation of Takju, alcohol fermentation has continued to produce $C0_2$ from residual sugar and frequently spoiled owing to bacterial contaminants wich produce organic acids. The authors could preserve Takju for more than 50 days at room temperature by pasteurization without any changes of quality. For the optimal condition of pasteurization, fresh Takju was heated at various temperatures and times. D-Value of the Saccharomyces sp. which isolated from Takju collected at seoul area was 19 see at $55^{\circ}C$. Non-spore forming bacterial contaminants, most of which known to cause acid-spoilage, were decreased when heated at $55^{\circ}C$ for 5 min. The optimal pasteurization condition of Takju was at $55^{\circ}C$ for 10 min. Spore forming bacterial contaminants, considered to be EuciiLw sp., were not sterilized after pasteurized at the optimal condition. However, the spore-forming bacteria could not increase any more and also not cause increment of acidity during preservation even at room temperature for 50 days. Reducing sugar was increased during storage of Takju after pasteurization. This suggests that the residual glucoamylase in Takju is still active after pasteurizsation and keep sweet taste.
In order to promote the prevention of microbial and enzymatic spoilage and to retain the freshiness, sweet persimmons harvested in Gyeongsangnam-do were treated with graperfruit seed extract(GFSE)-CaCO3 mixture and stored in the proper packaging conditions. A low concentration of GFSE showed effective growth inhibition of plant pathological bacteria and fungi, Enterobacter pyrinus and Fusarium sp., which were involved in the decay of fruits and vegetables. GFSE was stable to heat treatment; its antimicrobial activity was not changed by heat treatment upto 10$0^{\circ}C$. However, when the temperature was raised to 12$0^{\circ}C$, about 90% of total activity was retained within 30 min. GFSE was also highly stable to broad pH changes; its activity was not changed in the range of pH 2.0 to pH 12.0. The physiological function of cell membrane in the spores of Bacillus cereus and the hyphae of Fusarium sp. was destroyed by treating with GFSE. It was observed that treating sweet persimmons with GFSE minxture and storing them in strech-wrapped packages could prolong the greshness of sweet persimmons and reduce quality deterioration.

The effect of irradiation at dose of 3~10 kGy on the extension of the shelf-life of sliced dried squid and dried file and on its quality were investigated during nine months of storage at room temperature. The number of microorganisms, TBA value and TMA-N content were used as objective indices concerned to the sensory evaluation. In the number of initial microbial loading, total bacterial count of sliced dried squid and dried file fish were $2.7{\times}10^{8}\;and\;2.0{\times}10^{5}$, yeast and mold were $5.7{\times}10^{5}\;and\;6.2{\times}10^{5}$ and coliform group were $2.1{\times}10^{5}$ and above 10 per gram of the samples, respectively. The number of total bacteria was sterilized by 99% with irradiation of 3~10 kGy and irradiation of above 7 kGy was shown to be effective for the radurization of yeast, mold and coliform group. TBA value of irradiated groups were higher than storage time. The TMA-N content of nonirradiated group was markedly increased by microbial spoilage during storage, however above 8 kGy irradiated group were indicated about 10 mg% after nine months storage. In the sensory evaluation, the nonirradiated group was off favor after three months storage and was changed in color of dried fishes but 7~10 kGy irradiated group were maintained good qualit compared with those of fresh samples after nine months storage at room temperature.
This study was performed to investigate the antimicrobial effect of the Viscum album var. coloratum extracts against food-borne pathogens. First, the Viscum album var. coloratum was extracted with methanol at room temperature and the fractionation of the methanol extracts was carried out by using petroleum ether, chloroform, and ethyl acetate, and methanol, respectively. The antimicrobial activity of the Viscum album var. coloratum extracts was determined by using a paper disc method against food-borne pathogens and food spoilage bacteria. The petroleum ether extracts of Viscum album var. coloratum showed the highest antimicrobial activity against Bacillus cereus and Shigella dysenteriae. Synergistic effect in inhibition was observed when Viscum album var. coloratum extract was mixed with Perillae folium extract as compared with each extract alone. Finally, the growth inhibition curves were determined by using petroleum ether extracts of Viscum album var. coloratum against Bacillus cereus and Shigella dysenteriae. The petroleum ether extract of Viscum album var. coloratum had strong antimicrobial activity against Bacillus cereus at the concentration of 5,000 ppm. At this concentration, the growth of Bacillus cereus was retarded more than 24 hours and up to 12 hours for Shigella dysenteriae. In conclusion, the petroleum ether extracts of Viscum album var. coloratum inhibit efficiently Bacillus cereus and Shigella dysenteriae.
This study was performed to investigate the antimicrobial effect of Ulmus davidiana var. japonica extracts against food-borne pathogens. First, Ulmus davidiana var. japonica was extracted with methanol at room temperature and the fractionation of the methanol extracts was carried out by using petroleum ether, chloroform, and ethyl acetate, and methanol respectively. The antimicrobial activity of Ulmus davidiana var. japonica extracts was determined by using a paper disc method against food-borne pathogens and food spoilage bacteria. The methanol extracts of Ulmus davidiana var. japonica showed the highest antimicrobial activity against Staphylococcus epidermidis and Escherichia coli. Finally, the growth inhibition curves were determined by using methanol extracts of Ulmus davidiana var. japonica against Staphylococcus epidermidis and Salmonella typhimurium. The methanol extract of Ulmus davidiana var. japonica had strong antimicrobial activity against Staphylococcus epidermidis at the concentration of 4,000 ppm. At this concentration, the growth of Salmonella typhimurium was retarded more than 48 hours and up to 12 hours for Staphylococcus epidermidis. In conclusion, the methanol extracts of Ulmus davidiana var. japonica inhibit efficiently Staphylococcus epidermidis and Salmonella typhimurium.
Food borne pathogens are a growing concern for human health and food safety throughout the world. Milk and dairy products are commonly associated with spoilage or contamination from a wide variety of physical, microbial, and chemical hazards. Milk was inoculated with Staphylococcus aureus and stored at 5, 10, 15, 25, and $35^{\circ}C$ for 7 days, and we monitored the growth change and the variance of toxin production. The growth rate of S. aureus was suppressed in low temperature. We confirmed that growth rate and toxin production were accelerated when the storage temperature was increased. S. aureus began to produce toxins when the number of bacteria was higher than $10^5CFU/mL$. Therefore, managing the storage temperature of milk is important to inhibit the growth and the toxin production of S. aureus.

This study investigated the antimicrobial activity of soy protein isolate (SPI) film containing green tea extract (GTE, 1-4%, w/w) on dental caries-inducing bacterium (Streptococcus mutans), food pathogenic (Staphylococcus aureus, Escherichia coli 0157, Salmonella typhimurium), and spoilage (Pseudomonas aeruginosa) bacteria. The physical and mechanical properties of the SPI film containing GTE were also studied. The SPI film containing GTE (4%, w/w) exhibited good antimicrobial activity against S. mutans and S. aureus. The antimicrobial activity of the SPI film containing GTE increased against S. mutans as the concentration of GTE increased up to 4%(w/w). SPI films containing GTE showed lower tensile strength and elongation, and higher total soluble matter than those of control SPI film. Therefore, GTE can be used as one of antimicrobial agents for anti-dental caries and food packaging films.
Antimicrobial activity of Caesalpina sappan L. extract (CS extract) against 6 kinds of food spoilage and pathogenic organisms was studied. The growth of Listeria monocytogenes Brie 1, Escherichis coli ATCC 11775, Staphylococcus aureus ATCC 11775, and Pseudomonas fluorescens ATCC 11775 was inhibited about 4 to 5 $log_{10}$ cycle in Tryptic soy Broth(TSB) containing 1% CS extract. Bacillus subtilis KCTC 102 and Vibrio parahaemolyticus ACTT 17802 did not show apparent growth in the same medium. Effect of CS extract on preservation of ground meat was also investigated. The range of pH change was 5.0~5.2 in CS extract added ground meat, 5.2~6.0 in CS extract not added ground meat (control) during storage at 4$^{\circ}C$ for 30 days. Number of total bacteria after 15 days storage was $10^{6}$/g in CS extract added ground meat, 10$^3$/g in control. Redness of ground meats was improved significantly by addition of 1% CS extract during storage at 4$^{\circ}C$ for 30 days. The sensory quality of 1% CS extract added hamburger patty was similar to that of the control in taste, flavor, and overall acceptability.
발효 식품에서 널리 발견되는 Lactobacillus plantarum은 환경에 적응하기 위한 다양한 표현형 및 유전적 특성을 가지고 있다. 우리는 사과 주스의 malolactic 발효를 위해 선발한 L. plantarum JBE245 (= KCCM43243) 유전체의 전체 염기서열과 주석을 보고한다. 유전체는 2907개의 암호화 된 영역, 45개의 위유전자, 91개의 RNA 유전자를 포함한 단일 원형 염색체로 구성되었으며 그 크기는 3,262,611 bp였다. 이 유전체는 4개의 malate dehydrogenase 및 3개의 malate permease 유전자들과 함께 다양한 종류의 plantaricins 합성 유전자들을 포함하고 있었다. 이러한 유전적 특성은 발효 동안 사과 주스의 부패 방지와 사과산(malate)의 젖산(lactate)으로의 효율적 전환이 요구되는 균주의 선발 기준과 잘 부합되었다.
