The last half of the twentieth century brought many new opportunities and challenges to the traditional South Korean family. One area of change that challenges the traditional South Korean family is the availability of new food sources, specifically the introduction of commercial restaurants that offer new types of food in untraditional settings. This research investigated the perceptions of South Korean mothers'(n = 104) regarding the patronage of quick service style restaurants by their children through the use of Q sort methodology. The results showed that even though children do influence the decision making process when determining where to eat away from home, Korean mothers still play a very prominent role in planning the family's food consumption. While Western food styles and practices can provide a variety of food selections and service styles, care should be taken not to over utilize the quick service restaurants' in place of traditional foods.
On our return to India from Germany, we have worked on the development of parabolic solar concentrators with input and collaboration of German and Austrian inventors. We have gradually improved the solar technologies to include food processing based on inputs and feedback from users to fulfill their specific requirements. We will discuss the acceptability and commercialisation of various systems that we have successfully developed, their implications and their benefit. These success stories can work as multipliers. These concentrators can have various other applications. The Global Treaty Kyoto Protocol's CDM (Clean Development Mechanism) can result in a win-win situation for both developing and developed nations and the world environment at large - whereby developed nations get carbon credits by supporting renewable energy projects in developing nations. Listeria monocytogenes is a high-risk foodborne pathogen responsible for foodborne listeriosis outbreaks, and is particularly dangerous to immuno-compromised people with mortality rate of about 30%. This review summarizes subtyping of L. monocytogenes using Pulsed Field Gel Electrophoresis, widely used to trace origin of foodborne outbreaks and to determine relationship between isolates.
Little data exists on metabolic syndrome (MetS) related with intake, especially for the South Korean. The purpose of this study was to develop and evaluate a food frequency questionnaire (FFQ) for nutritional assessment in the population with MetS in South Korea. Randomly selected female participants, mean age 21.9 years (n = 38) were invited to answer the FFQ twice (FFQ1 and FFQ2) over a nine-month interval and to complete twelve-day diet records (DR) during the months between in South Korea. The correlation coefficients for nutrient intake between FFQ1 and FFQ2 varied from 0.253 (niacin) to 0.573 (cholesterol), and the energy intake-adjusted correlation coefficients ranged from 0.187 for protein to 0.662 for iron. The energy intake-adjusted and de-attenuated correlation coefficients for comparison of FFQ1 and the DRs ranged between 0.277 (vitamin $B_1$) and 0.768 (fiber), and between 0.229 (zinc) and 0.859 (fat) for comparison of DRs with FFQ2. The percentages of study subjects classified into the same quartiles in both the DRs and FFQ1 ranged from 15.8% (vitamin $B_6$) to 47.4% (calcium), and for the same quartiles in DRs and FFQ2 from 13.2% (vitamin $B_1$) to 44.7% (potassium). The FFQ has reasonably good validity and reproducibility. Further research is needed for an assessment of reproducibility and validation of present FFQ in the subjects with MetS.

Zinc intake and status of South Koreans from rural, urban and metropolitan areas were investigated. The dietary habits of 760 healthy male and female adult subjects with a mean age of 54 were assessed using a food frequency questionnaire and were verified using 24 h dietary recall. Daily Zn intakes for men and women were 7.4$\pm$5.4 mg and 7.0$\pm$5.4 mg, respectively, which were 62% and 70% of the Korean RDA. The phytate : zinc and phytate ${\times}$ calcium : zinc molar ratios were 38 and 398, respectively. Both the low intake of zinc and the high extremely phytate and phytate ${\times}$ calcium ratios with Zinc suggest that South Koreans may be at risk of zinc deficiency. Plasma zinc (86$\pm$61 $\mu\textrm{g}$/dL), urinary zinc (33$\pm$27 $\mu\textrm{g}$/dL) and plasma alkaline phosphatase (102$\pm$52 mU/mL) levels within the normal range did not however suggest marked Zinc deficiency in these subjects. However, conventional zinc biomarkers aye known to be unreliable for assessment of marginal zinc deficiency. Based on zinc intake alone, it is likely that at least a proportion of these subjects were marginally zinc deficient and the wider consumption of zinc rich, phytate deficient foods, particularly in rural areas, would be beneficial.
The antebellum American South has been characterized by the lingering backward images of plantation, slaves and cotton. The South specializing in the cotton cultivation is compared with the manufacturing East and the breadbasket Midwest. Douglass North who examined the interregional trade assumed that the South up until 1860 relied on the Midwest for the foodstuffs. Statistical and literary evidence, however, disputes the North's model, showing instead that the southern region attained self-sufficiency in foodstuffs at least in the late 1830s or early 1840s. The South's food self-sufficiency is attributable, to a greater extent, to the region-wide environmental movement of scientific agriculture launched to address the aggravating soil problems from cotton monoculture. Diversification and crop rotation lied in the center of the new regime. The new agricultural system combining com, cotton and cowpea ensured the procurement of hoecake, hog meat, and cotton. The most significant outcome of the good farming regime, however, was the enhanced environmental consciousness which came to prevail the best farmer's reckless rush for profit maximization.
Feline calicivirus (FCV) infection results in a common upper respiratory disease associated with oral ulceration in cats. Although FCV infection has been reported in cats worldwide, the biologic and genetic features of South Korean FCV are unclear. We aimed to investigate the biological and genetic features of South Korean FCV isolates. Crandell-Rees feline kidney (CRFK) cells were used to isolate FCV from 58 organ homogenate samples. The FCV isolates were confirmed by cytopathic effects, immunofluorescence, electron microscopy, and reverse transcription polymerase chain reaction assays. Viral genetic analysis was carried out with VP2 gene and complete genomes of FCVs. Five viruses propagated in CRFK cells were confirmed to be FCVs. The FCV17D283 isolate showed the highest viral titer of 107.2 TCID50/mL at 36 h post-inoculation. Korean FCV isolates did not grow well in Vero, BHK-21, A72, or Madin-Darby canine kidney cells. The FCV17D03 and FCV17D283 isolates had the highest genetic similarity (80.1% and 86.9%) with the UTCVM-H1 and 14Q315 strains, which were isolated in the United States and South Korea in 1995 and 2014, respectively. We isolated five FCVs from cats and detected important genetic differences among them. FCV isolates did not show any virulent effects in mice.
BACKGROUND/OBJECTIVES: The current South Korean government policy on food irradiation technology should be reformed based on an in-depth investigation of the communications aspect, because the issue is no longer of a technological nature, given the proven safety and efficacy of the processes. SUBJECTS/METHODS: The target population of the education program consisted of elementary, middle, and high school students attending 310 schools in South Korea (2013: 63 schools, 2014: 104 schools, 2015: 143 schools). Data subjected to analysis were 13,327 pre-education and 12,641 post-education questionnaires received from 7,582 elementary, 2,671 middle, and 3,249 high school students who participated in the education program from May 2012 to April 2015 (n = 12,831), after the exclusion of inadequately filled-in questionnaires. RESULTS: Analysis of the three-year educational effect trend was conducted by comparing levels of variables before and after food radiation education. The analysis yielded the finding that the post-education levels were significantly higher for all variables. That is, for interest in education, perception (necessity, safety, subjective knowledge, and information acquisition), objective knowledge, and attitude, with the sole exception of objective knowledge in 2013. CONCLUSIONS: Given that post-education levels of perception, knowledge, and attitude concerning irradiated foods increased considerably compared to pre-education levels, behavior change should be induced by providing continuous education to enhance, these primary variables.
