The Comparison of Seasonal Ginsenoside Composition Contents in Korean Wild Simulated Ginseng (Panax ginseng) which were Cultivated in Different Areas and Various Ages

  • The ginsenoside content was compared with wild simulated ginseng (Panax ginseng) collected every season at 11 wild simulated ginseng plantations in Korea. As a result, the total saponin of 7 years old wild simulated ginseng showed the highest content of 4.5% in spring sampling wild simulated ginseng, 2.0% in summer sampling wild simulated ginseng, 1.2% in winter sampling wild simulated ginseng and 1.0% in autumn sampling wild simulated ginseng. And also, the total saponin of 10 years old wild simulated ginseng showed the highest content of 3.9% in spring sampling wild simulated ginseng, summer sampling wild simulated ginseng (1.8%), winter sampling wild simulated ginseng (1.6%) and autumn sampling wild simulated ginseng (0.6%). Therefore, the total saponin of spring sampling wild simulated ginseng was about 4.5 - 6.5 times higher than that of autumn sampling wild simulated ginseng regardless of cultivation period.

Behavior of Hydrogen and Organic Acids in Anaerobic Digestion of Food Wastewater (음폐수의 혐기성 소화 시 수소 및 유기산의 거동)

  • In this study, we used the Flux Balance Analysis (FBA) program to examine the behavior of hydrogen and organic acids according to seasonal changes in food wastewater collected from D city. The results showed that average hydrogen conversion rates in spring, summer, autumn, and winter were 1.06, 0.71, 1.21, and 1.13 mol H2/mol of hexoseadded, respectively, indicating a significantly lower hydrogen conversion rate in summer than in other seasons. This phenomenon is believed to occur because the carbohydrate concentration of the incoming food wastewater is low. In addition, Lactobacillus, the lactic acid-producing bacterium, was 21.3% in spring, 27.2% in summer, 17.5% in autumn, and 22.6% in winter. The most distinctive feature of the microbial community in summer was that 15.3% of the Ilyobacter was analyzed. It was confirmed that Ilyobacter, which is involved in the production of acetic acid and propionic acid, is closely associated with the tendency of increasing acetic acid and propionic acid and thus contributes to organic acid change. Clostridium, a hydrogen-producing bacterium, was 76.2%, 50.8%, 78.3%, and 74%, in spring, summer, autumn, and winter, respectively. It was confirmed that Clostridium dominates the microbial community by approximately 70% or more in all seasons except summer.

  • This study aimed to develop a new commercialization model for theindustrialization of head family food as a gentry families' complex food culture product. We tried to develop a head family food and propose a city sightseeing style's head family product by interviews with 'Hakindang' as the center, the head house of the Suwon Baek clan, and Injaegong group in Jeonjoo. Hakindang (in Jeonju) was confirmed as an improved model Korean-style house in the enlightenment period and the twentieth style modern head family as emerging capitalist. Hakindangsupported independence war funds in the Japanese colonial era and was widely known as gate of filial piety in Jeonju. Representative seasonal foods of Hakindang include pan-fried sweet rice cake with flower petals in the spring, hot spicy meat stew and polypus variabilis in summer, hanchae in autumn, and napa cabbage kimchi with salted flatfish seafood in the winter. When parents-in-law had a birthday, there were party noodles, sliced abalone stuffed with pine nuts, brass chafing dish, fish eggs, slices of blilde meat, and matnaji. Daily, there were mainly salted seafood, slices of raw fish, grilled short rib patties, braised fish, baked fish, syruped chestnut, grilled deodeok root, bean sprouts, radish preserved with salt, dongchimi, soy sauce-marinated horseshoe crab, butterbur, perilla seed stew, salted clams, raw bamboo shoot, agar, fried kelp, etc. The most basic virtue of the head family is filial duty, and they developed mosim dining as a representative food of Hakingdang's head family. The mosim menu is composed of 65% carbohydrates, 20% protein, and 15% fat because it is table for parents-in-law like more than 75 years old. The sensory evaluation showed a chewy texture that is easily swallowed.

Food and dish group diversity on menus of daycare centers provided by Center for Children's Foodservice Management in Korea: a descriptive study (어린이급식관리지원센터에서 제공하는 어린이집 식단의 식품군 및 음식군 다양성에 관한 기술연구)

  • Objectives: This study aimed to analyze menu patterns and food group diversity in daycare centers managed by the Center for Children's Foodservice Management in South Korea. Methods: Data from 18 Center for Children's Foodservice Management centers across various provinces (excluding Jeju Island) were analyzed. We examined 8,796 meals served in February, May, August, and December 2021, focusing on seasonal lunch and snack menus for children aged 3-5. Foods were categorized into 19 groups for lunch and 21 for snacks. The frequency of food groups and dietary patterns were assessed using the Dietary Diversity Score. Analyses were conducted using Excel 2016 and IBM SPSS Statistics version 28. Results: Most lunch menus (89%) included five menu items, with a ratio of grain, meat, and vegetables at 88%. Snack menus typically had one item (57%), with significantly more items in the afternoon compared to the morning (P < 0.001). Regarding snack patterns, 75.2% of morning snacks and 61.1% of afternoon snacks contained only one solid food and drink (P < 0.001). Fruit and milk (22.4%) was the most prevalent pattern in morning snacks, while grain and milk (31%) dominated afternoon snacks (P < 0.001). Only 48% of daycare center menus (all snacks and lunch) included all five food groups (grain, meat, vegetables, fruit, and milk). Notably, only 83% included milk and 57% included fruit. Conclusions: These findings highlight the need to improve food variety and diversity in the Center for Children's Foodservice Management-managed daycare center menus. Developing more detailed guidelines for menu structure and food composition is crucial to ensure children receive balanced and diverse nutrition.

Seasonal Variation in Fatty Acid Composition in Female Pen Shell (Atrina Pectinata)

  • Seasonal variation in fatty acid profiles was examined in the visceral mass and the posterior adductor muscle of the female pen shell, Atrina pectinata. Total percentages of saturated fatty acids were similar between the two organs, and there was not a prominent seasonal change in both tissues. While the percentages of highly unsaturated fatty acids (HUFAs) in the visceral mass were higher than those in the posterior adductor muscle, monounsaturated fatty acids (MUFAs) were high in the posterior adductor muscle. HUFA contents, especially in $20: 5\omega3$, $22: 5\omega3$ and $22: 6\omega3$, markedly decreased in September in the visceral mass, and this decrease was associated with a corresponding total MUFAs in the same organ. A similar pattern of change in September was noted in the posterior adductor muscle MUFAs and HUFAs. These results indicate that $20:\omega3$ and $22:\omega3$ HUFA changes in the visceral mass and posterior adductor muscle reflect the reproductive stages in pen shell.

Variation of Mineral Compositions in the Regional, Varietal, and Seasonal Mulberry Leaves

  • This study was carried out to investigate the mineral content in the regional, varietal and seasonal mulberry leaves. On average, mulberry leaf samples contained minerals in the order of potassiumi phosphorus, calcium, magnesium, iron and so on (2.494 g/100 g, 2.255 g/100 g, 1.835 g/100 g, 0.627 g/100 g, 0.0245 g/100 g DW, respectively). Calcium content was 19-fold and 4-fold higher than that of green tea and spinach, respectively, suggesting that mulberry loaves appear to be a calcium-rich food source. In the comparison of geographic samples of Cheongilppong variety, calcium bevel was highest in Youngchun sample (2.477 g/100 g) and highest potassium level in Suwon sample (2.962 g/100 g). In the geographic samples of YK209 variety, Jinju-City sample was highest in calcium content (1.509 g/100 g). Among wild mulberry loaves collected from Cheju Island and Tsushima, potassium level was highest in Bongge-dong, Cheiu City (3.865 g/100 g) and calcium level in Mitshshima Town, Tsushima (2.948 g/100 g). In the comparison of varietal samples collected in Suwon at the mulberry field of Dept. of Sericulture & entomology, Shinkwangppong variety was highest in the potassium levels although Keryangppong and Shinkwangppong were higher in calcium revel. In the comparison of seasonal samples of Cheongilppong, there was a rough trend of increase in some minerals up to July (e.g., calcium rind )potassium). Finding of the highest calcium and potassium contents in the wild mulberry (3.865 g/100 g and 2.948 g/100 g, respectively) rather than in the cultivated ones warrant that more focus should be paid to wild mulberry leaves to utilize their minerals effciently.

Seasonal Variation in Body Composition in Boleophthalmus pectinirostris Collected from Gangjin, Jeonnam, Korea (전남 강진산 짱뚱어(Boleophthalmus pectinirostris) 체성분의 계절변화)

  • This study was carried out to investigate seasonal changes in body composition in Boleophthalmus pectinirostris in Korea. B. pectinirostris collected in Gangjin, Jeonnam, consisted of 58.7-75.8% moisture content, 16.1-17.6% protein, 0.8-3.4% crude lipids, and 1.3-3.6% crude ash. Livers consisted of 15-17% moisture content, 14.0-16.8% crude protein, 34.4-71.2% crude lipids, and 0.5-1.2% crude ash. Calcium, iron, potassium, etc., content in B. pectinirostris muscle averaged 267.5-599.8 mg/100 g, 1.98-28.3 mg, 160.7-327.9 mg, 20.6-60.2 mg, 0.4-2.2 mg, 0.23-0.46 mg, 66.5-192.9 mg, and 1.32-3.8 mg, respectively. (Please clarify: the list of measured values must correspond directly with what was measured, not just "etc.") The major amino acids in B. pectinirostris muscle, in proportional order, were glutamic acid, isoleucine, and leucine; whereas the major amino acids in the liver were glutamic acid, lysine, aspartic acid, and leucine. The major saturated fatty acids in the muscle were palmitic acid (15-19%) and stearic acid (8-11%). The major monoenes and polyenes were palmitoleic acid (C16:1) and oleic acid (C18:1), and EPA and DHA, respectively. The major saturated fatty acids and polyenes in the liver were the same as in muscle, but the monoenes were palmitoleic acid (C16:1) and cis-10-hepta-decenoic acid (C17:1). Seasonal changes in B. pectinirostris body composition may be attributable to differential accumulation of fat and nutrients in comparison to the spawning and hibernation period.

Effects of Lactobacillus plantarum and Leuconostoc mesenteroides Probiotics on Human Seasonal and Avian Influenza Viruses

  • Influenza viruses that cause recurrent seasonal epidemics to humans can be controlled with vaccine and antiviral therapy. However, the medical treatments often exhibit limited efficacy in the elderly or immunosuppressed individuals. In these cases, daily uptake of probiotics may be an option to bring in health benefits against influenza. Here, we demonstrate the effects of probiotics Lactobacillus plantarum (Lp) and Leuconostoc mesenteroides (Lm) against seasonal and avian influenza viruses. As assessed by the plaque size reduction of human H1N1 and avian influenza H7N9 viruses, including green fluorescent protein-tagged H1N1 strain in cells, the selected Lp and Lm strains restrained viral replication in mouse lungs with statistical significance. Against lethal viral challenge, the Lp and Lm strains exhibited their beneficial effects by increasing the mean days and rates of survival of the infected mice. These results suggest that, despite rather narrow ranges of protective efficacy, the dietary supplement of Lactobacillus and Leuconostoc probiotics may promote health benefits against influenza.

  • The present investigations were carried out for the purpose of making clear the fundamental features of the compositional difference of agarose and agaropectin in agar prepared from Gellidium amansii collected in different places and seasons, and its effect on properties of agar. The samples, Gellidium amansii, was collected every month from the same locality on the coast of the Ilgwang-myon, Yangsan-gun, Kyongnam, from March 1982 to February 1983. In addition, agarose and agaropectin in agar were isolated by dimethyl sulfoxide. The results obtained were summarized as follows : 1. In seasonal variation, the maximum yield of agar noted from spring through summer, and the minimum in February. 2. The experiment showed that the agarose and agaropectin composition in agar was changed, even if the seaweed collected from the same season was used as raw material. Seasonal variation of agarose and agaropectin contents in agar, the highest content occurred in August, $76.2\%$, and the lowest in January, $50.1%$. 3. Jelly strength, gelation ability of agar tended to increase as the agarose content was risen, but sulfate content was decreased.

A Longitudinal Study on Seasonal Variation of Riboflavin Status of Rural Women : Dietary Intake, Erythrocyte Glutathione Reductase Activity Coefficient, and Urinary Riboflavin Excretion (식이섭취와 적혈구 Glutathione Reductase 활성도 및 소변배설에 근거한 일부 농촌여성들의 리보플라빈 영양상태에 관한 종단연구)

  • This study was undertaken to estimate seasonal variation of riboflavin status and investigate the relationship between riboflavin intake and its biochemical status in rural women. Dietary intake was measured by determining both 24hr recall method and conventient method. The riboflavin intake was also estimated by food frequency method. Ribofiavin biochemeical status was assessed by erythrocyte glutathione reductase activity coefficient(EGR AC) and urinary riboflavin excretion. All information was repeatly collected in three seasons ; farming season (June), harvest season(October), nonfarming season(February). Mean daily riboflavin intake was below RDA for Koreans in all seasons. Cereal & pulse, vegetable were the primary sources of riboflavin intake and provided above 60% of the total dietary riboflavin intake in all seasons. Riboflavin biochemical status was significantly different among seasons(EGR AC P<0.005, 24hr urinary riboflavin excretion P<0.05), and riboflavin biochemical deficiency was highest in February. The mean values of EGR AC revealed riboflavin deficiency in all seasons. However the mean values of urinary riboflavin excretion were within the normal range except 24hr urinary riboflavin excretion in February. On the basis of EGR AC criteria, 44.7% of subjects were at risk of deficiency in June, 44.7% in October, 81.6% in February. Result of individual riboflavin status assessed by EGR AC or 24hr urinary riboflavin excretion criteria was quite alike. Urinary riboflavin excretion per gram of creatinine underestimated riboflavin deficiency. Significant correlations were observed among biochemical indexes. It also appeared that riboflavin intake measured by food frequency method showed significant correlation with biochemical indexes, especially high correlation with EGR AC (P<0.001). The results indicated that the prevalence of riboflavin deficiency seems to be high among rural women in all seasons and the inadequacy of dietary riboflavin intake was reflected in the abnormalcy of riboflavin biochemical status assessed by EGR, AC. Therefore EGR AC seems to be more sensitive measure of impaired riboflavin status compared to urinary excretion.
