A Survey of the Nutrients and a Price Comparison of Korean Style Full Course Meals - Based on Korean Restaurants in Changwon City and in Luxurious Hotels in Seoul - (한정식업소에서 제공되는 1인분 영양소와 가격 비교조사 - 서울시 특급호텔과 창원시를 중심으로 -)

  • The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ii ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by two different types of Korean style restaurants. A total of 27 restaurants participated in this study, 7 restaurants from the luxurious hotels in Seoul and 20 restaurants from the City of Changwon. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance (RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) Compared with 1/3 or the Korean RDA, all the nutrients were oversupplied. The average nutrient ratios were about 3.7 times higher than 113 of the Korean RDA in calories, about 9 times higher in proteins, 10 times higher in phosphorus, 7 times higher in Vitamin Bl, and 12 times higher in Vitamin E. 2) Seventy-five percent (n = 20) of the restaurants served within the range of thirty to forty dishes, whereas most of the hotel restaurants (70%) served twenty dishes or fewer. 3) The average carbohydrate: protein: fat (CPF) ratio of caloric nutrients was 40:26 : 34. This study concluded that: i) Korean style full course meals provide too much food, nutrients, and calories, resulting in an over- or unbalanced nutrient intake, and ii ) the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. Such over -or unbalanced nutrient intake could cause chronic degenerative problems such as cancer and cardiovascular disease. These findings indicate that restaurants serving Korean style full course meals should carefully plan their menus in order to provide their customers with balanced meals. They should also be strongly encouraged to play an active role in improving their customers' nutritional status, as well as reducing the restaurants wastage of food. A Study on Preference Analysis on Eating/Drinking Table Decoration - Centering on Color Image and Aesthetic Value (실용 테이블 데커레이션에 대한 선호 분석에 관한 연구 - 색채 조화의 이미지 및 심미성의 영향요소를 중심으로 -)

  • This study has showed verified results on 'Survey into Observer Preference for Table Decoration for Eating and Drinking'. It is a preliminary study to look into interrelation of preference to color tables, image adjectives, aesthetic value, by giving color changes in a certain regularity to each influential factor in functional table decoration. The result has demonstrated that, as for color image and preference,'observers prefers mid/low dark-toned brown which gives a feeling of 'high-quality, and like to eat', and orange tone with a fooling of 'warm and colorful'. In evaluating interrelation between preference and aesthetic value, the study has revealed that ordinary people take the influential factor of 'unity and Gestalt' seriously, while non-professionals preferred 'uniqueness'. Stimulant No. 7 is one of constituent factors of functional table decoration, eliciting significance of images on colors ant aesthetic value. This study also has practical problems about insufficiency or inadequateness in producing mood suitable to T P O, according to depending upon color changes in picking up stimulants, or other problems in selecting stimulants, according to time, seasons and generational parameter in which the inquiry is conducted, but it will serve as a stepping stone for developing new design using both qualitative and quantitative data in 려nctional table decoration.

Cooking Technique Deve1opoment to Improve the Taste of Cooked Rice: -A consumer survey on purchasing rice and cooked rice consumption- (우리 쌀 밥맛 향상을 위한 취반기술 개발 연구 -제1보 소비자의 쌀 구매 및 밥 소비에 관한 실태조사-)

  • As a preliminary study for developing cooking techniques to improve cooked rice flavor, we surveyed consumer perceptions on purchasing rice and the consumption of cooked rice. The quantity of rice purchased by consumers was in the range of $1O{\sim}20$ kg. The purchase criterion for 50% of the subjects was the taste of the cooked rice, and half of the subjects bought their rice at a supermarket. A majority (90%) of the subjects consumed the rice within 1 to 4 months, storing it raw in the package (32.4%) or in a container at room temperature. The rice was cooked for 2 to 5 persons (65%), 1 to 2 times a day (70%) with a pressure cooker (76%). The rice and water volume were measured by eye. The cooked rice was eaten immediately (41.8%) or in 1 to 2 days (48.6%) by keeping it in an electric cooker (63.6%). The subjects perceived the rice cultivar (37.9%) as the major factor for the cooked rice flavor, as well as the region of origin (21.3%), and storage period (11.9%); the cultivars of Ilmi, Ilpoom and Chuchung were preferred. In conclusion, the consumers regard rice as a principal food; however, the methods to measure rice and water are not standardized. To improve the taste of cooked rice, consumers depend on cooking equipment and the rice cultivar.

  • In the planning stage of mobile phone development, one of the most important considerations is to select a FormFactor properly to determine the strategy and Purpose of a Product. Up to now, the FormFactor has been selected only by intuitional and qualitative methods. In this study, the Appraisal Methodology using Sensibility Adjectives of Emotion and Sensibility Engineering was presented to suggest the systematic and rational framework in the field of FormFactor selection. First, we verified the conceptual FormFactors with Axiomatic Design and classified the Sensibility Adjectives into the verified FormFactors. When the FormFactor and classified Design Parameters (DP) were given to a designer, the designer implemented the preliminary designs and they were assessed and analyzed by the survey. With these processes, we were able to select the proper designs for FormFactors which were fit for the purpose of a product. This was caused by connecting the Axiomatic Design and tile Sensibility Adjectives. This study gave the possibilities that can be spread to the selection factors, except for the FormFactor, from now on.

Pulmonary Function and Its Influence Factors of Residents in Yeosu Industrial Complex

  • Objectives: This study is aimed at identifying the influential factors on the pulmonary function of ordinary residents in the surrounding areas of Yeosu Industrial Complex. Methods: The PFT (Pulmonary Function Test) was conducted on the target residents numbering 989 people (male 361, female 628). The exposed group (813 people) resided within the radius of 5km from Yeosu Industrial Complex and the control group (176 people) resided in the radius of more than 15 km from May 2007 to November 2007. The survey also took into account other factors including personal characteristics, life habits, respiratory diseases and allergic symptoms, medical histories, and the living environments of the residents in order to further identify influential factors on pulmonary function. Result: When comparing the PFT values of the exposure groups to the control group of the same city, values of the exposure groups were meaningfully lower with an %$FEV_1$ of 107.05% and %FVC of 100.28%. Conversely, the control group reported an %$FEV_1$ and %FVC of 107.26% and 102.85% respectively, indicating that ambient air pollutants reduce lung function. The odds ratio of asthma diagnosis history increased when a subjects residence was close to a heavily trafficked road, traffic amount was huge, a bed was used, and the family had less than four members. However the results were not statistically meaningful. The odds ratios of abnormal pulmonary function were statistically higher among those with asthma(OR=4.29, CI=1.75-10.56), wheezing (OR=2.59, CI=1.24-5.41), and nasal congestion (OR=2.87, CI=1.36-6.08) (p<0.01). The factors affecting $FEV_1$ were symptoms including asthma, passive smoking and allergic eye disease ($R^2$=0.049, p<0.001). For the FVC symptoms including asthma ($R^2$=0.014, p<0.001) were measured. The analysis showed that FVC decreased with increases in $O_3$ and CO(p<0.01). Furthermore, $FEV_1$ decreased with increases in $O_3$(p<0.01). Conclusions: These results will provide preliminary data for establishing responsive measures to protect the health of residents in industrial complexes from air pollution, and to develop lasting environmental health policies.

Investigation and Risk Assessment of Heavy Metals Contamination around an Abandoned Metal Mine in Korea

  • Recently, heavy metals contamination of the agricultural soil and crops surrounding mining areas has been identified as one of the most serious environmental problems in South Korea. The Ministry of the Environment in Korea conducted a Preliminary National Environmental Health Survey (PNEHS) in abandoned metal mines in 2007. The priority for a subsequent detailed examination was ranked from the results of PNEHS. The studied mine which was ranked as being of the highest priority is located in the midwestern part of Korea and was operated from 1911 to 1985. In this study, the contamination levels of the heavy metals in the abandoned metal mine were investigated. From the results, the average daily dose (ADD), target hazard quotient (THQ) and target cancer risk of the heavy metals were evaluated. The concentration of arsenic (As) in all of the tailings from the mine was higher than its countermeasure standard of Korea. In particular, the highest concentration of As, 330 mg/kg, was up to 15 times higher than its countermeasure standard. The average concentration of As in agricultural soils was higher than the warning standard of Korea, and higher than its countermeasure standard at six sites. The average concentrations of the analyzed heavy metals in agricultural soil were below the warning standard, but concentrations of cadmium (Cd) and lead (Pb) at 4 sites were higher than its warning standard. The average concentration of As in surface water exceeded the warning standard of Korea. The value of the THQ of As for the tailings was higher than the health protection standard 1. The value of THQ of As for the farmlands was lower than the standard, while the hazard index (HI) of As was higher than the standard. The value of target cancer risk (TCR) of As, $6.44{\times}10^{-4}$, were higher than the health protection standard of a lifetime risk for TCR at $1{\times}10^{-6}$. This suggests that the residents around the metal mines are exposed to As pollution with a carcinogenic risk.

Probable Volcanic Flood of the Cheonji Caldera Lake Triggered by Volcanic Eruption of Mt. Baekdusan (백두산 화산분화로 인해 천지에서 발생 가능한 화산홍수)

  • The historical accounts and materials about the eruption of Mt. Baekdusan as observed by the geological survey is now showing some signs of waking from a long slumber. As a response of the volcanic eruption of Mt. Baekdusan, water release may occur from the stored water in Lake Cheonjii caldera. The volcanic flood is crucial in that it has huge potential energy that can destruct all kinds of man-made structures and that its velocity can reach up to 100 km $hr^{-1}$ to cover hundreds of kilometers of downstream of Lake Cheonji. The ultimate goal of the study is to estimate the level of damage caused by the volcanic flood of Lake Cheon-Ji caldera. As a preliminary study a scenario-based numerical analysis is performed to build hydrographs as a function of time. The analysis is performed for each scenario (breach, magma uplift, combination of uplift and breach, formation of precipitation etc.) and the parameters to require a model structure is chosen on the basis of the historic records of other volcanos. This study only considers the amount of water at the rim site as a function of time for the estimation whereas the downstream routing process is not considered in this study.

A Phenomenological Study on Experiences of Smoking Cessation Attempts by Male Smokers' (남성 흡연자의 금연시도 경험에 관한 현상학적 연구)

  • The aim of this study was to understand the nature and semantic structure of male smokers' experience of smoking cessation attempts. The participants were nine male smokers with at least one smoking cessation attempt, and who responded voluntarily to the preliminary survey. Data collection was conducted from September to December 2017, and the results of individual in-depth interview were analyzed by applying the Giorgi(2009)'s phenomenological research method. Result: 'Attempt's of smoking cessation', 'Several failed attempts of smoking cessation', 'Desperate need for help' and 'An important factor in the success of smoking cessation'. Conclusion: The present study showed that male smokers were desperate for outside intervention, smoking cessation policies, and help from family members and acquaintances as they tried to cease smoking. Therefore, it is necessary to have a comprehensive understanding of smoking men's experience in smoking cessation, to identify their nursing needs, and provide necessary nursing intervention so that they can lead a healthy life as a member of society without giving up smoking. This study is meaningful in that smoking men can gain new insights by providing a comprehensive and comprehensive understanding of their experience

Profitability Analysis of Yield Net in Chestnut Harvest (밤 수확망 이용의 투자수익성 분석)

  • This study was carried out for preliminary feasibility review to investigate work efficiency of chestnut harvest using yield net and to find a way to reduce the cost for purchasing and managing yield net. To this end, we conducted a survey of 6 forest farm houses in Cheongyang, Gongju and Buyeo regions where yield nets are being used efficiently. Cost-benefit analysis based on Net Present Value and Benefit Cost Ratio was used to examine the investment profitability. While regions of Cheongyang A, Cheongyang B and Buyeo A are profitable in spite of no subsidy for purchasing yield net from the government, the regions of Gongju A, Gongju B and Buyeo B are not profitable without subsidy. When an 80% of subsidy for purchasing yield nets is provided, the forest farm houses in Cheongyang A, Cheongyang B, Buyeo A and Gongju B regions are found to be profitable while those in Gongju A and Buyeo B regions are still not profitable. We consider that the different results come from the differences in the planting method of chestnut, labor efficiency, labor skill and the orchard conditions such as slop. Finally, several efforts for government and cultivator are suggested to expand the use of yield net; planting chestnut in line, establishing installation and management methods, supporting the cost for purchasing yield net and studying detailed effects besides profitability issue.

Mediating Effect of Self-Efficacy in the Relationship between Parenting Attitude and Rational Career Decision-Making Type of Middle School Students (부모의 양육태도와 중학생 자녀의 합리적 진로의사결정 유형 관계에서 자기효능감의 매개효과)

  • This study was carried out as a preliminary study to analyze the effect of parenting attitudes on the career decision-making types of middle school students. We analyzed the mediating effect of self-efficacy to develop a program that can be implemented jointly at home and at school to help middle school students who are facing the Free Semester System in 2016 to form an ideal career decision-making type. To that end, a survey was conducted with 345 students attending a middle school located in Northern Seoul, and the 335 valid questionnaires were analyzed using SPSS v22. In the sociodemographic analysis, there was no difference in parenting attitudes between groups in terms of religion and family income. The democratic attitude of parents had the greatest impact on the rational career decision-making type, while the permissive attitude had a partial effect. The authoritarian attitude had no effect. Self-efficacy had a mediating effect in only the relationship between democratic parenting attitude and the rational career decision-making type. These findings imply that to help middle school students form a rational career decision-making type, intervention in variables other than self-efficacy is necessary in addition to parent education.
