Antioxidant Activities and Quality Characteristics of Beef Jerky Supplement with Onion Peel Extract (양파껍질을 이용한 우육포의 항산화 활성 및 품질 특성)

  • The objective of this study was to reduce the waste rate of onion peel, which has excellent functionalities, and to promote its industrial utilization. The methodology involved preparing beef jerkies using liquid seasonings with 0% (OPE0), 50% (OPE50) and 100% (OPE100) onion peel extract (OPE) of domestically produced onion, respectively; and assessing their antioxidant activities and quality characteristics. As the amount of added OPE increased, the contents of crude protein and crude ash increased, while those of crude fat decreased. As for color values, increase in the amount of added OPE led to increase in L value and b value, but decrease in a value. The measurement of mechanical texture showed that hardness and cohesiveness decreased as the amount of added OPE increased. TBARS (thiobarbituric acid reactive substance) content decreased as the amount of added OPE increased. And the amount of added OPE increased, all the antioxidant activity of beef jerky increased. Acceptability test showed the highest preference for OPE50 with regard to flavor, taste texture and overall acceptability. Quantitative descriptive analysis (QDA) showed that increase in the amount of added OPE led to increase in meat color, salty taste, sweet taste, meat flavor and chewiness and decrease in off-flavor. According to principal component analysis (PCA), OPE50 and OPE100 had high levels of the sensory attributes that increase preference-such as meat color, salty taste, sweet taste, meat flavor and chewiness. Based on such results, it was established that 50% is the optimal mixing ratio of OPE for preparing a beef jerky of high preference that also has excellent quality characteristics and antioxidant activity.

Effect of Addition of Potato peel , Guar gum , Polydextrose on Quality of Backsulgies (감자 껍질 , Guar gum 및 Polydextrose 첨가에 의한 백설기의 품질특성 변화)

  • The physicochemical, rheological and sensory characteristics of 'BACKSULGIES', which was added with potato peel, guar gum or polydextrose, were investigated. The maximum acceptable addition ratio of dietary fiber to 'BACKSULGI' was 10%. And optimal addition ratio was 3% for all samples. The water binding capacity was affected by dietary fiber sources and incubation conditions (temperature and time). The Guar gum had me highest value of water binding capacity. The solubility was highly related with water binding capacity and me swelling power was increased with temperature increment. The degree of gelatinization was not significantly different with dietary fiber sources. But me values of gelatinization of 'BACKSULGIES' added with dietary fibers were significantly higher than mose of 'BACKSULGI' with no dietary fiber. Generally hardness and brittleness incresed along with storage time. But me hardness of 'BACKSULGIES' added with dietary fibers was significantly lower man those of 'BACKSULGI' with no dietary fiber. The retardation effect of dietary fibers for retrogradation of 'BACKSULGIES' was also proved by time constant determination of Avrami equation. Sernsory evaluation revealed that me addition of dietary fibers did not reduce the organoreptic quality. Therefore potato peel 3%, guar gum 3%, polydextrose 3% were optimum addition ratio which could be accepted as conventional 'BACKSULGI'. As me results of this study, it was proved mat the additions of dietary fibers to 'BACKSULGI' had the retardation effect of retrogradation.

  • The three-dimensional correction factor of the added mass of finite-length elliptic cylinders in vertical vibration in a free surface was calculated. This problem has already been dealt by T. Kumai[5] to contribute to analytical prediction of the three-dimensional correction factor for the added mass in vertical vibration of ships. In Kumai's work, the body boundary condition involved in the appropriate boundary value problem was approximately treated in the course of obtaining the solution. In this work, obtaining the solution derived from mathematically exact treatment of the body boundary condition, the author recalculated the three-dimensional correction factor for length-beam ratio $4{\sim}8$, beam-draught ratio $2.00{\sim}4.50$ and number of nodes from 2 to 7. And the numerical results were compared with both Kumai's results and the author's experimental data for two and three-noded vibrations of the cylinder of beam-draught ratio 2.40 The comparison of the numerical results shows that the author's are always higher than the Kumai's as expected. And the comparison of the numerical results with experimental data shows that the Kumai's numerical results have less deviation in case of two-noded vibration, and that, in case of three-noded vibration, the author's numerical results are in fairly good correspondence.

Physical and Sensory Characteristics of Sponge Cakes Added Steamed Garlic and Yuza Powder (증숙 마늘 및 유자 분말 첨가 스폰지 케이크의 물리적 및 관능적 특성)

  • In this study we investigated the physical and sensory characteristics of sponge cakes prepared with different levels(0, 2, 4, 6, 8 and 10%) of freeze-dried steamed garlic and Yuza(Citrus junos Sieb ex Tanaka) powder, combined at the same ratio. The cake height and specific loaf volume were highest in the 4% steamed garlic and Yuza powder group. Moisture contents were significantly higher in the 2 and 4% steamed garlic and Yuza powder groups than in the other groups. With increasing steamed garlic and Yuza powder content, the L- and b-values of the crust decreased, but the a-value increased, when compared to the control group. The L-value of the crumb was insignificant within each group. Compared to the a-value of the $0{\sim}2%$ added groups, the a-value of the $4{\sim}10%$ added groups, increased with increasing steamed garlic and Yuza powder contents. However the b-value decreased in the 8 and 10% steamed garlic and Yuza powder groups. The hardness and chewiness of the $6{\sim}10%$ added groups, and the gumminess of the 10% addition group, were significantly higher than in the control group. The results of the sensory evaluation showed there were not significant differences amoung the groups, except for moistness. Therefore, we suggest that the recommended optimal level of steamed garlic and Yuza powder in sponge cake is a 4% addition.

Quality Characteristics and Antioxidant Activities of Sausage Added with Apios (Apios americana M.) Powder (아피오스 분말 첨가 소시지의 품질 특성 및 항산화 활성)

  • This study investigated the effect of apios powder on the quality characteristics of sausages. The results were as follows: pH values of the sausages were not significantly different among the samples. The amount of moisture content in the sausages decreased with increasing amount of apios powder. Increase in apios powder increased the lightness (L) value but decreased redness (a) and yellowness (b) values. Increase in apios powder increased the hardness and chewiness of sausage but decreased the adhesiveness. Apios powder had no significant effect on gumminess and springiness of the sausages among all samples. Total phenolic compound content and DPPH radical scavenging activity of apios powder added sausage significantly increased with increasing apios powder. Total bacterial counts of apios powder added sausage increased in all the samples as storage period passes and after 4 weeks of storage, the more adding ratio of apios powder was increased, the total bacterial count decreased. In view of above results, apios powder was considered to be food material suitable not only for functionality but also for developing sausage product of which preservation property is improved. From the results, 100% apios powder can be used to make optimum level for production of sausage.

Transverse Vibration of Rectangular Plates Having an Inner Cutout in Water (유공직사각형평판(有孔直四角形平板)의 접수진동(接水振動))

  • This paper is concerned with the experimental investigation of transverse vibration characteristics in water of rectangular plates having an inner free cutout. Systematic experiments are carried out to investigate effects of the surrounding water on the added mass and the natural frequency of the plates due to the changes of the aspect ratio, hole size and eccentricity. The main subject is the clamped rectangular plate with a circular hole. For the purpose of comparative evaluations, some other common-type boundary conditions and hole shapes such as ellipses and rectangles are also investigated. Some of the results obtain are as follows; 1) For each given aspect ratio of the plate, there is a hole area ratio which gives a minimum value of the nondimensional frequency parameter for each mode. The hole area ratio increases as the order number of the mode increases. 2) The nondimensinal mass-increment parameter decreases as the aspect ration or the order number of the mode increases. For each given aspect ratio, the parameter the fundamental mode decreases monotonically as the hole area ratio increase. In cases of the second and higher order modes, however, each mode has a hole area ratio which gives a maximum value of the parameter for each aspect ratio more then 2/3. 3) Comparing elliptic holes with rectangular ones with same hole area ratio, nondimensional frequency parameters are almost same for each given ratio of the shorter axises to the longer one. 4) The influences of difference in boundary condion on nondimensional frequency parameters in water are similar to those in air.

Effect of Lilium davidi's Root Powder Additions on the Rheology of the Dough and Processing Adaptability for Bread (백합 구근 분말 첨가가 반죽 물성 및 제빵 가공적성에 미치는 영향)

  • Regarding the physical properties of wheat flour added with lily's root powder, elasticity in farinograms tended to increase as the ratio of added lily's root powder increased. However, viscoelasticity, absorptivity, absorption time, and stability tended to decrease after an initial increase when a certain ratio of lily's root powder was added to the wheat flour. Results from the rapid viscosity analyzer (RVA) indicated that the retention strength, final viscosity, break down, set back value, $P_{max}$ value of the alveogram, and falling number value decreased. As for gaseous release, measured with a rheofermentometer, the total amount of $CO_2$ gas generated and retained tended to decrease. As for the gelatinizing properties in terms of differences in the granularity and the amount of lily's root powder (bulbs) added to wheat flour, the initial gelatinization temperature had no effect regardless of the type or amount of general grinding and minute (ultra-fine, $10\;{\mu}m$) lily's root powder. Meanwhile, the peak viscosity and peak viscosity time exhibited significant differences in 3, 5% general grinding lily's root powder additive groups. On the other hand, there was no significant difference between 3, 5% minute lily's root powder additive groups. This is likely because the activity of the enzyme in wheat flour decreased relatively and differences in the lily's root powder granularity resulted in a variation in water absorptivity. In the preference test, flavor retention of the functional bread increased according to the granularity of lily's root powder and the ratio of added lily's root powder, thus resulting in significant differences in the mouth feel and flavor; the texture and crumb color, however, did not exhibit significant differences.

Antioxidant Activities and Quality Characteristics of Rice Cookie with Added Butterbur (Petasites japonicus) Powder (머위 분말 첨가 쌀쿠키의 항산화 활성 및 품질 특성)

  • This study evaluated the antioxidant activity and quality characteristics of rice cookie with added butterbur powder in a ratio of 0, 5, 10, 15, and 20% to confirm the possibility of butterbur as a functional food. The moisture content, spread factor, leavening rate, and hardness of rice cookies increased with an increase in the amount of butterbur powder; whereas a decrease in the pH and baking loss rate was observed. The L and b values decreased as the amount of butterbur powder increased, but the value was the lowest when 5% of butterbur powder was added. The sensory liking score showed the highest preference for 10% butterbur powder regarding appearance, flavor, taste, texture, and overall preference. In the principal component analysis (PCA), the addition of 10% butterbur powder positively affected the measure of food acceptance in terms of organoleptic properties of butterbur. Besides, as the amount of added butterbur powder increased, the antioxidant activity of rice cookies increased. Based on these results, it appears that the addition of butterbur powder to rice cookies in a 10% ratio can produce rice cookies with excellent antioxidant activity, overall quality, and high preference.

Quality Characteristics of Sponge Cake by Black Soybean Powder of Different Ratios (검은콩 분말의 배합비를 달리한 스펀지 케이크의 제조 및 품질 특성)

  • In order to determine the most effective ratio of black soybean powder as an ingredient in cake, black soybean power was added at ratio of 10, 20, 30, and 40% versus wheat flour set as 0(control). Black soybean powder consisted of moisture(8.44%), crude protein(31.34%), crude fat(6.64%), crude ash(3.88%) and carbohydrates(49.70%). The specific gravity, spreadability, and baking loss increased according to the amount of black soybean powder, although specific volume decreased. The chromaticity 'L' and 'b' values of sponge cake with black soybean powder showed an reducing trend while the 'a' value displayed an increasing trend with an increase in black soybean powder. The texture properties of sponge cake with added black soybean powder showed an increasing trend in hardness and stiffness when the cake contained more black soybean powder. The sensory test for sponge cake with added black soybean powder showed high preference for 20% added black soybean powder to sponge cake.

Proximate Composition and Quality Characteristics of Bread with Black Rice Flour (흑미가루를 첨가하여 제조한 식빵의 일반성분 및 품질 특성)

  • The quality characteristics of bread with black rice flour were investigated to find the most preferred ratio of black rice flour. Its moisture, ash content, crude protein, crude fat, amino acids, and texture were analyzed. A sensory evaluation was also performed. The moisture and crude fat of bread with black rice flour were decreased in proportion to the added amount of black rice flour, but the crude protein and ash content were increased. The volume of bread decreased as the added amount of black rice flour increased. The pH value of bread increased in proportion to the added amount of black rice flour. The value of brightness and yellowness of the dough were the highest in the control. The added amount of black rice flour was negatively correlated with the brightness and the yellowness of the dough, but was positively correlated with the redness. Total free amino acids were found, and the dough with 5% black rice flour contained the highest amount, followed by 3%, 2%, and 1%. When evaluating the storage days, the springiness and cohesiveness of bread with black rice flour they decreased with time, but the chewiness and brittleness increased. Regarding the taste, preference was given to the bread with 2% black rice flour, which had the lowest rejection rate and was not affected by time in any meaningful sense. The bread with 2% black rice flour won the highest scores in the overall preference measurement.
