Experiments were conducted to determine the activities of protease and carbohydrase in growing lensky sturgeon fed with three different diets containing various concentrations of protein and carbohydrate. Neutral pretense activity from growing lensky sturgeon the protein diet (predo-minary, almost $100\%$ protein) was lower then those from fish fed the other diets during the experimental period. The results may indicate that the level of pretense activity is inversely related to the level of protein in the diets.

This study was conducted to evaluate the use of tuna by-product meal (TBM) as a substitute for fishmeal in juvenile Korean rockfish (Sebastes schlegeli) diets. Five isonitrogenous (52% crude protein) and isocaloric (4.9 kcal/g) diets were prepared. Control diet (Con) was formulated to contain brown fishmeal, whereas 25, 50, 75, and 100% of fishmeal was substituted with the same percentage of TBM in the TBM25, TBM50, TBM75, and TBM100 diets, respectively. Three replicate groups of fish (initial weight, $29.5{\pm}0.6g$) were fed one of the five diets for 12 weeks. The mean weight gain of fish fed the Con and TBM25 diets was significantly higher than that of fish fed the TBM100 diet (P < 0.05), but it was not significantly different from the weight gain of fish fed the TBM50 and TBM75 diets. The feed efficiency and protein efficiency ratios of fish fed the Con diet were significantly higher than those of fish fed the TBM100 diet (P < 0.05), but were not significantly different from those fed the TBM25, TBM50, and TBM75 diets. The TBM25, TBM50, TBM75, and TBM100 diets had significantly (P < 0.05) lower incidence cost and higher profit index than the Con diet. These results suggest that the tuna by-product meal used in this study could replace up to 75% of fishmeal protein in the diet without reducing growth and feed utilization in juvenile Korean rockfish weighing 29-53 g. By considering feed cost, the TBM 75 diet is recommendable for Korean rockfish farming.
The purpose of this study was to determine which differences in the source of protein (soy vs casein) and isoflavones in soy protein are responsible for the differential effects of bone marks and hormones in growing female rats. Forty-two 21-day-old Sprague-Dawley female rats were randomly assigned to one of three groups, consuming casein (control group), soy protein isolate (57 mg isoflavones/100 g diet), or soy protein concentrate (about 1.2 mg isoflavones/100 g diet). All rats were fed on experimental diet and deionized water ad libitum for 9 weeks. Bone formation was measured by serum osteocalcin and alkaline phosphatase (ALP) concentrations. And bone resorption rate was measured by deoxypyridinoline (DPD) crosslinks immunoassay and corrected for creatinine. Serum osteocalcin, growth hormone, estrogen and calcitonin were analyzed using radioimmunoassay kits. Diet did not affect weight gain and mean food intake. Food efficiency ratio was lower in the soy protein groups. The soy isolate group had a higher ALP and osteocalcin concentration and lower crosslinks value than the casein group. Therefore, the soy isolate groups had a higher bone formation/resorption ratio than the casein group. And, the soy group had significantly higher growth hormone than the casein group. The findings of this study suggest that soy protein and isoflavones are beneficial for bone formation in growing female rats. Therefore, exposure to these soy protein and isoflavones early in life may have benefits for osteoporosis prevention.
Properties of acid tolerance of an adipic acid-resistant mutant, Leuconostoc paramesenteroides (ANaP100) were studied and compared with those of its paired wild type of Leu. paramesenteroides (LPw). The value of protons permeability of LPw after an acid shock at pH 5.0 was 4.3 min, while the value of ANaP100 was 4.8 min at the same pH. The maximal specific activities of ATPase of LPw and ANaP100 were 0.59 unit/mg protein and 0.63 unit/mg protein at pH 6.0, respectively. The release of magnesium ion from the mutant strain was about 27.3% at pH 4 after 2 hrs, while the wild strain was about 52.2% under the same conditions. The contents of $C_{19:0,cyclo}$ and $C_{18:1}$ in a membrane fatty acid of ANaP100 and LPw were higher and lower, respectively, than that of LPw. These results indicated that acid tolerance of ANaP100 was improved in comparison with that of its wild type, LPw.
The pH, acidity, protein, color, reducing sugar, total sugar, alcohol and organoleptic characteristics of Takju containing 100% short grain rice (100 S), 100% long grain rice (100 L), 50 S+50% puffed rice powder (50 P) and 50 L+50 P were examined. After a drastic decrease during the initial stage of fermentation, the pH gradually increased except 100 L. Protein peaked at day 1 and decreased. A higher protein was noticed in puffed samples than in rice samples (p < 0.05). The Hunter "L" value decreased after a rise during the beginning of fermentation. Puffed samples showed higher reducing sugar than rice at day 0. Total sugar was similar to reducing sugar. A drastic increase in alcohol concentration was detected at day 2. Higher alcohol was observed in short grain than long grain and also in puffed samples than in rice (p < 0.05). A significant difference between 100 S and 100 L was observed in a sensory evaluation (p < 0.01); while no preference was detected.
Purpose Alpha fetoprotein(AFP) is a fetal serum protein that increases in germ cell tumors derived from liver cancer or egg yolk. AFP test has been used for screening of liver cancer, determination of tumor stage, determination of therapeutic effect, and fetal congenital malformations. The purpose of this study was to compare the results of the four kits, identify the advantages and disadvantages of each kit, and select the appropriate kits for our laboratory. Materials and Methods Blood samples were obtained from 89 patients attending the Seoul national university hospital. Experiments were carried out in accordance with manufacturer's instructions of four companies(A, B, C, D). The precision, recovery, linearity, and sensitivity test were performed for each kit. Results In case of the precision within the measurement, the CV value of the C kit was less than 5% at the low, middle, and high concentrations. The A, B and D kit's the CV value was less than 5% at the concentrations except the low concentration. The recovery rates of the A, B, C, and D kits were $100{\pm}15%$, $100{\pm}30%$, $100{\pm}16%$ and $100{\pm}14%$, respectively. All kits showed good linearity. Sensitivity was measured as 0.5 IU/mL for A, 0.4 IU/mL for B, 0.98 IU/mL for C, and 0.3 IU/mL for D. Conclusion The CV values of the four kits were within 10%, and the correlation coefficients were close to 1 for $R^2=0.978$, $R^2=0.992$ and $R^2=0.8957$. As a result, they are clinically available. Therefore, each laboratory should select the appropriate kit for their experiment's environment.
Purpose: Biliary atresia (BA) is a disease that manifests as jaundice after birth and leads to progressive destruction of the ductal system in the liver. The aim of this study was to investigate histopathological changes and immunohistochemically examine the expression of glial cell line-derived neurotrophic factor (GDNF), synaptophysin, and S-100 protein in the gallbladder of BA patients. Methods: The study included a BA group of 29 patients and a control group of 41 children with cholecystectomy. Gallbladder tissue removed during surgery was obtained and examined immunohistochemically and histopathologically. Tissue samples of both groups were immunohistochemically assessed in terms of GDNF, S-100 protein, and synaptophysin expression. Expression was classified as present or absent. Inflammatory activity assessment with hematoxylin and eosin staining and fibrosis assessment with Masson's trichrome staining were performed for tissue sample sections of both groups. Results: Ganglion cells were not present in gallbladder tissue samples of the BA group. Immunohistochemically, GDNF, synaptophysin, and S-100 expression was not detected in the BA group. Histopathological examination revealed more frequent fibrosis and slightly higher inflammatory activity in the BA than in the control group. Conclusion: We speculate that GDNF expression will no longer continue in this region, when the damage caused by inflammation of the extrahepatic bile ducts reaches a critical threshold. The study's findings may represent a missing link in the chain of events forming the etiology of BA and may be helpful in its diagnosis.

This study was carried out to develop a practical enzyme-linked immunosorbent assay(ELISA) for the determination of soy protein in processed meat products as a preliminary study. The titer of antiserum raised in rabbit by injection of SDS-treated whole buffer extract(WBE) from isolates soy protein(ISP) was above 1:10,000 in indirect ELISA. When the SDS concentration was higher than 0.03% the antibody-antigen reaction was inhibited significantly. However, the antibody-antigen reaction inhibition was not observed when the SDS concentration was less than 0.02%. The antibodies used in this experiment also reacted with renatured antigen after removing SDS by dialysis, though not better than with SDS-denatured antigen(immunogen). The calibration curve with $100\;{\mu}g/100\;ml$ of sensitivity was obtained in indirect competitive ELISA.
SDS-polyacrylamide gel electrophoresis for the proteins obtained from the plasma, Scapharca subcrenata and suapharca broughtonii, and for the proteins of muscles of several species in Bivalvia was performed. The protein patterns of plasma showed little difference between S. subcrenata and S. broughtonii in lower molecular weight weight proteins. However, the protein patterns of muscles of other species, which wre used in this study, were more shown in the lower molecular weights than the higher molecular weights in difference. Thus it is thought be an interesting fact. The protein band of blood corpuscles, 17,800 dalton, was not appeared in S. broughtonii, but this band was appeared in S. subcrenata. Henceforth this is the significantly important difference in these two species. But the protein patterns obtained from muscles of the species did not show a difference in a range of molecular weights between 10,000 and 100,000 daltons. Meanwhile, several protein bands obtained from Meretrix lusoria were similar to those of Mercenaria stimpsona. Hence, in this study, 6 protein bands which exist all species in Bivalvia and 4 characteristic protein bands in S. subcrenata and S. broughtoniionly, were investigated. And in four species of Eulamellibranchia, two protein bands in comon and the characteristic band of 23,000 dalton which is belong to Meretrix lusoria and Mercenaria stimdsona, were found. The molecular weights of the characteristic protein patterns, which are contained in each species, were measured and compared.
The biochemical composition of muscle from three deep-sea animals, Tanaka's eelpout Lycodes tanakae magistrate armhook squid Berryteuthis magister, and ocean sunfish Mola mola caught in the East sea in South Korea was determined. The moisture (81.4-93.8 g/100 g), crude protein (5.0-15.6 g/100 g), crude lipid (0.1-1.5 g/100 g), and ash (1.0-1.1 g/100 g) contents of the two fishes were analyzed. The proximate composition of magistrate armhook squid was: moisture 84.0 g/100 g, crude protein 12.4 g/100 g, crude lipid 0.7 g/100 g, and ash 1.5 g/100 g. There was little difference in the proximate compositions of the three animals. The total amino acid contents of Tanaka's eelpout, magistrate armhook squid, and ocean sunfish were 14.64, 10.75, 3.10-9.95 g/100 g, respectively. High levels of glutamic acid, aspartic acid, lysine, leucine, and arginine were found, while low levels of histidine, glycine, and cysteine were detected in the animals. A survey of the free amino acid contents of the animals revealed large amounts of alanine and glycine. Significant differences were found in the fatty acid composition among the three species. Specially, different saturated fatty acids (17.14-40.49%) such as C16:0, and C18:0, monounsaturated fatty acids (19.19-46.88%) such as C16:1, and C18:1, and polyunsaturated fatty acids (35.41-57.08%) such as EPA, and DHA was identified. Our results suggest that each of these deep sea animals possesses nutritional value and should be considered as a foodstuff.
