This study surveyed the Korean Kimchi preference for Chinese, potential Kimchi improvement for Chinese market adaptation and Kimchi application for Chinese cuisine, with the aim of spreading the recognition of Kimchi throughout the world, especially in China, by giving information and developing local types which could be expected to be suitable for utilization of Chinese food life. The subjects were consisted of 298 Chinese(male 108, female 190) residing in Weihai, Yantai and Qingdao, in Shandong province. The questionnaire form was developed and used for self administered evaluation. The collected data were analyzed by SAS package. Baechu Kimchi was found to be the most well-known Kimchi for Chinese, and Kkakdugi, Oi Kimchi, Yoelmu Kimchi and Nabak Kimchi were followed in order. Baechu Kimchi(75.9%) was found to be the most favorite Kimchi for Chinese, and Oi Kimchi(59.3%), Kkakdugi(52.8%), Nabak Kimchi(39.3%) and Yoelmu Kimchi(37.7%) were followed in order. The subjects knew about the Korean foods made with Kimchi, such as Kimchi kimbap(74.8%), Kimchi bibimbap(71.5%), Kimchi bokkeumbap(61.7%), Kimchi guk(58.1%) in order. But the experience of consumption for Korean foods made with Kimchi was low compared to the knowledge of the Korean foods made with Kimchi. Chinese's most favorite foods made with Kimchi were Kimchi bossam, Kimchi bibimbap, Kimchi bokkeumbap and Kimchi kimbap, Kimchi bokkeum, Kimchi tteoksanjeok and Kimchi jeon in order. Among the 9 kinds of new Chinese foods made with Kimchi, Kimchi chao zhurou(fried pork with Kimchi), Kimchi chao mian(fried noodle with Kimchi), Kimchi chao youcai xiaren(fried rape and prawn with Kimchi), Kimchi zhuroushuijiao(dumpling with pork and Kimchi), Kimchi gedatang(wheat flakes soup with Kimchi) and Kimchi hundun(dumpling with Kimchi), and Kimchi youbing(panfried flour with Kimchi), Kimchi lamian(handmade knife-cut noodle with Kimchi) and Kimchi tangyuan(tangyuan with Kimchi) were preferred foods by the subjects in order.
In this study, we compared diet related attributes such as food taste preference, food consumption frequency and nutrition intake between elderly residents in their 80's of areas in Jeollanam-do that are well known for longevity and those of a part of Seoul. Structured in-depth interviews were conducted by trained interviewers on 125 consented subjects (67 Jeonnam and 58 Seoul). Differences of groups were tested using Chi-square tests for nominal or ordinal data and t-tests and ANOVA tests for ratio data. The elderly from Jeonnam tended to sleep longer, express emotion more freely, and interact with others more often than those from Seoul. The elderly tended to prefer sweet or salty tastes, which might be highly related to serious health problems. The most frequently consumed foods were napa cabbage kimchi (2.19 times/day) and multigrain rice (1.99 times/day). Elderly from Jeonnam tended to consume garlic, milk, beans and roasted barley/corn teas less often; whereas, they consumed porridge, dried radish greens, potato, fermented fish, dried fish, pork rib, pork belly, soybean paste soup, soybean paste/Ssamjang, other kimchis, pickled vegetables, snacks, cookies, and green/black teas more often than elderly residents from Seoul. Differences in nutrition intake between the regions were greater than differences between the perceived levels of household economic status. NAR and INQ for folate were lower among elderly from Jeonnam than those from Seoul, while those for protein, vitamin C, niacin, vitamin $B_6$ were higher. The study results indicated that elderly from Jeonnam engaged in a more diverse diet than the elderly from Seoul.
This study was carried out to investigate Chinese in Beijing and Shanghai perception and preference for Korean Kimchi. The results were as follows: A questionnaire was examined on male 145(45.7%) and female 172(54.3%) of residing in Beijing, and on male 139(49.5%) and female 142(50.5%) of residing in Shanghai. In foods of eating with Kimchi resulted the highest Chinese foods 40.3% on male, and Korean. Chinese foods 25.3% on female in Beijing(p< .05), Korean, Chinese foods 26.7% and 25.3% on male respectively, and Korean foods 50.7% on female in Shanghai. In Kimchi used dishes Beijing resulted high Kimchi Ramyon 61.5%, Kimchi Kuk 51.3%, and Kimchi Chigae 44.9%, and Shanghai were Kimchi Ramyon 51.2%, Kimchi Kuk 41.3%, and Kimchi Fried Rice 22.4% in order. In evaluation by kinds of Kimchi, the taste resulted high onion juice Kimchi(M=6.55) of the third days, and overall acceptability resulted high onion juice Kimchi(M=6.18) of the third days, similary in Beijing, and Kimchi added in shrimp(M=5.70) of two days, and overall acceptability resulted high Kimchi added in shrimp(M=5.70) of the third days, similary in Shanghai. In Sensory evaluation by used Kimchi, the taste resulted high in the order of Kimchi Fried Rice and Chinese style Kimchi Fried Pork(M=6.27), and overall acceptability resulted Kimchi Fried Udong(M=6.40), Chinese style Kimchi Fried Pork(M=6.27), Kimchi Dumpling(M=6.20) in Beijing, and Kimchi Chige(M=6.70), Kimchi Fried Rice(M=6.67) and Kimchi Pancake(M=6.44), and overall acceptability resulted Kimchi Fried Udong, Kimchi Chige(M=6.50), Kimchi Fried Rice and Kimchi Pancake(M=6.44) in Shanghai.
The objective of this study was to develop a stock that can be used to make a variety of dishes. For this, stock was prepared with beef, chicken, and pork meat as animal meats as well as anchovy, mushroom, and sea tangle as other ingredients. The qualities of six[only four though] kinds of stocks made with beef only (B), beef and chicken (BC), beef and pork (BP), and beef added with chicken and pork (BCP), and seven kinds of stocks made with anchovy (A), mushroom (M), sea tangle (S), anchovy and mushroom (AM), anchovy and sea tangle (AS), mushroom and sea tangle (MS), and anchovy added with mushroom and sea tangle (AMS) were investigated by sensory evaluation. The most preferred stock made with animal meat was mixed with the most preferred stock made with other ingredients at a 5% level to test the synergistic effects of palatability. As a result, BCP stock and AMS stock obtained the highest scores for overall preference. BCP stock within the range of 30%-65% along with the mixed stock containing AMS (35%-70%) showed synergistic effects for palatability.
Pork patties were formulated with either steam-dried green tea power or freeze-dried raw tea leaf powder, and the quality characteristics of these products were monitored. Proximate analysis of tea powder contained 17.80~19.85%, 4.70~5.73%, and 5.60~5.77% (as is) crude protein, crude fat, and crude ash, respectively. There were no significance differences in pH among the samples. Chromaticity tended to decrease brightness ($L^*$) and redness ($a^*$), and there were significant differences in yellowness ($b^*$) as the added amount of tea power was increased. For texture, hardness increased as more green tea powder was added. Thiobarbituric acid reactive substances (TBARS) and volatile basic nitrogen (VBN) values increased after storage for 12 days, whereas samples formulated with green tea powder showed lower TBARS and VBN values compared to control groups. Sensory panelists showed preference for samples with green tea powder added compared to the control group.
The purpose of this study was to investigate the effects of black carrot (Daucus carota L.) on the quality characteristics and antioxidant activity of pork patties. Patties were provided with different amounts (0, 2, 4, 6 and 8%) of black carrot. Notably, the cooking loss rate of the group added with 8% black carrot was lowest (p<0.001). As the content of black carrot increased, the L value decreased and the a, b value increased. The texture analysis results showed that the hardness and chewiness to decrease as the amount of black carrot increased (p<0.05). Evaluation of consumer acceptability revealed that the 4% black carrot groups had a higher score in respect to overall preference and taste to the other groups (p<0.05). For antioxidant activities, both total phenolic compounds content and DPPH were increased (p<0.001) as the amount of added black carrot was increased. As a result, it can be concluded that adding the black carrot to patties in processing can improve antioxidant activities and quality of the patties. Considering various aspects of quality, the suitable amount is 4% of total weight.
고추장, 고춧가루, 과채열수추출액 첨가에 의한 돼지불고 기양념육의 항산화 증진 효과와 혼합물 실험설계법을 이용한 돼지불고기용 양념소스 재료의 최적 혼합 비율을 확립하고자 하였다. 냉동저장($-25^{\circ}C$, 5개월) 동안 간장양념을 사용한 대조구와 고추장양념첨가구(KG), 고추장양념.과채열수 추출액첨가구(KFVEG)의 TBA가는 저장기간 동안 원료육에 비해 모든 돼지불고기 양념육에서 낮게 유지되었다. 양념육 중에서는 대조구보다 고추장양념첨가구의 항산화력이 크게 우수하였으며, 고추장양념첨가구의 물 사용량을 과채 열수추출액으로 대체함으로써 항산화 상승작용이 유의적으로 나타났다. 따라서 양념소스에 고추장, 고춧가루, 과채열 수추출액 첨가로 돼지불고기양념육의 지방산화 안정성이 증진되었다. 양념육의 기호성은 고추장과 함께 사용된 고춧가루와 과채열수추출액 사용 비율이 증가함에 따라 향상되는 것으로 나타났다. 혼합물 실험 설계법에 의하여 추적된 돼지불고기용 고추장양념소스의 최적 혼합 비율은 고추장 0.04, 고춧가루 0.20, 과채열수추출액 0.39, 물 0.37로 나타났다.
This study was carried out to obtain information about preferences of the meat food in 491 Koreans including the ones living in New Zealand. General preference for the meats was not significant differences according to sex, monthly income level, residing area, marriage status and family number. Degree of preferences for the meats which have consumed commonly such as beef, pork and chicken showed relatively a high tendency, but the meats such as goat, lamb, deer and turkey were very low in preference score. In the meats cooking style, most subjects preferred Korean style followed by Chinese and western style. The younger had a high score than the older inpreference of the processed meats. The meat foods subjects preferred were Tzeams, Kui, Tangs, cutlets and Tangsuyuks. There were not significant differences in preferences for the meats between Korean living in domestic and New Zealand. This study showed that the meat foods which theirs preference was high have had a high tendency in the intake frequency also. Preferences for the meat food was affected by intake frequency and amount of intake and nutritional knowledge, but not related to BMI, health status and monthly income level.
본 연구는 수삼에서 추출된 사포닌 성분 특성 및 이를 혼합한 포크소시지의 소비자 기호성에 미치는 영향을 구명하기 위해 실시되었다. 최적의 수삼사포닌 추출을 위해 에탄올 농도(0, 20, 40, 60, 80, 100%)에 따른 고형분 추출성과 사포닌 함량을 조사한 결과 에탄을 0%(증류수 100%) 추출이 20%로 $20{\sim}80%$(약 15%)와 100%(10%)에탄을 추출보다 더 많은 건조물을 추출하였으나, 조사포닌 함량은 에탄을 함량이 증가와 비례적으로 증가하여 100% 에탄을 추출에서 123.52mg/g으로 가장 높았다. LC/MS로 ginsenosides을 정량한 결과 Rb1, Rb2 및 Rc는 에탄을 80%와 100%에서 공동으로 다른 농도에 비해 유의적(p<0.05)으로 높은 농도를 보였고, Rgl은 60, 80 및 100% 에탄올에서 유의적(p<0.05)으로 높은 추출성을 보였다. 에탈올 100%로 추출한 수삼추출액을 포크소시지에 원료육 중량에 대한 0, 1, 2% 함량으로 각각 첨가하여 훈연과 비훈연 처리로 나누어 소시지 제조 후 향미, 다즙성, 연도, 기호성 등을 펙토리얼 디자인에 의한 관능평가를 실시하였다. 훈연 처리는 다즙성과 연도를 유의적(p<0.05)으로 감소시켰으나 향미와 기호성은 유의적(p<0.05)으로 증가시켰다. 특히 인삼 추출물을 2% 첨가한 소시지는 훈연에 의해서도 다즙성이나 연도가 감소하지 않은(p<0.05) 반면 기호성은 다른 처리군에 비해 유의적(p<0.05)으로 높은 관능검사 점수를 받았다. 이상의 결과는 포크소시지 제조에 인삼 추출물 첨가는 인삼 본래의 기능적 효과를 소비자들에게 제공함은 물론 관능적 특성에서도 더 우수한 제품을 생산할 수 있다는 점을 예시하고 있다. 유의적으로 높게 나타났으며(p<0.05), 연도와 다즙성 및 전체적인 기호도는 처리구가 다소 높은 점수를 얻었다.m$1.0%에 비하여 3일과 5일은 11.0$\pm$0.9%와 8.0$\pm$0.9%로 유의적으로(p<0.05) 낮은 발달율을 나타내었다. 이상의 결과를 종합할 때 항생제가 첨가되지 않은 돼지 혼합 정액은 보관일수 3일째부터 정자의 운동성이 감소하고 세균수는 증가하였다. 또한 보존된 정액을 이용하여 체외 수정을 실시할 경우, 보관일수가 증가할수록 정상 수정율과 체외 발달율이 감소함으로 항생제를 첨가하지 않는 경우 3일 이상 정액을 보관하여 사용하지 않는 것이 바람직 하다고 사료된다. 특성을 유지하였으며 냉각 보관 2주까지 좋은 성적의 정자 특성을 나타냈다. 개 정자 냉각 보존에 대안적인 희석액으로 G-BSA도 사용 가능한 것으로 사료된다.수준이 증가함에 따라 계란 내 항생제 잔류량은 유의하게 감소하였다. 본 연구에서는 육계 사료 내 AC의 첨가 급여가 생산된 계육의 외관적 특성을 개선시키는 효과가 시사되었고, 장내 총균수, 대장균 및 유산균수를 감소시키는 시키는 결과를 보였다. 산란계 사료 내 AC의 첨가 급여가 혈청 및 계란 내 항생제 잔류를 감소시키는 결과를 나타내었다.m의 MIC는 ceftazidime의 MIC에 비해서 상대적으로 높은 양상을 보였다. 이러한 결과는 국내의 대학병원 뿐 만 아니라 일반종합병원에서도 CTX-M형 ESBL 생성 E. coli와 K. pneumoniae가 존재하며 확산 중임을 시사한다. 앞으로 CTX-M형 ESBL의 만연과 변종 CTX-M형 ESBL의 출연을 감시하기 위한 정기적인 연구와 조사가 필요한 것으로 생각한다., A2-1, B1-1, B2-1의
본 연구는 남은 음식물 발효사료 급여가 돈육의 소비자 기호도에 미치는 효과를 알아보고자 국내에서 가장 소비가 많이 되고 있는 삼겹살 부위를 이용하여 일반소비자를 대상으로 기호도 조사를 실시하였다. 암퇘지 삼겹살의 경우 생육에 대한 소비자 평가는 신선도를 제외하고는 대조구와 시험구(FFWF) 사이에 뚜렷한 차이가 없는 것으로 나타났으며, 시식 후 소비자 관능특성에 있어서도 대조구와 시험구(FFWF) 사이 에 차이 가 없었다. 거세돈 삼겹살의 경우 생육에 대한 소비자 평가는 지방량을 제외하고 대조구와 시험구(FFWF) 사이에 뚜렷한 차이가 없는 것으로 나타났으며, 시식 후 소비자 기호도도 대조구와 시험구(FFWF) 사이에 차이가 없는 것으로 평가되었다. 전체적인 생육에 대한 소비자 평가는 육색을 제외하고는 대조구와 시험구(FFWF) 사이에 차이가 없는 것으로 나타났으며, 시식 후의 소비자 관능특성에 있어서도 대조구와 시험구(FFWF)는 차이가 없는 것으로 평가되었다. 선호도에 있어서는 암퇘지의 경우 대조구가 시험구(FFWF)에 비하여 선호도가 높게 나타났으며, 거세돈의 경우 시식 전 생육에 있어서는 시험구(FFWF)가 대조구에 비하여 선호도가 높게 나타났으나, 시식후의 선호도에 있어서는 대조구와 시험구(FFWF) 사이에 차이가 없었다. 전체적인 두 처리구 간의 선호도는 생육과 시식 후 모두 대조구와 시험구(FFWF) 사이에 차이가 없었다. 이상의 돼지 삼겹살의 소비자 기호도 평가 결과를 종합해 볼 때 남은 음식물 발효사료의 돼지사료로 이용 가능성을 확인하였다.

제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
