Business Empowerment Program and Household Economic Welfare: Lesson from Indonesia

  • This study aims to analyze the household economic behavior of salt farmers participants in Salt Business Empowerment Program (Pugar) including of salt production, work flow, household revenue, the behavior of consumption of food and non-food items and the welfare level. This research followed a survey method by engaging 32 household farmers as participants. The findings revealed that the empowerment program was carried out through the technical assistance of salting production and the assistance of equipment and technology from Thread of Screw Filter and geoisolators to improve the quality of salt. The problems come when the marketing of salt is still limited to the collectors of salt which led to the price of salt level, manufacturers have not remained stable. Household revenue sources for some salt farmers also come from non-salt pond business activities. Farmer household revenue can be used to meet staple food consumption and non-food staple consumption. Based on the indicators of family welfare, households participating in the empowerment program were group into the category of prosperous families. In order to stabilize the price of salt at the producer level, government intervention in the people's salt trading system is needed.

Synthesis and Hydroxyl Radicals Scavenging Activity of 2-Pyridine-acetyl-N-trimethyl Chitosan Chloride

  • A novel chitosan derivative with double quaternary ammonium salt-2-pyridine-acetyl-N-trimethyl chitosan chloride (PATMCS) was synthesized and the antioxidant activity of PATMCS against hydroxyl radicals was assessed. The results indicated that PATMCS had potent hydroxyl scavenging activity. The $IC_{50}$ of PATMCS was 0.13 mg/mL. PATMCS showed 100% scavenging effect at a dose of 0.8 mg/mL which markedly better than that of N-trimethyl chitosan chloride (TMCS). It was confirmed that quaternary chitosan derivatives showed potent antioxidant activity. PATMCS has double quaternary ammonium salt structure in the molecules. Therefore, the antioxidant activity of PATMCS was better than TMCS. The above results are theoretically fundamental for further development and making use of chitosan resources to prepare new antioxidants.

  • The effects of salting methods on textural properties of Kakdugi were evaluated during fermentation at 1$0^{\circ}C$ for up to 52 days. Kakdugi samples were prepared by 4 different salting methods at final salt concentration of 1.5%, which is appropriate for organoleptic quality. The salting methods for radish cubes(2 cm size) of Kakdugi were as follows; 1) Treatment S-1: spraying dry salt uniformly on to the radish cubes at 1.5%(w/w) and holding for 1 hr, 2) Treatment S-5: spraying dry salt uniformly on to the radish cubes at 1.2%(w/w) and holding for 5 hr, 3) Treatment B-1: brining radish cubes in a 8.5%(w/v) salt solution for 1 hr, 4) Treatment B-5: brining radish cubes in a 4.0%(w/v) salt solution for 5 hr. The contents of water soluble pectin, total soluble solid and PG activity were increased as the fermentation periods increased. A majority of total dietary fiber(TDF) consisted of soluble dietary fiber(SDF), and the amount of insoluble dietary fiber(IDF) was relatively small in Kakdugi during fermentation. Furthermore, an increase in SDF and a consequent decrease in IDF contents were observed with the fermentation time increased.

Effect of Bamboo salt-pro on carries-inducing properties of Streptococcus mutans

  • We studied the effect of Bamboo salt-pro on the growth and acid production of S. mutans. The growth of S.mutans was reduced by the presence of the Bamboo salt-pro (1 mg/ml) and NaCl (1 mg/ml) significantly, and the positive control group (1 % of NaF) also exhibited antibacterial activity significantly. Bamboo salt-pro (1 mg/ml) reduced the rate of acid production by S. mutans. Bamboo salt alone did not demonstrate such a reduction in acid production at the concentration of 1 mg/ml. The inhibitory action of Bamboo salt-pro on acid production was found at a concentration of 1 mg/ml, but bamboo salt alone was not at a concentration of 1 mg/ml. In addition, we investigated the anti-inflammatory effect of Bamboo salt-pro on human mast cell line HMC-1. Bamboo salt-pro (0.1 and 0.01 mg/ml) inhibited significantly the secretion of inflammatory cytokine, tumor necrosis factor-a with $59.47{\pm}0.15%$, $51.98{\pm}0.16%$ respectively. Our results suggest that Bamboo salt-pro importantly contributes to the prevention or treatment of periodontitis and other oral diseases and inflammatory diseases.

질소고정균의 성장과 질소고정력에 대한 osmoprotectant의 영향 (Effects of Osmoprotectants on the Growth and Nitrogenase Activity of Rhizobium and Azospirillum under Osmotic Stress)

  • 수종의 두과작물과 수도에서 분리한 Rhizobium 및 Azospirillum들의 내염성을 조사하고 salt stress에 의하여 유도되는 균주의 생리적 특성 및 식물이나 미생물에서 osmoprotectant 로 작용하는 proline, glycine betaine 및 glutamate가 질소고정균의 생육이나 질소고정력에 미치는 영향을 연구하였다. 분리된 대부분의 질소고정균들은 0.6 M NaCl 농도에서 생육이 현저히 감소되었지만 Acacia rhizobia sp86 은 1.4 M NaCl 농도에서도 생육이 가능하였다. Osmotic stress에 의하여 증가되는 intracellular 유리아미노산은 Rhizobium 및 Azospirillum에서 glutamate 였으며, 특히 Acacia rhizobia sp86은 salt stress에 의하여 5배정도 glutamate를 축적하였다. Osmoprotectant (proline, glycine betaine, glutamate)를 배지내에 1 mM 첨가함으로서 salt stress에 의하여 감소되는 질소고정균의 생육과 질소고정력을 방지하였으며, glycine betaine이 가장 효과적이었다.

두 가지 염이 동시에 물에 녹을 때의 용해도 (Solubility of a Salt Dissolved in Water in the Presence of Another Salt)

  • 본 연구에서는 한 가지 염으로 포화된 수용액에 다른 염을 녹이면 얼마나 녹을 것인가에 대한 초-중등 학생들과 교사들의 이해 정도가 낮은 이유를 알아보기 위하여 중등학교 교과서와 대학교 교재의 서술 내용을 조사하였다. 그 결과 중등학교 교과서와 대학교 일반화학 교재에서는 다른 염의 존재 여부와 상관없이 용해도는 일정함을 전제로 서술하고 있었으며, 대학교 물리화학 교재에서는 다른 염의 존재에 의해 용해도가 달라짐을 직접 언급하거나 이를 알 수 있는 내용이 서술되어 있었다. 그러나 물리화학을 이수한 사범대학 4학년 학생들을 대상으로 조사해본 결과 학생들의 대부분이 이러한 용해도 변화에 대한 설명을 하지 못하였다. 따라서 교사나 예비 교사들의 의문을 해소하기 위해 이온쌍 형성과 이온 세기 변화에 따른 용해도의 변화를 설명하고, 실제 실험 결과도 하나 제시하였다. 하지만 중등학교에서는 활동도 개념의 도입이 어려우므로 두 가지 염이 동시에 용해될 때의 용해도를 어떻게 가르칠지에 대한 논의가 필요한 것으로 생각된다.

가미진간식풍탕(加味鎭肝熄風湯)이 DOCA-salt로 유발된 고혈압(高血壓) 병태(病態) 흰쥐 모델에 미치는 영향 (Effects of Kamigingansikpung-tang on Hypertension Model by DOCA-salt)

  • Kamigingansikpung-tang(KGST) has been used for many years as a therapeutic agent for acute stage of cerebrovascular disease and hypertension in oriental medicine. But the effect of KGST on hypertension and vascular system is not well-known. This study was done to investigate the effects of KGST on hypertension. The results were obtained as follow: KGST showed scavenging activity on DPPH free radical. KGST showed the inhibitory effect on ROS and ACE, and the accelerated SOD activity. KGST significantly decreased the blood pressure and pulse in DOCA-salt induced hypertensive rat. KGST significantly decreased the levels of aldosterone in DOCA-salt induced hypertensive rat. KGST significantly decreased the levels of dopamine, epinephrine in DOCA-salt induced hypertensive rat. KGST significantly decreased the levels of potassium(K+) and chloride(Cl-) in DOCA-salt induced hypertensive rat. KGST significantly decreased the levels of uric acid and creatine in DOCA-salt induced hypertensive rat. KGST has an effect on inhibiting cell damage of the heart, liver, kidney, and adrenal gland. results suggest that KGST might be effective in treatment and prevention of hypertension.

죽염의 특성 분석과 항위궤양효과 (Characterization and Anti-Gastric Ulcer Activity of Bamboo Salt)

  • 죽염은 예로부터 위궤양 등의 소화기 질환에 민간요법으로 사용되어 왔으며 대나무 통속에 천일염을 넣고 소나무 장작불로 9번 구워서 만들어진다. 본 연구에서는 죽염의 특성분석시험과 항위궤양 시험 중 위산분비 억제도 시험을 실시하였다. 특성분석시험으로 ICP(Inductively Coupled Plasma) spectrometer, IC(Ion Chromatograph), XRD(X-ray Diffractrometer), 전자현미경을 이용하여 천일염과 죽염제품 A, B, C의 성분 및 구조분석을 실시하였다. 그 결과, 성분분석시험에서 죽염은 천일염에 비하여 칼륨, 규소, 철 및 인삼염의 농도가 증가하였으며 황산염은 감소되었음을 알 수 있었다. 죽염 중 물불용분에 포함된 화합물은 MgO가 가장 많았고, $SiO_2,\;Mg_2Si_O4\;및\;CaMgSiO_4$등도 확인되었다. 구조분석에서 죽염은 천일염에 비하여 대체로 표면이 매끄럽고 용융되어 있는 것으로 나타났다. 죽염제품 A, B, C 중 A를 사용하여 위산분비에 미치는 영향을 측정하였다. SD계 랫드에 죽염, 천일염, 시약급 NaCl, 증류수를 1일 1회 28일 동안 각 0.2, 1.0, 2.0 g/kg으로 경구 투여하여 마지막 투여 후 24시간 절식시켜 Shay 유문 결찰법을 이용하여 채취한 위액의 총량, pH, 총위산도, 펩신활성도를 측정하였다. 실험결과 각 투여 용량군에서 용매 대조군에 비하여 통계학적으로 유의성 있는 차이를 나타내지 않았으며 죽염을 포함한 여러 가지 염투여는 위산분비에 영향을 주지 않았다. 따라서 28일간 죽염투여에 의한 위궤양 치료효과는 기대하기 어려울 것으로 사료된다.

  • 저식염 멸치젓을 속성으로 제조하기 위하여 Asp. oryzae와 Bacillus sp.로 만든 zdh지를 첨가하고 숙성중 미생물상 변화와 효소활성을 비교 검토하였다. 젓갈 숙성 중 미생물상은 단백질분해균과 혐기성 균수는 숙성 40일경, 호기성 균수는 20일경에 많았다. 단백질분해균과 지방질분해균, 호기성균, 혐기성 균수는 Bacillus sp. 코오지 첨가구에서 높았다. 젓갈 숙성중 단백질 가수분해효소 활성은 숙성 20일 경에, 지방질 가수분해효소는 숙성 30일 경에 높았다가 점진적으로 감소하였으며, 단백질 가수분해효소는 Asp. oryzae 코오지 첨가구가, 지방질 가수분해효소는 Bacillus sp. 코오지 첨가구에서 높았다.

Safety and Technological Characterization of Staphylococcus xylosus and Staphylococcus pseudoxylosus Isolates from Fermented Soybean Foods of Korea

  • We evaluated the antibiotic susceptibilities, hemolytic activities, and technological properties of 36 Staphylococcus xylosus strains and 49 S. pseudoxylosus strains predominantly isolated from fermented soybean foods from Korea. Most of the strains were sensitive to chloramphenicol, erythromycin, gentamycin, kanamycin, lincomycin, oxacillin, tetracycline, and trimethoprim. However, 23 strains exhibited potential phenotypic acquired resistance to erythromycin, lincomycin, and tetracycline. Based on breakpoint values for staphylococci from the Clinical and Laboratory Standards Institute, >30% of the isolates were resistant to ampicillin and penicillin G, but the population distributions in minimum inhibitory concentration tests were clearly different from those expected for acquired resistance. None of the strains exhibited clear α- or β-hemolytic activity. S. xylosus and S. pseudoxylosus exhibited salt tolerance on agar medium containing 20% and 22% (w/v) NaCl, respectively. S. xylosus and S. pseudoxylosus strains possessed protease and lipase activities, which were affected by the NaCl concentration. Protease activity of S. pseudoxylosus was strain-specific, but lipase activity might be a characteristic of both species. This study confirms the potential of both species for use in high-salt soybean fermentation, but the safety and technological properties of strains must be determined to select suitable starter candidates.
