Change in the main constituents by a treatment condition of anaerobically treated Green Tea Leaves (혐기처리 조건에 따른 녹차의 주요성분 변화)

  • The contents of chemical components such as total nitrogen, total amino acid, chlorophyll, vitamin C and free sugar were somewhat higher in $CO_2$ and $N_2$ gas treatment than those of other treatment. However, the contents of tannin and caffeine did not show any different in the 5 treatments. ${\gamma}-aminobutyric$ acid(GABA) and alanine accumulated in tea leaves under anaerovic condition. The content of GABA acid with ${CO_2\;and\;N_2}$ gas treatment was higher 8-6 times with values of ${264{\sim}215mg/100g}$ than in control (35mg/100g). The scores of sensory test was not different between anaerobic treatment and control. Consequently, tea mading within ${N_2\;and\;CO_2}$ gas treatment after plucking was considered to be the best green tea in terms of functional nature as well as taste nature.

  • The effect of irradiation on the shelf-life of commercial ham products and its quality were investigated during eight weeks storage at $30^{\circ}C$ following 3-8kGy irradiation. Total bacterial count of unirradiated group was proliferated from. $5.4{\times}10^{3}$ per gram of sample to $10^{6}$ after two weeks storage but the bacterial count in irradiated group was propagated to the same level after three to five weeks storage and the growth of coliform group was shown negative. The freshness of stored ham was better in irradiated group than in unirradiated one and the changes in components related to the quality of ham were almost the same between unirradiated and irradiated group. Discoloration and irradiation odor were positive in 8kGy irradiated group according to the sensory test, but 5 kGy irradiated group was not only good in texture but also in the extension of shelf-life to more than two times as compared with that of unirradiated one.

Analysis of Acetaldehyde and Formaldehyde Migrated from Polyethylene Terephthalate Bottles into Mineral Water (페트병 생수 중 아세트알데하이드와 포름알데하이드의 이행 분석)

  • The objective of this study was to determine the extent to which acetaldehyde (AA) and formaldehyde (FA) migrated from polyethylene terephthalate (PET) bottles into mineral water during storage at 25 and 35$^{\circ}C$ for 240 days. Generally, AA and FA were observed to migrate more at 35$^{\circ}C$ than at 25$^{\circ}C$. The amount of FA in the samples irradiated under UV lamps was higher than in those stored in the dark over the storage period and vice versa for AA. Using a triangular test, the sensory panels distinguished a difference between one sample and the other two mineral water samples that had been exposed to UV lamps after 60 days of storage at 35$^{\circ}C$ (p<0.05). At this time, FA and AA concentrations were measured at 267.4 and 515.3 g/L, respectively. After 120 days, an independent mineral water sample from the other two samples in all treatments could be distinguished by the panel members at a significance level of p<0.001.

Comparative Analysis on Preference for Korean Traditional Foods in Foreigners and Koreans (국내 체류 외국인 및 내국인의 전통향토음식에 대한 기호도 비교 분석)

  • This study was conducted to compare the preference and satisfaction for Korean traditional foods (Jeonju Bibimbap, Daetongbap, Jeonbokjuk, Jorangiddockguk, Hobakbumbuk, Darkgalbee, Eonyang Bulgogi, Moyackgwa, Insam Jeonggwa, Maejackgwa) in foreigners and Koreans. In this study, 27 foreign and 31 Korean university students were surveyed. Statistical analysis and Mann-Whitney U test were performed using the SPSS statistical package (17.0). The major findings were as follows: 1) Foreigners had higher experience of eating Darkgalbee (84.6%), Jeonju Bibimbap (80.8%), Daetongbap (53.8%), and Jeonbokjuk (53.8%) among Korean traditional foods, whereas their eating experience of Insam Jeonggwa (3.8%), Maejackgwa (11.5%), Moyackgwa (15.4%) and Jorangiddockguk (23.1%) was lower. 2) Foreigners and Koreans both liked sweet taste, but disliked sour taste, bitter taste, garlic flavor, sesame flavor, and soy sauce flavor among the sensory characteristics of Korean traditional foods. 3) Foreigners scored their overall satisfaction of Korean traditional foods in the order of Jeonju Bibimbap ($7.70{\pm}0.95$), Eonyang Bulgogi ($7.62{\pm}2.10$), Daetongbap ($7.59{\pm}1.60$), Darkgalbee ($7.20{\pm}1.56$), and Jeonbokjuk ($6.67{\pm}1.64$), whereas Koreans rated higher scores for Eonyang Bulgogi ($8.28{\pm}1.19$), Darkgalbee ($8.20{\pm}1.00$), Jeonju Bibimbap ($7.73{\pm}1.08$), Jeonbokjuk ($7.69{\pm}1.44$), and Moyackgwa ($7.43{\pm}1.52$).

Physicochemical Properties of Aloe Added Bagel (알로에를 첨가한 베이글의 물리화학적 특성)

  • This study was carried out to investigate the physicochemical properties of aloe added bagel. The result of sensory evaluation showed that addition of the aloe powder above 1% was not advisable because of its bitterness. freeze dried aloe powder(0, 1%, 0.5%, 1%) was added to bagel and chemical compositions of doughs were evaluated. The ash content of control was 0.444% and each of the samples(0.1%, 0.5%, 1%) was 0.472%, 0.553%, and 0.633% respectively. Although the ash content of dough increased gradually according to the addition of aloe powder, the volume of the bagel was not affected much. As the amount of the aloe powder was changed, the water absorption rate, the extensibility, and the viscosity of the dough were affected. The physical characteristics of dough were as follows: 1) The water absorption rate of the dough was gradually decreased from 65.3% at control, to 65.2% at 0.1%, 64.2% at 0.5%, 63.5% at 1% each by farinograph. 2) The extensibility of the dough was significantly declined at 1% by extensograph; from 20.7cm at control, to 20.3cm at 0.1%, 18.8cm at 0.5%, and 16.4cm at 1% each. 3) The top viscosity of the dough was sharply declined between 575 B.U at control and 515 B.U at 0.1%, afterwards, 480 B.U at 0.5%, 475 B.U at 1% each by viscograph. Considering the result of the test, aloe added bagel could promote physicochemical properties of dough as well as health effects.

Temperature Distribution in Water Cascading Horizontal Retort (열수식 살균기의 온도 분포에 관한 연구)

  • Temperature distribution tests for a water cascading horizontal retort utilizing superheated water with overpressure as a heating medium were carried out under three different loading conditions, that is, empty(P-0), half-fully(P-3000) and fully(P-6000) loaded operating conditions. Tank volume and full loading capacity of sterilizer used for this study were about 5,900 liter and 1,140 kg(6000 pouches having 190 g weight each), respectively. Set point condition for sterilization was $122^{\circ}C$, 23 minutes and pressure was maintained in the range of $1.8{\sim}2.0\;kg/cm^2$ during sterilization. For each experiment, time-temperature data and F values were obtained from temperature microprocessor($F_0$ monitor). There were significant variations in the temperature distribution at different positions in the sterilizer. The temperature distribution was also affected by the pouch loading condition significantly. The application of the temperature distribution test to a product (retort pouched curry sauce) was conducted at the fully(P-6000) loading condition. Although heat transfer parameters($f_h\;and\;f_c$), and F values were varied with the position of sterilizer, sensory evaluation showed that the temperature distribution of the sterilizer used in this study didn't affect the quality of retorted curry sauce.

Improved Cooking Methods for Dry Beans and their Effects on Quality of Cooked Products (두류의 Quick Cooking방법 개발과 이것이 제품 품질에 미치는 영향)

  • Soybeans ans black-eyed peas, chosen as test samples of dry beans, were subjected to soaking and cooking treatments to develop quick cookig methods and study their effects on quality of cooked products. The results of the study are summarized as follow: 1. Of the soaking methods tested, soaking soybeans in 3% sodium bicarbonate (SBC) solution and black-eyed peas in 0.5-1% SBC solution followed by cooking them in water at $95-100^{\circ}C$ required 40 minutes and 10 minutes of cooking time, respectively. When compared to 180 minutes of cooking time for soybeans and 40 minutes of that for black-eyed peas by conventional cooking method (Control), soaking dry beans in optimum SBC solutions reduced cooking time by over 80%. 2. Among cooking methods tested, steam cooking at $121^{\circ}C$ was the most effective one in reducing cooking time of soybeans (15 min.). Black-eyed peas sacked in water required 6 minutes of cooking time in 1% SBC solution at $95-100^{\circ}C$, and 5 minutes of that in steam at $121^{\circ}C$. 3. Quality of cooked beans with optimum texture was evaluated by sensory panel and Gardner Color Difference Meter. Beans cooked in steam at $121^{\circ}C$ had better overall quality than those cooked by other methods. Beans soaked in optimum SBC solution had quality as good as control, whereas beans cooked in SBC solution had worse quality than control. 4. These results indicated that cooking time of soybeans could be drastically reduced by either steam cooking at $121^{\circ}C$ or soaking in 3% SBC solution followed by cooking in water at $95-100^{\circ}C$. Cooking time of black-eyed peas could be significantly shortened by either steam cooking at $121^{\circ}C$ or soaking in 0.5-1% SBC solution followed by cooking in water at $95-100^{\circ}C$.

  • Experiments were performed to study the rheological and baking properties of bread fortified with various amounts of filefish protein concentrate (FPC). Doughs were prepared from mixtures containing wheat flour and 5,10,15 and 20% of FPC. Standard methods were used to evaluate the rheology of doughs and characteristics of bread. The results were as follows. 1. The water absorption of the fortified doughs increased as FPC increased. FPC caused an increase in development time and stability as measured by Farinograph. 2. In the extensigraph test, FPC yielded a decrease in extensibility and an increase in resistance to extension. 3. Baking tests demonstrated that addition of FPC decreased the volume of loaf and made the crumb darker and coarser. 4. Additional tests were made to examine effect of sodium stearoyl lactylate (SSL) added at 0.25, 0.50, 1.00 and 2.00% on doughs containing 10% headed & gutted FPC. The most appropriate amount of SSL as an additive was 0.5%. 5. In the farinograph, adding 0.5% SSL could delay dough development time and greatly increase stability. 6. When 0.5% SSL was added on doughs containing 5,10,15 and 20% headed & gutted FPC, baking quality was greatly improved. The breads containing up to 10% were acceptable by the addition of SSL, but not in higher level of FPC. 7. The results of sensory evaluations of bread showed that the color, texture and taste of bread containing 5% whole FPC and 5, 10% headed & gutted FPC were reasonably gacceptable.

Effect of Botanical Antimicrobial Agent-Citrus Products on the Quality Characteristics during Kimchi Fermentation (식물성 천연항균소재를 첨가한 김치의 숙성 중 품질변화)

  • To develop natural antimicrobial agents for extending the self-life of Kimchi, the effect of botanical antimicrobial agent-citrus products(BAAC) on microorganisms related to Kimchi spoilage was investigated. The inhibitory effect of BAAC on microorganisms related to Kimchi spoilage was increased according to the concentration of BAAC. Antimicrobial activities of BAAC against microoiganisms related to Kimchi spoilage were remarkably high. The effect of BAAC on the cellular membrane function of microorganisms showed the perturbation of cells in the presence of BAAC. Direct isualization of microbial cells by using both transmission md scanning electron microscope showed microbial cell membrane was destroyed by treating with BAAC. It could be confirmed that BAAC completely inhibit the growth of the test strains. The pH of BAAC-added Kimchi was a little higher than that of the control through the fermentation period. Titratable acidify, vitamin C and viable cells in BAAC-added Kimchi were changed more slowly than those in the control. Sensory evaluation did not show any significant difference between $0.01\%$ BAAC-added Kimchi and the control that showed the best palatabilities during fermentation.

Quality characteristics of cookies added with jujube powder (대추분말을 첨가한 쿠키의 품질 특성)

  • The feasibility of incorporating jujube powder as a value-added food ingredient in cookies was investigated. The amount of jujube powder added (0~20%) was found to have significantly affected the cookie quality (p<0.05). Furthermore, the pH ranged from 6.16 to 6.69, and moisture content gradually increased from 4.11% to 4.76%, while the spread ratio and loss rate have significantly decreased with the increasing levels of the powder added (p<0.05). Lightness decreased; however, the redness and yellowness, as well as hardness, have significantly increased with the higher amount of jujube powder in the formulation (p<0.05). In addition, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity was significantly increased (p<0.05) without remarkable differences between the control and 5% sample, and 15% and 20% sample (p>0.05). The consumer acceptance test indicated that the addition of jujube powder of up to 10% had a favorable effect on the consumer preferences in general. Based on the overall observation, the cookies with 5~10% jujube powder is recommended for taking advantage of the functional properties of jujube powder without sacrificing the sensory quality.
