Effect of Ultrasonic Treatment on Physicochemical Properties and Palatability of Cooked Chicken Meat (초음파 처리가 가열 계육의 이화학적 성질 및 기호성에 미치는 영향)

  • This study was carried out to investigate the effect of ultrasonic treatment on physicochemical and sensory properties of cooked chicken meat. Moisture content of ultrasonic treated breast meat was higher than that of control, fat content of control of breast and leg meat were higher than that of ultrasonic treatment, and protein of control of breast meat was higher than that of ultrasonic treatment. Hunters L(lightness)-and a(redness)-value were not different between cooking methods, L-value of breast meat and a-value of leg meat were higher without regard to cooking method. Hunterb (yellowness)-value was not different among cooking chicken meats. Cooking yield was not different between cooking methods, pH of ultrasonic treated chicken meats were higher than that of control. Water holding capacity and salt soluble protein extractability of ultrasonic treated breast meat were greater than that of control. Water soluble protein extractability of ultrasonic treated leg meat was higher than that of control, and shear force value was not different between cooking methods. Hardness, cohesiveness and gumminess were not different between cooking methods and parts of muscle. Springiness of ultrasonic treated leg meat was greater than that of control and chewiness of breast meat was higher than that of leg meat. Aroma, texture, juiciness and overall acceptability were not different between cooking methods, taste of ultrasonic treated leg meat was higher than that of control. In addition, the sensory scores of parts of muscle were affected greater than that of cooking methods.

Quality Characteristics of Pork Patties Prepared with Mugwort, Pine Needle and Fatsia Leaf Extracts (쑥, 솔잎 및 두릅 추출물을 첨가한 돈육 Patty의 품질 특성)

  • In order to investigate the possibility of functional property improvement of meat products, four kinds of pork patties were prepared with water 10% as control, mugwort extract 10%, pine needle extract 10% and fatsia leaf extract 10%, respectively. In case of control moisture content was higher, but crude fat was lower, compared to patties treated with plant extracts. Crude ash content of pine needle extract treatment showed higher level than that of other patties. pH range of patties revealed to 5.92∼5.978. In raw patties Hunter's L-and a-value of control were higher than those of plant extract treatment, and a-value of raw patties showed higher level than that of cooked. Yield, water holding capacity, salt soluble protein extractability and gel strength among patties did not show significant differences. In control patty, fat retention was lower compared to other plant extract treatments, but water soluble protein extractability was higher compared to pine needle. Values such as hardness, springiness, cohesiveness, gumminess and chewiness were not significantly different among the patties. In sensory scores such as aroma, juiciness and palatability, significant differences were not observed among cooked patties, but texture score was higher in the order pine needle, mugwort, fatsia leaf and control.

Characterization of Acetylcholinesterase from Korean Electric Ray and Comparison with Torpedo Californica

  • This study has been undertaken to examine the acetylcholinesterase (AChE) of electric organ from korean electtric ray(Narke japonica). Korean electric ray was caughted at Chungmu sea and transported to the laboratory, where electric organs were removed and stored at $-70^{\circ}C$ until used. Acelycholinesterase(AChE) of electric organ was purified by affinity column that was prepared with dicaproyl-methylpyridinium linked to Sepharose 4B. Upon purification, the specific activities in Ellman unit were increased by 52 and 39 times for high salt soluble AChE (HSSE, 870.86 $\DeltaOD/min/geam$ of tissue) and detergent soluble AChE(DSE, 105.42 .$\DeltaOD/min/geam$ of tissue), respectively. Each subunit of AChE separated by SDS polyacrylamide gel electrophoresis(SDS-PAGE)was transferred to immonilon P by western boltting and detected by mAbs raised against each subunit of AChE from electric organ og Torpedo califomica. Collagenic tails of AChE from Torpedo califomica, likewise 103Kd protein of AChE from Narke japonica was detected by monoclonal antibody specific to 103Kd of AChE from Torpedo califomica. However, molar ratio of three subunits of AChE from Narke japonica is different from that of Torpedo calicormica. Furthermore, catalytic subunit of AChE from Narke japonica was not identified by monoclnal antibody specific to catalytic subunit of AChE from Torpedo californica. These results showed differences in molecular structure of AChE from Narke japonica and AChE from Torpedo califormica eventhough they showed same enzymatic activities.

Characteristics of Metallic and Ionic Elements Concentration in PM10 at Guducsan in Busan (부산 구덕산 미세먼지의 금속성분 및 이온성분 농도 특성)

  • This study investigates the characteristics of metallic and ionic elements concentration, concentration according to transport path, and factor analysis in $PM_{10}$ at Guducsan in Busan in the springtime of 2015. $PM_{10}$ concentration in Guducsan and Gwaebeopdong were $59.5{\pm}9.04{\mu}g/m^3$ and $87.5{\pm}20.2{\mu}g/m^3$, respectively. Contribution rate of water-soluble ions and secondary ion in $PM_{10}$ concentration in Guducsan were 37.0% and 27.8% respectively. [$NO_3{^-}/SO{_4}^{2-}$] ratio and contribution rate of sea salt of $PM_{10}$ in Guducsan and Gwaebeopdong were 0.91 and 1.12, 7.0% and 5.3%, respectively. The results of the backward trajectory analysis indicates that $PM_{10}$ concentration, total inorganic water-soluble ions and total secondary ions were high when the air parcels moved from Sandong region in China than non-Sandong and northen China to Busan area. The results of the factor analysis at Guducsan indicates that factor 1 was anthropogenic source effects such as automobile emissions and industrial combustion processes, factor 2 was marine sources such as sea salts from sea, and factor 3 was soil component sources.

Changes in Hydration and Watertightness of Cement Containing Two-Component Fluosilicate Salt Based Chemical Admixture (2성분 규불화염계 혼화제가 첨가된 시멘트의 수화반응 및 수밀성 변화)

  • Fluosilicic acid ($H_2SiF_6$) is recovered as aqueous solution which absorbs $SiF_4$ produced from the manufacturing of industrial-graded $H_3PO_4$ or HF. Generally, fluosilicate salts prepared by the reaction between $H_2SiF_6$ and metal salts. Addition of fluosilicate salts to cement endows odd properties through unique chemical reaction with the fresh and hardened cement. In this study, two-component fluosilicate salt based chemical admixtures (MZ) of $4\%,\;6\%$, and $8\%$ concentration were prepared by the reaction of $H_2SiF_6$ ($25\pm2\%$) and metal salts. The effect of concentration of MZ at a constant adding ratio on the hydration and watertightness of cement were investigated respectively. In a cement containing MZ, metal fluorides such as $CaF_2$ and soluble silica by hydrolysis were newly formed during hydration. The total porosity of the hardened cement was lower in the presence of U because of packing role of metal fluoride and pozzolanic reaction of soluble $SiO_2$. Consequently, the watertightness of the hardened paste containing MZ was more improved than non-added (plain) due to an odd hydration between cement and MZ.

Investigation of Early-Age Concrete Strength Development Using Hardening Accelerator (경화촉진제를 사용한 콘크리트의 초기강도 발현 특성 검토)

  • In this study, performance of hardening accelerator types which promote setting and hardening of cement has been reviewed in order to develop early age strength of concrete with compressive strength of 21~27 MPa after examination of strength development of the concrete at early age according to curing temperature and unit cement(binder) content. As results, soluble mineral salt showed better hardening acceleration effect than organic salt in the scope of this study. Also, hydration reaction accelerating effect of $C_3S$ by Soluble mineral salt is effective on development of early age compressive strength and it was shown that the Pt's hydration reaction accelerating effect was the best. Construction duration reduction can be expected by securing compressive strength for prevention of early aged freezing damage in 25hour-curing time under curing temperature at $15^{\circ}C$. Also, it was shown that compressive strength of specimen cured at $5^{\circ}C$ was similar with plain specimen cured at $10^{\circ}C$. Therefore, it is expected that fuel costs and carbon dioxide can be reduced when the same construction duration is considered.

Impregnation Effects of Water Soluble Organic and Inorganic Chemicals into Micropore of Cell Wall of Waste Paper fiber(I) (페지섬유의 세포벽 Micropore 속으로 수용성 유기 및 무기화합물 충전효과(제1보))

  • The fiber wall filling(FWF) technology, which is based on Precipitatin of fillers in the micropores of the cell wall structure of never-dried chemical pulp fiber, has been developed to improve filling and loading process in papermaking. In presenting FWF technique here, micropores of pulp fiber are first impregnated with an ionic solution of water soluble salt and consecutively impregnated with the second salt solution. This procedure generates an insoluble precipitate within the micropores of cell wall by chemical interaction of these two ionic salt solutions This is the first attempts to use FWF technology for the quality of waste paper grade which is recycled in papermaking, even though this FWF technology has been impressively improved for never-dried chemical pulp in filling and loading process of papermaking. The precipitated amount of CaCO$_3$ and SrCO$_3$ reached 5-6% and 4-5% of the waste paper weight respectively, which was measured by ash content of the burned waste paper fiber. On the other way the precipitated amounts of those materials impregnated into never-dried chemical pulp fiber have reached 17-18% and 16-18% respectively. The micropore loading technique gives optical and physical properties to the handsheets formed with celt-wall-filled fibers which are better than those handsheet properties resulting from conventional loading. The papers made from the cell-wall-filled pulps are stronger than those with the customary location of filler between the fibers.

The Effect of Cryoprotectants on the Quality Changes of Pork and Beef during Frozen Storage (우육과 돈육의 냉동저장 중 품질변화에 대한 냉동변성 방지제의 첨가효과)

  • Experiments were carried out to investigate on the effect of cryoprotectants to the quality changes of pork and beef muscles during frozen storage . Beef and pork muscles were mixed with various cryoprotectants and stored at $-20^{\circ}C$ in a chest freezer for 12 weeks. Samples were analyzed for pH changes, TBA value, free atty acid contents, water and salt soluble protein extractability. The results obtained are summerized as follows. The pH value in all of cryoprotectants added samples were increased up to 0.25-0.5 as in non-treated samples . The TBA value, free fatty acid contents were increased with storage time as compared with the non-treated sample. Cryoprotectant effect on water soluble protein extractability was greater in pork than in beef muscle during frozen storage, especially in pork muscle treated CP-B, mixture of sorbitol, sucrose and sodium tripolyphosphate, as compared with non-treated sample. Cryoprotectant effect on salt soluble protein extractability during frozen storage was more pronounced in the beef muscle treated with CP-A which was mixture of sorbitol, mono sodium glutamate and sodium tripolyphosphate, and in the pork muscle treated with CP-B, mixture of sorbitol, sucrose and sodium tripolyphosphate than in the non-treated sample.

Characteristics of Kakdugi Radish Cube by Spring Cultivars during Salting (봄무 품종별 깍두기 무의 절임 특성)

  • Characteristics (salt concentration, weight loss, soluble solid content, moisture content, pH, textural properties) of kakdugi radish cube (2$\times$2$\times$2 cm) were evaluated during salting. Four different radish cultivars harvested in spring were immersed into 5, 10 or 15% brine (radish : brine - 1 : 2) at 15$^{\circ}C$ for 5 hr. The time required to reach the optimum salt concentration (3.0%) was different among cultivars; in 10% brine solution, 5 hr for ‘Bakbong’and ‘9621’, and 4 hr ‘Bagkwang’ and ‘Housebommu’, in 15% brine, 3 hr for ‘Bakbong’and ‘9621’, and 2 hr for ‘Bagkwang’and ‘Housebommu’. While the highest value of weight loss of kakdugi radish cube was observed with ‘Bagkwang’, the lowest, ‘Bakbong’. There was a decrease of pH of kakdugi radish during salting ; while ‘Bakbong’ showed little change in pH, ‘Bakbong’and ‘Housebommu’ showed large decrease of pH. Hardness and fracturability decreased during salting; the highest value of hardness was observed with ‘Bagkwang’, the lowest, ‘Bagkwang’. ‘Bakbong’ has the lowest moisture content, but the highest soluble solid content, while ‘Bagkwang’and ‘Housebommu’ have the highest moisture content, but the lowest soluble solid content. There was a similarity of characteristics of kakdugi radish cube between two cultivars, ‘Bagkwang’and ‘Housebommu’.

Dissolution Monitoring of Geo-Soluble Mixtures (지반 소실 혼합재의 용해과정 모니터링)

  • Dissolution of some of geo-materials may yield the loss of the soil strength and the settlement of earth structures. The goal of this study is to monitor the several physical behaviors of soluble mixtures during dissolution. Sand-salt mixtures are used to monitor the meso to macro response including the settlements and shear waves. The mixtures of photoelastic and ice disks are used to monitor micro to meso behavior of soluble mixture including the void ratio, force chain, coordination number and horizontal force changes. In the sand-salt mixtures, shear waves are measured by using bender elements in conventional oedometer cells. In the photoelastic disk - ice disk mixtures, micro to meso response are measured by digital images and load cells. The shear wave velocity decreases at the initial stage of the dissolution, and then increases and approaches to asymptotic value. The larger dissoluble particle and the more random packing produces the severe horizontal fore change. After dissolution, the void increases and the coordination number decreases. This study demonstrates that the particle level behavior such as the changes of the force chain, void ratio, and coordination number affects the global behavior such as the change of the shear wave velocity and horizontal force of the system.
