A study was conducted to examine the effect of precooling and storage temperatures on the storage life of 'Maehyang' strawberry for export. Fruits at a 80% ripe stage were harvested from a commercial greenhouse in Gyeongsangnamdo Jinju on January 11, 2011. Fruits were precooled at 0, 2, $4^{\circ}C$ for 2-5 hours, and then transported for about 30 minutes. And stored in set chamber at 4, 8, $10^{\circ}C$, immediately. Fruits were examined for their changes in weight, hardness, Hunter color values, soluble solid content (SSC), acidity, and incidence of gray mold (Botrytis cinerea) during storage. The fresh weight decreased during storage at all temperatures. Especially, strawberry treated the lowest precooling and storage temperatures was the greatest in quality. The hardness was drastically decreased in precooled at $4^{\circ}C$ and stored at $10^{\circ}C$ after storage 10 days. SSC was the greatest when strawberry stored at the lowest temperature. Acidity increased during storage at all temperatures. But in the last day after storage, the strawberry of precooled at $4^{\circ}C$ and stored at $10^{\circ}C$ was the highest as 0.7%. Gray mold was the greatest at $10^{\circ}C$ storage temperature. The results indicate that effectiveness for keeping the freshness was best achieved by precooling at $0^{\circ}C$ and storage at $4^{\circ}C$.
The characteristics of vibrational stress (shock and vibration) during transport and the possibility of damage to the packaged pears by functional PLA tray were investigated. And this study was conducted to analyze how environmental conditions by simulated transport environment affect quality factors such as weight loss (%) and soluble solid content (SSC, %), and firmness (bioyield strength, kPa) of packaged pears by PLA tray and Expanded PET foam pad (Group 1), EPE cushion cup pad and net (Group 2) for exporting. Pears with or without vibration stress were stored for 30 days at low temperatures (5 ± 0.8℃, 80 ± 5% relative humidity). There was the statistically significant difference (p ≤ 0.05) between pears with and without vibration stress for weight loss, soluble solid content, and firmness (bioyield strength) after 30 days storage. Vibration stress accelerated pear quality deterioration during storage, resulting in increased weight loss, soluble solids content, and reduced hardness. The firmness (bioyield strength) and weight changes of pears with PLA trays were smaller than those of conventional packaging box systems. It was determined that the firmness of agricultural products was a quality factor closely related to the storage period and that PLA could be applied.

Watermelon (Citrullus lanatus) is a non-seasonal, economically important, cucurbit cultivated throughout the world with Asia as a continent contributing the most. As part of the effort in diversifying watermelon genetic resources in the already cultivated group, this study was devoted to providing baseline data on morphological quality traits and health-beneficial phytonutrients of watermelon germplasm collections, thereby promoting watermelon research and cultivation programs. To this end, we reported morphological traits, citrulline, and arginine levels of watermelon genetic resources obtained from the gene bank of Agrobiodiversity Center, Republic of Korea, and discussed the relationship between each other. Diverse characteristics were observed among many of the traits. But, most of the genetic resources (>90%) were either red or pink-fleshed. Korean origin fruits contained intermediate levels of soluble solid content (SSC) while The USA, Russian, Tajikistan, Turkmenistan, Taiwan, and Uruguay originated had generally the highest levels of soluble solids. The citrulline and arginine contents using HPLC method were ranged from 6.9 to 52.1 mg/g (average, 27.3 mg/g) and 1.8 to 21.3 mg/g (average, 9.8 mg/g), respectively. The citrulline content determined using Citrulline Assay Kit was ranged from 6.5 to 42.8 mg/g (average, 27.0 mg/g). Resources with high citrulline and arginine levels contained low SSC. Whereas, red- and pink-colored flesh samples had less citrulline compared to yellow and orange. In addition to the profiling of morphological characters and phytonutrients, molecular marker characterization and identification of sources of resistance to diseases and pests are recommended for a more complete diversity analysis of watermelon genetic resources.
A partial least squares regression (PLSR) model was developed to map the internal soluble solids content (SSC) of apples using a ground-based hyperspectral scanner that could simultaneously acquire outdoor data and capture images of large quantities of apples. We evaluated the applicability of various preprocessing techniques to construct an optimal prediction model and calculated the optimal band through a variable importance in projection (VIP)score. From the 515 bands of hyperspectral images extracted at wavelengths of 360-1019 nm, 70 reflectance spectra of apples were extracted, and the SSC ($^{\circ}Brix$) was measured using a digital photometer. The optimal prediction model wasselected considering the root-mean-square error of cross-validation (RMSECV), root-mean-square error of prediction (RMSEP) and coefficient of determination of prediction $r_p^2$. As a result, multiplicative scatter correction (MSC)-based preprocessing methods were better than others. For example, when a combination of MSC and standard normal variate (SNV) was used, RMSECV and RMSEP were the lowest at 0.8551 and 0.8561 and $r_c^2$ and $r_p^2$ were the highest at 0.8533 and 0.6546; wavelength ranges of 360-380, 546-690, 760, 915, 931-939, 942, 953, 971, 978, 981, 988, and 992-1019 nm were most influential for SSC determination. The PLSR model with the spectral value of the corresponding region confirmed that the RMSEP decreased to 0.6841 and $r_p^2$ increased to 0.7795 as compared to the values of the entire wavelength band. In this study, we confirmed the feasibility of using a hyperspectral scanner image obtained from outdoors for the SSC measurement of apples. These results indicate that the application of field data and sensors could possibly expand in the future.
This study aimed to investigate quality characteristics of hot-air dried persimmon during the drying period in 'Bansi' and 'Godongsi'. These cultivars were classified into four grades: 2L, L, M, and S based on the fruit weight. Weight loss, firmness, soluble solid content (SSC), and moisture contents were measured during the hot-air drying period. The weight loss significantly increased during the drying period (p<0.05), while there was no difference between cultivars. In the initial drying period, the firmness decreased due to softening during the ripening stage and increased significantly due to hardening during the water loss stage. Regardless of the cultivars, the SSC increased from 19.6% in the initial period to 55.3% at 12 days after drying. Moisture content statistically decreased in both cultivars over the whole drying period. It took 4 days and 8~10 days to produce semi-dried persimmon (45~55% moisture content) and dried persimmon (25~35% moisture content) in both cultivars. These results could be effectively used as basic data for producing high-quality semi-dried and dried persimmons using the hot-air drying method in 'Bansi' and 'Godongsi'.

We investigated the effects of both $CaCl_2$ treatment and modified atmosphere packaging (MAP) (compared with non-packaging on 'Fuji' apples from the Young-Joo region of Korea. Apples were dined into 5% (w/v) $CaCl_2$ solution for 15 min and then packaged with or without LDPE film (thickness: 0.025 mm) before cold storage at $0^{\circ}C$. Weight loss of applies in film packaging was lower than that of non-packaging applies, and the apple firmness resulting from $CaCl_2$ treatment and MAP was better than that of apples receiving control treatment. Also, $CaCl_2$ treatment and MAP resulted in improvements in titratable acidity, soluble solid content (SSC), and decay rate compared to control treatments. However, no significant differences in vitamin C content were found amongst apples receiving various treatment. the results suggest that a combination of postharvest calcium dipping and plastic film packaging may effectively preserve 'Fuji' apples, and that the combined treatment are better than either individual treatment.

The research was conducted to measure the effect of pressure cooling of 'Fuji' apple during of 24 weeks. Weight loss in pressure cooling was lower than control at 24th week, and firmness in pressure cooling was higher than control. Titratable acidity in control and pressure cooling was 0.0823% 0.1103% in 24 weeks, respectively. Soluble solid content (SSC) in pressure cooling were higher than control. Decayed rate in control and pressure cooling was 46.4% 34.5% in 24 weeks, respectively. Total ascorbic acid contents were decreased in control and pressure cooling during 24 weeks. Therefore, it could be suggested that pressure cooling is more effective than control in storage of 'Fuji' apple.
This study was carried out to understand the characteristic relations fruit changes caused by adjusting the amount of the fruit load in 'Niitaka' and 'Whangkeumbae'. The average fruit weight of 'Niitaka' was 672.0 g and the amount of fruit in the range of 601-750 g was the highest, accounting for 33.8% of the production and as for 'Whangkeumbae', the average fruit weight was 477.5 g and fruit in the range of 401-600 g accounted for 72.5% of total production. The weight of the 'Niitaka' was evenly distributed in each range from below 300 g to over 1 kg and the percent of the regular shaped fruit in 'Whangkeumbae' was high as the distribution range of the fruit weight was narrow. The brix degree and the soluble solid content (SSC)/acidity ratio of 'Niitaka' had a significantly positive correlation with the fruit weight, the length, and the diameter of the fruit. The brix degree also had a positive correlation with weight and diameter of the fruit for 'Whangkeumbae'. As for the difference in fruit quality according to fruit weight for each variety, the brix degree was low in 'Niitaka' that were below 451 g and the fruit firmness was low in fruits weighing under 400 g. There was no difference according to fruit weight in 'Whangkeumbae'. The fruit size was impacted by the fleshy part and the ratio of fleshy part was higher as the fruit size became larger. The weight of the fruit, brix degree, and the SSC/acidity ratio were low while the firmness was high in light thinning treatment for 'Niitaka' and in the case of 'Whangkeumbae', the fruit weight and brix degree were both low in light thinning treatment. The brix degree was higher in bigger sized fruit in all thinning intensity for 'Niitaka', the case in light thinning treatment especially where the quality was poor due to low brix degree in fruits that weighed less than 450 g, on the other hand, there was no difference in the quality due to the fruit weight among the thinning intensity for 'Whangkeumbae'. Therefore, it is possible to produce smaller sized fruits in 'Niitaka' by controlling the thinning intensity, as it is inevitable to result in lower quality fruits, however, it is projected that we can produce small to mid-sized fruits in 'Whangkeumbae' by controlling the thinning intensity without causing the decline in fruit quality.
This study was conducted to determine the effects of the humidity and gas composition on the quality of satsuma mandarins during their heat treatment, in an effort to reduce their acidity. To come up with different humidity and gas conditions, various plastic films were used. The fruits were wrapped with an 18-${\mu}m$ high-density polyethylene (HDPE) punched film, a 30-${\mu}m$ low-density polyethylene (LDPE) film, or a 100-${\mu}m$ LDPE film just before treatment at $30^{\circ}C$ for 55 hours. After heat treatment, the titratible acidity (TA) was significantly reduced while the soluble-solid content (SSC) showed no differences, which resulted in increased SSC/TA ratios in all the treatments. The fruits that were not wrapped with a film, however, which had low RH, developed higher ethanol and acetaldehyde contents than those wrapped with an 18-${\mu}m$ HDPE punched film, which had high RH and a similar gas composition. Among the films, the higher the $CO_2$ concentration in the film was, the more the ethanol and acetaldehyde contents increased, which induced more off-flavor. It was thus concluded that high humidity and normal gas composition are favorable conditions for heat treatment to reduce the acidity of satsuma mandarins.
This study was conducted to investigate the physicochemical properties and antioxidant activities of strawberries from different cultivars and ripening stages grown in Korea. Fragaria ananassa 'Seolhyang' and 'Janghee' in unripe and ripe stages were used in this study. Overall, firmness of unripe fruits was harder than that of ripe fruits, whereas firmness of 'Seolhyang' was harder than that of 'Janghee'. There was no significant difference in soluble solid content (SSC) between the two cultivars, whereas SSC increased when fruits matured. Total phenolic and flavonoid concentrations of 'Seolhyang' were greater than those of 'Janghee' cultivar. However, there was no ripening effect on total phenolic concentration in both cultivars. Total anthocyanin concentrations of the two cultivars were higher in ripe stage while that of 'Janghee' was greater than that of 'Seolhyang' statistically. Total antioxidant activities of 'Seolhyang' were greater than those of 'Janghee'. Total phenolic and flavonoid concentrations were highly correlated with antioxidant activities but there was no correlation between total anthocyanins and total antioxidant activities.
