전통메주에 증식하는 붉은 곰팡이의 특성 (Characteristics of Red Mold Isolated from Traditional Meju)

  • Red mold was isolated from meju prepared by traditional mtehod and characterized. The isolated red mold grew well on potato dextrose agar medium, In microscopic observation, it had a septum in mycelium and ellipsoidal spore. Optimal temperature and pH for growth were 30$\^{C}$ and 6.0, respectively. Enzyme activities such as protease, a-amylase and glucoamulase in ted mold were lower than those in Aspergillus oryzae. A competitive growth between red mold and Asp. oryzae was greatly affecten by cultivation temperature. The growth of isolated red mold on meju was predominant at below 30$\^{C}$ as compared with Asp. oryzae.

홍어껍질로부터 추출한 콜라겐의 물리화학적 및 기능적 특성 (Physicochemical and Functional Properties of Collagen Powder from Skate (Raja Kenojei) Skins)

  • Physicochemical and functional properties of collage from skate skin (Raja Kenojei) are examined depending on pH and NaCl concentration in the medium. The solubility decreased as NaCl concentration increased but, turbidity increased as concentration of collagen increased. Oil-holding capacity and water-holding capacity were similar to other fish skin collagens. Emulsion activity, creaming stability, and viscosity were lowest at where pH levels were isoelectric point regions of collagens. However, the higher pH values at 7.0-9.0 caused increasing foam expansion, foam viscosity, and gel strength. These results indicated that collagen from skate skin could be used as a functional ingredient for food and industrial applications.

감식초 제조를 위한 감펄프의 알콜발효시 펙틴분해효소 처리의 효과 (Effect of Pectin Degradation Enzyme during Alcohol Fermentation of Persimmon Pulp for Persimmon Vinegar Preparation)

  • This study was carried out for the purpose of improving the persimmon vinegar. Crushed persimmon(persimmon pulp) was used at alcohol fermentation using Saccharomyces bayanus for persimmon alcohol medium preparation. Glucose(8.39%) and fructose(7.96%) were the dominant free sugar in persimmon pulp before the at cohol fermentation. They decreased abruptly during alcohol fermentation and glucose was consumed more rapidly than fructose. Final alcohol concentration was finally reached to 8%(v/v) in 5 days for mentation of persimmon pulp. Pectinase pre-treatment of persimmon pulp resulted in tusker contents of galacturonic acid, galactose, methyl alcohol and isoamyl alcohol in main mash for alcohol fermentation than those in main mash prepared without pectinase pre-treatment. After alcohol fermentation tannin concentration was 350ppm and astringency was not perceived.

Synthesis of $\beta$-Sitosterol Esters with Conjugated Linoleic Acid and Medium Chain Fatty Acids by Using Lipase as Catalyst

  • Plant steryl esters have good effects on plasma cholesterol level and are used as functional food ingredient. Conjugated linoleic acid (CLA) presents mainly in animal foods and has a good benefit and medium chain fatty acids (MCFAs) are a rapid energy source for human. In this study, we produced the ${\beta}$-sitosterol esters from CLA and MCFAs using various lipases as catalysts. Among lipases, AYS (from Candida rugosa) was the most effective for synthesis of ${\beta}$-sitosterol esters in the presence of water (24.35% conversion) or hexane (25.33% conversion). The second esterification extent was obtained by lipase AK (from Pseudomonas sp), showing 10.26% conversion in water and 15.94% conversion in hexane, respectively. The reaction condition was 1:3 molar ratio (${\beta}$-sitosterol:fatty acid, 1:3) and stirred (175 rpm) at 55$^{\circ}C$ in water bath shaker for 48h.

  • Since 1995, the small and medium enterprise introduced the Quality Innovation Program that is called 100PPM Quality Renovation Program. A point of 2000, the program's name was changed by Single PPM Quality Innovation Program in pursuit of defects below 10ppm in outgoing quality. Nowaday 1,651 companies is received Single PPM Quality Certification from government at the end of 2008. On the other side, the return or withdrawal of certification is going on because of various reasons. In this study, we analyse the status of certification's preservation and cancellation, and suggest the cooperation ideas between government and companies.

Biodegration of Formaldehyde-Releasing Preservatives

  • A strain of Pseudomonas aeruginosa was isolated from the spoiled product and its characteristics on various formaldehyde-releasing preservatives were investigated. This strain, P. aeruginosa FR, could utilize 1.0% of imidazolidinyl urea and 0.2% of DMDM hydantoin as a sole carbon and nitrogen source in the minimal salts medium. With the growth of the strain in minimal salts medium containing imidazolidinyl urea, formic acid was initially accumulated according to the decrease of formaldehyde concentration. It was suggested that formaldehyde dehydrogenase was involved in this oxidation process and could catalyze formaldehyde, imidazolidinyl urea, DMDM hydantoin and quaternium-15, but not bronopol. MICs of this strain to each preservation were 0.03% in formaldehyde, 1.0% in imidazolidinyl urea, 0.2% in DMDM hydantoin, 0.2% in quaternium-15 and 0.1% of EDTA-2Na. But the MICs were diminished about ten times when 0.01% of EDTA-2Na was added to the preservative systems. In actual challenge test, the eyeliner and the pack which contained paraben and imidazolidinyl urea were not able to be protected from this strain, but when 0.05% EDTA-2Na was added the products were sufficiently preserved.

생쥐 및 소초기배의 체외보존에 관한 연구 (Studies on In vitro Preservation of the Mouse and Bovine Embryos)

  • It was carried out to investigate the effect of the kind of medium, the concentration of serum added and the temperature of storage on the survival of mouse and bovine embryos preserved In vitro. The survival of frozen-thawed mouse embryos after cooling at 4$^{\circ}C$ was also investigated. It was possible to preserve the embryos of mouse until 4 days and of cattle in a day without significant decrease of the survival rates. The survival rates of frozen-thawed mouse embryos after cooling at 4$^{\circ}C$ over 3 days were below 20%.

  • Suitability of corrugating medium for microflute shape formation was analyzed in terms of fiber bonding strength and paper stiffness. Cationic starch and oxidized starch were applied to corrugating medium's surface by bar coater in order to compare the relative importance of stiffness and fiber bonding on microflute formation. It was found that cationic starch was beneficial for better stiffness and oxidized starch was beneficial for better fiber bonding. The results of the decreasing ratio of length by flute formation, the calculated conditioning effect, and the flute height before and after conditioning treatment were obtained. For better microflute shape formation and its preservation it was found that fiber bonding strength should be increased, proper stiffness was required, and resistance to water absorption from surroundings should be increased.

딸기로부터 분리된 Fusarium oxysporum nit 변이주의 특성과 안정성 및 재분리 (Characteristics, Stability and Reisolation of nit Mutant of Fusarium oxysporum from Strawberry)

  • This study was conducted to investigate the potential of nitrate-nonutilizing mutants (nit mutants) in ecological studies of Fusarium disease of strawberry. Nit mutants of Fusarium oxysporum from strawberry were easily formed on chlorate-containing media. Nit mutants were assigned to three phenotypic classes, nit1, nit3, and NitM, on the basis of their growth on media containing one of the following five different nitrogen sources ; nitrate, nitrite, hypoxanthine, ammonium and uric acid. Frequency of nit mutation and proportion of three phenotypes of nit mutants depended on the isolate. Mutation rate was 45.6% and ranged from 15.0% to 95.0%. The frequency of nit1 mutants was higher than that of nit3 or NitM. The complementary reaction between nit1 and NitM was higher than that of other combination. There has been no complementary response observed between nit3 and nit3. The nit mutants showed similar growth pattern as the that of wild type isolate on potato sucrose agar and potato sucrose liquid media. Most of the mutants retained pathogenicity, and maintained their phenotypes even after two year preservation through subculture on slanted PSA at room temperature. Nit mutants were selctively isolated from infested soil and infected plants on the selective medium (MMCPA) containing potassium chlorate with their original phenotypes, while naturally occurring isolates of Fusarium oxysporum were not grow on the medium. On the contrary, nit mutants showed very slight growth on the medium (MMPA) containing nitrate as a sole nitrogen source, and therefore could be distinguished from wild type isolate.

There is shortcoming that must be difficult to know correct underground utilities establishment state in-suite in this research and do comparison examination running parallel drilling investigation to heighten believability of electric resistivity survey. Did to dam that censure data that regulate grading from construction and is censure construction which can know correctly interior base situation comparatively to electricity medium of interior and electricity eruption won of contiguity and base condition (base rock).
