Nutritional and Health Status of Nurses, Medical Doctors and Factory Workers (근무시간이 불규칙한 사람들의 식생활태도 및 건강상태에 대한 조사 연구)

  • The purpose of this survey was to investigate the nutritional status of special working persons related to health status, nutrient intake and living environment. The survey was conducted on workers in 9 general hospitals and 2 factories from Nov. 24 in 1979 to Jan. 20 in 1980. Nurses, medical doctors on intership or residency, and factory workers were chosen as subjects because of their irregular working hours, i.e., they sometimes work during the day and. sometimes at night. The total number of subjects was 417 for nurses, for medical doctors was 91, and was 216 for factory workers, all together 724 subjects were investigated. The results obtained are summarized as follows: 1) Average nutrient intake of subjects per day. For nurses the caloric intake was 1743 Kcal. This was composed of carbohydrate 251g(57.6%), protein 81g (18.5%), and fat 46g (23.9%). Other nutrient intake, such as iron (16mg), thiamin (0.98mg), riboflavin (1mg) was lower than the recommended dietary allowance. For male medical doctors, the caloric intake was 2064 Kcal, This was composed of carbohydrate 288g (55.8%), protein 102g (19.8%) and fat 56g (24.4%). Other nutrient consumption, such as riboflavin (1.31mg) was lower than the recommended dietary allowance. For female medical doctors, the caloric intake was 1909 Kcal. This was composed of carbohydrate 156g(53.7%), protein 90g (18.9%) and fat 58g (27.4%). For male factory workers, caloric intake was 1699 Kcal. This was composed of carbohydrate 317g(74.5%), protein 64g (15.0%) and fat 20g(10.5%). Other nutrient intake, such as vitamin A (4765IU), ascorbic acid (46mg) and riboflavin (1.11mg) were lower than the recommended dietary allowance. For female factory workers, the caloric intake was 1630 Kcal. This was composed of carbohydrate 287g (70.5%), protein 65g (15.8%) and fat 25g (13.7%). Other nutrient consumption, such as iron (15mg), riboflavin (1.04mg), ascorbic acid (42mg), and vitamin A (4334IU) was lower than the recommended dietary allowance. The percentage of animal protein to total protein was 65.2% in nurses, 67.4% in male medical doctors, 64.9% in female medical doctors, 38.6% in male factory workers, and 45.6% in female factory workers. 2) The average Kaup's value of subjects was 1.9 in nurses, 2.2 in male mcdical doctors, 1.9 in female medical doctors, 2.0 in male factory workers, and 2.1 in female factory workers. 3) The health status of subjects according to their self diagnosed answer was as follows; The percentage of food health was 82. 7% in nurse, 82.7% in nurse, 83.5% in medical doctor, and 56% in factory workers. The remainder answered that they were in poor health.

Vitamin Retention and Acceptance Evaluation of Cook-Chill and Sous-vide Soybean Sprouts Products (Cook-Chill 및 Sous-vide 콩나물제품의 비타민 보존 및 기호도 평가)

  • The effects of cook-chill and sous-vide upon the vitamin retention and acceptance of soybean sprout muchim and soybean sprouts soup were evaluated. When the sous-vide packaged soybean sprout muchim was stored at 3$^{\circ}C$ for 1, 3, and 5 days, the contents of thiamin, riboflavin, and ascorbic acid were not changed. However, the nutrient contents were changed in sous-vide packaged soybean sprouts soup stored at the same conditions at each storage time up to 5 days. The contents of thiamin, riboflavin, and ascorbic acid showed the lowest level at 5 days after storage. Regarding customer's acceptance of sous-vide packaged soybean sprout muchim compared to the freshly cooked one, the former had a higher score in taste and color than the latter. Overall acceptability of the sous-vide soybean sprout muchim had a lower score than that of the freshly cooked one, but the sensory characteristics did not show any significant difference between them. The freshly cooked soybean sprout soup had higher scores in taste, flavor, color, texture, appearance, and overall acceptability than the son-vide packaged soybean sprout soup. The former, however, had a significantly higher score in color (p<0.05) and the overall acceptability (p<0.01) than the latter.

Evaluation of Nutrient Intakes in the Hemodialysis Patients According to the Socioeconomic Status - In Daejeon and Chungnam Areas - (혈액투석환자의 사회경제적 수준에 따른 영양소 섭취상태의 평가 - 충남지역을 중심으로 -)

  • This study was performed to evaluate the quality of nutrient intakes of the hemodialysis patients (26 men and 23 women) according to the socioeconomic status by 3-day dietary recall in Daejeon city and Chungnam area, Korea. Mean age of the subjects was 50.7 yrs and BMI was 22.0 $\pm$ 0.4 kg/$m^2$. Education level was divided into two groups ($\leq$ 9 years: LE group, 9 years: HE group), and monthly family income level was divided into three groups (< 500,000 won: LI group, 500,000-1,499,999 won: MI group, $\geq$ 1,500,000 won : HI group). The data were analyzed by Student t-test and Oneway ANOVA using SPSS 9.0 version at p < 0.05 level. Intakes of energy, carbohydrates, cholesterol, potassium, thiamin and riboflavin were significantly higher in HE group than in LE group (p < 0.05). Intakes of all the nutrients except protein and phosphorus were less than Korean RDA, and INQs (Index of Nutritional Quality) of most nutrients were lower than 1.0 but cholesterol, phosphorus. thiamin and niacin being over 1.0 in HE group. MAR (Mean adequacy ratio) of all the nutrients (e.g., energy, protein, calcium, phosphorus, iron, vitamin A, vitamin C, thiamin, riboflavin and niacin) was significantly higher in HE group (0.61 $\pm$ 0.04) than in LE group (0.48 $\pm$ 0.03) at p = 0.036. Intakes of energy, protein (total, animal and plant), fat, cholesterol, potassium, calcium, phosphorus, iron, vitamin A, thiamin and riboflavin were also significantly higher in HI group than in LI and MI group (p < 0.05). Daily intakes of most nutrients were less than Korean RDA except protein ed phosphorus in HI poop, and INQs of thiamin, niacin and phosphorus were higher than 1.0, while those of calcium, iron, vitamin A and riboflavin were lower than 1.0. MAR of energy and 9 nutrients was significantly higher in HI group (0.70 $\pm$ 0.04) than in LI group (0. 56 0.04) and MI poop (0.47 $\pm$ 0.03) at p = 0.000. In conclusion, quality of nutrient intakes, especially energy and protein, was significantly influenced by socioeconomic status such as education and monthly income (p < 0.05). This result suggests that it would be very helpful to develop nutritional education programs considering hemodialysis patients' education levels, and to improve public supports (e.g., medical insurance system, low-rate lease system of dialysis equipments, etc.) focusing on the patients' family income levels f3r their better nutrition and health.

Lactic acid bacterial inoculant effects on the vitamin content of alfalfa and Chinese leymus silage

  • Objective: Information regarding the vitamin content of silage is limited. This study investigated the changes in the vitamin content of alfalfa and Chinese leymus silages with or without a lactic acid bacterial inoculant. Methods: Alfalfa at the early flowering stage and Chinese leymus at the full-bloom stage were harvested. The treatments for each forage type were control (deionized water only) and $1{\times}10^6$ colony-forming units Lactobacillus plantarum (LP)/g fresh matter. After 45 days of ensiling, all silages were sampled for evaluating the vitamin content, fermentation quality and chemical composition. Results: The LP inoculant decreased the pH value and ammonia nitrogen content of the alfalfa and Chinese leymus silages and significantly (p<0.05) increased the lactic acid, acetic acid concentrations and Flieg's points. Prior to ensiling, the levels of five B-group vitamins (thiamin, riboflavin, niacin, pantothenic acid, and pyridoxine) and ${\alpha}$-tocopherol in alfalfa were significantly (p<0.01) higher than those in Chinese leymus. Ensiling decreased the levels of the five B-group vitamins in both alfalfa and Chinese leymus while increasing the ${\alpha}$-tocopherol content of Chinese leymus. The thiamin, riboflavin, niacin and pantothenic acid levels in the LP-treated silage were significantly (p<0.05) lower than those in the untreated silage for the alfalfa and Chinese leymus. The ${\alpha}$-tocopherol content in the LP-treated alfalfa silage was significantly (p<0.05) higher than that in the untreated alfalfa silage. There was no significant (p>0.05) difference in pyridoxine content between the untreated and LP-treated silages for both forages. Conclusion: With or without LP inoculation, the levels of the five B-group vitamins (thiamin, riboflavin, niacin, pantothenic acid, and pyridoxine) in alfalfa and Chinese leymus decreased after 45 days of ensiling, while the ${\alpha}$-tocopherol content of Chinese leymus increased. The LP inoculant improved the fermentation quality of both the alfalfa and Chinese leymus silages but increased the thiamin, riboflavin, niacin, and pantothenic acid loss in the two forages after fermentation.

Regulation of ANKRD9 expression by lipid metabolic perturbations

  • Fatty acid oxidation (FAO) defects cause abnormal lipid accumulation in various tissues, which provides an opportunity to uncover novel genes that are involved in lipid metabolism. During a gene expression study in the riboflavin deficient induced FAO disorder in the chicken, we discovered the dramatic increase in mRNA levels of an uncharacterized gene, ANKRD9. No functions have been ascribed to ANKRD9 and its orthologs, although their sequences are well conserved among vertebrates. To provide insight into the function of ANKRD9, the expression of ANKRD9 mRNA in lipidperturbed paradigms was examined. The hepatic mRNA level of ANKRD9 was repressed by thyroid hormone ($T_3$) and fasting, elevated by re-feeding upon fasting. However, ANKRD9 mRNA level is reduced in response to apoptosis. Transient transfection assay with green fluorescent protein tagged- ANKRD9 showed that this protein is localized within the cytoplasm. These findings point to the possibility that ANKRD9 is involved in intracellular lipid accumulation.

Spectrofluorometric Properties of N-Terminal Domain of Lumazine Protein from Photobacterium leiognathi

  • Lumazine protein is a member of the riboflavin synthase superfamily and the intense fluorescence is caused by non-covalently bound to 6,7-dimethyl 8-ribityllumazine. To figure out the binding modes and the structure of the N-terminal domain of lumazine protein, the wild type of protein extending to amino acid 118 (N-LumP 118 Wt) and mutants of N-LumP 118 V41W, S48W, T50W, D64W, and A66W from Photobacterium leiognathi were purified. The biochemical properties of the wild type and mutants of N-LumP 118 proteins were analyzed by absorbance and fluorescence spectroscope. The peak of absorbance and fluorescence of lumazine ligand were shifted to longer wavelength on binding to N-LumPs. The observed absorbance value at 410 nm of lumazine bound to N-LumP 118 proteins indicate that one mole of N-LumP 118 proteins bind to one mole of ligand of lumazine. Fluorescence analysis show that the maximum peak of fluorescence of N-LumP S48W was shifted to the longest wavelength by binding with 6,7-dimethyl 8-ribityllumazine and was shown to the greatest quench effect by acrylamide among all tryptophan mutants.

A Study of the Diet-Pattern for Residents in Gwangju and Yeosu Area (광주와 여수지방에 있어서 일부시민의 식이구성에 관한 연구)

  • The diets of Gwangju and Yeosu city residents, nutrition survey was carried out both 1979 and 1980 year. 1. Average intake of nutritional elements for an adult per day was 654.88 gr. 2. Average Calorie distribution of the nutritional elements per adult per day was 17.85% for protein, 79.35% for carbohydrate, and 2.81% for Fat in Gwangju; 22.22% for protein, 73.88% for carbohydrate and 3.91% for Fat in Yeosu. 3. The ratio of the animal protein to total protein consumed was 75.09% in average. The amount of ingested protein, animal protein and plant protein were 130.05gr., 97.65gr. and 32.39gr. respectively. 4. In aspect of Calorie, take-in calorie was 2749.38 cal. which was lower than the RDA (3000 cal.). 5. In aspect of the minerals(Fe, Ca), the intake of Ca was 608.47mg. in Gwangju, but 491.89mg. in Yeosu. The intake of Fe in Gwangju and Yeosu were 13.21mg. and 10.22mg. respectively. The RDA for Fe, Ca were 600mg. and 10mg. respectively. 6. The amount of intaked thiamine and riboflavin were 1.48mg. and 1.01mg. respectively. The RDA of thiamine and riboflavin were 1.5mg. and 1.8mg. respectively.

Acute Oral Toxicity Studies of WHS-1 and WHS-2 in Rats (경구용 복합제 WHS-1,2의 급성독성시험 연구)

  • Single oral administration to SD rats of both sexes were performed to investigate the acute toxicity of two new cough and cold remedies, WHS-1 and WHS-2. WHS-1 is composed of acetaminophen, chlorpheniramine maleate, cloperastine hydrochloride, dl-methylephedrine hydrochloride, caffein anhydrous, thiamine hydrochloride, riboflavin and serratiopeptidase. WHS-2 is composed of similar formula except that thiamine hydrochloride and riboflavin is not added. The results were as follows. $LD_{50}$ values of WHS-1 were 4295.5 mg/kg for males and 4606.3 mg/kg for females, and $LD_{50}$ values of WHS-2 were 3236.7 mg/kg for males and 4360.5 mg/kg for females. Death occurred within 2~3 hours after administration at doses up to 2900 mg/kg in WHS-1 and 2500 mg/kg in WHS-2, the main cause of deaths seemed to be respiratory disturbance. General symptoms included decreased motor activity, salivation and loss of consciousness which were commonly observed in all dead animals treated with WHS-1 and WHS-2. No significant gross finding and body weight changes were observed at any dose level in the groups treated with WHS-1 and WHS-2.

Evaluating Nutrient Intakes of Korean Elderly Using Semi-Quantitative Food Frequency Questionnaire (반정량 식품섭취빈도 조사지를 이용한 한국노인의 영양섭취 실태조사)

  • The aim of this study was to assess the nutrient intakes of the elderly subjects in Korea. Dietary assessment was carried out using a semi-quantitative food frequency questionnaire (SQFFQ) developed by our laboratory, which included 98 commonly consumed food items selected from 1998 National Health and Nutritional Survey for Korean population. Subjects (n = 2,660) aged 50yr and over were recruited in Seoul, 6 metropolitan cities, and 8 mid-size cities. Calcium and riboflavin intakes of the elderly subjects aged 65 yr and over (n = 1,974) were much lower compared with Korean RDA. Nutrient intakes of the three age group (50-64 yr, 65-74 yr, 75 yr and over) were decreased as age increased in male and female elderly. Nutrient intakes of male elderly, 75 yr and over, were significantly decreased while in female elderly nutrient intakes were gradually decreased as age increased. Over 30% of the elderly subjects did not meet 75% RDA for calcium, iron, vitamin A, and riboflavin. The proportion of the elderly subjects whose intakes were below 75% RDA was much higher than the elderly whose intakes were above 125% RDA, especially among the elderly aged 75 yr and over. This study revealed that the Korean elderly had inadequate intakes for many nutrients. This will cause a serious nutritional problem for the elderly.

The Stability of Water-soluble and Fat-soluble vitamin in milk by Heat treatments (수용성비타민과 지용성비타민의 가열에 대한 안정성)

  • This study was conducted to investigate the thermal stability of water-soluble and fat-soluble vitamins dissolved in water and milk by various heat treatments. Vitamin samples were prepared by dissolving them in water and milk at various concentrations, and were heat treated for 30 min at 65$\^{C}$, 15 sec at 85$\^{C}$, 5 sec at 100$\^{C}$, 121$\^{C}$ at 15 min, the levels of residual vitamin were measured by using HPLC. Milk samples were fortified with vitamins before and after UHT treatment. As heating over 100$\^{C}$, riboflavin in water were destructed more than 92% but fortified in milk showed less than 20% destruction, suggesting that riboflavin was protected by milk components. Also retinol heated ever 100$\^{C}$ was more stable in milk than in water. L-Ascorbic acid and cholecalciferol(D$_3$) showed a similar destruction rate in water and in fortified milk. L-ascorbic acid was easily destructed by UHT treatment. Destruction of thiamin and tocopherol was increased in fortified milk. Among tour capsulated water-soluble vitamins, L-ascorbic acid was much more stable compared with powder form. Nicotinic acid and folic acid either in capsule or powder form showed a slight destruction by heat treatment. The results suggested that the fortification of unstable vitamins such as L-ascorbic acid, thiamin, tocopherol and cholecalciferol(D$_3$) should be made in milk after heat treatment.
