The experiment was conducted to investigate the feasibility of using vegetable oil and non-fat dry milk (powdered milk) with skim milk for the preparation of dahi. In this experiment, six different types of dahi were prepared from whole milk, skim milk and admixture of non-fat dry milk with different levels of vegetable oil. The prepared dahi samples were subjected to physical, chemical and microbiological analysis to evaluate their quality. It was observed that the addition of non-fat dry milk and vegetable oil with skim milk improve the physical qualities (smell and taste, body and consistency, color and texture) of prepared dahi samples. Addition of non-fat dry milk and vegetable oil also improve the total solids, fat and protein content of dahi samples. It is concluded that the addition of vegetable oil at a rate of 4 to 6% together with 5% non-fat dry milk gave the best result.

The purpose of this study is to investigate the possibility of the non-destructive quality evaluation for food by the acoustic non-linear parameter B/A which is a measure of the non-linearity of the state equation of the medium in terms of pressure and density. The B/A of water, corn oil O/W(oil in water) emulsion and milk were measured by using a sound velocity measuring system. The B/A value of water was measured for ascertaining reliability of our experimental system. Corn oil W/W emulsion was prepared as a model of milk . It was proved that the B/A value of O/W emulsion was related to the oil concentration by a law of mixture. We applied this result to milk and obtained satisfactory results for predicting the milk fat concentration.

For a period of over 6 years, more than 160,000 milk samples were collected and analyzed to determine the influence of different seasonal temperatures and geographic regional location on milk composition in South Korea. Fat, protein, lactose, non fat milk solids (NFMS) and total solids (TS) contents were significantly higher among dairy cows milked in winter season than other seasons (p<0.05). In contrast, freezing point (FP), milk urea nitrogen (MUN) and somatic cell count (SCC) were significantly higher in summer season than other seasons (p<0.05). The average SCC in the autumn season was $358{\times}10^3$/ml, which was lower than any other seasons (p<0.05). These results may be due to the changes in temperature during different seasons. Meanwhile, milk produced by dairy cows in central region had higher fat, protein, lactose, NFMS, TS and MUN and had lower SCC compared to other regions (p<0.05). Fat, TS, FP, MUN and citric acid in northeast region were lower than other regions (p<0.05). The SCC was significantly higher in southeast region than those of other regions (p<0.05). As a result, it might be possible that the differences in feeding management in each different region may affect the milk composition. In conclusion, present results indicated that milk composition is clearly influenced by both season and regional location. Therefore, based on these results, development of different feeding systems, according to season and region is needed to produce high quality and satiable milk production.
Pathogen infections or mastitis inflammations usually develop differently on each udder of lactating cow. Although healthy udders will be attacked by the mastitis pathogens or the pathogens from blood in a long term, they would not be always inflamed. Somatic cell counts (SCC) in milk, which is utilized as an index of mastitis diagnosis, and the relation among SCC and milk constituents will have to be examined on each udder individually. Twelve cows of a Holstein cow herd in Nasu Research Station, which were suffering clinical or non-clinical mastitis, were selected, and SCC and milk constituents on each udder milk were measured. The effects of mastitis infection on udder milk components were relatively small except lactose content on udder milks of non-clinical mastitis (SCC< $10.0{\times}10^5$ per ml milk). On udder milks of clinical mastitis, however, high negative correlations were recognized between SCC and milk components. On different sampling days, high contents of fat and protein corresponded to that of total solids.

Six Holstein$\times$indigenous multiparous dairy cows, $60{\pm}8$ days in milk, were used in a double $3{\times}3$ Latin square design to investigate the efficiency of milk production. The dairy cows were randomly allocated to total mixed rations (TMR) containing ground corn, ground corn plus cassava chips 50:50 and cassava chips as main sources of total non-fiber carbohydrates. Ether extract and calculated energy intakes for dairy cows fed TMR containing cassava chips were lower (p<0.05) than those fed TMR containing ground corn and ground corn plus cassava chips 50:50. There were no differences (p>0.05) in daily DM intake (3.51, 3.41 and 3.29% BW), in 4% fat corrected milk (19.66, 20.59 and 20.23%), in milk protein (3.37, 3.27 and 3.33%), and in solids-not-fat (9.03, 8.90 and 8.99%) but there were differences in cost of diets per kg of 4% fat corrected milk (40.75, 34.33 and 28.17%; p<0.01) for dairy cows fed TMR containing ground corn, ground corn plus cassava chips 50:50, and cassava chips. It can be concluded that the efficiency of milk production (4% fat corrected milk per dry matter intake) for dairy cows fed TMR containing cassava was greater than for those fed TMR containing corn.
Consistent information on the chemical composition and its seasonal variation of goat udder half milk is limited in Korea. The objective of this study was to analyze the seasonal variation of the chemical composition of goat milk to take establish various parameters into consideration on the pricing of the goat milk. Variations in chemical composition, somatic cell count (SCC) and bacterial count of 1,038 udder half milk samples from 650 heads raised in 7 farms of Jeonnam province were determined by season. Fat, protein, lactose, non-fat solids, milk urea nitrogen (MUN), pH, SCC and bacterial counts were also analyzed. The average composition of the milk was: fat $3.80{\pm}1.36%$, protein $3.23{\pm}0.80%$, lactose $4.39{\pm}0.54%$, total solids $12.18{\pm}1.80%$, non-fat solids $8.38{\pm}0.80%$, and milk urea nitrogen $28.44{\pm}5.00mg/dL$. The average pH was $6.81{\pm}0.24$. The average of SCC and bacterial counts were $2.54{\pm}4.60{\times}10^6cells/mL$ and $1.25{\pm}3.76{\times}10^5CFU/mL$, respectively. Chemical composition, pH, SCC and bacterial counts of dairy goat milk varied widely during the lactation period and by season. The fat concentration was the lowest in spring ($3.39{\pm}1.53%$) and the highest in autumn and winter ($3.98{\pm}1.30%$ and $3.98{\pm}1.48%$). Protein concentration was the lowest during summer ($2.92{\pm}0.48%$) and the highest in winter ($2.92{\pm}0.48%$). Lactose concentration was the lowest in autumn ($4.24{\pm}0.41%$) and the highest in spring ($4.58{\pm}0.35%$). The lowest total solid value was obtained in the spring season ($11.75{\pm}1.80%$) which was then increased in winter ($12.85{\pm}1.96%$). Non-fat solid concentration was the lowest in summer ($8.07{\pm}0.64%$) and the highest in autumn ($8.94{\pm}0.82%$). MUN concentration was the highest in summer ($8.07{\pm}0.64%$), and the pH concentration was the highest in spring at $6.93{\pm}0.27%$. Seasonal variation of SCC and bacterial count were the lowest in spring ($0.94{\pm}1.54{\times}10^6cells/mL$ and $0.22{\pm}0.61{\times}10^5CFU/mL$, respectively) and was the highest in winter ($3.95{\pm}7.14{\times}10^6cells/mL$ and $2.23{\pm}5.54{\times}10^4CFU/mL$, respectively).

This study was conducted to investigate the effects of supplementing additional sucrose, in the form of black sugar (BS), into the diet of Holstein dairy cows on dry matter intake (DMI), milk yield, and milk composition. Eight Holstein dairy cows ($741{\pm}65.8kg$ body weight) were divided into two groups, including the control and BS groups. Animals in the control group were offered a total mixed ration (TMR) ad libitum, and the BS group was offered TMR with 300 g of BS/head/d. After two weeks of adaptation period, the animal performance, including DMI, milk yield and milk composition, was measured. Cows supplemented with BS appeared to consume more feed than that by the controls (i.e., 17.08 and 18.28 kg/d for the control and BS groups, respectively). However, there were no significant differences between treatments. Milk yield or milk composition, such as milk fat, milk protein, lactose, solids-non-fat, total solids and pH, did not differ between treatments. However, there was a significant difference (p<0.05) in the concentration of milk urea nitrogen (MUN). The MUN concentration of the BS group was approximately 15% lower than that of the control group (i.e., 18.75 vs. 16.05 mg/dL for the control and BS groups, respectively), which suggests improved nitrogen metabolism in the animals. The somatic cell count was numerically lower in the cows of the BS group compared to those in the control group. However, a significant difference was not noted due to the substantial amount of variation among cows. In terms of the trace mineral composition for milk, the concentration of Cu from BS animals was higher (p<0.05) than that of the control animals. In summary, supplementing the diets of dairy cows with BS marginally affected animal performance and improved nitrogen metabolism. The level of supplementation and other factors, such as animal variation were discussed.
Effects of cooling and supplemental recombinant bovine somatotropin (rbST) on hemato-biochemical characteristics were studied at different stages of lactation of crossbred Holstein Friesian cows in a tropical environment. Ten primiparous cows were divided into two groups of five animals each. The first group was housed as the non-cooled animals in an open-sided barn with a tiled roof in a normal shaded house (NS), while the second group was housed as cooled cows in an open-sided barn with a tiled roof under misty fan cooling (MFC). Three injections with rbST (500 mg per dose) at each stage of lactation (early, mid and late lactation) significantly increased total milk yield as compared with pretreatment in both cooled and non-cooled cows. Milk fat was significantly increased, while total solids, solid not fat, milk protein and lactose were not affected by the rbST treatment. Hematological parameters, plasma proteins, albumin, glucose, triglyceride, cholesterol, creatinine, alkaline phosphatase (ALP), plasma inorganic phosphate and the activities of plasma aspartate aminotransferase (AST) and alanine aminotransferase (ALT) were not affected by supplemental rbST in cooled and non-cooled cows. Supplementation of rbST caused a significant decrease in plasma urea concentration, while plasma FFA concentrations significantly increased in both cooled and non-cooled cows. The results of the present study suggest that exogenous rbST is efficacious in increasing milk yield without adverse effects on lactating crossbred Holstein cows in a tropical environment.

The application of rumen undegradable intake protein (UIP) on lactating dairy goats was studied. Thirty 2-year-old lactating dairy goats were selected and assigned to dietary treatments begun from the third week to the fourth month postpartum. Experimental diets were formulated into three, low (32% CP), med (35% CP) and high (38% CP), iso-nitrogenous (16% CP) and iso-energetic ($NE_L$ 1.68 Mcal/kg) UIP levels. Results showed that feed intake was not significantly different among the treatment groups. The milk yield in the High UIP group (3.17 kg) was significantly higher than the med (2.95 kg) and low UIP (2.45 kg) groups (p<0.05). The milk compositions, milk fat, milk lactose and milk solids-non-fat (SNF) showed no significant differences among the three treatment groups. The milk protein however was significantly (p<0.05) lower in the low UIP than in the other treatment groups. The milk urea-N was significantly (p<0.05) higher in the low UIP than in the other treatment groups. The mean serum aspartate amino transferase (AST), urinary-N and total protein concentrations were significantly (p<0.05) lower in the high and the med UIP groups than in the low UIP group.
The purpose of this study was to herd management and control of dairy cows by milk components analysis in Gyeongsangnamdo. Milk components analysis were carried out milk yield (MY), milk fat (MF), milk protein (MP), milk urea nitrogen (MUN) and somatic cell count (SCC) but, milk solid (MS), day of non-pregnant condition (DNPC), and days of primipara (DPRI) involved in report. Feeding management practice and the prediction for the risk possibility of productive disease such as reproductive and metabolic disorders by evaluating fat, protein, solids. Determination of MY, MF, MP, MS were Milkoscan 4,000~5,000 Serier (FOSS Electric Co., Copenhagen, Denmark). Correlation coefficient of milk protein (MP) and milk solid (MS) was ascertain r=0.759. SCC was ascertain 372.8$\pm$11.34 (thousand unit) and DNPC was ascertain 155.3$\pm$5.15 (days) in seven parity.
