Effect of pH, Chemical Composition and Additives on Stability of Soymilk Suspension (pH, 화학적 조성 및 첨가제가 두유(豆乳)의 현탁안정성에 미치는 영향)

  • The effects of pH, protein and fat content, addition of emulsifiers, stabilizer, sugar, salt and calcium salt on the stability of soymilk suspension were investigated by analyzing the cream separated and precipitates of soymilk which is prepared by various conditions. In the alkaline region of pH, soymilk showed a good stability of the suspension and particularly, above pH 10, precipitates were not formed. When 1.5% of palm oil with 0.4% of glycerine monostearate was added to soymilk in the hydrophile-lipophile balance (HLB) value of 4 to 7, resulted maximal emulsion stability occured below H LB 6. The stability was decreased with increasing the fat concentration and soy oil showed better emulsion stability than that of palm oil. Among the commercial stabilizers, 0.03% of carrageenan was most effective. The stability was not decreased by addition of sugar up to 3% while it was decreased by addition of sodium salt and calcium salt at low level.

Long-term Usability Evaluation of Low Fish Meal Extruded Pellet Diet for Juvenile Olive Flounder Paralichthys olivaceus at Jeju Fish Farm (제주도 양식장 내 치어기 넙치(Paralichthys olivaceus)의 저어분 EP (Extruded Pellet) 사료 장기간 이용성 평가)

  • This study evaluated the utilization of a low fish meal (LFM) diet and black soldier fly (BSF) Hermetia illucens meal and oil as a fish meal (FM) substitute or functional additive for juvenile olive flounder Paralichthys olivaceus at the Jeju fish farm. Two experimental diets replaced FM using animal (tankage, poultry byproduct and tuna byproduct meal) and plant (wheat gluten and soy protein concentrate) protein sources, containing 45% (FM45) and 35% (FM35) of FM, respectively. One experimental diet replaced FM with animal, plant, and BSF meal, fish oil using insect meal and oil (FM35+). After the feeding trial ended, no differences in growth performance, feed utilization, survival and biological indices were observed among all experimental groups. Aspartate aminotransferase and cholesterol levels in the FM35 and FM35+ groups were significantly higher than that in the FM70 group. The linoleic acid level in the muscle was significantly higher in the fish fed with the FM70 diet than in those fed with the FM45, FM35, and FM35+ diets. Thus, the LFM diet is suitable for juvenile olive flounder farming during six months.

  • Lubricanting characteristics in the warm forging have influence on forgeability of products. but Research on deformation characteristic of warm forging on the lubricant and lubricating method lack. This paper deform a bevel gear by warm forging and evaluate deformation loads and quality of products by each lubricants and lubricating method using oil-based lubricants(Soy, Oildag) and water-based lubricants(Deltaforge $\#31$, Renite S-26-X, Deltaglaze $\#151$). In conclusion, the less a deformation load by lubricants the more improvement a quality of product in manufacture of a bevel gear and water-based lubricants in the warm forging reduce a deformation load and improve a quality of products. Especially, Deltaforge $\31$ have excellent characteristic in the warm forging.

Properties of Oil-in-Water Nano-emulsions Prepared from Hydrogenated Lecithin with High Pressure Homogenizer

  • In this study, We investigated the properites of nano-emulsions containing hydrogenated lecithin prepared by high pressure homogenizer. The size of droplet of emulsions prepared by homogenizer at various rpm (rotation per minute) was not measured due to the unstability of emulsions, however, the size of droplet of nano-emulsions prepared by high pressure homogenizer was around 300 nm and the appearance of emulsions was bluish. The stability of emulsions with various lecithin concentration was tested against time. POV (Peroxide value) of emulsions were plotted against time. POVs of emulsions prepared with an egg lecithin and a soy lecithin were increased with time, however, POV of emulsion with Lecinol S-$10^{(R)}$ was kept constant within 60 hours and at $60^{\circ}C$. In consumer test, the nano-emulsion showed higher affinity regardless of skin type. Both of irritation scores of emulsions were similar.

Mutational and Nutritional IMprovement of Tylosin Production (Tylosin 생성 우수 균주선별과 Tylosin 발효)

  • A tylosin-hyperproductive mutant of S. fradiae MNU20 was isolated among 3500 strains obtaincd from either MNNG- or UV-treated Streptomyces fradiae NRRL2702. The composition of optimal medium for tylosin production was formulated as followed as: 4 g soluble starch, 1 g glucose, 1 g corn steep liquor, 7.5 ml soy bean oil, 0.2 g KH$_{2}$PO$_{4}$, 1 g Na$_{2}$S$_{2}$O$_{3}$$\cdot $5H$_{2}$O, 2 g CaCO$_{3}$, 2 g NaCl, 0.001 g CoCl$_{2}$$\cdot $6H$_{2}$O in 1 liter of distilled water. With the optimal medium, S. fradiae MNU20 was able to produce 159 mg tylosin (g biomass)$^{-1}$, indicating that tylosin productivity of Streptomyces fradiae NRRL2702 was increased 14 times higher by mutation. When the effect of valine, succinate, and natural zeolite on tylosin production was investigated by using the optimal medium, these substances essentially enhanced tylosin production and their addition time during culture period appeared to be critical for the increase of tylosin production.

  • Texturization of plant protein means the physical or chemical recomposition method of plant protein damaged during the extracting process of soybean oil. As a stable protein supplement, substituted for meat, needs of texturized products have been increased. Twin screw extruder is a very effective tool for texturization process as a physical method. This research, using defatted soy flour as raw material and twin screw extruder manufactured in domestic, showed that plant protein was texturized successfully on the operating conditions of barrel temperature of $120{\sim}140^{\circ}C$, material feed rate of 30~36kg/hr and water content of 20~25%. It also showed that the shape of die affected the texturization continuity.

Antimicrobial Effects of Schizandra chinensis Extract on Pathogenic Microorganism (오미자(Schizandra chinensis)의 병원성 미생물에 대한 항균효과)

  • The growth of pathogens such as Staphylococcus aureus ATCC 29737, Bacillus subtilis KCTC 1021 and Escherichia coli ATCC 11775 was inhibited as much as 1 to 4 log cycles in tryptic soy broth containing 1% of Schizandra chinensis extract but Salmonella tuphimrium ATCC 14028 and Vibrio parahaemolyticus ATCC 17802 were not inhibited. The essential oil of Schizandra chinensis showed stronger inhibitory activity than ethanol extract against above menioned pathogens. The growth of Listeria monocytogenes was not changed in minced pork containing 1% of Schizandra chinensis extract for 12 days at 4$^{\circ}C$. The sensory quality of hamburger patty such as taste, flavor and overall accepability were not decreased by the addition of 1% Schizandra chinensis extract(p<0.05).

A Literature Review on the Recipes for Pheasant - Focus on Recipe Books from 1800's to 1990's - (꿩고기 조리법의 문헌적 고찰 - 1800년 대 말~1990년대까지의 조리서들을 중심으로 -)

  • The main purpose of this study was to survey the various kinds of recipes for pheasant found in seventeen Korean cookbooks published from the 1800's to the 1990's. There were 95 pheasant recipes found in the literature which could be classified into three major groups: cooking with moist heat, cooking with dry heat, and other. The three major groups were then broken down into thirteen smaller groups. A detailed look at the frequency of terms in each recipe shows that Gui Sanjeok (grilled Korean shish kebabs) appears 24 times, Guk Tang and Jeongol (soup and stew) 23 times, Kimchi (fermented cabbage) 11 times, Po (jerky) 9 times, Jorim (boiled in soy sauce) 7 times, Jjim (steamed) 6 times, Bokeum (stir-fried) 5 times, Twigim (deep-fried) 3 times, Buchim (fried) 2 times, Jigae jijim (stewed) 2 times, and Jang (paste), Myeon (noodles), Gooum (boiled) and Yeot (Korean hard taffy) 1 time each. The main ingredient is always the pheasant. We investigated the use of the whole pheasant cooked, how to slice and tenderize pheasant meat, use the meat only, or use only certain parts. Depending on the characteristics of cooking recipes, pheasants with thin, soft bones and organs were investigated for cooking. Substituted materials were used for a few of the vegetables, meat, and seafood in the recipes, and seem to go well together. Garnishes used included pine nut powder and fried eggs. Seasoned salt, soy sauce, pepper, sesame, sesame oil, chopped onion, garlic, and ginger were also reported to have been used.

Contribution of Seasoning to Nutrient Intake Assessed by Food Frequency Questionnaire in Adults in Rural Area of Korea (반정량적 빈도조사법을 이용하여 평가된 영양소 섭취상태에 미치는 양념 섭취량의 기여도)

  • This study was performed to assess the consumption of various seasonings (SNG), which are usually omitted from food frequency questionnaire(FFQ), and their contributions to nutrient intake levels. A dietary survey with FFQ , which surveyed the intake of 65 mainly uncooked food items, was conducted for 493 adults over 30 years of age from 373 households in a rural area of Korea. Household consumption of major SNG items-garlic , red pepper powder, fermented soy bean paste, oil, soy sauce , salt, etc- were estimated by a questionnaire completed by the housewives of the survey participants. The daily consumption of SNG items by each subject was determined by 3 methods ; dividing daily household consumption by \circled1 the number of household members. \circled2 the number of household members over 10 years of age and \circled3 the weighted number of houshold members calculated by the ratio of the RDA for energy. All three methods for calculating the daily personal consumption of seasoning gave similar results, which may have been partly due to the homogenity of family age distribution of the households in the study area. Therefore, the results of method \circled1 were used to determine the contribution of SNG to nutrient intake of subjects in this study. Daily intake of all nutrients were significantly increased by including SNG consumption in the measurements as compared to measuring intake by FFQ alone (p0.01). Percentages of total daily nutrient intake from SNG ranged from 2.3% in carbohydrate to 34.4% in fat. Nutrients with higher contributions from SNG were energy (8.4%), fat (34.4%), Fe(20.55) and $\beta$-carotene(17.9%). These results indicate that SNG consumption can contribute significantly to the intake of several nutrients and must be considered in surveys using FFQ.

A Study of Cookery of Daily Meal (Bankwa Sang: Fruit Table) in Wonheng Ulmyo Jungri Euigwae (1795) (원행을묘정리의궤(園行乙卯整理儀軌) 중(中) 조리면(調理面)에서 본 반과상고(盤果床考))

  • To analyze dialy meal of royal meal, studied Bankwa Sang(Fruit Table) were on record Wonheng Ulmyo Jungri Euigwae (1795). Historic book 'Jungri Euigwae' described the king's visit to his father's royal tomb 'Hyun Neung Won', during the domain of Cheung Jo, the 22nd king of Choson Dynasty. The results obtained from this study areas follows. The fruit table, which similar in concept to desert in the west but quite different in service, was prepared for a guest. The table consisted of two kinds of trays, on which serveral kinds of fruit were stacked to a height of between 4 chon (4寸 : about 12 cm) and 1 chuk(1尺 : about 30.3 cm) according to Korean measurement system. The table was decorated with beautiful artificial flowers made of paper and silk. The number of sets to be arranged on the table were different according to the royal status of the eater: 12 sets-25 sets for king's mother, 7 sets-11 sets for the king. Soy sauce mixed with vinegar and pine-nu meal, mustard were ruled out from kind of sets. Kinds of dishes served with a meal generally were noodles (麵), soup (湯), fried fish (煎油花), fried meats and vegetables (花陽灸), slices of raw fish (魚膾), minced raw meat (肉膾), slices of boiled beef (片肉), stew (蒸), rice cake (餠), sweet rice dish (藥飯), patterned savory cake (茶食), fried cake made of wheat flour, honey and oil (藥果), fried glutinous rice cake (强精), various fruits preserved in honey (正果), sugar candies (各色糖), fruits (果物) honey (淸), soy sauce mixed with vinegar and pine-nut meal (醋醬), mustard (莽子).
