Quality Characteristics and Optimal Conditions for Sweet Rice Muffin Lotus (Nelumbo nucifera Gaertn) Seed Powder, Applying the Response Surface Method (반응표면분석법을 이용한 연자육 분말 첨가 찹쌀머핀의 품질 특성 및 최적화)

  • This study was undertaken to optimize preparation of sweet rice muffins using lotus (Nelumbo nucifera Gaertn) seed powder. The experimental conditions used in the preparation included lotus seed powder (X1) and soybean oil (X2). The muffin formulation was optimized using rheology. Lightness (P<0.01) displayed a quadratic model pattern, whereas yellowness (P<0.01) and redness (P<0.05) was presented a linear model. Texture properties significantly differed in cohesiveness (P<0.05). Evaluating the sensory characteristics of muffins, except for flavor and texture, the remaining properties of color (P<0.01), taste, overall quality, and appearance (P<0.05) were found to be significantly different. The overall quality was also affected by the proportion of lotus seed powder, rather than the amount of soybean oil. The optimal ratio for palatability of muffins was determined to be 47.80 g lotus seed powder and 95.28 g soybean oil. Taken together, our results indicate that sweet rice muffins prepared using lotus seed powder are sufficiently competitive in terms of function and quality.

Soybean Ecological Response and Seed Quality According to Altitude and Seeding Dates

  • This experiment was carried out to examine ecological response and soybean quality as affected by environmental cultivation for producing high seed quality in domestic soybean variety. The results are as follows: Under equal cumulative temperature condition, soybean plants grown in Muju showed longer days to flowering, which was an effect of the long day-length on high latitudes, and longer duration of reproductive stage as a result of low temperature within that period. Considering apparent seed quality, 100 seed weight of soybeans grown in Muju was heavier than Miryang. Ratio of seed crack and disease-damaged seeds was lower in Muju, and these parameters decreases as planting was delayed. The protein contents did not show significant difference in terms of altitude and planting date, however, crude oil contents were higher in Miryang. An opposite trend was observed in C18:1 and C18:3. In the fatty acid composition, the proportion of C18:1 decreased as seeding date was delayed, and was higher in Miryang. Opposite observations were obtained from C18:3. The anthocyanin contents were highest on June 10 planting and higher in Muju than in Miryang. Isoflavone content was higher as seeding date was delayed and is similar accross seeding dates in Muju. As a summary, for high seed quality production the optimum planting date was June 10, and Muju was more suitable region than Miryang.

Confirmation of SSR Markers and QTLs Associated with Seed Size and Water Absorbability in Soybean (Glycine max) Cultivars for Fermented Product, Saengcheonggukjang

  • Saengcheonggukjang, known as Natto in Japan, is a Korean fermented soybean food that has various bioactive compounds for antioxidant and antidiabetic activity. The development of soybean (Glycine max L.) cultivars for saengcheonggukjang production relies on the selection of seed traits that influence the quality and sensory properties. One of the important traits for cultivars is seed characteristics such as seed hardness and size. In order to select the lines for breeding good quality saengcheonggukjang varieties, several simple sequence repeat (SSR) markers and quantitative trait loci (QTLs) related to seed quality of Korean cultivars, Pungsannamulkong, Socheongja, Pungwon, Heawon, and Hoseo, were analyzed. Based on the many studies to detect stable QTLs for seed traits, we tested several QTLs related to seed size and water absorbability using SSR markers on Korean cultivars. The results showed that two regions for water absorbability of Pungsannamulkong and one region for seed size traits of Haewon and Hoseo were identified in this study. These results could have applications to soybean breeding for seed size and hardness and it is necessary to narrow it down through further study.

Quality properties of Pak-choi Baikkimchi with Red Pepper (Capsicum annuum L.) Seed during Storage (고추씨를 첨가한 청경채 백김치의 저장 중 품질 특성)

  • To develop a variety of salted vegetables, this study investigated the quality properties and sensory characteristics of pak-choi Baikkimchi with 0, 1, 3, 5 and 7% (w/w) red pepper seed during 50 days at $10^{\circ}C$. The pH of pak-choi Baikkimchi decreased little for the first days but decreased significantly after day 20. The larger amount of the red pepper seed kept pH the less affected. The total acidity of pak-choi Baikkimchi increased within 20 days. Lactic acid bacteria count, pak-choi Baikkimchi with 0% red pepper seed decreased after 30 days' increase, while pak-choi Baikkimchi with 3% and 5% red pepper decreased significantly after 20 days' increase. Hunter's color L value increased during storage but a and b value decreased. Pak-choi Baikkimchi with 0%, 5% and 7% red pepper seed on day 10, pak-choi Baikkimchi with 1% 3% red pepper seed on day 20. Flavor preference was higher on day 20 of storage. In taste analysis, pak-choi Baikkimchi with 3% and 7% red pepper seed higher preference on day 10 and with 5% on day 30. Appearance preference was higher for pak-choi Baikkimchi with 0% and 3% red pepper seed on day 10 and with the others on day 20. Texture preference decreased as the storage time. Overall preference of pak-choi Baikkimchi with 0%, 1% and 7% were higher on day 10, pak-choi Baikkimchi with 3% and 5% red pepper seed were higher on day 20. In conclusion, the quality properties and sensory characteristics of pak-choi Baikkimchi were optimal on day 20 of storage and 3% red pepper seed.

Effect of Seed Dehydration and Temperature during Cold-Stratification on the Seed Quality of Panax ginseng C. A. Meyer (인삼 종자의 생리적 휴면타파기간 중 건조처리 및 저장온도가 종자 건전성에 미치는 영향)

  • Background: Dehisced ginseng seeds need to be stored at cold temperatures for around 3 months to break their physiological dormancy, and thus, to aid in gemination. In the presence of high moisture in such an environment, seed spoilage and pre-germination may lower seed quality and productivity. To improve seed quality during cold-stratification, the effects of seed dehydration and temperature were tested. Methods and Results: In early December, dehisced ginseng seeds were dehydrated at 4 different levels and stored at $2^{\circ}C$ $-2^{\circ}C$, and $-20^{\circ}C$ for 3 months. Germination was carried out on the filter papers moistened with distilled water; emergence of root, shoot, and seed spoilage were assessed. Seed viability was examined by the tetrazolium test. More than 90% of the seeds stored at $2^{\circ}C$ and $-2^{\circ}C$ without drying or endocarp dehydration germinated, but seeds that were dehydrated to have a moisture content (MC) below 31% showed poor germination and lost their viability. In addition, the seeds stored at $-20^{\circ}C$ failed to show effective germination. Conclusions: Seed storage after endocarp dehydration might help to improve seed quality and increase seedling's ability to stand during the spring-sowing of ginseng.

Quality Characteristics of Bread Prepared with the Addition of Roasted Safflower Seed Powder (볶음 홍화씨 분말첨가 식빵의 품질특성)

  • The quality characteristics of bread processed with the addition of roasted safflower seed powder were evaluated Safflower seed powder was roasted at 180$^{\circ}C$ for 20 min and pulverized below 45mesh size. Bread was processed by addition of control, 1, 2, 3 and 4% safflower seed powder at basic formulation. Dough raising power was increased as the addition of safflower seed powder increase, but Hunter's L value was decreased, From the sensory evaluation of safflower seed bread, color score was decreased significantly as the addition of roaste safflower seed powder increase, but overall acceptance had no significantly difference between control and added 4% of safflower seed.

Maturity Grouping of Korean Soybean Cultivars and Character Relationships According to the Planting Date

  • This study was carried out to classify Korean soybean varieties base on maturity group (MG) and to find character relationships according to planting date for high quality soybean seed production adapted to early season cultivation environment of Miryang. Results of maturity grouping of Korean soybean varieties showed that Keunol (3 cultivars), belonged to Group 0; Seonnok and Danmi in Group II, Shinrok in Group III, Seonyu (17 cultivars), in Group IV, Taekwang (44 cultivars) in Group V, Daewon (25 cultivars) in Group VI, and Kwangdu and Keumdu in Group VII. Agronomic characteristics of 100 soybean varieties were compared based on MG, cultivation year and seeding date. Soybean varieties belonging to the MG $VI{\sim}VII$ showed longer days to flowering and growth period, high lodging density and higher yield. Seed quality analysis revealed that as maturity was delayed, seed weight becomes heavier while seed cracks become abundant. In addition, occurrence of purple seed and phomopsis were higher in MG $0{\sim}III$. Protein content was higher in MG $0{\sim}III$, and isoflavone content was higher as maturity was delayed. On the other hand, lipid content was generally similar across MGs. Correlation analysis of major agronomic characters showed positive relationships between days to flowering and growth days, seed weight and lodging in MG $IV{\sim}V$, seed crack and growth days in MG $0{\sim}III$, seed crack and days to flowering in MG $IV{\sim}V$ and MG $VI{\sim}VII$, seed crack and lodging in MG $IV{\sim}V$ and MG $VI{\sim}VII$, seed crack and seed weight in MG $IV{\sim}V$ and MG $VI{\sim}VII$, purple seed and growth days in MG $IV{\sim}V$, purple seed and seed weight in MG $VI{\sim}VII$, phomopsis and growth days in MG $IV{\sim}V$ and MG $VI{\sim}VII$, and phomopsis and purple seed in MG $IV{\sim}V$ and MG $VI{\sim}VII$. In contrast, a negative relationship was observed between seed weight and lodging in MG $0{\sim}III$. Correlating yield and major characters revealed negative relationships between days to flowering and growth days in MG $0{\sim}III$ and MG $IV{\sim}V$, whereas positive relationships were obtained on MG $VI{\sim}VII$ seeded on April 30. Lodging, seed weight and seed crack were all negatively correlated with yield in the MG $IV{\sim}V$ and MG $VI{\sim}VII$. Soybean cultivars identified as adaptable to early season planting for production of high quality soy curd and fermented soybean paste were Seonyu, Kwangdu, and Soho while those suited for the manufacture of soybean sprouts were Sobaeknanul, Kwangan, Sowon, and Bosuk. Geomjeong 2 chosen as best for mixing with rice.

  • These experiment were conducted to evaluate the environmentally acceptable polymers, and 10 polymers were used in these study, and to investigate conductivity, germination percentage, water uptake of polymeric coating soybean seed. The conductivity of polymeric coating seed is higher than that of none coating seed and the highest conductivity was obtained with waterlock coating seed among the 10 polymer coating seed. As the soaking time was long, the conductivity was increased. The conductivity of large seed was higher than that of small seed, and that of long period storage seed was higher than that of short period storage seed. The effects of seed coating polymers on uptake water were various, and daran 8600 inhibited uptake water of low quality seed. The waterlock, captan, klucel and sacrust was rised germination percentage, and daran 8600 was declined germination percentage, and the effect of coating polymers on germination percentage of low quality seed was higher than that of high quality seed.

Optimum Harvest Time for High Quality Seed Production of Sweet and Super Sweet Corn Hybrids

  • The production of sweet (su) and super sweet corns (sh2) has been economically feasible in Korea in recent years. Major factors limiting super sweet corn production are low germination and low seedling vigor. Since seed quality is closely related to seed maturity, the optimum harvest time for the seed production of sweet and super sweet corns was studied and the quality of seeds with varying maturities was investigated in 2001 and 2002 cropping seasons. The parents of the sweet corn seeds were Hybrid Early Sunglow and 'Golden Cross Bantam 70' and those of super sweet corn were Xtrasweet 82 and 'For­tune'. Seeds were harvested at 21, 28, 35, 42, 49, and 56 days after silking (DAS). As the seeds developed, seed weight of sweet corn increased and the seed moisture content decreased faster than that of super sweet corn. Germination rates of sweet corn seeds harvested 21 and 28 DAS at $25^{\circ}C$ and emergence rates in the cold soil test were significantly lower than those of seeds harvested after 42 DAS in both years. Although the germination rates of super sweet corn seeds with varying maturities showed similar patterns as sweet corn seeds at $25^{\circ}C$, the emergence rate of super sweet corn seeds in cold soil test continuously increased with seed maturity. This suggests that seed quality of super sweet corn should be tested in a cold soil test to estimate field emergence. As the seeds developed, leakage of total sugars and electrolytes from the both sweet and super sweet corn seeds decreased up to 42 or 49 DAS. The $\alpha-amylase$ activities of both sweet and super sweet corn seeds increased with seed maturity from 21 to 35 or 49 DAS depending on genotype and year. The optimum harvest time for the seed production of sweet corn was 42 DAS and 49 DAS for super sweet corn considering emergence rate and plumule dry weight in the cold soil test, leakage of sugars and electrolytes from the seeds, and $\alpha-amylase$ activity.

  • This experiment was conducted over a 3-year period (1990-1992) to evaluate the production and quality of orchardgrass (Potomac)-red clover (Kenland) mixture when orchardgrass + red clover mixture was sown at seed rates of 20+0. 18+2, 16+4, 14+6 and 12+8 kg/ha. Total herbage dry matter, crude protein and digestible organic matter production and organic matter intake were markedly affected by increasing rcd clover seed rate, those increased with increasing red clovcr seed rate due to the cnhancernent of red clover percentage of total herbagc in all 3-year. but significant differences occured between the orchardgrass alone and orchardgrass-red clover mixture with a seed rate of 4,6 and 8 kg/ha red clover (P<0.01). But on the other hand increasing red clover seed rate increased red clover percentage in total herbage, the mean red clover percentage of total herbage at the last cutting ranged from 54 to 65% in first year. 58 to 60% in second year, and 62 to 69% in third year, particularly it was observed that red clover was sown at seed rates of 6 and 8 kg/ha for red clover sown dominated strongly as the cutting times were progressed. Considering the maintenance of good botanical composition balance and the enhancement of production and quality of herbage, the optimized seed rate for orchardgrass-red clover mixtures, 16 kg/ha orchardgrass and 4 kg/ha red clover seems to be considered adequate.
