Traditional Jeju tofu with a hard texture was manufactured by traditional method with a compounded coagulant. The processing condition for industrial production was optimized by determining soaking of soybean, extraction and heat treatment of soymilk as well as concentration and composition of coagulant. Maximum yield of soymilk was obtained by grinding one part of soaked soybean with eight parts of water, and the soluble solid of soymilk was about 8$^{\circ}$Brix. The free thiol group in soymilk was maximally exposed by heating at 10$0^{\circ}C$ for 2 min. A vacuum cooker for heating soymilk was effective for the improvement of yield and texture properties of tofu. The hardness of traditional Jeju tofu was obtained by increasing pressing time and drying by a fan instead of soaking in cold water. Optimization of a traditional tofu production resulted in the increase of total yield and improvement of quality control. Texture of traditional Jeju tofu prepared in industrial production scale was analyzed by instrumental analysis and sensory evaluation. Traditional Jeju tofu showed higher score in the hardness, roasting taste and overall preference compared with a commercial tofu, showing significant difference in 5% significant level..

This study was conducted to assess the effect of ethylene producing tablet (patent no.10-1574011) and treatment period on quality and storability of banana (AAA - Cavendish group) fruit imported into Korea from the Philippines. Three and five days of treatment periods, and different concentrations of ethylene tablet (50 ppmv, 100 ppmv) and control (standard ethylene gas treatment at a concentration of 100 ppmv) were used for the study. Slightly higher respiration rate was observed in banana fruits treated with 50 ppmv in both 3 and 5 days after treatments as compared to the control. Better storability was observed with banana fruits treated with 50 ppmv and 100 ppmv as compared to the control. All the treatments were shown a decrease in firmness as the storage days proceeded. The highest firmness was recorded from 50 ppmv on the initial day of storage while the lowest was recorded from 100 ppmv on 9 day storage. It was observed that banana fruits could be stored for up to 12 days without losing their color quality in all treatments except for the control. However, the quality of fruits at the control rapidly decreased (lost marketability) after 9 days of storage. Banana fruits treated with ethylene tablet with 100 ppmv for 5 days recorded the highest soluble solids content (SSC) at the beginning of storage period which was similar with the control. However, banana fruits treated with ethylene tablet with 100 ppmv for 3 days showed better storability than the control. On the other hand, ethylene tablet with 50 ppmv for 5 days of treatment has extended banana shelf life without affecting peel color, firmness and SSC content. Hence, these results indicate that banana fruits treated with ethylene tablet with 100 ppmv for 3 days or /and 50 ppmv for 5 days are an optimum for ripening of banana to be used for market and ultimate consumption.
In order to discover lifespan-extending compounds made from natural resources, activity-guided fractionation of Zingiber officinale Roscoe (Zingiberaceae) ethanol extract was performed using the Caenorhabditis elegans (C. elegans) model system. The compound 6-gingerol was isolated from the most active ethyl acetate soluble fraction, and showed potent longevity-promoting activity. It also elevated the survival rate of worms against stressful environment including thermal, osmotic, and oxidative conditions. Additionally, 6-gingerol elevated the antioxidant enzyme activities of C. elegans, and showed a dose-depend reduction of intracellular reactive oxygen species (ROS) accumulation in worms. Further studies demonstrated that the increased stress tolerance of 6-gingerol-mediated worms could result from the promotion of stress resistance proteins such as heat shock protein (HSP-16.2) and superoxide dismutase (SOD-3). The lipofuscin levels in 6-gingerol treated intestinal worms were decreased in comparison to the control group. No significant 6-gingerol-related changes, including growth, food intake, reproduction, and movement were noted. These results suggest that 6-gingerol exerted longevity-promoting activities independently of these factors and could extend the human lifespan.
Four isoforms of calcium binding proteins containing 2 EF hand motifs and a dynein light chain-like domain in the human liver fluke Opisthorchis viverrini, namely OvCaBP1, 2, 3, and 4, were characterized. They had molecular weights of 22.7, 21.6, 23.7, and 22.5 kDa, respectively and showed 37.2-42.1% sequence identity to CaBP22.8 of O. viverrini. All were detected in 2- and 4-week-old immature and mature parasites. Additionally, OvCaBP4 was found in newly excysted juveniles. Polyclonal antibodies against each isoform were generated to detect the native proteins in parasite extracts by Western blot analysis. All OvCaBPs were detected in soluble and insoluble crude worm extracts and in the excretory-secretory product, at approximate sizes of 21-23 kDa. The ion-binding properties of the proteins were analyzed by mobility shift assays with the divalent cations $Ca^{2+}$, $Mg^{2+}$, $Zn^{2+}$, and $Cu^{2+}$. All OvCaBPs showed mobility shifts with $Ca^{2+}$ and $Zn^{2+}$. OvCaBP1 showed also positive results with $Mg^{2+}$ and $Cu^{2+}$. As tegumental proteins, OvCaBP1, 2, and 3 are interesting drug targets for the treatment of opisthorchiasis.
In this study, we attempted to find substitute materials, distillers residue of cassava, alfalfa pellet, and distillers residue of corn, for cotton seed meal in bottle cultivation of Pleurotus ostreatus. In all treatments, the total carbon content was comparable with the exception of T4, and the total nitrogen content of T3 was similar to the control group, and C/N ratio of T4 was higher than other treatments. The diameter of plieus was the largest in T2, and the diameter of stipe was the largest in T2 and T4. And the length of stipe was largest in T1 and T2, and the most number of available stipes was in T1 and T3. The yield and bio-efficiency of fruit-body by residue of corn with soluble treatment(T3), were similar to the control of P. ostreatus. Therefore, it was suggested that residue of corn was substituted for cotton seed meal for cultivation of P. ostreatus.

Applied decanol and nonanol provided more weight loss than applied heptanol and octanol. PET using decanol showed the highest weight loss than other alcohols applied. Sodium hydroxide caused weight loss in PET fabrics because terephthalic acid and ethylene glycol were separated by the hydrolysis of the ester group in the PET chains. The terephthalic acid was neutralized to disodium terephthalate and the reaction results in weight loss in the PET fabrics. The weight loss increased with increasing hydrolysis time because disodium terepthalate was water soluble and the reaction was not reached at equilibrium. Pretreatment alcohols increased water absorption, especially in case of PET applied decanol revealed the highest water absorption. PET applied decanol showed 400% of initial water absorption, and PET applied nonanol revealed 250% of initial water absorption. However, the pristine PET showed 90% initial water absorption, and it revealed 230% maximum water absorption as compared to other alcohols. Also, PET applied decanol, nonanol, octanol and heptanol showed 600%, 400%, 350% and 300% maximum water absorption, respectively. The result implied alcohol length affected on water absorption of PET fibrous assembly. This implies that the microvoid of the PET surface hold water molecules. Surface morphology of PET appears that the pretreatment reagent attacks almost entire surface of the fiber, causing surface etching. As the surface etching progresses, it propagates inside the fiber, resulting in the formation of elongated cavities on the surface.
Uraniferous black slates of the Okchon sequence occur in Koesan (northeast) through Miwon-Boun (middle) to the southwest off Taejon (southwest) within the Okchon fold belt. The Uraniferous balck slates in the southwest off Taejon are particularly well developed in Chubu (northeast) and Moksso-ri (middle) areas whereas they are less developed in Jinsan (southwest) area. The uraniferous beds range from less than a meter to 40 meters in thickness and range from less than 0.02% $U_3O_8$ (cut-off-grade) to 0.05% $U_3O_8$ in the southwestern district off Taejon. Electron microprobe analysis of uranium-minerals found in graphitic slate samples enables to estimate their major compositions semi-quantitatively so that uraninite, ferro-uranophane and chlopinite are tentatively identified. Uranium-minerals are closely associated with carbon and metal sulfides. Correlation analysis of trace element concentrations revealed that U and F.C., and U and Mo are lineary correlative respectively and their correlation coefficients are positively high whereas those of U and V, U and Mn, and U and Zr are negatively low, implying that uranium mineralization has been closely related with concentrations of carbon and molybdenum. Stable isotope analyses of pyrite sulfur range widely from +11.5% to -23.3% in ${\delta}^{34}S$ values whereas those of graphite carbon fall within a narrow range between -23.3% and -28.9% in ${\delta}^{13}C$ values. The wide range of ${\delta}^{34}S$ values suggests that the sulfur could be of meteoric origin rather than of igneous source. The narrow range of ${\delta}^{13}C$ values, which are close to those of coal, indicates that the graphite is organic carbon in origin. Therefore, it is concluded that the uranium mineralization in the Okchon sequence took place primarily in sedimentary environment rich in organic matter and sulfide ion, both of which served as the reducing agents to convert soluble uranyl complex to insoluble uranium dioxide.
The rice protein profiles of Oryza sativa L (Koshihikari) grown under organic and conventional cultivation regimes were compared on 2-D gels to develop diagnostic marker proteins for organic rice. The selected proteins, differentially expressed between organic and conventional rice, were compared with the differentially expressed proteins of another organic and conventional rice pairing, produced at a different location. In the first comparison among conventional, no-chemical, and organic rice grown in the same region, Korea, 13 proteins exhibiting differential expression in organic and conventionally grown plants were selected. Eight of the 13 proteins were down-regulated, and the 5 remaining proteins were up-regulated from conventional to organic rice. The second comparison pairing from Kyungju, revealed 12 differentially expressed proteins, with 8 down-regulated and 4 up-regulated proteins. Ten of the differentially expressed proteins that overlapped between the two comparison sets could not be clustered into any functional group using a functional annotation clustering tool. Further comparisons using another set of conventional and organic rice, belonging to a different variety of Oryza sativa L and produced in Sanchung, revealed 8 differentially expressed proteins, 5 of which were down-regulated and 3 of which were upregulated in the organic rice. Overall, 3 differentially expressed proteins were commonly found in all three organic rice crops. These 3 proteins, along with other overlapping differentially expressed proteins, can provide a good starting point for the development of signature proteins that can be used for the authentication of organic rice with a follow-up studies with more comparison sets.

Milk and dairy products are the high value foods for the elderly population. In particular, fermented milk is the best source of calcium for people in the specific age group of over 79 years. It provides a good source of protein. Regular exercise and active lifestyle are recommended to slow down the muscle loss. However, exercising without proper nutrient intake is simply not sufficient at this age. Milk and dairy products provide the iron and protein content required for effective exercise-assisted growth. Milk nutrients have the advantage of being produced in various food forms, such as liquid, semi-solid, and powder types. Fat-soluble vitamins such as retinol and vitamin K can be encapsulated using various technologies for milk and dairy products. Using the encapsulation method, spray drying and fluidized-bed coating have been used for adding the micro-nutrients to the food. Microencapsulation technology is being applied in case of the fermented dairy products too. In particular, various wall materials are being developed to enhance the viability of probiotics. In the near future, advanced high-efficiency technologies that can effectively nourish the dairy products with nutrients will be developed to produce targeted high-nutrition value food for the elderly.
Eighteen Holstein Friesian ${\times}$ Native heifers with an average live weight of $175.4{\pm}27.8kg$ were allotted to 3 dietary groups. All animals were kept individually in a stanchion barn with free access to water and urea-treated rice straw (UTS). The supplemented feeds were as follows: Group (Gr) 1 - concentrate mixture (15% CP) at 1% body weight (BW), Gr 2 - concentrate mixture at 0.7% BW + free licking of multinutrient block (MNB), Gr 3 - as Gr 2 + 0.3% BW ground com. Multinutrient block composed of 20% mineral mixture, 10% urea, 18% molasses, 20% soybean meal, 22% sesame meal, 10% cement, 0.15 million IU and 50 IU/kg MNB of vitamin A and E. The experimental period lasted 12 weeks. The result revealed that MNB enhanced intake of UTS and total dry matter intake. Animals in Gr 3 consumed a higher amount of feed than the other 2 groups, thus resulting in the highest live weight gain and tended to possess the best feed conversion ratio. Heifers in Gr 2 also performed better than Gr 1 although the difference was not significant. Average MNB intake found to be 0.65 kg/day. Feed cost per kg gain was not significantly different amon groups. However if the cost of MNB could be lower, it would benefit the production cost of animals. The advantage of MNB is the safety of using a high level of urea. Although it was supplemented to UTS which also contained non-protein nitrogen (NPN), no toxic sign was shown. The results indicated that MNB could be partially substituted to concentrate mixture and it was even better when used incombination with soluble carbohydrate feed.
