Effect of Packing Method on Physico-chemical Properties of Frozen Chicken (포장방법이 동결계육의 이화학적 특성에 미치는 영향)

  • This experiment was carried out to find out the effect of packing methods on physico-chemical properties of breast and thigh meats in chicken, which was dried by air spray chilling method. The chicken carcass was cut into breast and thigh muscles, which were either vacuum packed or atmosphere packed, and stored at -2O˚C for 1, 4, 8, 12 and 16 wk after quick freezing at -45˚C for 35 min. The pH values of atmosphere-packed breast meat and vacuum-packed breast meat after one wk of storage were higher than those of atmosphere-packed thigh meat and vacuum-packed thigh meat(P< .05). The pH values increased as storage period extended, but no significant difference was detected between two packing method(vacuum vs. atmosphere). Total moisture contents of breast meats after one wk of storage were higher than those of thigh meats. The total moisture contents decreased slowly as storage period extended, but no significant difference was detected between two packing method(vacuum vs. atmosphere). The shear force value of thigh meat was higher than that of breast meat. The shear force values of both meats decreased as storage period extended, regardless of packing method. The water soluble protein extractability of thigh meats was higher than that of breast meat, and the water soluble protein extractability of all treatments decreased until 8 wk after storage, but increased gradually after 8 wk of storage period. The salt soluble protein extractability of breast meat was higher than that of thigh meat, and the salt soluble protein extractability of all treatments decreased as storage period extended. With regard to the packing method, the vacuum packing showed higher value than that of atmosphere packing method until 8 wk of storage. Total lipid contents of atmosphere- and vacuum-packed thigh meats at 1 wk of storage were higher than those of breast meats, and the total lipid contents of all of treatments decreased as storage period extended. However, no significant difference was detected between two packing methods. The fatty acid contents of breast and thigh meats were in order of o1eic(33,5~42.4), palmitic(19.7~30.8) and linoleic acid(10.8~17.4).

Extraction of protein from defatted sesame meal using the enzyme from Bacillus sp. CW-1121 (Bacillus sp. CW-1121이 생성하는 단백 분해 효소를 이용한 참깨박 단백질의 용출)

  • To extract insoluble proteins of sesame meal residue by using microorganism, the sesame meal residue was treated with crude enzyme solution from Bacillus sp. CW-1121. It was found that the solubility reached to maximum at pH 7.5, $45^{\circ}C$. Under optimum condition, the nitrogen solubility with the enzyme solution from Bacillus sp. CW-1121 reached to 60% in 2 hours. Nitrogen solubility of protein from sesame meal showed minimum value at pH 4.5 and significantly increased above pH 6.0. When the protein from sesame meal extracted with Bacillus sp. CW-1121 was subjected to sodium dodecyl sulfate polyacrylamide gel electrophoresis, water soluble protein was showed 4 bands and salt soluble protein was showed 2 bands. The amino acid composition of water soluble protein, salt soluble protein and free amino acid indicated relatively high contents of serine (17.24 mg/g), glutamic acid (10.77 mg/g) and glutamic acid (6.55 mg/g). Specially, the contents of essential amino acids were high.

Estimations of the Optical Properties and Direct Radiative Forcing of Aerosol Chemical Components in PM2.5 Measured at Aewol Intensive Air Monitoring Site on Jeju Island (제주 애월 대기오염집중측정소의 PM2.5 에어로졸 화학성분 자료를 이용한 광학특성 및 직접적 복사강제력 추정 연구)

  • The optical properties and direct aerosol radiative forcing (DARF) of different aerosol components in $PM_{2.5}$ (water-soluble, insoluble, black carbon (BC), and sea-salt) were estimated using the hourly resolution data measured at Aewol intensive air monitoring site on Jeju Island during 2013, based on a modeling approach. In general, the water-soluble component was predominant over all other components with respect to its impact on the optical properties(except for absorbing BC) and DARF. The annual mean aerosol optical depth (AOD) at 500 nm for the water-soluble component was $0.14{\pm}0.14$ ($0.04{\pm}0.01$ for BC). The total DARF at the surface ($DARF_{SFC}$) and top of the atmosphere ($DARF_{TOA}$), and in the atmosphere ($DARF_{ATM}$) for most aerosol components(except for sea-salt) during the daytime were highest in spring and lowest in fall and/or summer. The maximum $DARF_{SFC}$ of most aerosol components occurred around noon (12:00~14:00 LST) during all seasons, while the maximum $DARF_{TOA}$ occurred in the afternoon (13:00~16:00 LST) during most seasons (except for spring). In addition, the estimated $DARF_{SFC}$ and $DARF_{ATM}$ of the water-soluble component were -20 to $-59W/m^2$ and +3.5 to $+14W/m^2$, respectively, while those of BC were -18 to $-29W/m^2$ and +23 to $+37W/m^2$, respectively.

Genetic Analysis of Ginseng Germplasm by Lactate Polyacrylamide Gel Electrophoresis of Seed Protein

  • Systematic electrophoretic analysis of alcohol-soluble proteins and salt-soluble proteins of 247 Panax ginseng (P.g) and Panax quinquefolium (P.q) germplasms seed was carried out on an improved lactate-polyacrylamide gel electrophoresis, a method with high resolving power, good reproducibility and stability. The electrophoregrams of proteins, according to their migration rate, were classified into four groups such as ${\alpha}$, ${\beta}$, ${\gamma}$ and $\omega$ for the alcohol-soluble proteins and three such as I, II and III for the salt-soluble ones. Panax ginseng or Panax quinquefolium had their own unique band pattern distinguishable from each other, regarding as their specific "fingerprint". In this study, 3 of 168 (1.8%) P.g germplasms and 1 of 79 (1.3%) P.q germplasms had their own unique band pattern, showing that P.g and P.q germplasms have poor genetic diversity in species. The band patterns of dry seed and stratified seed (embryo rate=60%) were basically the same. The band number of the F, hybrid of p.gx p.q was exactly equivalent to the number of the common bands plus the specific bands of the two parents, indicating that the difference of band patterns was a genetic trait con- trolled by the nuclear genes. The electrophoregram of F1 of P.g x P.q could be predicted by that of the two parents and the band pattern of the F1 hybrids could be demnonstrated by that of the mixed seed extract from the two parents.

A Study on the Effect of the Kinds and Replacement Ratios of Mineral Admixtures on the Development of Chloride Invasion Resistance Property of Concrete Immersed in Salt Water (혼화재 종류 및 치환율이 염수에 침지한 콘크리트의 내염성능 향상에 미치는 영향에 관한 연구)

  • This paper investigate that the effect of the concrete containing mineral admixtures(pozzolanic materials such as fly-ash, ground granulated blast-furnace slag, silica fume and meta kaolin) on the resistance properties to chloride ion invasion. The purposed testing procedure was applied to the concrete added mineral admixtures for $3\sim4$ replacement ratios under W/B ratios ranged from 0.40 to 0.55. Specimens were immersed in $3.6\%$ NaCl solution for 330 days, and penetration depth, water soluble chloride contents and acid soluble chloride contents were measured in 28, 91, 182 and 330 days. Then, diffusion coefficient were calculated using total chloride contents. As a results. the kinds of mineral admixture and replacement ratios had a great effect on the resistance property of the concrete to chloride ion invasion compared with the plain concrete. And the optimal replacement ratios of mineral admixture had a limitation for each admixtures. The amount of acid soluble chloride ions and water soluble chloride ions were varied with the kinds of mineral admixtures and the penetration depth from the concrete skin. Chloride diffusion coefficient of each concretes decreased with the time elapsed. and the diffusion coefficients of the concrete immersed salt water for 330 days had a establishment with the compressive strength measured before immersing.

Characteristic of Size-Resolved Water-Soluble Organic Carbon in Atmospheric Aerosol Particles Observed during Daytime and Nighttime in an Urban Area (도시지역 낮.밤 대기에어로졸의 입경 별 수용성 유기탄소의 특성)

  • Twelve-hour size-resolved atmospheric aerosols were measured to determine size distributions of water-soluble organic carbon(WSOC) during daytime and nighttime, and to investigate sources and formation pathways of WSOC in individual particle size classes. Mass, WSOC, ${NO_3}^-$, $K^+$, and $Cl^-$ at day and night showed mostly bimodal size distributions, peaking at the size range of $0.32-0.55{\mu}m$(condensation mode) and $3.1-6.2{\mu}m$(coarse mode), respectively, with a predominant condensation mode and a minor coarse mode. While ${NH_4}^+$ and ${SO_4}^{2-}$ showed unimodal size distributions which peaked between 0.32 and $0.55{\mu}m$. WSOC was enriched into nuclei mode particles(< $0.1{\mu}m$) based on the WSOC-to-mass and WSOC-to-water soluble species ratios. The sources and formation mechanisms of WSOC were inferred in reference to the size distribution characteristics of inorganic species(${SO_4}^{2-}$, ${NO_3}^-$, $K^+$, $Ca^{2+}$, $Na^+$, and $Cl^-$) and carbon monoxide. Nuclei mode WSOC was likely associated with primary combustion sources during daytime and nighttime. Among significant sources contributing to the condensation mode WSOC were homogeneous gas-phase oxidation of VOCs, primary combustion emissions, and fresh(or slightly aged) biomass burning aerosols. The droplet mode WSOC could be attributed to aqueous oxidation of VOCs in clouds, cloud-processed biomass burning aerosols, and small contributions from primary combustion sources. From the correlations between WSOC and soil-related particles, and between WSOC and sea-salt particles, it is suggested that the coarse mode WSOC during daytime is likely to condense on the soil-related particles($K^+$ and $Ca^{2+}$), while the WSOC in the coarse fraction during nighttime is likely associated with the sea-salt particles($Na^+$).

Studies on Functional Salt Fortified with Seaweed Components (해조성분 강화 기능성소금에 대한 연구)

  • In an attempt to develop functional salts having beneficial health effects, we experimentally prepared three functional salts by fortification with soluble seaweed minerals (Hizikia mineral salt, HMS), fucoidan (fucoidan salt, FS) and laver extracts (laver salt, LS). To characterize the functional salts, their physicochemical properties and in vitro functionalities, such as pH, color, mineral composition, solubility, oxidation-reduction potential, sensory properties, angiotesin converting enzyme (ACE) inhibitory activity, and bile acid binding capacity were investigated. The functional salts revealed slightly lower NaCl concentrations, but showed a variety of pH values compared with conventional table salt. The pH values of HMS, FS, and LS were 11.3, 6.8, and 6.5, respectively. The oxidation-reduction potentials (ORP) of the functional salts varied from -229 mV to 38 mV, significantly lower than refined salt. The functional salts were significantly darker in color than refined salt, and the mineral composition of HMS was considerably enriched compared to refined salt, particularly in potassium ion. As a result of the sensory evaluation, FS and LS were comparatively palatable in saltiness, pungency, bitterness, and overall acceptance compared with refined salt. It was also found that one functional salt had ACE inhibitory activity (54.8% in LS) and another had bile acid binding capacity (80.7% in FS).

Effects of Pre-salting on the Components Changes in the Preparation of Salted Anchovy (Engraulis japonica)

  • To investigate pre-salting conditions in the preparation of salted anchovy from large anchovy, anchovy were salted with various salt concentration and stored at $5^{\circ}C$ and $20^{\circ}C$ for 10 days. Moisture content decreased with the increase of salt and the salinity increased in proportion to salt concentration at $20^{\circ}C$. Total nitrogen decreased slightly as the increase of salt concentration during pre-salting at $20^{\circ}C$. The nitrogenous components such as amino nitrogen and extractable nitrogen were invariable or decreased until 7 days in salt concentration over $25\%$ during pre-salting at $5^{\circ}C$. These results imply that soluble nitrogen with moisture run out of anchovy body in high salt concentration and the hydrolysis was inhibited by salt over $25\%$ at $5^{\circ}C$. VBN content were constant in salt concentration over $25\%$ until 7 days, regardless of curing temperature. The POV were under the influence of salt concentration and temperatures. We concluded that the optimal condition for preparation of salted anchovy were pre-salting with salt over $25\%$ at $5^{\circ}C$ for 7 days.

  • In order to enhance water solubility, ketoprofen was made as lysine salt, such as acetylsalicylic acid lysine salt, ibuprofen lysine salt and amino acid salt of phenylbutazone. The purpose of this study was to make a comparison between ketoprofen lysine salt in aspects of analgesic, anti-inflammatory, and antipyretic effect. The experimental results were summerized as followings. 1. Ketoprofen lysinate was composed of one molecule of ketoprofen and one molecule of lysine. The product was water soluble and melting point was $92^{\circ}C{\sim}94^{\circ}C$. 2. Ketoprofen lysinate showed about 2 times stronger analgesic effect than that of ketoprofen while no difference in antipyretic effect was observed. 3. $LD_{50}$ of ketoprofen lysinate was higher than that of ketoprofen, suggesting ketoprofen lysinate as safer drug. 4. Blood concentration of ketoprofen lysinate was $156{\mu}g/ml$ while the concentration of ketoprofen was $116{\mu}g/ml$ in 30 min., suggesting long acting as well as high blood concentration.

Effects of Different Paints on Steel Rods Anticorrosion of Reinforced Concrete in Salt Water (해수에서 철근콘크리트의 철근 방식에 대한 도료의 효과)

  • The objectives of this paper were to measure the bond strengths of reinforced concrete in which the steel rods were coated with five different kinds of anticorrosion paints, and to compare their prevention effects in salt water. The paints used in the study were epoxy resin I . II . III, Z.R. P., and silicone resin, which were applied at rates recommended by the manufacturers. The bond strengths were measured on the 7-, 14-, and 28-th days after molding. Corrosion conditions of coated steel plate under fresh water, seawater, 10 % salt water, and 20% salt water, were inspected every month during four months test peoriods, respectively. The results obtained from tests are summarized as follows: 1. Paint-coating may reduce the bond strengths of reinforced concrete. Silicone resin paint showed some 20% reduction in the strength compared to those without the paint. However, the other paints seemed not to significantly affect the strength. 2. Picture analyses showed that epoxy resin I and II significantly prevented corrosion steel plates in seawater. Epoxy resin I and silicone resin coating did not do a good job in corrosion prevention. Z.R. P. paint was found to be moderate as preventive coating paint. 3. Varying soluble salt contents had little effects on the corrosion prevention of tested paints. 4. Epoxy resin I and II were found to be appropriate as a coating material to prevent the corrosion of steel rods in seawater. Z.R.P. may also be used for the purpose.
