싱싱회류 생산업체의 HACCP 적용을 지원하기 위한 SSOP Program 개발과 성과 (SSOP Program Development for HACCP Application in Fresh Raw Fish Manufacturing)

  • 본 연구는 우리나라에서는 새로운 형태의 생선회인 싱싱회 생산업체에 HACCP시스템이 정착되는 것을 지원하기 위하여 작업자가 쉽게 활용할 수 있는 SSOP(Sanitation Standard Operating Procedure:)프로그램을 개발하여 이를 활용하여 SSOP프로그램이 없이 일반적인 방법으로 식품을 위생적으로 생산하려고 하는 것과 SSOP프로그램을 제정하여 이를 활용하여 작업할 때의 위생 이행 효과를 식품접촉표면 시료와 작업자 개인위생 시료를 세균 검사하고, 위생 점검표로 위생 감사하여 그 결과를 합산하고 통계 분석하여 SSOP프로그램의 활용 성과를 확인한 것이다. 현재 정부에서 사용하는 5때 항목의 적합/부적합 여부로 부적합이 6개 이상이면 위생불량으로 판정하는 위생감사와 달리 위생감사 내용을 점수로 계량화하여 70%로 환산하고 샘플링의 세균 검사 결과도 계량화하여 이를 30%로 환산하여 두 결과를 합산하여 100점으로 하였다 그 결과 60점 이하이면 위생 불량으로 행정제재, 61-75점이면 보통, 76-85점이면 양호, 86점 이상이면 우수로 판정하고 SSOP프로그램을 활용한 위생 실태를 통계적으로 분석하였다. 새로 개량한 위생 점검표에 의한 위생 이행과 위생 시설 구비 여부를 점검한 환산 점수는 활용 전 11.8%에서 활용 후 88.6%로 위생 등급이 두 등급 향상되었다 세균 검사 결과를 점수로 환산한 결과도 57.5%에서 98.2%로 개선되었으며 유의한 차이가 있었다. 위 두 부분(위생감사와 세균 검사 결과)의 환산 점수를 각각 70%와 30%로 환산하여 총합 점수로 분석한 SSOP 활용 전 후의 성과도 66.4점에서 93.4점으로 향상되었다 상기 결과로 당 연구 대상 업체는 HACCP시스템의 올바른 정착에 필요한 위생의 8가지 핵심 내용이 관리 하에 있음이 입증되었다.

초, 중.고등학교 급식소와의 비교를 통한 대학 급식소의 GMP 시설 구비 및 SSOP 수행도 조사 (Compliance with GMP and SSOP in College Foodservices by Comparison of Elementary and Middle & High School Foodservices)

  • A total of 262 dietitians (in 97 college foodservices nationwide, 86 elementary school foodservices, and 79 middle & high school foodservices in the Changwon area) were given a survey questionnaire composed of 18 GMP and 29 SSOP items from May to July, 2011. As a whole, total usage level of GMP facilities (3.65/5 points) and total management level of SSOP (3.86) in college foodservices showed no significant differences compared to those in elementary school foodservices (GMP 3.74, SSOP 4.02) and middle & high school foodservices (GMP 3.75, SSOP 3.95). However, the results of this study suggest that seven items of the GMP facilities and five items of the SSOP should be improved for the development of the HACCP facility model in college foodservices. Those items that showed considerably lower points in GMP were as follows: 'Drain pipes from sinks of the cooking area are connected directly to the drain (3.74)' (P<0.001), 'The grease trap is installed outside the cooking area equipped with an oil separator (3.24)' (P<0.01), 'Entrance and the cooking area are adequately equipped with hand-washing and shoe disinfecting facilities (3.61)' (P<0.001), 'Cooking area, food storage, and dining area are adequately equipped with insect and rodent repellents (3.72)' (P<0.001), 'Cooking areas are equipped with air-conditioning/heating system and ventilation facility for maintenance of temperature and humidity (3.35)' (P<0.05), and 'Toilets for cooking staff only are provided; the its doorways are not directly accessible from the cooking area (3.25)' (P<0.01).

HACCP in Changran Jeotgal

  • The HACCP (hazard analysis critical control point) concept becomes an important aspect of Good Manufacturing Practices (GMP) in safe food production. The HACCP plan was developed with food safety objective. The authors already carried out hazards analysis on Changran Jeotgal manufacturing process in a previous report. In this study we developed a HACCP plan on the manufacturing process of Changran Jeotgal. We could decide two CCPs those were salt concentration and eliminations of foreign materials before packaging. Foreign materials should be certainly checked out with laser detector just before packaging. Salt should be maintained more than $8\%$ to inhibit pathogenic bacteria in end product. On the Jeotgal process free water is removed after salting and Jeotgal is seasoned with several subsidiary materials such as com syrup. In result end products have $8\%$ salt with water activity 0.82. Most bacteria are inhibited but some can live in this condition. Materials on the working may be contaminate by pathogens, chemicals or physical hazards. It will be decreased by SSOP (standard sanitary operating program). The SSOP needed in Jeotgal plants is nearly same as other general food manufacturing plants but essential to fulfill HACCP program.

  • 농장에서 효과적인 HACCP시스템의 적용을 위해서는 HACCP을 적용함에 있어서 토대가 되는 "선행요건프로그램(Pre-requisite program, PP)" 즉, 자체위생관리기준(Sanitation Standard Operating Procedures, SSOP)과 우수 농장관리기준(Good Agricuiture / Production Practice, GAP/GPP)이 적절히 운영되어야 한다는 것을 지난호에서 기술한 바 있다. 이번호부터 선행요건프로그램에 대해서 좀 더 자세히 알아보기로 하자.

저전력소모2.4 GHz 송수신 MMIC (A Low Power Consumption 2.4 GHz Transceiver MMIC)

  • 저전력으로 동작하고 24리드 SSOP에 실장할 수 있는 2.4 GHz 송수신 MMIC를 1.0㎛ 이온주입 MESFET공정으로 제작하였다. 이MMIC는 송신모드일 때 2.44 GHz에서 3.9 mA의 전류를 소모하였으며 이때 변환이득은 7.5㏈, 출력 IP3는 -3.5 ㏈, 잡음지수는 3.9㏈이었다. 수신모드일 때는 소모전류 2.0mA로 전압검출도 6.5 mV/μW를 나타내었다. 그동안 발표된 다른 MMIC가 우수한 성능을 가지고 있음을 알 수 있었으며 2.4 GHz의 ISM 대역에서 간단한 방식의 무선랜, WLL, RFID 등으로 응용될 것이 기대된다.

  • Hazard Analysis and Critical Control Points (HACCP) is a systematic preventative approach for food safety and is generally used in food industry to identify potential food safety hazards. Recently, the Korean Ministry for Food, Agriculture, Forestry and Fisheries planed to applicate HACCP programs as an effective approach to food safety and protecting public health at the aquaculture farm of rainbow trout, Oncorhynchus mykiss. For the purpose, it need to identify what kinds of hazards are in the aquaculture farm. In the present study, we established Sanitation Standard Operating Procedures (SSOP), which addresses sanitation conditions and practices in the aquaculture farm. SSOP is essential prerequisite programs of HACCP to reduce or eliminate the risk of the hazards being realized. We anticipate that the HACCP programs of aquaculture farm will contribute to supply foods in safety to consumers.

국내에서의 HACCP 개념의 실용화에 관한 연구 -캐나다 FSEP를 중심으로- (Practical Application of HACCP Concepts in Korea -Using the Canadian Food Safety Enhancement Program-)

  • This study was conducted to find out the proper ways of implementation of Hazard Analysis Critical Control Point (HACCP) concepts applicable to the current Korean food inspection system. The following recommendations are based on an in-depth review of the Canadian Food Safety Enhancement Program (FSEP), which is one of the leading HACCP programs adapted to the food industry. Since 1997, the HACCP system has been voluntarily applied to meat processing plants in Korea in accordance with the Food Protection Law. But the guidelines are obscure and inadequate to expand to the diversity of food plants, and are therefore only applied to a limited number of plants of small scale enterprise. For these reasons, it is necessary to prepare an enhanced food safety control program focused not only on the HACCP plants but also on the non-HACCP plants. The national program should be the fundamental framework of a food safety control policy enforced by all the relevant authorities. The Prerequiste Program of Canadian Food Inspection Agency and Sanitation Standard Operating Procedures (SSOP) of FSIS are good example programs for the non-HACCP plants. These programs, which are a major part of the HACCP system, could easily be adapted to the Korean food industry. To improve the current HACCP implementation guideline, it is necessary to develop a detailed implementation manual, generic HACCP model, training program, and an audit program.

서부 경남 지역 초등학교 급식소에서의 환경미생물 평가 (Environmental Microbial Assessment of Food Services at Elementary Schools in Western Gyeongnam Pyovince)

  • 본 연구의 두 가지 목적은 서부경남지역 초등학교 급식환경에 대한 위생학적, 미생물학적 안전성 평가와 SSOP (Sanitation Standard Operation Procedures)실천을 위한 자료구축이다. 식수와 상수원수, 조리, 배식도구, 주변기구, 조리종사자와 조리된 음식으로부터 총 97개의 시료를 채취하여 일반세균, E. coli, salmonella, yersinia, vibrio parahaemolyticus, staphylococcus와 같은 각종 병원성균에 대한 생화학적 분석을 하였다. 조사 결과 일반 세균수는 최저 1.0x$10^2$CFU/ mL 에서 최고 1.0x$10^{7}$ CFU/mL로 식품 안전성 수준을 초과하였다. 특히 조리된 식품에 있어서는, 4곳의 가열 공정 과정을 거치지 않은 김치에서 1.0x$10^{5}$ CFU/mL 이상의 일반세균이 검출되었다. 전반적으로, B장소의 일반 세균수가 다른 장소들에 비하여 높았다. 또한 병원성 미생물 수준에 있어서는 C와 E 급식소의 칼과 E 급식소의 김치에서 E. coli가 분리되었으며, A 급식소의 식수, D 급식소의 손, E 급식소의 냉장고와 앞치마에서는 황색포도상구균이 검출되었다. 반면 salmonella, vibrio와 yersinia는 어느 시료에서도 검출되지 않았다. 결과적으로, 학교 급식에서 일반 세균과 병원성 미생물이 존재하는 것은 위생 실천과 밀접하게 연관되어 있으며, 학교 급식소에서 이러한 미생물 오염을 감소시키기 위해서는 보다 체계적이고 효율적인 위생관리가 요망된다.

싱싱회류 생산업체의 HACCP 시스템 구축 전 후의 미생물학적 평가 (Microbiological Evaluation of Chilled Freshes Raw-fish Manufacturers before and after HACCP System Establishment)

  • Raw-fish food contains a lot of moisture and is a high-protein food. It is a first-stage processed food taking a lot of manual work. Therefore, it is classified as a PHF food, very liable to cause a bacterial food-poisoning. But its manufacturers are usually small-sized and a systematic sanitation management is difficult to expect. But the manufacturer participating in this study produces chilled fresh raw-fish food. Fish are sliced into two fillets, which are packaged under vacuum, kept and distributed in refrigerators, and sold within a day. It is a newly-developed kind of raw-fish food, and a more improved kind of raw-fish food making possible a systematic sanitation management. The HACCP (Hazard Analysis and Critical Control Point) is a systematic and continuous process-control method which is very efficient for controling food sanitation and reducing the expenses. A new HACCP model has been developed to be applied to a large-sized chilled fresh raw-fish food manufacturer. To ascertain its efficiency, the baterial examination was done to its workplace and products. The significance test was done on its data by "SPSS 12.0 for Window" and "Mann-Whitney U Test". The numbers of bacteria on its final products were significantly different in flatfish and porgy. The number of bacteria tended to decrease in each time-differential sampling (P<.00l). The final food products showed no food-poisoning bacteria in all the time-differential tests and in all the samplings, which proves that the CCP of the HACCP system is under control. After the SSOP program was applied, no pathogenic bacteria were found in the work-place, and the kinds and numbers of bacteria decreased. The numbers of general bacteria and colon bacilli also showed a significant difference from those before the SSOP program in the filleting board (P<.05), in the skinning board (P<.0l), in the neck-removing knife (P<.05), and in the filleting knife (P<.01). The working equipments, periodically disinfected, also showed a significant difference in sanitary conditions (in the dehydrator, P<.05). The number of bacteria found on the food-touching surface was within the standard (below 500/l00 cm$^2$) After the SSOP program was applied, the general bacteria and colon bacilli were not found. The quality of water used in the food processing was also within the standard. The numbers of bacteria falling from the air in the work-place were negligible in all the samplings (<30CFU/l000ι). The staphylococci and fungi were not found.

서울지역 식육판매업소의 미생물학적 오염도 및 위생관리수준 평가 (Evaluation of the microbial contamination status and sanitation practice level in butcher's shops in Seoul)

  • This study was performed to evaluate the microbial contamination level of meat processing in butcher's shops in Seoul from January to November in 2010. A total of 695 samples (112 cotton work gloves, 342 utensils and equipments, 241 meat samples) were collected and the environmental hygiene of 89 butcher's shops was investigated. The aerobic plate count (APC), E. coli and pathogenic bacteria such as Staphylococcus aureus, Salmonella spp. were tested in the samples. As a result, the level of count on APC ranged $0{\sim}2.2{\times}10^6\;CFU/cm^2$ from the utensils & equipments, $1{\times}10^2{\sim}2.7{\times}10^8$ CFU/glove from the cotton work gloves and $1{\times}10^2{\sim}9.3{\times}10^6$ CFU/g from the meat samples. The level of count on E. coli ranged $0{\sim}2.5{\times}10^3\;CFU/cm^2$ from the utensils, $0{\sim}8.6{\times}10^4$ CFU/glove from the cotton work gloves and $0{\sim}1.4{\times}10^5$ CFU/g from the meat samples, respectively. Staphylococcus aureus and Salmonella spp. were detected in 11 samples and 2 samples from the cotton work gloves, utensils & equipments, respectively. The sanitation standard operating procedure (SSOP) was applicated at 49 butcher's shops. In order to improve sanitation of meat in butcher's shops, in this study, applications of SSOP, systemic sanitation education for employees, hygenic control of utensils & equipments, and continuous monitoring for microorganisms will be required.
