Preparation and Characteristics of Patty with Red-Tanner Crab (Chionoecetes japonicus) Paste (게 페이스트 첨가 패티의 제조 및 특성)

  • New types of patties were prepared with surimi and crab paste, and then characterized. With an increase of additional ratios of crab paste, the moisture (64.8 to $61.5\%$) of the patties slightly decreased while the ash contents (2.3 to $3.7\%$) increased. The Hunter's color values of the patties decreased in lightness (L value, 58.79 to 54.27) but increased in redness (a value, -2.77 to 3.54). Thus, the patties that had added crab paste appeared slightly more reddish. According to the increasing of additional ratios of crab paste, sensory scores on color and flavor increased whereas the texture score decreased. From the above results, based on physical properties and sensory evaluation, the desirable additional ratio of crab paste for preparing patty was $15\%$. The calcium and phosphorus contents of the patties with the addition of $15\%$ crab paste were 148.8 mg/100 g and 139.6 mg/100 g, respectively, and their ratio (approximately 1:1) was the optimal range in body absorption efficiency. The calcium absorption rate with the $15\%$ additions was 4.9 times higher than that of the patty with no additions. Total amino acid content (16,302 mg/100 g) of the $15\%$ additions showed no difference to the patty without additions, and the major amino acids were aspartic acid, glutamic acid, leucine and lysine. Exceptionally, the cysteine content of the patty with the $15\%$ crab paste additions was 2 times higher than that found in the patty without crab paste. The major fatty acids were 16:0, 18:1n-9 and 18:2n-6 of the total lipids, and there was no difference between the patties with and without crab paste. The above results showed that crab paste can be used as a crab surimi gel source.

Probe of Algal Growth Potential (AGP) by Physio-Biochemical Analysis of Microalgae in the Stagnant Watershed (정체 수역 내에서 미세조류의 생리생화학적 분석에 의한 수화발생 잠재력 탐색)

  • Algal growth potentials were probed by algal growth rates, maximal PSII quantum yields and ATP amount as well as dry weights of algae to evaluate the water fertility due to the algal growth in the stream (CT) and stagnant watershed (WW). Oscillatoria agardhii (CY) and Coelastrum reticulatum (CH) were cultured in nitrogen (N) and phosphorus (P) starvation media (CH-10 medium) and re-inoculated in CT and WW for 7 days. Cell division rates of CY were the highest (k = 7.5) in WW after N starvation, while those of CH were the hight (k = 2.97) in WW after P starvation. The growth of CY was limited by P, while that of CH was by N. Conversely, maximal PSII quantum yields of CH were generally higher than those of CY in CT and WW according to culture time. CY was much more sensibly adapted than CH according to the variations of nutrient amounts in WW. The water fertility was much higher in WW than in CT. The potential assessment tool for water fertility will be able to compensate for the limit of physio-chemical analyses and to be applied as a monitoring system to forecast red-tide.

  • The Guk was divided Malgunjangguk, Tojangguk, and Gooumguk as to cooking method. Gooumguk was boiled with several materials of beef, bone, organs and water for the long time, and a good source of protein, calcium, and phosphorus. In the thesis, according to the kinds of Gooumguk, the reference frequency to them, the adding foods in them, and the variety cooking method in the Gooumguk were analyzed by the cooking books published from 1670 to 1988 in Korea. 1. There were 41 kinds of Gooumguk and Kaejang, Joktang and Byultang were firstly published to Omshikdimibang in 1670. 2. Many kinds of Gooumguk were generally used on royal parties in Yi dynasty and were used by several substances. 3. The main substances of Gooumguk were meat, poultry, fish, and shellfish. The seasoning substances were green onion, garlic, ginger and black pepper etc, and were used for the removal of the meat's or fish's off-flavor. 4. Yangtang, Kalbitang, Joktang, Yeongebacksuk, and Chooatang etc expressed the taste of the one main substance and Japtang, Sulnongtang, Yukgejang, Yongbongtang etc were combinated the taste of the several materials. 5. Cooking methods of Yukgaejang and Koritang before 19 century were different in present.: Yukgaejang was not used Gochoojang or powdered red pepper and Koritang was used Gochoojang.

Effects of formalin on haematology and blood chemistry in crucian carp (Carassius auratus) (포르말린 침지에 의한 붕어(Carassius auratus)의 혈액학 및 혈액화학치에 대한 영향)

  • To determine the effects of exposure to formalin on the secondary stress indices, changes in haematology and blood chemistry were monitored in healthy crucian carps (Carassius auratus). Fishes were separately exposed in a concentration range of 125 to 500 ppm formalin for 60 min. After exposure, red blood cell (RBC) count and packed cell volume (PCV) were elevated in the 500 ppm formalin exposed group. However, mean corpuscular volume (MCV) and mean corpuscular haemoglobin (MCH) were decreased significantly in the 500 ppm formalin exposed group. Total protein, albumin, aspartate aminotransferase (AST), alanine aminotransferase (ALT), creatinine, total bilirubin, inorganic phosphorus (IP) and magnesium were significantly increased at a concentration of 500 ppm. Alkaline phosphatase (ALP) and glucose were increased at a concentration of 500 ppm, but this was not significant. Lactate dehydrogenase (LDH) and calcium were significantly decreased at concentrations of 250 and 500 ppm. AST, ALT, glucose and magnesium were significantly increased in the 250 ppm formalin exposed group. These results suggests that formalin exposure might cause some damage in the liver and kidney of crucian carp.

The Value of Milk and Korean Dietary Life (우유의 진가와 한국인의 식생활)

  • Milk and milk products, especially the cow's milk and cheese, have been used since the ancient time. Because they contains almost all kinds of nutrients that are necessary for human beings except for iron, n-3 fatty acid, and vitamin C. Milk is an excellent dietary source of protein, calcium and phosphorus. The biological value of milk protein is as high as those of red meat and eggs. So cheese, a food processed from concentrated milk protein, is highly recommended food for the patient of diabetes mellitus. Because the major form of milk lipids is n-6 fatty acid, milk and milk products may not be a good food for the patients of cardiovascular disease. But the nutritional quality of milk lipids cannot be inferior to those of margarine, fish oil, and vegetable oil. Milk has been produced commercially since 1936 in Korea. The most popular milk product is a drink milk now in Korea. But according to the change of dietary pattern the consumption of yoghurt and cheese has been enormously increased during the last 20 years. As the soy sauce, tofu, and soy been paste have been the fundamental seasoning and source of protein in Korea, milk and cheese have consisted the essential flavor of western cuisine. But the basic idea for the usage of protein, peptides, and amino acids are the same. We found that milk and milk products can be nicely added in many Korean dishes such as Juk, Mandoo, Jeon, and Bindeatuk for the diversity of traditional flavor.

Changes of Haematological Constituents in the Nile tilapia, Oreochromis niloticus Exposed to HCB and PCBs (HCB와 PCBs에 노출된 나일틸라피아, Oreochromis niloticus의 혈액성분의 변화)

  • The study was carried out to investigate the changes of haematological constituents induced by dietary exposure of Hexachlorobenzene (HCB) and Polychlorinated biphenyls (PCBs) in nile tilapia, Oreochhromis niloticus. The nile tilapia were fed pellet with 0.05, 0.25 and 0.50 mg/kg body weight/day of HCB and PCBs for 30 days, respectively. HCB ($\ge$ 0.25 mg/kg) induced a significantly decreased the red blood cell count at 30 days, and the hemoglobin concentration and hematocrit value were significantly decreased after 20 days to 0.50 mg/kg. The diminution of red blood cell count, hemoglobin concentration and hamatocrit value by PCBs was found after 20 days at $\ge$0.25 mg/kg. The concentrations of calcium decreased significantly at 30 days at $\ge$0,25 mg/kg of PCBs-diet. However, magnesium and inorganic phosphorus did not show any noticeable changes in the range of 0.05$\~$o.50 mg/kg of HCB and PCBs compared to control group during the experimental period, The low concentration of total protein was observed at the last day of experiment to 0.50 mg/kg of HCB-diet, while total protein initiated to increase from 20 days at the 0.25 mg/kg of PCBs-diet. The glucose was significantly increased after 20 days at $\ge$0,25 mg/kg of HCB and PCBs, A significant increment GOT and GPT activities was noticed after 20 days at 0.50 mg/kg of HCB and PCBs, These results indicate that hematological and serum biochemical changes in the nile tilapia by dietary exposure to HCB and PCBs are affected at more than 0,25 mg/kg after 20 days.

Characteristics of Cooked Rice by Adding Grains and Legumes (곡류와 두류를 혼합한 잡곡의 취반 특성)

  • Nutritional compositions of the raw materials, such as well-milled rice, milled upland glutinous rice, milled barley, glutinous millet, SoRiTae, red beans and mung beans were analysed, and cooking characteristics and sensory attributes of mixed cereals were measured. Crude protein and crude fat in SoRiTae were 31.6% and 16.16%, respectively, and the highest among the raw materials. Crude ash was 3~11 times higher and crude fiber was 5~7 times higher in legumes than in grains. Iron content in SoRiTae was the highest as 7.8 mg/100 g, and calcium content was the highest as 71.0 mg/100 g in SoRiTae and mung beans. Phosphorus content was higher in glutinous millet and mung beans, and potassium content was greatly higher in legumes than in grains and the highest as 934 mg/100 g in red beans. Vitamin B$_1$ and B$_2$ contents were higher in legumes than in grains, and niacin content was the highest as 5.51 mg/100 g in mung beans and was 3.77 mg/100 g in glutinous millet. Water uptake of the raw materials increased greatly after 5 min of soaking in water and then stayed at the almost same level. Water uptake was the highest in SoRiTae and decreased in the order of milled barley, milled upland glutinous rice, glutinous millet and well-milled rice. Hardness was the lowest as 142.8 g/cm$^2$ in cooked SoRiTae, and the highest as 206.3 g/cm$^2$ in cooked milled barley compared with 169.4 g/cm$^2$ in cooked well-milled rice. Cooking time increased and hardness of cooked mixed cereals decreased with the increase of water added. Moisture content decreased, while crude protein, crude ash and crude fiber increased as the increase of mixing ratio of SoRiTae and red beans in mixed cereals. Lightness decreased, while red and blue color increased, and hardness increased with the increase of mixing ratio of SoRiTae and red beans. Sensory evaluation showed greater preference in terms of color, roasted nutty, sweet taste and overall acceptance in the cooked mixed cereals with 8 and 10% of SoRiTae and red beans.

Effect of boron-enriched complex fertilizer on the growth of apple tree (붕소첨가(硼素添加) 복비(複肥)의 사과나무 생육(生育)에 미치는 영향(影響))

  • In order to establish a better combination of nutrients of complex fertilizer for apple tree a boron-enriched complex fertilizer ($N-P_2O_5-K_2O-B_2O_5-MgO$: 10 10-0.2-2.0) was compared with various treatments using urea superphosphate, potash muriate, usual complex fertilizer (22-22-11) and borax in its effect on the various growth status such as total leaf weight per tree and shoot growth of dwarf Fuji (1 year old) and super type Starcreamson (3 year old) grown at comparatively poor soils. For Fuji grown on sandy red soils the boron-enriched complex fertilizer (BC) was best and followed by-usual complex fertilizer NPK only, NPK only+Boron, BC+high boron (17times) and no phosphorus in the order. For Starcreamson grown on heavy clayey soils CB+high boron and phosphorus was best and followed by BC, usual complex fertilizer, NPK only, BC+high boron, NPK+boron and no phosphorus in the order. Without compost in the poor heavy clayey soil the growth was worse with high boron and best with NPK+boron and followed by BC Growth was poor with high boron alone but better with phosphorus and high boron, and it was thought that boron was effective when it was distributed in soil with N.P.K. Fertilizer response of apple tree was well appeared on leaf length, new shoot length and total leaf weight per tree. Suitable formulation of a boron-enriched complex fertilizer for apple tree appeared as 10-20-10-0.6 ($N-P_2O_5-K_2O-B_2O_5$) for poor fields and fields with moderate fertility. Chemical analysis of leaves suggested Mg effect on the increase of leaf weight. Effect of Fe was similar to thatof of Mg.

Comparative Evaluation of Dietary Intakes of Calcium, Phosphorus, Iron, and Zinc in Rural, Coastal, and Urban District (농촌, 어촌, 도시 지역별 칼슘, 인, 철, 아연의 섭취상태 비교평가)

  • The purpose of this study was to compare the intake status of calcium, phosphorus, iron, and zinc of Korean adults residing in different regions. Subjects were recruited and divided into three groups according to the districts where they lived, which included rural (n=137), coastal (n=100), and urban district (n=117). Subjects were interviewed using a general questionnaire and 24-hour recall method for dietary intake. The average age of the subjects were 58.1 years for rural district, 57.7 years for coastal district, and 48.6 years for urban district. There was no significance in total food intake by regions. The food intakes from cereals, mushrooms, vegetables of rural district, that from fishes of coastal district, and those from sugars, milks, oils of urban area were the highest among three districts. The calcium, phosphorus, iron, and zinc intakes were $60.1\%,\;123.9\%,\;95.2\%,\;and\;73.1\%$ of RDAs, respectively. The calcium intakes as percentage of RDA in rural and coastal district were significantly (p<0.01) lower than that in urban district. A larger number of subjects from coastal or urban district ate under $75\%$ of zinc RDA compared to those from rural village. Major sources of dietary calcium in total subjects were anchovy, kimchi, milk, soybean curd, rice, ice cream, sea mustard, yogurt, loach, and welsh onion. Rice supplied $15.5\%$ for phosphorus, $22.1\%$ for iron, and $35.9\%$ for zinc of total intake. Except for rice, major sources of dietary zinc were pork, beef, small red bean, dog meat, chicken, jacopever, soybean curd, glutinous millet, and kimchi. In conclusion, the food and mineral intakes of adults differed according to the regions in which they resided. The food and nutrient intakes of coastal district were not satisfactory, and calcium and zinc intakes of three regions did not meet RDAs. Therefore, it is required unique and discriminatory nutritional education with each region for increasing intakes of calcium and zinc.

Application of Some Soil Amendment Materials to Sandy Soil and the Growth of Rice Plant (사질답(砂質畓) 토양(土壤)에서 수도생육및 수량(收量)에 미치는 토양개량제의 효과)

  • This study was conducted to evaluate the effects of application of several soil amendment materials to an alluvial sandy soil on the rice growth and yield during the 1979. The materials used were the combinations of rice straw, rice hull, silicate fertilizer, red earth and zeolite. The results obtained were summarized as follows : 1. The application of soil amendment materials considerably increased the number of tillers, plant height and dry matter of rice plant. Particularly, the zeolite treated plot resulted in much better growth in the late stage rather than in the early stage. 2. The plots treated with silicate fertilizer, rice hull and zeolite significantly increased the rice yield and so did those with red earth statistically at 5 % level. However, it was not significant with rice straw. 3. By the application of these materials, the silica content in rice plant was continuously increased untill the heading stage, the nitrogen content was high at the maximum tillering stage and the panicle initiating stage and the phosphorus content was high at panicle initiating stage, which were censidered to be the factors of yield increase. However, in the straw treated plot, the contents of nitrogen, phosphorous and potassium were high, while the silica content was low in rice plant. 4. Further, soil pH, C. E. C., content s of organic matter and silicate in soil treated with those materials were increased after experiment. compared with in the soil before experiment.
