The purpose of the study was to suggest the optimal lipid enrichment conditions used digestive enzyme activity of rotifer changing due to water temperature and salinity. The high population growth appeared at the experiment temperature more than 28 degrees highly on the culture temperature(maximum 32 degrees, 1,453 individual/mL). The fecundity was low at high temperature, and the egg ratio was high at low temperature. Population growth of 10 and 15 ppt appeared in most highly, but the fecundity and the egg ratio were high most significantly appeared in natural seawater(32 psu). The digestive enzyme activity by the culture environment mainly showed high activity in natural seawater(amylase exclusion, 15 psu). However, the TAP activity by the water temperature showed highly at the more high temperature, but the amylase and the lipase appeared at low temperature. We carried out the lipid enrichment at 20 degrees and 26 degrees in a condition of the natural seawater. Total protein, the total essential amino acids differed not significantly. The methionine content that was essential amino acids, a total lipid content, unsaturated index of fatty acids, DHA and the DHA/EPA ratio were high significantly each in $20^{\circ}C$ enrichment trial. Therefore, we could suggest the $20^{\circ}C$ and natural seawater for the optimal lipid enrichment condition in aquaculture, because methionine contents, several indexes by the lipid, TG-lipase activity, fecundity and egg ratio are high.
A 15-week of growth trial was conducted to evaluate practical diets for growing Korean rockfish (Sebastes schlegeli). Two replicate groups of the fish average weighing 125 g were fed one of four experimental diets containing $41\~45\%$ protein and $6\~8\%$ lipid. A control diet with $58\%$ fish meal as protein source was included and practical form diets with $40\%$ fish meal and various practical ingredients such as meat meal, blood meal, soybean meal, and corn gluten meal were included. These experimental dry pellet diets were compared with commercial diets containing $51\~53\%$ protein and $5\~13\%$ lipid for marine fish or raw fish-based moist pellet (RMP) diet containing $58\%$ protein and $9\%$ lipid consisted of $50\%$ frozen horse mackerel and $50\%$ commercial binder meal. Weight gain, feed efficiency, daily feed intake and protein efficiency ratio in the fish fed the experimental diets and commercial diets were not significantly different to those in the fish fed the control diet. However weight gain, feed efficiency and protein efficiency ratio in the fish fed the RMP diet were significantly higher than those in the fish fed the experimental diets and commercial diets. These differences of growth performance between experimental diets and RMP diet may be reason for different dietary protein and energy levels. The experimental diet can save up to $20\%$ cost of fish production compare with control diet, whereas RMP diet is more expensive than other diets in the fish production.
BACKGROUND/OBJECTIVES: Obesity is a global health problem of significant importance which increases mortality. In place of anti-obesity drugs, natural products are being developed as alternative therapeutic materials. In this study, we investigated the effect of Brassica juncea L. leaf extract (BLE) on fat deposition and lipid profiles in high-fat, high-cholesterol diet (HFC)-induced obese rats. MATERIALS/METHODS: Male Sprague-Dawley rats were divided into four groups (n = 8 per group) according to diet: normal diet group (ND), high-fat/high-cholesterol diet group (HFC), HFC with 3% BLE diet group (HFC-A1), and HFC with 5% BLE diet group (HFC-A2). Each group was fed for 6 weeks. Rat body and adipose tissue weights, serum biochemical parameters, and tissue lipid contents were determined. The expression levels of mRNA and proteins involved in lipid and cholesterol metabolism were determined by reverse transcription polymerase chain reaction and western blot analysis, respectively. RESULTS: The HFC-A2 group showed significantly lower body weight gain and food efficiency ratio than the HFC group. BLE supplementation caused mesenteric, epididymal, and total adipose tissue weights to decrease. The serum levels of triglyceride, total cholesterol, and low-density lipoprotein cholesterol were significantly reduced, and high-density lipoprotein cholesterol was significantly increased in rats fed BLE. These results were related to lower glucose-6-phosphate dehydrogenase, acetyl-coA carboxylase, and fatty acid synthase mRNA expression, and to higher expression of the cholesterol $7{\alpha}$-hydroxylase and low density lipoprotein-receptor, as well as increased protein levels of peroxisome proliferator-activated receptor ${\alpha}$. Histological analysis of the liver revealed decreased lipid droplets in HFC rats treated with BLE. CONCLUSIONS: Supplementation of HFC with 3% or 5% BLE inhibited body fat accumulation, improved lipid profiles, and modulated lipogenesis- and cholesterol metabolism-related gene and protein expression.
The effect of freshwater crab meat additive on protein quality of tofu was studied. Tofu containing freshwater crab meat(TCM) prepared by the formulation for the best sensory qualities had about 20% more lipid and ash content than those of commercial tofu. TCM showed a higher content of lysine, methionine, cysteine and tyrosine compared with those in commercial tofu. TCM was comparable to commercial tofu(CT) regarding the in vitro protein digestibility(95%). A considerable difference in computed protein efficiency ratio(C-PER) resulted between CT(1.76-1.81) and TCM(2.61). Therefore, crab meat has potential as an ingredient for enriching essential amino acid and improving protein quality of CT.

To explore the possibility of using freeze dried loach for instant choo o tang(Korean traditional loach soup), protein qualities and fatty acid composition were evaluated on boiled and steamed loach. Total lipid and ash content were lowered in both heated(boiled and steamed) loaches due to deboning and eviscerating during cooked meat preparation. Profiles of total amino acids were not changed seriously by the type of cooking, but the amount of essential amino acids were comparable in all samples. Two times more free amino acids were quantified in cooked samples compared to raw meat. Available lysine was marginally decreased by cooking, and that caused some measurable change in typsin indigestible substrate(TI) in streamed whole loach. In vitro protein digestibility of the heated loaches was not altered drastically and the protein quality determined as computed protein efficiency ratio(C PER) was similar for the raw, boiled and steamed loach. The ratios of unsaturated to saturated fatty acids changed measurably in heated whole loach. The results shows that heating caused apparent oxidative deterioration of the polyunsaturated fatty acids.

We evaluated the optimum dietary lipid level and feeding rates of extruded pellets (EP) in juvenile flounder Paralichthys olivaceus during the summer season. The first experiment was conducted to determine the optimum dietary lipid level in juvenile flounder. Five isonitrogenous EP (52% crude protein) with increasing dietary lipids (6, 8, 10, 12 and 14%) were fed to satiety to triplicate groups of the juveniles ($18.4{\pm}0.11g$) twice a day for 6 weeks. Weight gain (WG) of fish fed EP with 10% lipid was significantly higher than those of fish fed EP with 6 and 14% lipid (P<0.05). Broken line model analysis suggested that the optimum dietary lipid level could be $9.08{\pm}0.37%$ for the maximum WG in juvenile flounder. The second experiment was conducted to determine the optimum feeding rate using experimental diet contained 10% lipid level that had the highest WG in first experiment. The feed intake of triplicate groups of the juveniles ($13.4{\pm}0.15g$) was restricted to four different feeding rates of 2.0, 2.5, 3.0 and 3.5% of their body weight $day^{-1}$ and to satiation using experimental diets. WG and feed efficiency (FE) of fish was affected by feeding rates. WG and specific growth rate of fish fed the diets increased with increasing feeding rate, however no significant differences (P>0.05) in WG and specific growth rate were observed between the fish fed 3.5% of their body weight $day^{-1}$ and to satiation. FE of fish fed 3.5% of their body weight $day^{-1}$ was significantly higher than those offish fed 2.0% of their body weight $day^{-1}$ and to satiation (P<0.05). Broken line model analysis suggested that the optimum dietary feeding rate could be $3.56{\pm}0.06%$ for the maximum WG in juvenile flounder. These results indicated that the optimum lipid level and feeding rate could be $9{\sim}10%$ (Energy: 4,774kcal and PIE ratio: 108mg protein/kcal in diet) and 3.5% of their body weight $day^{-1}$in juvenile flounder, respectively.
We conducted an 8-week feeding trial to evaluate dietary lipid sources on the growth performance and body composition of juvenile river puffer fish Takifugu obscurus. Nine experimental diets were formulated with fishmeal as the major protein ingredients, providing 50% crude protein. The experimental diets contained either beef fallow (BF), soybean oil (SO), rapeseed oil (RO), or linseed oil (LO). Each of these diets was then supplemented or not with 0.5% n-3 HUFA (BFH, SOH, ROH, and LOH), resulting in a total of eight experimental diets. The control diet contained fish oil (FO) as the lipid source. Fish averaging $10.3{\pm}0.03g$ were fed the experimental diets in randomly selected triplicate groups for 8 weeks. Weight gain and feeding efficiency of fish fed the FO and SOH diets were significantly higher than those of fish fed BF or RO (P<0.05), but these diets did not differ significantly from the other diets. The protein efficiency ratio of fish fed the SOH diet was significantly higher than that of fish fed the BF, SO, or RO diets (P<0.05), but these were not significantly different from the other diets. The specific growth rate of fish fed the FO and SOH diets was significantly higher than that of fish fed the BF diet (P<0.05). Whole body DHA and n-3 HUFA contents of fish fed the FO diet were significantly higher than those of fish fed the SO, RO, or LO diets (P<0.05), but were not significantly different from the other diets. These results indicate that soybean oil and linseed oil could replace up to 100% of fish oil in the diet containing 60% fishmeal for river puffer fish.
BACKGROUND/OBJECTIVES: The present study aimed to evaluate the effects of folic acid supplementation in high-fructose-induced hepatic steatosis and clarify the underlying mechanism of folic acid supplementation. MATERIALS/METHODS: Male SD rats were fed control, 64% high-fructose diet, or 64% high-fructose diet with folic acid for eight weeks. Plasma glutamate-pyruvate transaminase, glutamate-oxaloacetate transaminase, lipid profiles, hepatic lipid content, S-adenosylmethionine (SAM), and S-adenosylhomocysteine (SAH) were measured. RESULTS: The HF diet significantly increased hepatic total lipid and triglyceride (TG) and decreased hepatic SAM, SAH, and SAM:SAH ratio. In rats fed a high fructose diet, folic acid supplementation significantly reduced hepatic TG, increased hepatic SAM, and alleviated hepatic steatosis. Moreover, folic acid supplementation in rats fed high fructose enhanced the levels of phosphorylated AMP-activated protein kinase (AMPK) and liver kinase B (LKB1) and inhibited phosphorylation of acetyl coenzyme A carboxylase (ACC) in the liver. CONCLUSIONS: These results suggest that the protective effect of folic acid supplementation in rats fed high fructose may include the activation of LKB1/AMPK/ACC and increased SAM in the liver, which inhibit hepatic lipogenesis, thus ameliorating hepatic steatosis. The present study may provide evidence for the beneficial effects of folic acid supplementation in the treatment of non-alcoholic fatty liver disease.

This study investigated the utilization of beef tallow and dextrin as non-protein energy sources in the diet of juvenile far eastern catfish Silurus asotus. Three replicated groups of juveniles (initial mean weight of 3.6 g) were fed diets containing high levels of beef tallow or dextrin for six weeks. The final mean weight of fish fed on a 17% lipid diet with a high level of beef tallow was significantly higher than that of fish fed on a 9% lipid diet with a high level of dextrin (P=0.04). No significant differences were observed in the feed efficiency and protein efficiency ratio of fish fed on the experimental diets. Crude lipid content and the C18:0, C18:1n-9 and C18:2n-6 contents of whole-body fish were significantly affected by diet (P<0.05). The results of this study suggest that beef tallow is better than dextrin as a non-protein energy source for improving the growth of juvenile far eastern catfish, and that beef tallow could be economically used as an ingredient in practical feed.
To confirm the food quality and storage stability of commercial Korean kamaboko, we experimented with the composition and textural properties using various surimis and kamaboko products. We also investigated changes in protein digestibility and lipid oxidation of vacuum packed products under chilled storage at $4{\pm}1^{\circ}C$. Among the fish meatbased surimi, vegetable mixed surimi had the lowest protein content (23.73 %), as compared to other surimi (51.9-73.6%). Siginificant (P<0.05) differences in protein, lipid content and degree of fat oxidation were noted between the fried kamaboko products of three companies. Adhesiveness, springiness, cohesiveness, gumminess, chewiness and resilience were similar in all samples, but there were notable differences in hardness and fractuability between samples. In vitro protein digestibility and trypsin indigestible substrate (TIS) were not inversely proportional in fried kamaboko products. The protein digestibility (80.30%) of steamed vegetable mixed fried kamaboko was lower than that of other fried samples (84.9-86.2%). Computed protein efficiency ratio (C-PER) of companies A and C's fried kamaboko was 2.6 but company B's was 1.9. There was no noticeable change in thiobarbituric acid reactive substances (TBARs) or protein digestibility for any of the vacuum packed fried kamaboko during 30 days of chilled storage.
