꽁치 어육을 이용하여 제조한 어묵의 품질 특성 (Quality Characteristics of Fish Cake made with Saury (Cololabis saira) Fishmeat)

  • The purpose of this study was to investigate the overall preference of saury fish cake made. To reduce off flavor of saury and improve sensory properties of saury fish cake, different types of spices (ginger, garlic, basil and rosemary) and different types of vegetables (onion, carrot, paprica, cabbage and hot pepper) were added, after which sensory properties were evaluated. The results of preference test showed that ginger, rosemary, and onion scored the highest in terms of taste, and overall preference. Moisture, hardness and gumminess of saury fish cake with vegetables was reduced but increased during storage. On the other hand, cohesiveness and resilience were reduced. Finally, ginger and rosemary showed the lowest off flavor taste. Saury fish cake made with onion and hot pepper scored the highest in the preference test.

  • Hangwha is a part of our traditional culture; however, it is now barely maintaining its name. This study intends to contribute to the development of the Hanghwa industry. In this respect, 'Brand Image' is adopted to suggest the ways to develop the Hangwha industry. Commercializing factors that consumers prefer were analyzed and their effects on brand image were investigated. In addition, the effects of brand image on consumers' awareness and preference were analyzed. This research conducted analysis on 294 people who have used Hangwha in Busan and Gyeongsangnamdo. The results of this empirical study are as follows: It turned out that Hangwha influences the society-oriented and consumer-oriented brand image. Its quality-oriented image has influence on awareness. Its society-oriented and quality-oriented brand image turned out to influence preference.

  • 由于生产的全球化以及国家之间的文化交流, 东方元素越来越吸引世界的眼球. 在时装界, 一个时装设计师的文化背景往往可以催生新颖的设计理念, 使他卓尔不群. 人们对于东方元素的喜爱, 给传统时装市场带来了巨大的商机, 并且把基于文化的业务拓展到全球时装市场. 然而, 包含韩国传统文化的国际品牌还有待开发. 为了发展有韩国特色的国际品牌, 韩国人首先要在国内服装市场上认同本国文化, 然后才能进军国外市场. 便服非常适合采纳韩国元素, 因为这种衣服有很多用途, 很容易被广泛接受和使用. 而且, 多用途便服和时尚内衣的市场需求越来越大. 尽管便服市场在快速发展, 但是对便服的专门研究尚不多见, 目前在对发展中的现代化传统服装、时尚产品和品牌的研究中, 并不包括对便服的研究. 因此, 本论文调查了韩国的便服市场, 研究了消费者对含有韩国传统时装设计特色的便服的评价. 分析了对于韩国传统时装设计元素有购买意向的先例之间的关系, 并且比较了不同生活群体的消费目标. 产品质量, 零售服务质量, 感受价值以及对拥有韩国传统设计元素的便服的喜好被作为购买意向的先决条件. 同时, 本文设计了一个结构方程模型, 用于探讨它们之间的关系以及它们对购买意图的影响. 产品质量和市场营销中的零售服务质量结合在一起, 成为影响人们对韩国特色便服的偏好和价值感知的因素. 而且, 偏好和价值感知对购买意向的影响可以用同一模型来检验. 通过网上调查系统由女性消费者完成了一共357份的自填式问卷, 并制定了一份调查样本人群的生活方式、对于产品和销售服务的标准、对于韩国特色便服的价值感知、偏好以及购买意向的调查问卷. 此外, 问卷还将调查便服的采购和使用行为, 以便检验韩国便服的市场地位. 并且使用描述性分析, 因素分析, 聚类分析来分析数据, 以及使用AMOS 7.0.来进行方差分析和建立结构方程模型. 对于韩国便服市场地位的调查结果显示, 在我们的样本人群中大多数消费者都购买了便服. 便服在目前被认为是在家里穿的衣服, 是消费者比较而言投入较低的衣服. 在调查中显示, 大多数消费者每年仅仅购买2到3次便服, 花费在10美元以下. 购买便服的消费者们的生活方式共有四类: 传统价值导向的生活方式, 品牌影响的生活方式, 追求休闲的生活方式以及健康导向的生活方式, 这四类共计有12个项目. 基于这些生活方式要素, 便服消费者们又可以分为两类: 安乐派和保守派. 文章估量了对含有韩国传统时尚设计元素的便服的购买行为各组成部分之间的关系, 产品质量和零售服务质量都会影响到购买便服的偏好和价值感知. 这个研究结论证明, 高质量的产品和零售服务会对便服形成积极的优先效应. 价值感知和对便服的偏好会对购买意图产生积极的影响. 这个结果表明, 对便服所含有的韩国传统时尚设计因素的强烈偏好和价值感知能增强购买意图. 在两种不同生活方式的群体(即安乐派和保守派)的模型比较中, 结果显示产品质量和零售服务质量对安乐派群体的偏好和感知价值都有积极影响. 然而, 对保守派来说, 只有零售服务质量对偏好和购买意图有积极的影响. 由于安乐派对购买意图显示出更重大的影响, 包含韩国传统时尚设计因素的便服品牌应该关注安乐派的这些特征. 然而, 保守派对包含韩国传统时尚设计因素的便服在偏好和购买意图的关系中显得更强. 因此对包含韩国传统时尚设计因素的便服品牌来说, 它应该把重点放在如何激发保守群体消费者对便服的积极偏爱上. 这些结果提供了关于韩国便服消费者生活方式的信息, 也对那些计划进入韩国便服市场的时尚品牌, 尤其是那些与现行研究样本相似的, 目标为女性消费者的时尚品牌提供了有用的信息. 这一研究也为便服品牌和那些打算创造含有韩国传统时尚因素的高价值品牌提供了策略和市场洞察力. 考虑到不同生活方式群体的类型和便服或传统时尚商品之间的关系, 品牌设计者和市场策划人员可以运用这一研究成果作为市场定位, 目标设定, 以及市场销售策略的一个参考.

  • This study investigates which sound quality indices except SPL raise annoyance response. For investigation, auditory perception experiments for road traffic noise with identical linear SPL were performed by Paired Comparison Method. The numerical results of a Paired Comparison experiment express relative preference about annoyance. So that these relative preference scores are to be correlated to sound quality indices, which are absolute, a transformation is required to go from the relative domain to an absolute and linear scale of preference. The results of the transformation will be the 'merit values,' which quantifies the annoyance(in this case) of the road traffic noise on a linear scale. Using multiple regression, a formula is established that can calculate predicted merit values. Furthermore, This investigation offers a method selecting sound samples that represent various sound quality indices values to use experiment.

  • This paper examines how online product information changes the customers' purchase intentions from subjectivity-objectivity dichotomy perspective. Quality and Preference are proposed as product evaluation criteria and their marginal changes with product information differentiation are hypothesized. An experimental survey was conducted to 57 subjects and the hypotheses were partially supported through PLS path comparison method. The study contributes to IS research by proposing a simple and effective product evaluation framework and by abstracting the impact of product information from other factors. Finally, we suggest the utilization of product information with the optimization of the cost-benefit structure between information and purchase intention.

  • The ever increasing demands for enhanced competitiveness of engineered products require a "designing-in-quality" strategy that can effectively and efficiently incorporate multiple design objectives into design. Robust design can be viewed as a multi-characteristic design problem requiring tradeoffs between mean and variance characteristics. Firstly this paper analyzes the intrinsic preference of the traditional SN ratio on mean and variance, and secondly presents a new design metric for a robust design using concepts from utility theory to accurately capture designer′s intent and preference on mean and variance. The steps to apply the proposed design metric as the robust design criterion in an orthogonal array based engineering experimentation is presented with the aid of a demonstrative case study. The performance of the proposed design metric is tested, and the results are discussed.

외식기업 브랜드 자산 구성 요인간의 관계 연구 (Relationships among Brand Equity Components)

  • The importance of brand and brand equity has greatly increased not only in the professional perspectives but also in academic viewpoints. Especially, lots of related studies have been focused on the components of brand equity itself. However, this study concentrates on the relationships of brand equity components for understanding consumers' attitudes toward the brands of the food-service businesses. The basic research model consists of 4 brand equity components: brand awareness, perceived quality, brand image, and brand preference. Research data are gathered through survey questions responded by university students. For statistical analysis, correlation analysis, factor analysis, and covariance structure analysis are carried out. The result of this study are summed up as follows. Among the brand equity components, brand awareness had a great effect on perceived quality(path coefficient; 0.476). Brand image highly influenced brand preference(path coefficient; 0.439).

창자파래분말을 첨가한 영양바의 품질특성 (Quality Characteristics of Nutritional Bar with Varying Concentrations of Enteromorpha intenstinalis Powder)

  • This study analyzed the quality characteristics of nutritional bars with varying concentrations (0, 0.5, 1.5, 2.5%) of Enteromorpha intenstinalis powder added. To achieve this, color analysis, an assessment of DPPH radical scavenging activities, and sensory evaluations were performed. The results revealed that as the amount of Enteromorpha intestinalis powder (EIP) increased, pH and lightness values decreased. DPPH radical scavenging activities of 75.26%, 56.11%, 71.59%, and 62.49% were exhibited for the 0%, 0.5%, 1.5%, and 2.5% concentrations, respectively at 50 mg/mL. Significant differences were observed between the samples with respect to the color, appearance, texture, taste, and overall preference for the nutritional bars. Overall preference was highest for the nutritional bar with 1.5% Enteromorpha intenstinalis powder added. Therefore, adding 1.5% of Enteromorpha intenstinalis powder to a nutritional bar is most suitable for enhancing preference and quality characteristics.

율피 분말을 첨가한 가래떡의 품질특성 (Characteristics of Garaetteok with Added Dried Inner Shell Powder of Chestnut)

  • This study investigated the influence of incorporating chestnut inner shell powder (CISP) at varying levels (0%, 3%, 6%, 9%, and 12% w/w) on the quality, antioxidant potential, and consumer preference of garaetteok, a Korean rice cake. Findings revealed a decrease in moisture content and pH with increasing CISP content. Color analysis indicated a reduction in lightness (L) and yellowness (b) values, while redness (a) values increased. Textural properties displayed an increase in hardness, chewiness, and gumminess, but a decrease in springiness, adhesiveness, and cohesiveness with increasing CISP levels. Sensory evaluation for appearance, taste, flavor, texture, and overall preference revealed the sample containing 6% CISP to be the most favorable. Moreover, the antioxidant activity of the garaetteok exhibited a positive correlation with increasing CISP content. In conclusion, incorporating 6% CISP resulted in improved quality characteristics for garaetteok development, offering enhanced nutritional value, antioxidant properties, and overall consumer preference.

커피전문점의 VMD 구성요인이 브랜드자산과 재구매의도에 미치는 영향 (An Influence of VMD configuration factors of Coffee shops on Brand equity and Repurchase intention)

  • Purpose - This study identifies relationships amongst repurchase intentions, brand equity, and preference by applying VMD of fashion retail stores. The results would help coffee shop owners and coffee makers in devising an appropriate strategy for successfully managing coffee shops. Research design, data, methodology - The VMD model of a coffee shop includes harmony, trend, and attractiveness, while brand equity encompasses brand awareness, perceived quality, and brand image. In this study, the VMD factors of coffee shops, brand equity, and brand preference, are shown as independent variables, while repurchase intention is shown as the dependent variable. The study aims to ascertain the extent of the influence configuration factors of a coffee shop have on brand equity, brand preference, and repurchase intention. Regression analysis was used to verify the mediating effects of brand preference on brand equity and repurchase intention. The measurement items were already deemed as reliable and valid in the previous study, but some modifications were made for the purposes of this study. Questionnaires were distributed to 550 consumers on a national scale, and 517 consumers amongst these were finally used as a sample for analysis using the SPSS 17.0 statistical program. Results - First, amongst the VMD configuration factors of a coffee shop, trend, and attractiveness have a positive impact on brand equity (brand awareness, perceived quality, and brand image). Second, brand equity has a positive effect on brand preference. Third, brand preference has a positive effect on repurchase intention. Fourth, brand preference plays the role of a mediator in measuring the impact of brand awareness and brand image on customers' repurchase intentions. Conclusions - The theoretical implications can be summarized as follows. First, this study proposes a theoretical basis that can be adapted to the VMD configuration factors of a coffee shop by identifying the relationship between brand equity and coffee shops. This study applies the VMD factors to the coffee shops and presents a new research model by examining the relationships amongst VMD components of coffee shops: brand equity, brand preference, and repurchase intention. Second, it clearly establishes the relationship between brand equity and brand preference by identifying the mediating effects of brand preference, given that brand equity has a positive impact on repurchase intention. The practical implications are as follows. First, development of brand equity and management can be important components for coffee shops in determining that the VMD configuration factors of coffee shops have an impact on brand equity. Second, amongst the VMD configuration factors, attractiveness and trend have a positive influence on choosing coffee shops, therefore store atmosphere should be attractively designed, while the menu and interiors should complement each other and be reviewed periodically to conform to the latest trend. Third, VMD configuration factors that are confirmed are not easily changed. Fourth, large franchises and foreign companies have strengths in scale, locations, and brand. Fifth, the different ways of campaigning should be compared to those of large franchises and foreign companies in order to increase brand equity using VMD configuration factors.
