The purpose of this study was to search the obese related dietary factors of young adolescent girls for developing nutrition education program. In the cross-sectional study of 371 young adolescent girls, 25$\%$ were moderately obese, 13.2$\%$ obese, and a total of 39.1 were over moderately obese. The characteristics of obese girls were as follows. First, obese girls consumed more energy than is needed for physical activity. Their average daily energy intakes were not significantly higher and the daily energy expenditures were significantly lower than those of normal girls. Second, obese girls showed higher intakes of protein and fat, and ate more animal foods than normal girls. Fourth, obese girls skipped meals more often, especially breakfast. They ate less rice. For both normal and obese girls, their common dietary problems were low intake of calcium and iron, and high intake of snack foods. The result of this study shows that nutrition education programs for obese adolescent girls should be designed for eating habits, food balance and moderation. future research is to develop the effective nutrition education program for the obese adolescent girls.
본 연구는 오징어, 쌀가루 및 탈지콩가루를 혼합하여, 압출성형 공정을 이용하여, 새로운 스낵제품을 만들고자 수행하였다. 실험실용 single-screw extruder를 이용하여 제품의 낮은 전단력과 높은 팽화율을 목적으로 수 차례 실험한 결과, 15.7%의 혼합물수분과 16$0^{\circ}C$의 조리 오도가 비교적 좋은 제품 생산조건으로 나타났다. 이 조건에서 냉동 건조 오징어가루나 아주 곱게 갈은 생 오징어를 다른 재료들과 혼합하여 최종 제품들을 만들었다. 전단력은 두 오징어 첨가제품간에 유의성 있는 차이는 없었으나, 팽화율의 경우는 생 오징어를 첨가하여 만든 제품이 냉동 건조시킨 오징어를 첨가하여 만든 제품에 비해 유의적으로 높았다. 소비자 관능검사 결과 생 오징어로 만든 제품이 냉동 건조시킨 오징어로 만든 제품에 비해 유의적으로 높았다. 소비자 관능검사 결과 생 오징어로 만든 제품이 냉동 건조시킨 오징어로 만든 제품에 비해 외관, 맛, 향, 그리고 전체적 면에서 선호도가 높았다. 결론적으로 본 연구는 단백질이 풍부한 오징어와 탈지 코가루를 쌀가루에 첨가하여 비교적 팽창이 잘된 스낵제품을 생산할 수 있는 조건을 제시하였으며, 이 결과는 차후 제품개발의 기반으로 사용할 수 있을 것이라고 본다.
This survey was conducted to investigate the dietary behavior and health status of Buddhist nuns. In this study, 100 Buddhist nuns in Seoul were selected. The dietary survey was focused on the diet in winter. The age distribution was as follows; 24% of the subjects were in their 20s, 45% in their 30s, 23% in their 40s, and 8% in their 50's and over, respectively. The percentage of the subjects living in temples close to the downtown area was 77% and the rest resided in areas remote to the downtown area. Over fifty percent of the subjects were satisfied with their diet at temple. And 59% of the subjects were eating a snack more than once a day. The snacks included fruits (60%), raditional tea (20%), coffee (9%), bread and cookies (4%), md rice cakes (3%), etc. Among food groups, the intake of green-vegetables and fruits were the highest and intake of milk and bean products were low which may cause calcium and protein deficiency. Most of the subjects believed that their health conditions were average or above average. About 50% of subjects didn't exercise at all. The frequencies of gastro-intestinal diseases and anemia were extremely high. About 50% of subjects took some form of medicine. To improve their health and nutritional status, it is required that they practice a good dietary behavior, maintain a balanced diet, and exercise regularly.
This study investigated the quality characteristics and antioxidant activity of Yanggaeng prepared with various amounts of watermelon radish flesh (WRF) powder, in ratios of 0 (control), 2.5, 5, 7.5, and 10% of the cooked white bean paste. The proximate composition, pH, sugar content, Hunter's color values, texture analysis, and antioxidative activities of Yanggaeng were examined. Increasing the amount of WRF in the Yanggaeng tended to increase the crude ash, carbohydrate, sugar, total polyphenol, total flavonoids, and anthocyanin contents, a value, DPPH and ABTS radical scavenging activities, with decreasing the moisture and crude protein contents, L and b values, and pH. Texture measurement scores in terms of springiness, chewiness for Yanggaeng showed that 2.5% or 5.0% group was higher than those of the control group. Hardness was higher in the sample groups than in the control group. In conclusion, the results show that Yanggaeng with up to 7.0% added WRF powder can be developed as products, and there is a possibility of developing health functional snack products using WRF powder.
The primary purpose of this research paper is to study the nutrition intake status of high school students and their physical growth and development. Further, it made an attempt to find and define nutritional problems and assist in their growth and development through proper nutritional management. One hundred students in both sexes, first year grade in senior high school were provided with questionnaires. For six days the respondents filled out the questionnaires. They were asked to keep record of what they ate each meal. Their nutritional intake were analyzed in accordance with what they ate. Findings, conducted on percentage, CR test, t test, and F test, were as follows: 1. For the living circumstance a) Average numbers of brother and sister in sampled family were four. b) Seventy to eighty percent of the students were brought up by mother's milk at their infants and approximately 40% of students were weaned at the age of 7 to 18 months. c) Fifty percent of the respondents revealed irregulity in their meal time. d) Monthly average expenditure for daily food reached $20{\sim}40%$ out of total income. e) The most favorite foods reflect as follows: The most favorite main dish is boiled rice and side dish beaf. Fruits. juice, milk, ice cream are more popular snack among whole students. 2. Nutrition survey a) Calory sad nutrients were found to be below the recommended level, especially in calcium, vitamins A, $B_2$ and C. b) The total calory intake were composed of 73% from carbohydrate, 14% from protein and 13% from fat in the case of boys. The girls were 65%, 14%, 21% respectively. c) Both boys and girls in their animal protein intake averaged about 33% out of total protein intake. d) Meat consumption of the majority respondents were proportionate in $10{\sim}20%$ in their total food consumption. 3. The result of statistical analysis were as follows: a) Statistical significant differences in the relationship between the calory intake and physical growth index were observed at the level of p<0.05. b) Statistical significant differences in the relationship between the protein intake and physical growth index were observed at the level of p<0.05. c) Statistical significant differences in the relationship between meal time and physical growth index were observed at the level of 0.02<0.05. d) No statistical significant differences in the relationship among calory, protein intake and school records as well as intelligence were found. The experiment indicated that there is a direct relationship between nutrition and the physical growth and development, whereas There seems to be an indirect relationship between nutrition and intelligence.
The nutritional status of 125 preschool children(Female : 56, Male : 69) residing in low income area of Seoul was surveyed. The mean family size was 4.3 and the mean monthly income was 921,000 won which was below the poverty level. Average heights of boys aged 3, 4, 5 and 6 were 98.6cm, 106.1cm, 111.9cm and 116.0cm and those for girls were 99.4cm, 106.4cm, 110.9cm, and 116.0cm, respectively. There was no significant difference between the height of boys and girls. The proportion of children showing stunted growth(<90% of Korean standard of height) was 3.2%. The mean weight of boys for each age group(3, 4, 5, 6) were not significantly differient from that of girls. The proportion of children assessed as moderately underweight (<80-90% of Korean Standard of weight) was 10.4% and 3.2% of children was underweight(<80% of weight standard). The group of children aged 3 were taking adequate energy, whereas the mean energy intake of children aged 4.5 and 6 were within 77.3-78.6% of RDA. The proportion of energy derived from carbohydrate, fat and protein was 60.1%, 24.6% and 15.3%. The high proportion of energy derived from fat seems partly due to high energy intake from fat in the snack. The nutrients which did not meet 75% of the RDA were vitamin A and calcium for children aged 5, and iron for children aged 3 to 5. Carbohydrate intake was positively correlated with the height, weight and girth of chest(P<0.05-P<0.001). There was positive correlation between protein intake and weight, girth of chest and BMI, respectively(P<0.05). Iron intake showed positive relationship with height, weight and BMI(P<0.05).
To investigate the effects of dietary patterns on bone mineral density and its biochemical markers among Korean healthy college women for 2 years, 34 female college students were recruited through convenience sampling. Bone mineral density was measured using Dual Energy X-ray Absorptiometry (DEXA) twice at baseline and two years later. Osteocalcin and parathyroid hormone were measured in fasting serum and N-teleopeptides of type collagen (NTx) in urine. Dietary intake was assessed by 24-hour recall method 8 times with average 4-month interval. Dietary patterns with percent energy of each food group using cluster analysis were classified into two groups. The first cluster (n = 16) was characterized with high consumption of bread, snack, fast foods, beverage and considerable of rice so it was determined as 'Modified dietary pattern group'. The second cluster was characterized with high consumption of rice and kimchi so determined as 'Traditional dietary pattern group'. There were no significant difference of age, menarcheal age, body mass index but percent of body fat by pattern groups. The traditional group showed higher value of bone mineral density among lumber spine and all femur sites at baseline and 2 years later but it was not significant after adjusted for percent of body fat. Serum osteocalcin and urine NTx was higher among the traditional group at baseline than the modified group. There were similar proportions of carbohydrate:fat:protein between groups but significantly higher intake of protein, iron, vitamin A among the traditional group. In conclusion, there were two distinctive dietary patterns among Korean college women. There was difference of bone mineral density and its biochemical markers between two patterns. Further research would be necessary to explore the relationship between dietary patterns and health risks for larger-sized and various populations.
The aim of this investigation was to collect the baseline data about growth, dietary behaviors, nutrient intakes and dietary quality of children at child care centers for planning nutritional management program. The dietary intakes were measured by weighing method for intakes at child care centers and by dietary records by children\\`s mothers for intakes at home. The weight and height were measured and calculated z-scores by using standard of the same age groups. The children were 163 boys and 168 girls and the mean age were 55.6 months(12-78 months) and 56.0 months(16-78 months). respectively. The Z-score for height(0.33) and weight(0. 11) showed that the growth of children were above average. Nutrients intakes such s energy, protein, fiber, iron, sodium, potassium, vitamin A, vitamin B$_1$, vitamin C, niacin of boys from lunch and snack at day care centers were significantly higher than those of girls, and the meals at child care centers provided 20-37% of RDAs. The daily energy intakes were 1332.2kcal(83.1% RDA), protein 44. 26g(109.3% RDA), calcium 437.73mg(72.4% RDA), iron 7.24mg(72.4% RDA), vitamin A 459.6RE(113.1% RDA),vitamin B$_1$ 0.74mg(93.4% RDA), vitamin B$_2$0.79mg(79.7% RDA), niacin 7.66mg(69.9% RDA) and vitamin C 56.84mg(142.1% RDA). The nutrients which more than 50% of subjects ate less than 75% RDA were calcium, iron, niacin, and vitamin B$_2$.The average mean adequacy ratio was 0.80 and mean dietary variety score was 22.42, and those are positively correlated to % RDA of nutrient intakes. In summary, the children using child care centers consumed most nutrients below level of RDA and the nutritional management program at child care center is required to enhance the nutritional status of them. In order to investigate the use and recognition of nutrition labelings of processed foods which adolescents frequently purchase, 277(boys 125, girls 152) middle school students and their parents were conveniently selected from the west Chonan City, and were surveyed by self-recording questionnaire on June, 2000. Nutrition labels were indicated only in 14.9% of 222 processed snack foods. At purchasing foods the students considered taste most importantly and in turn price, quantity, and nutrition. Of the subjects 79.4% of students and 89.2% of parents had experiences of reading nutrition labels, and the reasons were mainly to just know contained nutrients(76.8%, 72.1%, respectively) and for their health care(35.9%, 47.8%, respectively). The main reason not to confirm nutrition labels was that they were not interested in nutrition labels. But too small size and rudeness or hardness of understanding was also pointed out as a reason of not reading nutrition labels. The students ranked mineral, protein, and carbohydrate as the most important three nutrients at labelings, while the parents ranked protein, mineral, and calorie. Cholesterol, dietary fibers, and sodium were shown the lowest rank in both students and parents. Significant nutrients for specific processed foods did not well recognised in the students. Conclusively, nutrition labelings should be applied to all processed foods which students frequently buy, particularly in clear and large size. Also it is necessary to prepare education programs for both students and parents about accurate recognition of nutrition knowledge about processed foods and how to use nutrition labels.
This study was conducted to investigate the relationship among Rohrer index, and nutritional intake and biochemical status. We examined physical status, dietary intakes, serum cholesterol, blood pressure and other biochemical of children in Taejon. Thin survey was carried out in October, 1995. The subjects were 362 children, aged from 6 to 11 years old. The results were summarized as follows. By Rohrer index, 4.5% of the subjects were lean, 70.2% were normal, 17.0% were overweight and 8.6% were obese. Systolic and diastolic blood pressures of the subjects were 111.73 and 69.88mmHg, respectively. The systolic blood pressure of obese subjects(119.93mmHg) was higher than any other groups. Total cholesterol level was 160.87mg/dl, cholesterol levels in each group were not significantly different. Hemoglobin level of total subjects was 13.10mg/dl, especially hemoglobin levels of 11 year-old girls was lower than that of the same aged boys suggesting that the girls should be supplied with more protein, iron and other nutrients. Energy and protein intakes wee 86.6% and 94.5% of RDA, respectively. The nutrients above the RDA were only two, phosphorus and-vitamin C. The intakes of iron, zinc and vitamin A were lower than 50% of the RDA's. The levels of zinc and niacin were highest in obese group than any other groups. The subjects in overweight and obese groups had eaten more calories from snack and less calories from breakfast than other groups. Rohrer index was correlated with cholesterol, systolic blood pressure and creatinine levels.
