Establishment on the Preparation Condition of Pumpkin Honey Kochujang by Response Surface Methodology (반응표면분석에 의한 호박벌꿀고추장의 담금조건 설정)

  • The mixing conditions of kochujang added pumpkin extract were optimized by response surface methodology. The organoleptic color of pumpkin kochujang showed the maximum score for the mixing condition of 433.63 g pumpkin extract, 81.76 g red pepper powder and 17.03 g meju powder. The organoleptic aroma of pumpkin kochujang revealed the maximum score for the condition of 437.07g pumpkin extract, 83.65 g red pepper powder and 11.90 g meju powder. The organoleptic taste of pumpkin kochujang showed the maximum score in 382.94 g pumpkin extract, 63.44 g red pepper powder and 13.10 g meju powder. The optimum mixing conditions for overall acceptability of pumpkin kochujang were 442.04 g pumpkin extract, 62.58 g red pepper powder and 16.30 g meju powder.

  • Red pepper is one of the most important agricultural products in Korea. Generally, raw red pepper is dried after harvest and the dried red pepper is powdered. Washing process is necessary to produce clean powder before powdering process. This study, therefore, was performed to analyze the drying characteristics of the rewetted red pepper and the energy utility during hot-air-convective and infrared-radiant drying. Drying effectiveness, De, was defined for the analysis of energy utility in this study, and its value was determined according to the energy source. Infrared-radiant drying was more favorable than convective drying according to drying effectiveness. But the temperature variation was appeared between the radiant surface and opposite surface of red pepper in infrared-radiant drying.

Effects of the Red Pepper Powders Dried in Hot-Air by Various Processing Methods on Quality of Kochujang during Fermentation (가공방법을 달리하여 열풍건조한 고춧가루가 고추장의 품질에 미치는 영향)

  • Physicochemical characteristics of Kochujang based on hot-air dried the red pepper powders with different treatments, were investigated during 90 days fermentation to obtain information for the industrial production of Kochujang. The pH was decreased gradually during fermentation, and pH of the control Kochujang was consistently higher than those of others. The total acidity was increased linearly during fermentation, and Kochujang with 0.1% vitamin C was consistently higher than others. Reducing sugar contents of Kochujang was increased until 75 days but was decreased slightly thereafter, showing highest value for the control sample. Amino nitrogen contents was increased gradually until 75 days, showing highest value for Kochujang with mash-dried red pepper powder, but it was decreased remarkably thereafter The L and a values of Kochujang were increased, whereas b value was decreased during fermentation. L, and b values of Kochujang with mash-dried red pepper powder were higher than those of others, showing the more light and deep color than others. Appearance, taste and overall acceptability of Kochujang based on mash-dried red pepper powder were higher than others.

  • Squid Sikhae is a traditional salt-fermented food in Korea. We evaluated the standardization of optimal processing conditions for desirable quality-controlled squid Sikhae using analyses of physiochemical properties, microbiological species, and organoleptic tests. The optimal fermentation temperature, sun-dried sea salt concentration, and fermentation period for manufacturing squid Sikhae products of the aceeptable quality were $10^{\circ}C$, 4%, and 6 days. In addition, optimal concentrations of the additional ingredients of red pepper powder and crushed garlic for acceptable quality squid Sikhae were both 6%.

  • Fibrionolytic activity(FA) of kimchi in rat and FAs of water and methanol extracts of kimchi ingredient were determined using fibrin plate method to see where the active principles for FA are present in kimchi. Nine Sprague-Dawley per each group were fed diet containing 3, 5 or 10% of freeze dried kimchi for 6 weeks. The FA of plasma obtained from 10% kimchi group showed stronger FA than that of control. FAs of 3 and 5% kimchi group were not noticeable. FA from methanol extract of kimchi was approximately 6 times higher than that from water extract assuming that the active material may be present in a fat soluble fraction. From water extract of kimchi ingredients, dropwort, green onion, radish and baechu showed FA in descending order. And from methanol extracts, red pepper powder, radish, green onion and baechu showed FA in decending order. The Fa of methanol extract of red pepper powder was the most noticeable among samples.

Effect of Irradiated Red Pepper Powder on Kimchi Quality during Fermentation

  • Irradiated red pepper powder (IRPP) was tested for its ability to retard fermentation and to maintain a high quality of Kimchi by the reduction of the initial microbial load. Kimchi containing IRPP at the doses of 0, 5, 10, 15, or 20 kGy was prepared. Quality indices for Kimchi in this study were pH, titratable acidity, reducing sugar content, total microbial count, lactic acid bacterial load, and sensory evaluation. Based on the pH and titratable acidity, the Kimchi with IRPP showed a retarded fermentation until 15 days. The number of the total aerobes and lactic acid bacteria of the Kimchi with IRPP were lower by about 1 log CFU/mL compared to control at day 0, however, the counts increased to 8.5 log CFU/mL after 10 days, which was similar to the control group. Kimchi that was fermented with 5 kGy IRPP was better than control and other treatments in odor and color, whereas the control scored highest in taste. Addition of IRPP showed a limited retardation of Kimchi fermentation without other quality deterioration.

Non-destructive quality prediction of domestic, commercial red pepper powder using hyperspectral imaging

  • We analyzed the major quality characteristics of red pepper powders from various regions and predicted these characteristics nondestructively using shortwave infrared hyperspectral imaging (HSI) technology. We conducted partial least squares regression analysis on 70% (n=71) of the acquired hyperspectral data of the red pepper powders to examine the major quality characteristics. Rc2 values of ≥0.8 were obtained for the ASTA color value (0.9263) and capsaicinoid content (0.8310). The developed quality prediction model was validated using the remaining 30% (n=35) of the hyperspectral data; the highest accuracy was achieved for the ASTA color value (Rp2=0.8488), and similar validity levels were achieved for the capsaicinoid and moisture contents. To increase the accuracy of the quality prediction model, we conducted spectrum preprocessing using SNV, MSC, SG-1, and SG-2, and the model's accuracy was verified. The results indicated that the accuracy of the model was most significantly improved by the MSC method, and the prediction accuracy for the ASTA color value was the highest for all the spectrum preprocessing methods. Our findings suggest that the quality characteristics of red pepper powders, even powders that do not conform to specific variables such as particle size and moisture content, can be predicted via HSI.

Effect of Organic Materials on Seedling Growth and Yield of Red Pepper

  • In this study, growth of pepper seedlings was tested by treating organic materials in a plastic green house in Ssangok-ri Dogok-myeon, Hwasun-gun, Jeollanam Province from February 3, 2010 to April 19, 2010. The raised seedlings were planted to the organic planting area with an interval of $70cm{\times}55cm$ on April 20 in Deogam-ri Gogeum-myeon Wando-gun and red peppers were harvested at 7 times from July 22 to September 29. Before planting, the plant length of the overgrowth of seedlings was reduced by 26.8% using plant powder treatment as compared to the control group. The red pepper yield was 27% higher than in the control group when 20g of bone ash powder and 20g of plant powder were mixed. The yield tended to increase in other treatments compared to the control group.

Survey of Aflatoxin B1 and Ochratoxin A on Commercial Dried Red Pepper and Red Pepper Powder (유통 건고추 및 고춧가루의 아플라톡신 B1과 오크라톡신 A 오염도 조사)

  • A survey of aflatoxin $B_1$ and ochratoxin A was conducted on dried red pepper and red pepper powder. Total number of 193 samples were collected from local markets in Incheon. The presence of aflatoxin $B_1$ and ochratoxin A was determined by high performance liquid chromatography (HPLC) with fluorescence detector using immunoaffinity column clean-up. The recovery rate of aflatoxin $B_1$ and ochratoxin A were more than 80% and the limits of quantification were 0.13 ${\mu}g/kg$ for aflatoxin $B_1$ and 0.30 ${\mu}g/kg$ for ochratoxin A. Aflatoxin $B_1$ was detected in 33 samples (17.1%) with a range of 0.14~9.67 ${\mu}g/kg$ and ochratoxin A was detected in 40 samples (20.7%) with a range of 0.31~3.31 ${\mu}g/kg$. These results show that the occurrence of aflatoxin $B_1$ and ochratoxin A in dried red pepper and red pepper powder tested in this study is low compared with the standard in Korea Food Code (10 ${\mu}g/kg$ as aflatoxin $B_1$ and 7 ${\mu}g/kg$ as ochratoxin A).

The Changes of Capsaicinoids and AST A Color Value of Red Pepper Powder Packed with Different Packaging Materials (포장재를 달리한 고춧가루의 저장조건에 따른 capsaicinoids와 색상 함량 변화)

  • This study was performed to investigate the change in the chemical components of red pepper powder using different packaging materials and various storage conditions. Red pepper powders with 11 and 15% initial moisture content were packed with five different materials and stored at different temperatures (0, 20, and 30 C) for a one year period. Over the storage period, each combination was periodically sampled, and examined for composition changes. The five packaging materials were: linear low density polyethylene(LLDPE), nylon/LLDPE(Ny/LLDPE), saran coated ethylene vinyl acetate copolymer/linear low density polyethylene(B650), nylon/Tie/nylon/ethylene-vinyl alcohol copolymer/nylon/Tie/LLDPE(RDX-2787) and oriented polypropylene/alumimum/LLDPE(OPP/Al/LLDPE), and the three storage conditions were (28.3${\pm}$1.0)$^{\circ}C$ with (15.5${\pm}$2.8)% relative humidity, (18.6${\pm}$0.5)$^{\circ}C$ with (46.6${\pm}$4.9)% RH, and (0${\pm}$2)$^{\circ}C$ with (80${\pm}$10)% RH, respectively. The moisture contents of all samples changed according to the relative storage humidity, except those of the samples packed with OPP/Al/LLDPE, which remained constant throughout the storage period. The capsaicinoids content of the red pepper powder did not change significantly for 6 months, but gradually decreased after that until about 85% of the original amount remained at the final stage of storage. The ASTA color values of all samples decreased gradually throughout the storage period. The higher the storage temperature, the more severe the deterioration. The color deterioration seemed greatly related to the existence of oxygen, as the deterioration was especially severe in the samples packed with LLDPE and B650, where the oxygen transmission rate were highest among the five packaging materials.
