This research was performed to determine the quality characteristics of cookies made from flour added with 0, 1, 3, and 5% sea mustard (Undaria pinnatifida Suringer) powder. The quality characteristics of the cookies, including pH and density of the dough, moisture content, spread factor, loss rate, leavening rate, color, mineral content, texture properties, and sensory properties, were estimated. The density of the dough, water content, spread factor, loss rate, leavening rate, a and b values of color scale, and mineral content of the cookies significantly increased while those of pH, L value, and hardness decreased with higher content of sea mustard powder. With the exception of flavor, consumer acceptability scores in terms of appearance, taste, texture, and overall preference for cookies made from 3% sea mustard powder significantly ranked the highest. Taken together, the results of this study suggest that addition of 3% sea mustard powder to flour is effective for increasing the consumer acceptability and functionality of cookies.
A survey of total aflatoxin levels was conducted on 565 food samples (cereals, nuts, etc) collected in commercial markets. The determination of aflatoxins ($B_{1}$, $B_{2}$, $G_{1}$ and $G_{2}$) was performed using HPLC with fluorescence detector. The Limit of Detections (LODs) of the B group and G group were 0.05 ng/g and 0.07 ng/g, respectively. In addition, recoveries of rice, peanut butter, and red pepper flour were satisfactory. Total aflatoxin was detected 27 samples(4.8%) out of 565 samples. Incidence ratios in cereals, nuts, processed products, and other foods were 0.2, 0.4, 3.0 and 1.2%, respectively, but aflatoxin was not detected in pulse and dried fruits. The daily intake of total aflatoxin using food intakes was 0.04 ng/kg bw/day.

In order to evaluate the effectiveness of the organic and natural farming techniques, the actual conditions of the techniques were surveyed and some crops were cultivated in situ. The contents of available $P_2O_5$, exchangeable $Ca^{2+}$ and organic matter of the organic and natural farming soil as well as soil pH were higher than those of the non-organic and non-natural farming soil, and especially the content of organic matter amounting 54.0 g/kg was dominant. Income of the farmers cultivating the different crops with the organic and natural farming was high in order of red pepper in vinyl house > cucumber in vinyl house > fruit(pear) > lettuce in vinyl house > rice. The agricultural materials used in organic and natural farming were ranged from 22 to 25 kinds, representing low pH amounted from 2.9 to 4.5 and low contents of fertilizer ingredients. The expense for purchasing the materials was from three to five times higher than that of soil testing plot. The yields of test crops in the organic and natural farming plots were lower than those of soil testing plot, and the efficiencies of the disease and pest control by the application of the substitutes for pesticide were lower than those by pesticides.
Choline is important for normal membrane function, acetylcholine synthesis and methyl group metabolism. In this study, 185 food items customarily eaten by Koreans were selected from the data of the 2001 Korean National Health and Nutrition Survey and analyzed on the total choline content of the foods using enzymatic method of choline oxidase. Foods with high choline concentration (mg/100 g) were listed in sequence of quail egg (476.04 mg), dried squid (452.42 mg), beef liver (427.16 mg), pork liver (424.92 mg), tuna canned in oil (414.44 mg), boiled and dried anchovy (381.30 mg), dried Alaskan pollack (378.88 mg), chicken egg (309.88 mg), chicken liver (259.38 mg), soybean (238.62 mg), French bread with garlic (193.18 mg) and barley (183.73 mg). From this result, it is shown that dried fishes, prepared fishes, livers, eggs, pulses and cereals might be categorized as high choline food. Citron tea and green tea showed low choline content below 1 mg. Vegetables and fruits were also categorized into low choline food. No choline was detected in red pepper powder, beer, soju, soybean oil and corn oil out of foods analyzed in this study. Further study is required for analytic procedure of the foods of which results are inconsistent with USDA's data such as rice and wheat flour.
The prevalence of iron deficiency in later infancy and the toddler years(25% to 40% at 1 year of age) has not decreased remarkably , except in Western countries. The purpose of this study was to 1) determine the relationship between current feeding practices and iron status, and 2) assess compliance to infant feeding instructions. Two groupsof infants were examined. The first group of 302 infants aged 6 to 24months was seen at a well baby clinic while the second group of 135 infants of the same age group was assessed by venipuncture. Cutoff values for laboratory tests were as follows ; hemoglobin<11g/dL, mean corpuscular volume (MCV) <72fl ; red cell distribution width(RDW)>15% ; serum ferritin level<10ng/ml ; and transferrin saturation (serum iron(TIBC)<10%. The diagnosis of iron deficiency anemia (IDA) was made when a low hemoglobin level was associated with either low ferritin orlow transferrin saturation . Of the 302 children brought to the well baby clinic , 12.3%(n=37) were found to have anemia (hemoglobin<11.0/dL). In terms of children grouped according to feeding practices, it was found that children with anemial comprised 32.0% (24/75) of the prolonged breast-fed group (Group A), significantly more than the 4.0%(7/176) of the artificial milk feeding group(Group B). and 3.9%(2/51) of the switched from breast milk to iron -fortified weaning foods group(Group C).Among the 107 children with IDA , iron deficiency in 105 children(98.1%) was suggested by their dietary histories ; exclusive or prolonged breast-feeding for more than 6 months without iron fortification in 98 infants ; cow's milk consumption> 500ml/day without iron fortification during infancy(n=12), or >800ml without iron-fortified foods after infancy(n=15) ; and the use of unfortified forumula or unbalanced diets, mainly limited to rice gruel. Despite the relatively high (79.6%) motivation on the part of the infants mothers and supervison by professional personnel, the poor results in the infants receiving iron fortified foods were due to poor compliance(85.75). Among the mothers of 98 IDA patients who were contacted by telephone , it was revealed that 29% did not give the oral iron preparation for more than 2 months. Furthermore, negligence or disregard by the parents occurred in 14% of the case , discontinuance of the oral iron preparation by the parents due to side effects occurred in 6%, and the children's refusal or poor oral intake and no further trial occurred in 6%. The dietary history of a large group of infants was highly predictive of their risk for anemia . Continued consumption of breast milk until the age of 1 year is not warranted unless iron-fortified foods are given concomitantly. Because there is a problem with compliance, more successful and safe strategies for preventing iron deficiency woold included dual coverage in the from of therapeutic iron supplementation as well use of iron-fortified foods for teddlers who are at risk of iron deficiency.
The variety Tong-il from the IR667 lines have been reported as a variety resistant to the smaller brown planthopper, Laodelphax striatellus Fallen, in Korea. The resistance of Tong-il to the insect, however, have been mainly evaluated from a viewpoint of plant reaction of rice at the seedling stage. In this study, the nature of resistance of Tong-il to the insect was furthermore evaluated from the standpoints of feeding preference, antibiosis and plant tolerance in comparison with the resistant varieties Karsamba Red ASD-7 and Vellailangalayan. and the susceptible variety Jinheung which have been reported to the insect. The smaller brown planthopper much more prefered Tong-il for feeding than the resistant varieties ASD-7 and Vellailangalayan. The degree of antibiosis of Tong-il to the smaller brown planthopper was significantly lower than ASD-7 and Vellailangalayan. The results showed significantly lower nymphal mortality and higher adult emergence in Tong-il and Jinheung than other two resistant varieties. The degree o( tolerance of Tong-il to the insect was also lower than ASD-T and Vellailangalayan. Only. Tong-il seemed to be relatively more tolerable than Jinheung. The reason of showing resistant reaction of Tong-il in the mass screening test might be related with relatively lower feeding preference and more tolerance than Jinheung and other susceptible varieties.
An outbreak of dermatosis occurred at a machine manufacture factory in Kyongju on Aug 1995. Authors conducted a questionnaire ,survey among 92 workers in the factory and a dermatologist examined their skin lesions. Authors also collected moths and identified them. The results are as follows; 1. Forty-two cases of dermatosis were identified with attack rate of 45.7%. Attack rate was not different by company, age, sex, educational level and duration of employment. Attack rate was 47.8% among productive workers, 25.0% among clerical workers and 100.0 % among patrolmen. 2. Two cases among 42 dermatosis cases and three subjects among 50 non-cases had a history of same dermatosis last year. Four of dermatosis cases had a history of dermatosis among their family members. 3. Skin lesions of the cases were scattered or grouped rice-sized erythematous papules or vesicles. Duration of dermatosis from the onset to the time of survey was from one day to more than 30 days. The most frequent site of skin lesion was the arms(81.0 %), and it was also observed at the neck(47.6 %), abdomen(45.2 %), chest(42.9 %), legs(38.1 %) and back(35.7 %). Skin lesion was aggravated with sweating(31.0 %), after shower(16.7 %) and with scratching(11.9 %). 4. Moths were collected and identified as Euproctis subflava (Bremer). Many poisonous stings were observed on their wngs which is harmful to human. 5. Contact with moths' wing droppings to two authors on thier forearms for provocation resulted in severe immediate pain followed by prolonged pruritus. Erythematous macules quickly appeared and succeeded by firm wheal-like red papules. Authors thought that the outbreak of dermatosis was brought about by Euproctis subflava (Bremer). Further studies on the factors contributing to the prosperity of the moths in this area are needed.
Two experiments were conducted to assess the effect of replacing a conventional concentrate with mixed cassava (Manihot esculenta) foliage and legume (Phaseolus calcaratus) foliage. In Exp. 1, three rumen fistulated crossbred cows were used for in sacco rumen degradability studies. In vitro gas production was also studied. In Exp. 2, 11 crossbred F2 heifers (Red Sindhi$\times$Holstein Friesian), with initial live weight of $129{\pm}6kg$ and aged six months, were allocated in a Completely Randomized Design (CRD) to evaluate a mixture (ratio 3:1) of cassava and legume foliage (CA-LE feed) as a protein source compared to a traditional concentrate feed (Control) in diets based on fresh elephant grass (Pennisetum purpureum) and urea treated rice straw ad libitum. The Control feed was replaced by the CA-LE feed at levels of 0% (Control), 40% (CA-LE40), and 60% (CA-LE60) based on dry matter (DM). The in sacco degradation of CA-LE feed was higher than Control feed (p<0.05). After 48 h incubation the degradation of CA-LE feed and Control feed was 73% vs. 58% of DM and 83% vs. 65% of CP, respectively. The gas production of CA-LE feed was also significantly higher than of Control feed during the first 12 h of incubation. The results of the performance study (Exp. 2) showed that the level of CA-LE feed in the concentrate had no effect on total dry matter intake (p>0.05), but live weight gains (LWG) in CA-LE40 and CA-LE60 were significantly higher (551 and 609 g/d, respectively) than in the Control group (281 g/d). The intake of CP was higher (p<0.05) for the treatments CA-LE40 and CA-LE60 (556 and 590 g/d, respectively) compared to that of Control (458 g/d), while there was no significant difference in ME intake. The feed conversion ratio was 16.8, 9.0 and 7.9 kg DM/kg LWG in Control, CA-LE40 and CA-LE60, respectively. The feed cost of CA-LE40 and CA-LE60 corresponded to 43% and 35%, respectively, of the feed cost of Control feed. The best results were found when CA-LE feed replaced 60% of DM in Control feed and considerably decreased feed cost. It is concluded that feeding cassava foliage in combination with Phaseolus calcaratus legume as a protein supplement could be a potentially valuable strategy which leads to reduced feed costs and a more sustainable system in smallholder dairy production in Vietnam.
Twenty five isolates of Alternaria were obtained from various solanaceous crops in Korea. For all isolates, morphological characteristics of the conidia were determined and compared with those of representative isolates of A. solani and A. tomatophila. A selection of the isolates and the representative Alternaria isolates were evaluated for Pathogenicity to potato, tomato, egg plant and red pepper. Molecular characteristics of 17 isolates of Alternaria inculding the representative isolates were determined using sequence analysis of IRS rDNA and histone H3 gene, and URP-PCR analysis. Based on morphological characteristics, the isolates from the solanaceous crops were grouped as identical or very similar to either A. tomatophila (ATO), A. solani (ASO), and unidentified Alternaria sp. (ASP). Isolates of ASO were moderately pathogenic to all the solanaceous crops tested, but ATO isolates were highly pathogenic to tomato and the ASP isolate was pathogenic only to potato. Among the molecular markers used in this study, the URP-PCR analysis was found to be appropriate for taxonomic resolution of these species. Based on the conidial morphology, pathogenicity test and molecular characteristics, A. tomatophila (early blight of tomato) could be distinguished from A. solani (early blight of potato), and the Alternaria sp. (ASP) from potato, which was closely related to ASO in conidial morphology, was considered as a new species.
Although the Dongjin Au-Ag-Cu mine had been abandoned since about forty years ago, the results of this study on the dispersion patterns and contamination level of heavy metals in the hydrologic system flowing via the waste rump show that the environmental impacts from the mine wastes are still significant. The stream water in the vicinity of the waste rump is severely acidified (pH 3.8 to 4.4) and highly enriched in various dissolved heavy metals. The heavy metal contents of the stream water and stream sediments are systematically attenuated with increasing distance from the mine area. However, it is worth to note that continuous attenuation of heavy metal contents in both media were reenriched in downstream area more than 800 m apart from the mine because it can be acted as a secondary source of heavy metal pollution. The heavy metals, especially Cd, Cu and Zn of polluted downstream sediments mainly occur in Fe-Mn oxides and organic materials, which indicates that these elements are the main pollutants from the waste rump of the Dongjin mine. The heavy metal contents of crops, such as sesame, perilla, red Pepper and brown rice, collected from the polluted farm land in the downstream area are lower than those of land plants from stream sides, but significantly higher in Cd, Cr, Cu and Zn than those from the unpolluted farm land. Especially, almost all of the crops in polluted farm land have been severly contaminated by Cd (>0.4 ppm). On the other hand, the heavy metal contents of the crops collected from refreshed farm land by means of a soil addition method shows significantly lowered level comparing with those of polluted area, which indicates that a soil addition method was effective for the refreshment of polluted farm land by toxic metallic pollutants. Wormwoods from this area showed very high contents in a11 the heavy metals even in unpolluted area (Cd > 1 ppm, Cr > 1 ppm, Cu > 11 ppm, Pb> 4 ppm, Zn > 55 ppm), indicating that a special caution must be payed when one takes ingest them.
