The Relationship between Dietary Intakes, Serum Levels, Urinary Excretions of Zn, Cu, Fe and Serum Lipids in Korean Rural Adults on Self-Selected Diet (일부 농촌 성인남녀의 아연, 구리, 철분의 섭취량, 혈액수준, 뇨중 배설량과 혈청지질과의 관계)

  • This study was carried out to estimate the relationship between dietary intakes, blood levels, and urinary excretions of zine, copper, and iron and serum lipids in 30 healthy adults living in Korean rural area. Analyses for the nutritional status of the subjects were performed by 3-day intake recored, duplicated diet collections, 24-hour urine collection, and venous blood sampling before measuring of blood pressure. The daily intakes of zinc, copper, and iron estimated for 3 days were 8.2mg, 3.0mg, and 12.7mg in men and 8.4mg, 3.7mg, and 12.3mg in women, respectively. The serum contents of cholesterol, triglyceride, and HDL-cholesterol were 165.9mg/dl, 119.4mg/dl, and 43.7mg/dl in men and 154.1mg/dl, 88.2mg/dl, and 47.1mg/dl in women, respectively. The serum levels of zine, copper, and iron were 146.0ug/dl, 120.3ug/dl, and 131.1ug/dl in men and 140.6ug/dl, 117.3ug/dl, and 112.2ug/dl in women, respectively. In the relation between dietary intakes, serum levels, and urinary excretions of these minerals, there were significantly positive correlation between zine intake and copper intake(p<0.05), copper intake and urinary excretion(p<0.001), and iron intake and serum zine level(p<0.05). In the relation between these minerals and serum lipids, dietary zine showed positive correlation with triglyceride(p<0.05), and serum zine/copper ratio showed negative correlation with HDL-cholesterol (p<0.05).

  • This study was carried out to determine the effects of various iron concentrations on the hemochemical changes of olive flounder, Paralichthys olivaceus exposed for 50 days. The flounder exposed to iron concentration 0.97 mg/$\ell$ started to increase significantly in serum iron and magnesium concentrations after 20 days. The low concentration of serum calcium concentration was observed at 30 days of the experiment in iron concentration 0.97 mg/$\ell$. Serum total protein, albumin and glucose concentrations initiated to decrease from 30 days at the iron concentrations of 0.97 mg/$\ell$ or up. Total cholesterol concentration was increased significantly after 40 days at iron concentration 0.97 mg/$\ell$. A significant increment of GOT, GPT and LDH activities in the flounder serum was noticed after 40 days at iron concentrations over 0.97 mg/$\ell$ without significant changes of Al-P. These results indicate that flounder can be affected by iron in terms of inorganic elements, organic substances and enzyme activity in serum when they were exposed to the iron concentrations 0.97 mg/$\ell$ or higher for 30 days.

Effects of Iron Supplementation on Iron Status of Anomic High School Girls (철 보충제 섭취가 빈혈 여고생의 철 영양상태에 미치는 영향)

  • This study was designed to investigate the effect of iron supplementation on the iron nutritional status and anemia of high school girls in Korea. One hundred thirty-five female students residing in Ulian metropolitan city in Korea diagnosed as having anemia or iron deficiency participated in this study. One or two tablets of iron medicine(80-160 mg Fe as ferrous sulfate/day) were administered to all participants for 3 months. Subjects were evaluated with a questionaire, measurement of hematological indices before and after iron supplementation. The average height and weight of respondents were 161.62 $\pm$ 4.68 cm and 53.87 $\pm$ 6.10 kg, respectively. Daily intakes of energy were 1597.8 $\pm$ 302.35 kcal(76.0% RDA). Iron intakes were 13.72 $\pm$ 4.17 mg (76.3% of RDA) and calcium intakes were 580.74 $\pm$ 177.21(72.5% of RDA) before iron supp]ementation. At baseline, 63% of all participants had depleted store(serum ferritin 12 ug/ml and/or transferrin saturation(TS) < 14%). After iron supplementation, this proportion declined to 19.3%. 55.6% of subjects had 12 ug/m1 of basal ferritin concentration before iron supplementation, and this proportion declined to 16.3% after iron supplementation. The basal hemoglobin(Hb) concentrations were 12.13 $\pm$ 1.01 g/dl and they increased to 12.79 $\pm$ 0.81 g/dl, which showed significant difference artier iron supplementation(p < 0.001). The basal ferritin and TS(%) were 13.24 $\pm$ 11.66 ng/ml, 18.42 $\pm$ 10.12% and they significantly increased to 32.95 $\pm$ 21.14 ng/ml, 33.53 $\pm$ 16.64%, respectively(p < 0.001). The basal total iron binding protein(TIBC) were 467.81 $\pm$ 97.24 ug/dl and they significantly decreased to 325.05 $\pm$ 48.89 ug/dl(p < 0.001) after iron supplementation. The number of tablets administered was positively correlated with serum iron(t = 0.553, p < 0.01), serum ferritin(t = 0.557, p < 0.01), TS(%)(t = 0.588, p < 0.01) and negatively correlated with TIBC(t= -0.409, p <0.01). The anemia symptoms such as ‘Shortening of breath when going upstairs(p < 0.01)’, ‘Tired out easily(p < 0.01)’, ‘Feeling blue(p < 0.001)’, ‘Decreased ability to concentrate(p < 0.01)’, and ‘Poor memory(p < 0.001)’improved significantly after iron supplementation. In this study, daily iron supplementations were efficacious in improving the iron status and anemic symptoms of female high school students. Regular check-ups and nutrition education for adolescents are necessary because of their vulnerability to iron deficiency. Further studies are needed to determine the minimum effective dose of iron and to examine the adverse effect of long-term iron supplementation.

The iron status, clinical symptom and anthropometry between normal and anemic groups of middle school girls

  • This research analyzed the iron status, clinical symptoms and physical characteristics between normal and anemic group of middle school girls in the Ulsan metropolitan area. It was carried out with 237 subjects (normal 190, anemic subject 47). They were evaluated with a questionnaire and measurement of hematological indices. BMI $(kg/m^2)$ of the two groups were $19.54{\pm}2.44$ (normal girls) and $19.22{\pm}2.27$ (anemic girls). The hemoglobin concentration of the anemic girls were $10.84{\pm}1.17g/dl$ and the serum iron of the anemic girls represent $35.15{\pm}27.47{\mu}g/100ml$. The TIBC (Total Iron Binding Capacity) of the anemic girls showed significantly high to $449.30{\pm}64.87{\mu}g/100ml$. The serum ferritin of the anemic girls was $20.53{\pm}42.29{\mu}g\ell$, it represented significantly low. The symptom of 'pale face' of the anemic girls were higher than the normal girls. Hemoglobin and serum iron were negatively correlated with 'pale face'. The TIBC was negatively correlated with 'Get a cold easily'. The duration and amount of menstruation were correlated with iron status. This research is to be utilized as basic data for dietary support and nutritional education to improve their iron status.

Effects of Dietary Iron Intake on Immune Status in Male College Students

  • This study was performed to investigate the effect of dietary iron intake on the immune status of male college students. Twenty healthy male university students participated in the study. The mean age of the subjects was 22.6 years old, mean height was 173.3 cm and mean body weight was 68.4 kg. The mean daily iron intake of the subjects was 19.9 mg, 158.1% of the Korean recommended dietary allowances (RDA). The blood iron status and immune responses of the subjects were analyzed and compared between the high dietary iron group consuming more than 100% of the RDA of iron (Hi-Fe) and the low dietary iron group consuming less than 100% of the RDA of iron (Low-Fe). The serum iron concentration and percent saturation of transferrin were within the normal range in both groups. However, the Hi-fe group had higher serum iron and percent saturation of transferrin than the Low-fe group (p<0.05). When differential white blood cell counts were compared, the Low-Fe group had a lower percentage of neutrophils than the Hi-Fe group (p <0.1). The plasma IL-2 concentration, immunoglobulin levels and lymphocyte subsets were not affected significantly by the differences in iron intake as shown in this study. Serum iron had a positive correlation with monocyte percentage but had a negative correlation with IgM concentration. The results of this study suggest that slightly-low dietary iron intake without anemia has no effects on the cell-mediated and humoral immunities of healthy male university students. However, natural defenses, such as neutrophils and monocytes, seem to be more sensitively affected by changes in dietary iron intake.

Chronic Iron Deficiency Anemia Treated with Bojungicki-tang : A Case Report

  • Objective : To expend the oriental medicine-based strategies or therapeutics for anemia, including iron deficiency anemia. Methods : A 23 year-old man suffering from severe and chronic iron deficiency anemia was believed to have disorder of iron absorption. He had neither specific medical cause nor positive response to western treatments. Blood and biochemical parameters such as levels of hemoglobin, ferritin, transferrin and serum iron were serially chased during treatments. Result : Bojungicki-tang was given to the patient based on diagnosis as a deficiency of spleen qi. The hemoglobin level was normalized along with administration of Bojungicki-tang. Also, the distortions of biochemical indicators (ferritin, transferrin and serum iron) reached a normal range within three months. Conclusion : Bojungicki-tang could be a curing remedy for iron deficiency anemia caused by problems in iron absorption if symptom-differentiation has deficiency of spleen qi.

  • The iron content of 178 food items were analyzed by ICP to provide database to calculate dietary intake of iron in Korea. The analysis data showed significant deviations of iron contents in some food items compared with Food Composition Table of KRNI which is most widely used at present. Three day dietary intake records were collected from 96 female college students to estimate mean daily iron intake and bioavailability of dietary iron. Mean daily intake of total iron in the study subjects was 13.2mg and heme iron intake was 0.94mg, 6.7% of total iron intake. BGioavailability of dietary iron was calculated by two methods. Total absorbable iron was calculated by the method of Monsen, body iron storage of the subjects being estimated with serum ferritin concentrations, was 1.21mg and bioavailability of dietary iron was thus 9.3%. Bioavailability calculated with the method by Hallberg was 11.22%. Two values of dietary iron bioavailability of the present study are lower than the reported values in adult women consuming typical western diets but within the range estimated for vegetarians. Considering high prevalence of iron deficiency based on serum ferritin concentrations and low bioavailability of diet in young adult Korean women, more efforts should be made to increase the content and bioavailability of iron in diet of Korea adult women.

A Comparison between Food and Nutrition Major, and Non-major, Female University Students in terms of their Nutrient Intakes and Hematological Status, with an Emphasis on Serum Iron (식품영양 전공 및 비전공 여대생 영양섭취상태 및 혈액성상에 관한 비교 연구 - 혈청 철분을 중심으로 -)

  • The purpose of this study was to compare nutrient intakes and the serum iron status of 74 Food and Nutrition major, and 45 non-major, female students at a university in Incheon. This cross-sectional survey was conducted using a self-administered questionnaire and the data were analyzed by the SPSS 10.0 program. The nutrient intake data collected from three-day dietary recalls were analyzed by the Computer Aided Nutritional Analysis Program. Anthropometric data and hematological indices of iron in the blood were measured. Average heights, weights, body fat and mid-upper arm circumference of Food and Nutrition major and non-major female students were 160.3 cm, 53.5kg, 25.8%, 23.7cm and 159.8cm, 55.5kg, 28.9%, 24.8cm, respectively. There were significant differences in body fat percentage and mid-upper arm circumference between the major and non-major students. In all subjects, daily dietary intakes of nutrients- except protein, vitarrlin B1, vitamin C and phosphorus - were lower than the Korean RDA. In particular, calcium and iron intakes of all subjects were under 60% of the Korean RDA. Values of RBC (red blood cell) count, Hb (hemoglobin), Hct (hematocrit), MCV (mean cell volume), MCH (mean cell hemoglobin), and MCHC (mean corpuscular hemoglobin concentration) of the non-major students were significantly higher compared to those of the major students. The diastolic blood pressure of the major students was negatively correlated with MCV, MCH, TS, and serum iron levels. Triceps skinfold thickness, mid-upper arm circumference and waist-to-hip ratios of the non-major students were negatively correlated with TIBC. Fat intake was positively correlated with RBC, Hb, Hct, and TIBC (total iron binding capacity) in the major students. Vitamin C intake was positively correlated with serum iron in the major students. Carbohydrate intake was positively correlated with Hb, Hct, and MCHC in the non-major students. Niacin and iron intakes were positively correlated with Hb and Hct in the non-major students. Therefore, nutrition education is necessary for female university students to improve nutritional status and to practice optimal nutrition strategies. (Korean J Nutrition 35(9) : 952~961, 2002)

A Study on Status of Magnesium, Iron, Copper, Zinc in Korean Obese Male Elementary School Students (비만 남자 초등학생의 마그네슘, 철, 구리, 아연 영양상태 연구)

  • The purpose of this study was to investigate the status of magnesium, iron, copper and zinc nutrition in 28 normal and 28 obese male elementary school students who have over 30% obesity index. The anthropometric measurements, dietary intakes and serum levels of magnesium, iron, copper and zinc were determined by 24-hr recall method and blood analysis, respectively. The mean age, height, weight, and obesity index were 10.9years, 147.4cm, 61.1kg, and 50.5% in obese group and 10.8years, 145.4cm, 40.2kg, and 3.3% in normal group. There was no significant difference in average daily food intake between obese and normal group, but meats(p<0.05) intake of obese group was significantly lower than that of normal group. The intakes of energy, magnesium, iron, copper were not significantly difference between obese and normal group, but heme iron(p<0.05) intake of obese group was significantly lower than that of normal group. Zinc(p<0.05) intake of obese group was significantly higher than that of normal group. Serum magnesium(p<0.001) level of obese group was significantly higher than that of normal group, but there were no significant differences in serum iron, copper, zinc levels between obese and normal group. There was a significantly positive correlation between serum magnesium and weight(p<0.05), and obesity index(p<0.05). There was a significantly positive correlation between serum magnesium and energy intake(p<0.05), protein intake(p<0.05), animal protein intake(p<0.05), phosphorus intake(p<0.05) and animal iron intake(p<0.05). There was a significantly positive correlation between serum magnesium and seaweeds intake(p<0.05), milks intake(p<0.001). Also, there was significantly positive correlation between serum copper and oils and fat intake(p<0.05). These results suggest that there should be careful considerations for micronutrients nutrition status among male obese elementary school students.

Importance of Iron in the Toxicity of Vibrio vulnificus (Vibrio vulnificus의 독성에 있어서 Iron의 중요성)

  • The role of iron as a possible pathogenic factor in the Infection of V. vulnificus was examined in thins paper The effects of iron and $CCl_4$ on the growth of V. vulnificus in human and rabbit sera were also done. Injection of iron to mice resulted in a lowering of the 50% lethal dose and in a reduction in the time of death postinfection. Serum iron levels were also elevated by damaged livers with infections of $CCl_4$- The inoculum size required to kill these mice was directly correlated with serum iron Irvels. Iron appeared to be the limiting factor In the ability of thins organism to survive or grow in mammalian sera. These results, both in vitro and In vivo, provided strong evidence that iron may play a major role In the pathogenesis of V. vulnificus.
