반응 표면 분석을 이용한 클로렐라 쌀 머핀의 개발 (Development of Rice Muffin with Chlorella using Response Surface Methodology)

  • The aim of this study was to improve rice muffin quality with sorbitol using response surface methodology(RSM). Response surface experimental design was made by central composite design using several independent factors. In preliminary experiment of chlorella rice muffin, rice flour(RF), chlorella(CH) and sorbitol(SO) were chosen as independent factors. Response factor was the overall acceptability obtained from sensory evaluation. The regression model equation could be predicted as $OV=6.70-0.45CH-0.44RF^2-0.81CH^2-0.60SO^2$. The optimal conditions for chlorella rice muffin substituted with sorbitol were determined to be 60.8% of RF, 4.7% of CH and 35.45% of SO. Rice muffin was superior to flour muffin in sensory evaluation using the prediction value derived from RSM. Therefore, the optimum condition of muffin could be developed by RSM.

품종별 쌀가루로 제조한 퀵 브래드 쌀 머핀의 가공성 비교 (A Comparative Study of the Processing Aptitudes of the Muffins Produced by Rice Cultivars)

  • This study was performed to compare the processing aptitudes of the rice muffins produced from the seven rice varieties, including Goami, Goami 2, Deuraechan, Baegjinju, Seolgaeng, Haiami and Hanareum, along with the use of hydroxypropyl methylcelluloses (HPMCs) as a replacement for the egg white. The water binding capacity of rice flours was significantly higher than that of wheat flour, but its fat binding capacity was lower than that of wheat flour (p<0.05). In the viscosity of the batter, Goami and Baegjinju were lower than that of the wheat flour. There was no significant difference in the specific gravity of Seolgaeng and the batter of wheat flour. The pH of all varieties except Goami 2 was higher than batter of wheat flour(p<0.05). Haiami flour produced higher muffin volume and specific volume compared with the wheat flour muffin. The textural characteristics, the muffins produced by Haiami and Hanareum flours had significantly lower hardness than the wheat flour muffin after 30 hours. All rice varieties except Gaomi 2 showed no significant difference compared to the wheat flour muffin in color, taste and texture (p<0.05). Furthermore, flavor of muffins produced from the Seolgaeng, Haiami and Hanareum flours tested higher than the wheat flour muffin. It was concluded that the rice varieties of Seolgaeng, Goami, Haiami and Hanareum were considered to be the most suitable rice cultivars for the rice muffins.

  • The purpose of this study was to determine the optimal composite recipe of rice muffin using three different amounts of Chinese artichoke (Stachys sieboldii MIQ) powder, brown sugar, and egg. Response surface methodology (RSM) was used to obtain 16 experimental points (including three replicates of Chinese artichoke powder, brown sugar, and egg), and the Chinese artichoke rice muffin formulation was optimized using rheology. The results of the sensory evaluation showed very significant values for color, texture, sweetness, and overall quality (P<0.05). The results of the color, texture, and chemical analyses showed significant values for crumb redness (P<0.01), crumb yellowness (P<0.05), crust redness (P<0.05), crust yellowness (P<0.001), crust lightness (P<0.05), adhesiveness (P<0.01), springiness (P<0.001), gumminess (P<0.01), cohesiveness (P<0.05), moisture content (P<0.05), and sweetness (P<0.05). As a result, optimum formulations obtained by numerical and graphical methods were found to be 8.28 g of Chinese artichoke powder, 66.20 g of brown sugar, 111.72 g of sticky rice powder, 30 g of rice powder, and 59.37 g of egg.

  • We examined the quality characteristics and conducted a sensory evaluation of muffins made with rice flour and the biopolymer hydroxyethyl methylcellulose (HEMC) to identify a new health functional food additive. First, overrun and foam stability of HEMC-HV (high viscosity) was better than HEMC-LV (low viscosity) to prepare muffins. Also the quality of rice muffins(volume, specific cake volume, and baking loss) was analyzed. There was no significant difference in the sensory evaluation of rice flour muffins containing foam mixture(egg white:HEMC-HV, 3:1, v/v) and muffin made from flour. The results showed that HEMC-HV was suitable for quick bread muffin-making using 100% rice flour.

미강을 첨가한 머핀의 품질 특성 (Quality Characteristics of Muffin Added with Rice Bran Powder)

  • Muffins were prepared with different amounts of rice bran powder (0~30%), and their quality characteristics were investigated. The specific gravity of batters increased with increasing rice bran. While the initial pasting temperature increased with increasing rice bran amount, peak viscosity and viscosity at $95^{\circ}C$ after 15 min gradually decreased. The pH value of batters and muffins decreased with increasing rice bran amount. Moisture content of muffins was affected by the addition of rice bran powder. The lightness and yellowness values of muffins decreased with increasing rice bran amount, whereas redness value increased. For textural characteristics, hardness, gumminess and chewiness of muffins significantly increased with increasing rice bran amount, whereas cohesiveness and springiness decreased. Aircell uniformity of muffins became larger and more random as rice bran powder content increased. In the sensory evaluation, scores of taste and texture were the highest in muffin added with 5% rice bran powder. Overall acceptability was highest in control and the 5% group without any significant difference. Values of color, flavor, taste, texture and overall acceptability of muffins tended to decrease as rice bran powder content increased.

쌀겨를 첨가한 머핀의 품질 특성 (Quality Characteristics of Muffin Added with Rice Bran)

  • 영양적, 기능적으로 우수한 쌀겨의 이용 가능성을 확인하고 유용자원의 재활용을 통해 쌀 가공 산업의 확대를 목적으로 본 연구를 진행하게 되었다. 쌀겨를 첨가한 머핀의 높이 측정결과 쌀겨의 농도와 저장기간이 증가할수록 감소하는 경향을 보였다(p<0.05). 머핀의 무게는 시료간의 유의적인 차이가 발견되지 않았다. 머핀의 색도는 쌀겨의 첨가량이 증가할수록 L값은 감소하였고 a 및 b값은 증가하는 경향을 보였다(p<0.05). 머핀의 수분함량은 0일차에 수분함량 범위가 30.47~34.07%였으나 저장 1일차에는 33% 전후의 수분함량으로 전처리군의 수분함량이 유사한 값을 보였다. 머핀의 경도는 0일차에 부산물의 첨가량이 0, 3, 5% 일때 각각 760.90, 645.95, 626.87로 부산물의 농도가 증가할수록 감소하였다. 저장 1일째에 경도는 모든 처리군에서 초기 경도보다 2배 이상의 값을 나타내어 0, 3, 5, 10%에서 각각 1644.49, 1522.61, 1464.79, 1613.90을 보였다. 그러나 저장 2일째에서는 머핀경도의 변화가 크게 나타나지 않았고 처리군간에 경도차이도 보이지 않았다. 부착성은 저장기간별, 부산물 첨가량별 유의적인 차이가 없었고 탄력성은 저장기간에 따라 전 처리군에서 다소 감소하는 경향을 나타내었다. 검성은 저장 0, 1일째에는 부산물의 농도가 증가할수록 감소하다가 부산물의 농도 10%에서는 다시 증가하여 대조군과 유사한 값을 나타내었다. 관능검사 결과 대조군이 머핀의 색과 향에서 높은 점수를 획득한 반면, 쌀겨 첨가 머핀이 맛, 촉촉함, 씹힘성 및 전반적인 기호도는 더 높은 것으로 나타났다. 쌀겨에 들어있는 식이섬유의 수분흡착 작용으로 수분 보유력이 증대되어 머핀의 촉촉함을 유지시켜 주고 전반적인 기호도가 높은 것으로 보아 쌀겨의 머핀을 비롯한 제빵 이용시 식미를 증진 시킬 수 있을 것으로 기대되었다.

홍국 첨가량에 따른 머핀의 품질특성 (Quality Characteristics of Muffin Added with Red Yeast Rice and white rice)

  • 본 논문은 홍국의 첨가량을 2%, 4%, 6%, 8%, 10% 첨가한 머핀을 만들어 일반성분, 색도, pH, 중량 및 굽기 손실률, 부피 및 비용적, 상부 단면 직경 및 높이, 기계적 조직감, DPPH radical 소거능, ABTS radical 소거능, 총 페놀 함량, Monacolin-K 함량, 관능적 특성 등을 실험하였다. 색의 명도 값과 황색도 값은 대조군이 첨가군보다 낮은 값을 나타냈고, 적색도 값은 첨가군 에서 높은 값을 나타냈다. 홍국 머핀에서 pH는 홍국의 첨가량이 늘어날수록 낮아지는 pH값을 나타냈고, 굽기 손실률에서는 홍국 첨가량이 증가 할수록 조금씩 낮아지는 값을 나타냈다. 기계적 조직감은 홍국 첨가량에 따라 경도는 10%에서 부드럽게 나왔고, 부착력, 응집성, 점성 (Gumminess), 씹힘성에서는 2%의 값이 높게, 탄력성은 8%에서 높게 나타내었다. DPPH radical 소거능과 ABTS radical 소거능은 홍국 첨가량이 증가할수록 값이 높아지는 값을 나타내었고, 총 페놀(Total phenol content)함량은 홍국첨가량이 증가 할수록 값이 높아지는 경향을 나타내었다. Monacolin-K 함량은 홍국 첨가량이 가장 많은 10%에서 가장 높은 값을 나타내었고, 관능검사는 맛, 감촉, 전반적인 기호도가 4%에서 좋게 평가되었고, 향미와 색에서 좋게 평가되었다. 이상의 결과에 의하면 홍국 첨가가 제과 제빵 재료로 이용 가능할 뿐만 아니라 항암, 혈압강하, cholesterol 억제 등에 영향을 미치기에 4% 홍국 첨가군이 일반머핀보다 관능적으로 좋게 평가되었기에 기능성을 가진 머핀제조가 가능할 것으로 사료된다.

표고버섯 첨가 찹쌀머핀의 최적화 및 품질특성 (Optimization of Sweet Rice Muffin Processing Prepared with Oak Mushroom (Lentinus edodes) Powder)

  • The purpose of this study was to bake sweet rice muffins with oak mushroom ($Lentinus$ $edodes$) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p<0.001) and redness (p<0.05) displayed a linear model pattern, whereas lightness (p<0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p<0.5), texture (p<0.5), and overall quality (p<0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p<0.5) and chewiness (p<0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.

  • This study was undertaken to optimize preparation of sweet rice muffins using lotus (Nelumbo nucifera Gaertn) seed powder. The experimental conditions used in the preparation included lotus seed powder (X1) and soybean oil (X2). The muffin formulation was optimized using rheology. Lightness (P<0.01) displayed a quadratic model pattern, whereas yellowness (P<0.01) and redness (P<0.05) was presented a linear model. Texture properties significantly differed in cohesiveness (P<0.05). Evaluating the sensory characteristics of muffins, except for flavor and texture, the remaining properties of color (P<0.01), taste, overall quality, and appearance (P<0.05) were found to be significantly different. The overall quality was also affected by the proportion of lotus seed powder, rather than the amount of soybean oil. The optimal ratio for palatability of muffins was determined to be 47.80 g lotus seed powder and 95.28 g soybean oil. Taken together, our results indicate that sweet rice muffins prepared using lotus seed powder are sufficiently competitive in terms of function and quality.

홍국분말을 첨가한 머핀의 품질 특성 (Quality Characteristics of Muffin Added Red Yeast Rice Flour)

  • 천연 기능성 소재인 홍국분말의 이용가능성을 알아보기 위하여 홍국분말을 0, 1, 3, 5, 10% 첨가한 머핀을 제조하여 품질특성을 조사하였다. 아밀로그래프에 의한 호화특성 측정결과 홍국분말의 첨가는 밀가루의 호화개시온도에 영향을 미치지 않았으며, 홍국분말 첨가량이 증가할수록 최고점도와 최종점도가 감소하였다. 또한 홍국분말의 첨가량이 증가할수록 머핀의 L값은 감소하였고, a값은 현저히 증가하였다. 머핀의 부피는 모든 첨가군에서 대조군에 비해 감소하였다. 경도와 점성은 10% 첨가군에서만 대조군과 유사한 경향을 나타냈으며, 탄력성과 응집성은 대조군과 차이가 없었다. 관능검사 결과, 외관, 색상, 맛, 조직감에서 모두 홍국분말 3% 첨가군이 가장 높게 평가되었다. 그러나 향에서는 첨가량이 증가함에 따라 그 기호도도 감소하는 것을 확인하였다. 이상의 결과로 홍국분말의 첨가가 품질특성에 영향을 미치기는 하지만 3% 정도의 첨가는 일반머핀보다 관능적으로 우세하게 평가되었기에 기능성을 가진 머핀제조가 가능할 것으로 사료된다.
