김치담금과 소금절임 (Preparation of Kimchi and Salting)

  • The review was conducted to organize the desirable salting process from the literatures. In this study the principle of salting and effects of physicochemical changes in salting and salting factors such as cultivars of baechu(Chinese cabbage), concentration of salt, salting temperature, pH condition for salting and quality of kimchi were studied. The method of salting standard, treatment techniques in salting, and selection and mixture ratio of sub-ingredients were also reviewed. In future studies greater attention should be paid to salting and fermentation of kimchi.

감압 및 절임방법에 따른 돔배기의 품질변화 (Changes in Quality Characteristics of Shark Meat (Dombaegi) during Salting Using Vacuum and Conventional Salting Methods)

  • 새로운 돔배기 절임공정을 개발하고자 상압과 감압하에 직간법과 물간법으로 염절임한 돔배기의 품질특성을 비교하였다. 무게 감소율은 물간법으로 상압하에서 절임 하였을 때 12.23%로 높았으며, 수분함량은 감압상태에서 물간법으로 절임한 돔배기가 65.46%로 높았다. 염함량은 직간법으로 감압상태에서 절임 하였을 때 3.02%로 높았으며, 보수력은 직간법으로 감압상태에서 절임한 돔배기가 60.2%로 높았다. 수분활성도는 상압상태에서 직간법으로 절임 하였을 때 0.926으로 낮았으며, 색차는 감압상태에서 물간법으로 절임한 돔배기가 9.75로 가장 낮았으며, 탄력성은 직간법으로 감압상태에서 절임한 돔배기가 91.7%로 높았다. 상압과 감압상태에서 절임한 돔배기을 비교하였을 때, 감압상태에서 절임한 돔배기의 품질특성이 더 좋은 것으로 나타났다. 따라서 감압상태에서의 절임법은 새로운 절임 가공 기술로 활용할 수 있는 가능성을 보였다.

배추의 소금절임중 엽신의 휘임도 변화 (Changes in Curve-Angle of Blade during Salting of Chinese Cabbage)

  • This study was undertaken to investigate changes m curve angle of Chinese cabbage blade during salting at various concentration(10, 15, 20, 25%) of salt to evaluated salting degree by curve angle during salting at 20$^{\circ}C$. Salt concentration of brine, the amount of water elution, salt penetration of the tissue(salt concentration of Chinese cabbage), weight loss and texture were investigated. Correlation relation between the above factors and curve angle were determined. The curve angles by method of holding the edge of the Chinese cabbage blade was measured. The curve angles of the mesophyll were proportional to salting time and salt concentration, but slope of line equation showed higher than that of mid-rib. The ideal method of salting evaluation by curve angle was MCA-MRC (the measuring curve angle of mid-rib C) at each concentration of salt. The results of curve angle when reached 3% salt of Chinese cabbage tissue calculated by MCA-MRC at 10, 15, 20 and 25% salting were 57$^{\circ}$, 43$^{\circ}$, 36$^{\circ}$, and 33$^{\circ}$, respectively. And salting times calculated by the same conditions were 19, 12.5, 9.1 and 4.4hours, respectively.

가지의 절임방법에 따른 성분변화 (Effect of Salting Methods on Component and Quality Characteristics of Eggplants)

  • 본 연구는 가지의 수출 경쟁력 향상을 위한 방안으로 수출용 가지품종인 축양과 시키부를 염가공품으로 개발하기 위하여 염절임 방법에 따른 품질변화에 대하여 조사하였다. 수분함량은 절임 3일째 감소하였으며, 염절임 7일째 미강과 소금을 혼합하여 염절임한 가지의 수분감소가 소금물을 단독으로 하여 염절임한 가지의 수분감소에 비해 컸다. 회분함량은 염절임이 진행될수록 증가하였다. 시키부 품종의 당도가 축양 품종의 당도에 비해 높았으며, 염절임이 진행될수록 당도는 크게 증가하였다. 미강과 소금의 혼합 처리시의 당도증가가 소금물 단독 처리시의 당도 증가에 비해 현저하였다. 염절임이 진행될수록 환원당 함량은 증가하였으며, 미강과 소금을 혼합 처리하여 염절임한 가지가 소금물 단독으로 염절임한 가지에 비해 환원당 함량이 높았다. 축양의 수용성단백질 함량이 시키부 품종의 수용성 단백질 함량에 비해 약간 높았으며, 염절임이 진행될수록 증가하였고, 미강과 소금의 혼합 처리 시 수용성 단백질 함량의 증가가 컸다.

Effect of n-Alkylamine Hydrochlorides on the Cloud Point of Nonionic Polyoxyethylated Surfactant

  • The salting in and salting out of Octoxynol, N.F., a nonionic polyoxyethylated surfactant by n-alkylamine hydrochlorides ws investigated by measuring their effect on the cloud point of the surfactant at various salt concentrations. The carbon number of the alkyl chain was varied from zero to twelve. Ammonium chloride, methylamine hydrochloride and ethylamine hydrochloride tended to salt out the surfactant, lowering its cloud point in proportion to the salt concentration. n-Ankylamine and n-butylamine hydrochlorides showed salting-out effect at low concentrations of the electrolyte, while their effects were leveled off and showed rather salting-in trend at higher concentrations of the electrolyte. These salting-in effect was ascribed to the formation of a hydrotropy of the n-alky lammonium cations with the surfactant. The higher homolog compounds of n-alkylamine hydrochlorides showed extraordinarily high salting-in effect at very low oncentrations of the electrolyte. These large salting-in effects were more drastic as the chain length was getting longer. These large increases of the cloud point of the surfactant were attributed to the formation of mixed micelles of n-alkylammonium cations with the polyoxyethylated surfactant.

계절별 배추 절임염수의 특성변화 (Changes of Brine Characteristics during the Salting Process of Winter, Spring, and Summer Chinese Cabbage)

  • Major characteristics of brines produced from the salting process were compared among winter, spring, and summer (highland) Chinese cabbages. The soluble-solids contents of final brine were decreased to 87~90% of initial brine during salting process, and showed 16.3, 15.8, and 14.4$^{\circ}$Brix for winter, spring, and highland Chinese cabbages, respectively. The pHs showed similar changes during salting process from pH 8.40~8.63 for initial to pH 6.03~6.24 for final. The high salting(12.4~14%) of final brine needs dilution or reuse treatemnt before discard. The COD of final brine were increased to 39.6 ppm, 52.1 ppm, 37.7 ppm, respectively. During salting total microbial counts of final brine were increased ten times from those of the initial brines for all samples.

Compositions, Protease Inhibitor and Gelling Property of Duck Egg Albumen as Affected by Salting

  • Chemical compositions, trypsin inhibitory activity, and gelling properties of albumen from duck egg during salting of 30 days were studied. As the salting time increased, moisture content decreased, the salt content and surface hydrophobicity increased (p<0.05). Trypsin inhibitory activity and specific activity were continuously decreased throughout the salting time of 30 days (p<0.05). This coincided with the decrease in band intensity of inhibitor with molecular weight of 44 kDa as examined by inhibitory activity staining. Nevertheless, no differences in protein patterns were observed in albumen during the salting of 30 days. Based on texture profile analysis, hardness, springiness, gumminess, chewiness, and resilience of albumen gel decreased with increasing salting time. Conversely, salted albumen gels exhibited higher cohesiveness and adhesiveness, compared to those of fresh albumen. Scanning electron microscopic study revealed that gel of salted albumen showed the larger voids and less compactness. In general, salting lowered trypsin inhibitory activity and gelling property of albumen from duck egg to some extent. Nevertheless, the salted albumen with the remaining inhibitor could be an alternative additive for surimi or other meat products to prevent proteolysis.

감압하에서 배추의 소금절임 (Salting of Chinese Cabbage under Sub-atmosphere)

  • The aim of this study is to elevate the efficiency of salting with low salt concentration in order to improve the quality of salted Chinese cabbage. The efficiency of salting was tested with various sub-atmosphere(760mmHg to 0mmHg), temperature(20$^{\circ}C$ and 30$^{\circ}C$), and concentration of salt(3%, 5% and 10%). The salting efficiency was estimated by amounts of juice, calcium elution, sodium penetration and the state of tissue. The amunts of juice eleuted from Chinese cabbage was increased significantly with the decrease of atmosphere and the time to reach the highest amounts was reduced. This tendency was promoted, with increase of salinigy(from 3% to 10%)and the increase of temperature(more juice at 30$^{\circ}C$ than 20$^{\circ}C$). The amounts of eluted calcium from Chinese cabbage tissue during salting under sub-atmosphere was directly proportional to amounts of juice and was inversely proportional to penetrated sodium. The salting time was reduced with elevation of sub-atmosphere. It was desirable to take between 5.5 and 9 hours to salt under the condition of 3% of salting, 20$^{\circ}C$, and 560-0mmHg. It took between 4.4 and 5 hours under 5% of salt and between 4 and 4.5 hours under 10% of salt. However, it was undesirable because the drying phenomenon and the transparency of tissue appeared under 30$^{\circ}C$ and 160-0mmHg.

  • Anchovy fillet 제조를 위하여 염장방법 및 숙성온도에 따른 염장 멸치의 숙성 중 성분변화를 조사하였다. 물간에 비하여 마른간 하였을 때 육의 탈수량이 많았으며, $20^{\circ}C$에 숙성한 것이 $5^{\circ}C$에 비하여 수분함량이 다소 낮았다. 염분함량은 물간한 것이 마른간에 비하여 높았으며, $20^{\circ}C$에서 숙성 한 것이 $5^{\circ}C$에 비하여 높았다. 총 질소는 물간이 마른간한 것에 비하여 낮았으며, 염장 초기에 총질소의 저하가 현저하였다. 마른간이나 물간 모두 $20^{\circ}C$에서 염장 멸치의 숙성 중 아미노태질소가 현저하게 증가하여 마른간은 숙성120일, 물간은 숙성 30일에 거의 최대를 나타낸 반면, $5^{\circ}C$에서는 미미한 증가를 보였다. 휘발성염기질소의 변화는 아미노태질소와 거의 비슷한 경향을 나타내었다. 물간한 것은 마른간에 비하여 동일 온도에서 가수분해가 빠르게 진행되었으며, $5^{\circ}C$에서는 가수분해가 현저하게 억제되었다. 과산화물가는 마른간이 물간에 비하여 빠르게 증가하였으며, $5^{\circ}C$에 숙성한 것이 $20^{\circ}C$에 비하여 낮은 과 산화물가를 나타내었다. 이상의 결과로 보면, 염장 멸치의 제조를 위해서는 대멸치를 가염지 한 다음, $25\%$의 식염으로 마른간하여 $5^{\circ}C$에서 숙성시키는 것이 육의 연화를 막고, 숙성이 어느 정도 진행된 염장 멸치론 얻을 수 있을 것으로 사료된다.

Salting-out Effects on the Partition of Proteins in Aqueous Two-phase Systems

  • The partition of proteins in the salt-rich phase of polyethylene glycol (pEG)/salt aqueous two-phase systems is limited by the salting-out effects of salt. The logarithm of the concentration of proteins partitioned in the salt-rich phase decreases linearly with increases in the concentration of salt in the salt-rich phase (salting-out). Therefore, the partition of a given protein in the salt-rich phase of aqueous two-phase systems can be estimated from the salting-out constant. The slope of the solubility line (salting-out con-stant) for a given protein is determined by the type of salt in the two-phase systems.
