In Korea, food balance sheet and national nutrition survey have been conducted in parallel by Central Government for several decades. However, the gap between the two statistics became larger to reach an intolerable level in recent years, likely due to the limitation of dietary survey method in spite of the drastic change in dietary habits after industrialization and urbanization during last three decades. The currently available data from national nutrition survey was optimized by taking in to account of the food balance sheet. Adjusted consumption data for individual food items during the period of 1991-95 were given in tabular forms for groups of cereals potatoes sugars & sweets, legumes, nuts & seeds, fruits, vegetables, meats, eggs, dairy products oils & fats and fishery foods. Conversion factors of processed foods including wheat products, soybean products, Kimchi and dairy products into their raw materials were tentatively proposed. Great differences between supply data and intake data of food commodities were pointed out to be likely due to the seasonal variation and ignorance of processed foods and dining-out in the national nutrition survey. It is recommended to utilize these optimized food intake data as the nationally-representative one until new data from the national health and nutrition survey undertaken after modified procedures since 1998 are obtained and verified in future.
To determine the effect of anions on growth and major components of hot pepper fruit, various combinations of N, S and P concentration in culture media were employed. The results analyzed by using binary interaction method were 1. For the ideal condition for growth, the plant height was found by $75%\;NO_3^-+25%\;SO_4^{--}$ in NS group and $68.5%\;No_3^-+31.5%\;PO_4^{---}$ in NPgroup. The number of node was showed by $71%\;NO_3^-+29%\;SO_4^{--}$ and $75%\;NO_3^-+25%\;PO_4^{---}$. 2. The ideal condition for the maximum yield was by $77.5%\;No_3^-+22.5%\;SO_4^{--}$ and $72.5%\;NO_3^-+27.5%\;PO_4^{---}$. For matured fruit yield, $77%\;NO_3^-+23%\;SO_4^{--}$ and $73.5%\;NO_3^-+26.5%\;PO_4^{---}$ was found ideal. 3. There were no significant differences in the amount of free sugars and capsaicin between the treatments.
Extracts of Acanthopanax koreanum Nakai were decreased as the ethanol concentration was increased, but eleutherosides were increased. Extracts were increased as the extraction time was prolonged. Compared to 15 hrs extraction, extract yield and eleutherosides for 5 hrs extraction were 90.6% and 96%, respectively. Yields of extract and eleutherosides were 6.5% and 75% at $100^{\circ}C$. The optimum extraction conditions were obtained from the samples of 4 years' tree harvested at September, which were water and 50% ethanol as solvents, and $90^{\circ}C$ for 5 hrs extraction. Soluble solids, minerals, free sugars, free acids, free amino acids and total eleutherosides in the extract of Acanthopanax koreanum were $48.2{\sim}47.4%$, $4.5{\sim}5.3%$, 11.2711.80%, $3.02{\sim}3.18%$, 185.33 mg/100 $g{\sim}$ 348.14 mg/100 g and 990.84 mg/100 $g{\sim}$l,416.10 mg/100 g, respectively. The extract was viscous and yellowish brown liquid.
This study was carried out to hydrolyze lactose in commercial milk by ${\beta}-galactosidase$ from Kluyveromyces fragilis and to compare some physicochemical properties of yoghurts made from control and lactase-treated commercial milks. Quantitative analysis of sugars was performed by gas liquid chromatograph (GLC) on trimethylsilyl (TMS) derivatives. In commercial milk, 94.6% of lactose was hydrolyzed after 2 hours incubation at $40^{\circ}C$ with 6.0 units/ml of ${\beta}-galactosidase$. pH, titratable acidity and viable cell number of yoghurt made from lactase-hydrolyzed (LH) commercial milk were 4.1, 1.04% and $6.5{\times}10^8/ml$ of Str. thermophilus, $8.9{\times}10^8/ml$ of L. bulgaricus after 8 hours incubation at $40^{\circ}C$, respectively, The total contents of amino acid were 2.63% in control and 2.19%. in LH yoghurt. The total contents of free amino acid were 26.95 mg% in control and 17.55mg% in LH yoghurt. Analysis of free fatty acids resulted in that the contents of short chain fatty acids in LH yoghurt were a little higher than those in control. Both in control and LH yoghurt, the palmitic acid content was highest and that was followed by oleic and myristic acid.
Five takju prepared using four types of nuruk (a traditional Korean fermentation starter made of malted wheat; non-cooked, naturally inoculated) labeled SH, SS, JJ, and SJ, and one type of koji (cooked, inoculated with an inoculum) labeled MN, were compared. Titratable acidity, pH, sugars, ethanol, amino acids, organic acids, and microbial changes in samples were measured, and the sensory properties were evaluated. Titratable acidity, alcohol, and organic acid content increased as sugar contents decreased. The overall ethanol concentration of all takju increased over time, reaching a maximum of 13.08-14.96% (w/v) at 7-21 days. The total amino acid contents of takju prepared with nuruk, except for one (SJ), were higher than the takju prepared with koji (MN). Lactic acid bacteria were also isolated from the starters. Sequence analysis of 16S rRNA genes (500 - 600 bp) of 223 isolates revealed that the major strains were in the genera of Leuconostoc, Weissella, Pediococcus, and Lactobacillus.
The effect of various water-activity depressors, such as pol yo Is, sugars, and polymers, on the conversion yields of the enzymatic synthesis of maltosyl-$\beta$-cyclodextrin from $\beta$-cyc1odextrin and maltose through reverse reaction of pullulanase was investigated. PEG 6000 of concentration of 10% (w/w) was found to be the most acceptable water-activity depressor resulting for increment of conversion yield from 43.0% to 55.9%, corresponding maltosyl-$\beta$-cyc1odextrin concentration of 3.02 g/100 ml H20. Water activity was changed from initial 0.966 to 0.914 upon addition of 20% (w/w) of PEG 6000. The conversion yields were inversely proportional to the water activities, and the increased conversion yield was caused by water activity depression which inhibited the hydrolysis reaction of maltosyl-$\beta$-CD to maltose and $\beta$-cyc1odextrin. The changes of enthalpy ($\Delta$H), entropy ($\Delta$S), and Gibbs free energy ($\Delta$G) were calculated to be 36.788 kJ/mole, 0.067 kJ/mole K. and 14.433 kJ/mole, respectively. The synthesis of maltosyl-$\beta$-CD could be increased substantially by the intermittent feeding of $\beta$-cyclodextrin. PEG 6000 could be separated effectively from reaction mixture using ultrafiltration membrane for reutilization.

The purpose of this study is to develop biosensor for determination of glucose, lactate, and ethanol in foods and food-stuffs simultaneously. The multiple cathode system was prepared with an oxygen electrode having one anode and hexagonal cathode. Glucose oxidase, mutarotase, lactate oxidase, alcohol oxidase and catalase were used for immobilization to determine glucose, lactate, and ethanol. These components including ethanol were simultaneously determined by the immobilized enzymes in the multiple cathode system. The determination of the components by enzyme sensor was based on the maximum slope of oxygen consumption from enzyme reaction of each sensor part. The response time for analysis was 1 min. The optimum condition for glucose, lactate and ethanol sensor was found to be 0.1 M potassium phosphate buffer, pH 7.0 at $40^{\circ}C$. Interferences of various sugars and organic acids were investigated. Less than 10% of error was found in determination of the components except organic acids. This difference was compensated by the modified equation. This system was confirmed by conventional methods. It was concluded that the multiple cathode system of this study is for an effective method to determine sugar, organic acid, ethanol simultaneously in foods.
Citrus fruits are consumed worldwide due to their unique flavor and nutrition value. It is necessary to remove the haze material as well as to minimize the loss of major compounds such as organic acids, sugars, and ascorbic acid in membrane processes for clarification of juice. The objective of our research was to select the best membrane among one surface filter (Whatman No.4) and five microfiltration filters (GF/A, GF/D, GF/F, Gelman, and SM). Tangerine fresh blended with three times of water was partially clarified with 170 mesh followed by prefiltration in a Samduck filtration system. The best membrane was selected by measuring the amounts of major compounds in the permeates as well as the flux which were statistically analyzed with SAS program. The foulants on the membrane surface were observed by SEM. The flux of GF/A and GF/F decreased with time at probability 0.10. Gelman, SM, and GF/D maintained the stable flux. Gelman showed the highest total scores including nutritive value (the amounts of citrate, malate, and ascorbic acid) and purchasing need (brix and color). Therefore, the microfiltration membrane process was a very effective method in tangerine juice clarification and Gelman type A/E was proved to be the best membrane among the five microfiltration membranes.
For scientification of commercial fermented radish products the study on physicochemical and processing properties of various radish cultivars should be proceeded and needed. Moisture contents of 3 parts of root ranged from 91.3 to 94.0%. Although, the upper part showed less content of moisture and ash than other parts, the upper part contained higher amount of crude protein and soluble solids. The sugar contents of Baekkwang grown on spring was the lowest$(5.0^{\circ}Brix)$ and that of Taebaek grown on autumn was the highest $(6.6^{\circ}Brix)$ among 6 cultivars. Significant difference of acidity was shown in various cultivars but not in each parts. The most abundant soluble sugars in radish root was glucose ranging from 15.8 to $27.3\;{\mu}mole/g\;f.w.$ fresh weight, f.w. and followed by fructose ranging from 16.4 to $23.1\;{\mu}mole/g\;f.w.$ However, the content of sucrose ranging from 0.7 to $2.7\;{\mu}mole/g\;f.w.$ was the lowest compared to others. Hardness of fresh root was the highest in Taebaek $[93.4{\sim}156.9N/m^2(\times10^3)]$, followed by Dongja and Chudong, and the lowest in Baekkwang. Changes in rigidity of roots during brining were determined. Although the rigidity was drastically reduced during initial 60 min., it was reversely increased during further storage. Sensory acceptabilities of Taebaek and Dongja were the best among 7 cultivars. Optimal time of radish fermentation at pH of 4.2 and acidity of 0.6% was between 24 and 28 days of storage.
This study was attempted to identify microorganisms in fermenting soybean curd residues (SCR). The changes in contents of free amino acids, nucleosides, reducing sugars, and oligosaccharides were also studied. The fermentation of SCR which was by change inoculation was carried out at $55^{\circ}C$ for 48 hrs. pH increased gradually during fermentation and isolated microorganisms were identified as Bacillus subtilis and Bacillus licheniformis. Moisture content decreased from 80.8% to 58.4% at 48 hrs of fermentation and other proximate composition did not show any changes during fermentation. The content of total free amino acids increased rapidly and the number and quantities of each amino acid analyzed also increased during the course of fermentation. Glutamic acid, phenylalaine, lysine and aspartic acid were rapidly liberated during fermentation. As to the changes of nucleotides, 5'-AMP little changed during the first 36 hrs but subsequently decreased to approximately 1/6 after 48 hrs of fermentation. On the other hand, 5'-IMP plus 5'-GMP did not show almost any change during the first 36 hrs but increased about 3.5 times at 48 hrs of fermentation. However, 5'-XMP was not detected. The reducing sugar level showed rapid and steady increase throughout the fermentation and that of stachyose plus raffinose decreased slightly. From these results, a possible way of utilization of fermented SCR was proposed as a substitute for soybean in meju preparation.
